Busy day around the house today. We are having a new roof put on the house and our shed today. Which also means a whole lot of noise. Another beautiful Fall day out again, we are on a roll weather wise. Sunny and a high in the 70’s. Did a load of laundry for Mom and cleaned up around the house. Didn’t get to go see Dad today, I had to stick around the house while the repairs are going on. For dinner tonight I prepared a Seasoned Haddock w/ Multi – Grain Medley and 3 Bean Salad.

Well they finally had Haddock back in stock at the Kroger I go to. They told me a couple of weeks ago they were no longer going to carry it, they just weren’t selling enough of it. But Monday when I was there they said they had brought it back due to so many complaints. Anyway I purchased 3 nice size fillets that I’ve already cleaned and cut into smaller fillets and put in the freezer. I did keep some out for my dinner tonight. I love Haddock it cooks up so nicely and I love the flavor and how meaty it is.

So to prepare it I had cut the fillet into smaller pieces. I then seasoned it with just a bit of Sea Salt and put the pieces in a Hefty Zip Plastic Bag where I then added Zatarain’s Lemon Pepper Breading Mix. Shook until all the pieces were well coated. Shook off the excess and pan fried them in Extra Virgin Olive Oil, frying them about 3 minutes per side until golden brown. Haddock and Zatarain’s Lemon Pepper Mix, the perfect combo. The Zatarain’s Breading and Seasonings are my favorites. Love Haddock!

For one side dish I prepared some Minute Multi Grain Medley. I love the Minute Multi Grain, It has Brown Rice, Thai Red Rice, Wild Rice, and Quinoa. Now that’s a good combo of Grains! Plus it’s only 160 calories and 31 net carbs per serving.

I also had some Read’s 3 Bean Salad. It comes in a can and you can prepare it various ways. I just opened the can and put it in a plastic bowl, put the lid on, and set in the refrigerator to chill for a couple of hours or so. I served these chilled. For dessert later a Healthy Choice Vanilla Bean Frozen Greek Yogurt.

Directions

Went out to get the morning papers and it’s one cold morning out there, about 10 degrees with a wind chill at minus. Plenty of sunshine but the temperature didn’t go up a lot today. Tomorrow being garbage day, it’s always clean the fridge out of leftovers also. I got that done and on to laundry. The effort of cleaning and salting the driveway and curb yesterday paid off, as everything froze last night. Those that let their’s go have one frozen mess today. For dinner tonight I prepared a couple of new favorites, Sweet Italian Chicken Sausage with Red Bell Peppers w/ Cool Bean Salad.

 

Came across the Thin ‘n Trim All Natural Sweet Italian Chicken Sausage with Red Bell Peppers at Kroger last week. I had prepared one for my lunch the other day and it was so good I thought I would have them for my dinner tonight. They are pre-cooked, so all you have to do is heat them up and they’re ready to serve. I heated mine up in the microwave and served it on a Healthy Life Whole Grain Bun and topped with French’s Spicy Golden Mustard. It’s a great tasting, meaty Sausage with excellent flavor. The Red Bell Peppers with the Chicken Sausage is perfect, and so easy to prepare. They have different varieties so I’ll be trying the others also.

I had prepared a Cool Bean Salad a couple of nights ago and having the leftovers tonight. Another easily prepared item using a can of Read 3 Bean salad as the main ingredient. Makes a tasty and refreshing side dish. I left the complete recipe at the end of the post. For dessert later a Healthy Choice Dark Fudge Swirl Frozen Yogurt.

Ingredients
1 can(s) 15 oz can of Read 3 Bean Salad (drained)Read 3 Bean 2
1 c chopped small Red Pepper
1 c chopped small Red Onion
1/2 c White Vinegar
1/3 c Sugar or use Splenda
1/4 tsp ground Black Pepper
Chopped Parsley
Directions
1. Heat together vinegar, sugar & onions. Cool and then add the oil.
2. After cooled pour over the rest of the ingredients then add black pepper and parsley.
3. Chill for several hours or overnight and serve.

Today’s Menu: Catfish Nuggets w/ Hash Browns and Cool Bean Salad

We got hit with snow again, around 7-8 inches of the white stuff! But not near as cold today, around 30 degrees. So me and the neighbor cleared, or tried clearing, the driveway again. Wish I could do it all myself but my Hoveround Mobility Chair doesn’t do good in snow, especially our driveway which is a hill on the bottom half. We’ve got neighbors though that’s always lending a hand. For dinner tonight a favorite, Catfish Nuggets! I prepared Catfish Nuggets w/ Hash Browns and Cool Bean Salad.

Picked up the Catfish Nuggets at Kroger yesterday. Rinsed the Catfish Nuggets off in cold water and patted dry with a paper towel. Seasoned them with Sea Salt. Then put them in a Hefty Plastic Storage Bag and added Zatarain’s Crispy Southern Fish Fri Breading Mix, shook the bag until all the Nuggets were coated. Then pan fried them in a medium size skillet in Extra Virgin Olive Oil. Fried each side about 3 1/2 minutes, until a golden brown. The Zatarain’s Crispy Southern Fish Fri is perfect for the Catfish, great flavor and the Nuggets were good size and meaty. You can bake Catfish but for me you just can’t beat frying Catfish. I love using all these Zatarain’s Products!

For one side I prepared some Simply Potatoes Hash Browns, which I always use when making hash Browns. Fried them in Extra Virgin Olive Oil and seasoned them with Sea Salt, Ground Pepper, and Parsley. I also made a Cool Bean Salad. I left the full recipe at the end of the post. You’ll love this, fresh and bursts with fantastic flavor. For dessert later a Healthy Choice Dark Fudge Swirl Frozen Yogurt.

 
Cool Bean Salad

Ingredients
1 can(s) 15 oz can of Read 3 Bean Salad (drained)Read 3 Bean 2
