Today’s Menu: Ancient Grain Mini Naan Bread Pizza – Turkey Pepperoni and Turkey Sausage

 

 

 

For Breakfast this morning I toasted a Thomas Light 100% Multi Grain English Muffin and topped it with Smucker’s Sugarless Blackberry Jam. Alo had the morning cup of Bigelow Decaf Green Tea. Cloudy, raining, and 43 degrees out today. Very sad day, my Aunt passed away. She was Dad’s Sister. They lived in Florida and she was 91 years old. We’ll miss her deeply.

For Dinner tonight; Ancient Grain Mini Naan Bread Pizza – Turkey Pepperoni and Turkey Sausage.

 

 

 

 

I had this last week and it was so good I wanted it again. So I picked up another package of Stonefire Mini Naan Ancient Grain Bread and Jennie – O Turkey Lean Turkey Sausage at Meijer my last visit there. For my toppings for the Pizza I’m using Hormel Turkey Pepperoni, Jennie – O Lean Turkey Sausage, Black Olives, Green Olives, Oscar Mayer Hickory Smoked Bacon Bits, Sargento Shredded Mozzarella Cheese, and Ragu Traditional Pizza Sauce. I love this Stonefire Mini Naan Ancient Grain Bread, it tastes so fresh and bakes up perfect!

 

 

 

 

 

I first Preheated the oven on 400 degrees. Next I grabbed a small skillet, sprayed it with Pam No Stick Cooking Spray, and heated it on medium heat. As the skillet was heating I opened up a roll of the Jennie – O Lean Turkey Sausage. I cut off a slice of it and crumbled up. Added it to the heated skillet and fried Sausage Crumbles. When they were browned and heated through removed them from the skillet into a small bowl until ready to use.

 

 

 

 

 

When the Bread cooled I added the toppings on top. I started with the Ragu Pizza Sauce. Next slices of Hormel Turkey Pepperoni. Then the Jennie – O Turkey Sausage Crumbles, next the Black and Green Sliced Olives, Oscar Mayer Bacon Bits, and finally the Sargento Shredded Mozzarella Cheese. Slid the baking sheet back into the oven to bake.

 

 

 

 

 

 

I baked the Naan Bread Pizzas for about 8 minutes, until the ingredients had heated through and Cheese melted. Pulled the baking sheet from the oven and let the Pizzas cool for 3 minutes. With the first bite I knew the Naan Bread was a perfect Pizza Crust! The Crust had excellent taste and baked up perfect. Then with all my toppings had some great Pizzas. Plus a lot fewer calories and carbs than normal Pizza Pies. I’ll have to get a couple of packs of the Stonefire Mini Naan Ancient Grain Bread and keep them in the freezer. For Dessert/Snack later a bowl of Skinny Pop – Pop Corn and a Coke Zero to drink.

Today’s Menu: Ancient Grain Mini Naan Bread Pizza – Turkey Pepperoni and Turkey Sausage

 

 

For Breakfast this morning I made a Ham, Fried Egg and Toast. I fried up 3 slices of a Blue Grass Ham that I sliced. Then I also prepared an Egg Sunny Side Up. Next I toasted 2 slices of Aunt Millie’s Light Whole Grain Bread. I also had a cup of Bigelow Decaf Green Tea. Great way to start a Sunday Morning! Rain and Thunderstorms all day also some strong winds as the day went on, high of 70 degrees. So not a lot going on outside today. Did a load of laundry and cleaned the house. Layed back and watched TV for the rest of the afternoon. For Dinner tonight; Ancient Grain Mini Naan Bread Pizza – Turkey Pepperoni and Turkey Sausage.

 

 

 

 

 


I picked up a package of Stonefire Mini Naan Ancient Grain Bread and Jennie – O Turkey Lean Turkey Sausage at Meijer my last visit there. For my toppings for the Pizza I’m using Hormel Turkey Pepperoni, Jennie – O Lean Turkey Sausage, Black Olives, Green Olives, Oscar Mayer Hickory Smoked Bacon Bits, Sargento Shredded Mozzarella Cheese, and Ragu Traditional Pizza Sauce. Today’s Menu: Ancient Grain Mini Naan Bread Pizza – Turkey Pepperoni and Turkey Sausage

 

 

 

 

For Breakfast this morning I made a Ham and Cheese Egg White Omelette. I used Meijer Diced Ham, Sagento Off the Block Shredded Mozzarella, Egg Beater’s Egg Whites, Ortega Smoked Chipotle Taco Sauce. I topped the Omelette with the Taco Sauce and a sprinkle of the Cheese. I also had a slice of Aunt Millie’s Light Whole Grain Bread and a cup of Bigelow Decaf Green Tea. 48 degrees and cloudy all day. After I had Breakfast I went to McDonald’s and picked up Breakfast for Mom, she loves those Golden Arches Breakfast Sandwiches. Back home did a few things around the house. Cleaned and straightened the pantry and replaced the brushes on the vacuum. For Dinner tonight; Ancient Grain Mini Naan Bread Pizza – Turkey Pepperoni and  Turkey Sausage.

Today’s Menu: Ancient Grain Mini Naan Bread Turkey Pepperoni and Turkey Sausage Pizza

 

 

Tried a new recipe for Breakfast this morning, Baked Diced Potato Breakfast Skillet. I prepare Diced Potatoes and Ham Skillet but never this way. I preheat the oven on 400 degrees. I used the Cast Iron Skillet and prepared a package of Simply Potatoes Steak House Seasoned Diced Potatoes. Cooked them for 16 minutes, flipping them over several times. Removed the Skillet from the heat. Then with the back of a spoon, made 2 indention in the potatoes and cracked an egg into each well. Baked at 400 degrees for 11 minutes until egg whites were completely set and yolks begin to thicken but are not hard. Took it out of the oven and sprinkled with Sargento Reduced Fat Shredded Sharp Cheddar Cheese. Put it back in the oven and baked it 1 minute longer until the cheese was melted. It came out delicious! Mom even had it instead of her usual McDonald’s.

 

 

 

 

It’s 51 degrees and partly cloudy out today. Great weather to be late December! I seen the long range forecast and most days are in the 40’s and 50’s. Hopefully they are right. Cleaned the house this afternoon, dusted and ran the vacuumed. For Dinner tonight; Ancient Grain Mini Naan Bread Pizza – Turkey Pepperoni and Lean Turkey Sausage.

I then brushed a light coat of Extra Virgin Olive oil on the top of them. I then baked then for about 2 minutes. Pulled the sheet out of the oven and let the Naan Bread cool for 5 minutes.

 

 

 

 

 


When the Bread cooled I added the toppings on top. I started with the Ragu Pizza Sauce. Next slices of Hormel Turkey Pepperoni. Then the Jennie – O Turkey Sausage Crumbles, next the Black and Green Sliced Olives, Oscar Mayer Bacon Bits, and finally the Sargento Shredded Mozzarella Cheese. For Breakfast this morning I Poached an Egg, toasted a Healthy Life Whole Grain English Muffin, and had my morning cup of Bigelow Decaf Green Tea. I then served the Poached Egg on top of the English Muffin. 61 degrees and sunny today! But the rain is moving back in overnight and for the next 2 days. Certain parts of Cincinnati and Northern Kentucky are flooded from the Ohio River. I live North of Cincinnati and we’ve had a lot of rain but not a whole lot of flooding. So after Breakfast I went Menard’s and Home Depot to price some outdoor yard items, getting ready for Spring! For Dinner tonight; Ancient Grain Mini Naan Bread Pizza – Turkey Pepperoni and Lean Turkey Sausage.

For my toppings for the Pizza I’m using Hormel Turkey Pepperoni, Jennie – O Lean Turkey Sausages, Black Olives, Green Olives, Oscar Mayer Hickory Smoked Bacon Bits, Sargento Shredded Mozzarella Cheese, and Ragu Traditional Pizza Sauce.

Today’s Menu: Ancient Grain Mini Naan Bread Pizza – Turkey Pepperoni and Sweet Italian Turkey Sausage

 

 

For Breakfast this morning I Poached an Egg, fried a few slices of Boar’s Head Sweet Slice Ham, toasted a Healthy Life Whole Grain English Muffin, and had my morning cup of Bigelow Decaf Green Tea. Good start to a rainy Thursday morning! It started raining overnight and a few showers this morning. Cloudy and 51 degrees for a high. Stayed in most of the day and got some things done around the house. For Dinner tonight; Ancient Grain Mini Naan Bread Pizza – Turkey Pepperoni and Sweet Italian Turkey Sausage.

 

 

I picked up a package of Stonefire Mini Naan Ancient Grain Bread at Meijer earlier in the week. And I’m using them to make some Mini Pizzas. For my toppings I’m using Hormel Turkey Pepperoni, Jennie – O Sweet Italian Turkey Sausages, Mushrooms, Black Olives, Green Olives, Oscar Mayer Hickory Smoked Bacon Bits, Sargento Shredded Mozzarella Cheese, and Ragu Traditional Pizza Sauce.

As the skillet was heating I got 2 Jennie – O Sweet Italian Sausages and cut the end off each Sausage . Then squeezed the Sausage Meat out of the casing and formed that into small chunks. With the skillet heated I fried the Sausage pieces. When they were browned and heated through removed them from the skillet into a small bowl until ready to use.

 

The oven was heated up and I got the Naan Bread ready. I used a small baking sheet, lined it with foil, and sprayed it Pam Cooking Spray. I lined the 4 Naan Breads up on the baking sheet. Today’s Menu: Chicken and Wild Mushroom Ravioli

 

 
For Breakfast this morning I prepared a Poached Egg and served it on a toasted Healthy Life Whole Grain English chicken-and-wild-mushroom-ravioli-013Muffin. Also had the morning cup of Bigelow Decaf Green Tea. Rain came in overnight and is here for the rest of the day, its in the 50’s. Did some more cleaning today, cleaned the oven and stove. Then I had picked up some more furniture coasters the other day and put some underneath a table and the love seat. These coasters are so nice, especially if you are in a wheelchair. All the furniture can be moved with ease when you need to clean or to move furniture around. For Dinner tonight I prepared a new item, Three Bridges Wild Mushroom Ravioli. Tonight its Chicken and Wild Mushroom Ravioli.

 

 
For the Chicken I used Perdue Perfect Portions Skinless and Boneless Chicken Breasts. I had them in the freezer so I Seasoned Chicken Breast w Whole Grain Rotini and Baked Mozzarell 003let them thaw overnight in the fridge. I love the Perdue Perfect Portions Chicken Breasts. Always taste fresh and nice size. To prepare; removed them from the package and seasoned them with Sea Salt and Litehouse Freeze Dried Poultry Herb Blend. Then I sprinkled them with a light dusting of Flour. Cooked them in a medium size skillet that was sprayed with Pam Cooking Spray and a tablespoon of Extra Virgin Olive Oil. Fried them on medium high heat for about 11 minutes, flipping it over 3 times. Removed from the heat and set aside.As the Chicken was cooking I sliced up some Mushrooms and Sauteed them in the skillet also. Removed from the heat and set aside. After they had cooled I sliced the Chicken Breasts up.

As the Chicken was finishing I prepared the Three Bridges Wild Mushroom Ravioli. First time preparing this and its very easy to prepare. Bring a large pot of water to a gentle boil. Add ravioli and cook for 5 minutes. Remove the pot from heat and strain the Ravioli.

Then tossed with 1 tablespoon of Light Olive Oil and a small jar of Ragu Homemade Style Sauce. To serve I made a bed of the Ravioli in a bowl and topped it with the sliced Chicken Breast, Sauteed Sliced Mushrooms, and a bit more of the remaining Sauce and a sprinkle of Kraft Reduced Fat Grated Parmesan Cheese. The Ravioli is very tender and a excellent Mushroom taste! The Chicken and sauce worked perfect with it. Another very good item I came across at Meijer. I’ve noticed more and more new items at Meijer lately, and that’s a good thing! For dessert later a bowl of Dole Sliced Peaches.

Today’s Menu: Egg Maccheroncini w/ Turkey Meatballs

I went out to fetch the morning papers this morning around 7 am. and it’s a bit chilly out there this morning, about 40 degrees. Scampered back inside to cook up some Breakfast. This morning I toasted a Healthy Life Whole Grain English Muffin (lightly buttered), fried up a couple of Jennie – O Turkey Breakfast Sausage, Scrambled 2 medium size Eggs (topped with Sargento Reduced Fat Shredded Sharp Cheddar), and a cup of the Bigelow Decaf Green Tea. Had a high in the 60’s and partly sunny. Went to McDonald’s and Dunkin Donuts to pick up Mom and Dad’s Breakfast for them. Dropped their Breakfast off and ran a couple of errands and up to the assisted living center to see a friend of mine. Still not doing very good, not sure if he’s going to recover. So for Dinner tonight I prepared Egg Maccheroncini w/ Turkey Meatballs.

Kroger has been featuring Italian Foods for the past few weeks. An item I ran across and decided to try was Egg Maccheroncini Pasta Panarese. I haven’t found a lot of information or history of this product but here’s what I did find; Made using the traditional methods of bronze drawing and slow-drying, Pasta Panarese has a rough texture that will help the absorption of water whilst boiling, and will allow a better adherence of the sauce. The result is an evenly cooked, full flavored product much different from the industrial pasta production. It comes in lovely transparent packaging and is the ideal present for a foodie friend … It The Pasta is produced from top quality Durum Wheat Semolina grown in Tuscany. It’s made with 30% Egg. It looked good and only contains 160 calories and 30 net carbs per serving which isn’t too bad for Pasta.

For the meatballs I used Honeysuckle White Fresh Italian Style Turkey Meatballs. I’ve been using the Honeysuckle White Fresh Italian Style Turkey Meatballs for quite a few years now. The Meatballs are good size, always fresh, meaty, and have a fantastic taste and they’re 190 calories and 5 net carbs for 3 Meatballs. I heated them up in a sauce pan in a jar of Ragu Super Chunky Mushroom Sauce.

To prepare Pasta all I’ll need is McCormick Grinder Sea Salt and McCormick Italian Seasoning. According to the package instructions it said to cook the Pasta 7-9 minutes. So I used a large sauce pot, filled half way with water. I brought the water to a rolling boil and seasoned the water with the Sea Salt. The Pasta itself is a flat Noodle and comes in, what looks like, small haystack bundles. There was 6 of the bundles in the package and I prepared 3 of them. Added the 3 bundles to the pot and cooked them for 9 minutes, gently stirring them frequently. After 9 minutes removed the pot from heat and drained the Pasta. Put the Pasta into a large bowl and seasoned it with a bit more of the McCormick Grinder Sea Salt and McCormick Italian Seasoning. to serve I topped with Ragu Mushroom Pasta Sauce, Fresh Shaved, Turkey Meatballs, and Parmesan Cheese. Some of the best Pasta I’ve ever had! It tasted so fresh and the Seasoning, Meatballs, and Sauce worked great with it. I purchased a couple of packages of it, I’m not sure if it’s limited time product at Kroger. For dessert later a bowl of Dole Sliced Peaches.

An old friend of mine passed away late last night with lung cancer. He never had smoked but worked in bars most of his life and the doctors had said it was due to second-hand smoke. So it’s been a bit of down day. Really muggy outside today, so not much going on. For dinner tonight I made a Pizza, but just not any Pizza a Turkey Pepperoni and Turkey Sausage Pita Bread Pizza!

 

 

 
I use Joseph’s Oat Bran and Stone Ground Whole Wheat Pita Bread anytime I can, especially for my Pizza! I love using Joseph’s Pita Breads, always fresh and they’re only 60 calories, 1.5 grams fat, and 5 net carbs! A huge saving instead of calories and carbs over using normal Pizza Crust, without sacrificing taste.

 

 

 

I preheated the oven on 400 degrees. To bake the Pita Pizzas I used a large Cookie Sheet. To prepare them I brushed them with a light coat of Extra Virgin Olive Oil, the coating of Oil browns it up just right. I then baked it for 5 minutes, just to brown it up a bit. Removed them from the oven and made my Pizzas.

For my toppings I used Jennie – O Hot Lean Turkey Breakfast Sausage, Ragu Homestyle Pizza Sauce, Hormel Turkey Pepperoni, Sliced Black and Green Olives, sliced Baby Bella Mushrooms, 2 Anchovies Fillets, Fresh Shredded Murray’s Muenster Cheese, and Fresh Shredded Murray’s Mozzarella Cheese. It took less than 10 minutes in the oven until everything heated up and the Cheese melted.Pizza is served! Everything combined makes one delicious Pizza! And the good thing is you can load these Pita Bread Pizzas up with toppings and still not have a lot of calories and carbs, my type of Pizza! For dessert later a Jello Sugar Free Double Chocolate Pudding topped with Cool Whip Free.

Today’s Menu: Turkey Sausage and Turkey Pepperoni Pizza

 

 

 
Another frigid day around here again. It was a minus 12 with a wind chill factor and it didn’t get much higher than that throughout the day. I think everyone will be glad this run of Winter weather finally ends. Managed to get out and run a couple of errands that was it for the day. For dinner it was Pizza Night, Sweet Italian Turkey Sausage and Turkey Pepperoni Pizza.

I used the Meijer Pizza Thin Crusts again. They’re 130 calories and 19 net carbs for a half Pizza. So eating a full one would only be 260 calories and 38 carbs, not too bad. For my toppings I used Jennie – O Lean Sweet Italian Sausages (Which I fried ahead of time), Hormel Turkey Pepperoni, Sargento Reduced Fat Shredded Mozzarella, Ragu Original Pizza Sauce, Sliced Baby Bella Mushrooms, 1/2 (Small), and 1 small can of Sliced Black Olives.

 

 

I preheated the oven on 425 degrees. I then brushed a light coating of Extra Virgin Olive Oil and then added my toppings. Baked for about 7 minutes and then turned the broiler on and baked it an additional 1 minute. By using the broiler for a minute or so it crisped the crust a little and browned the cheese a bit, perfect! Great call on dinner tonight as it the spot, made 2 of them one for my dinner and one for Mom and Dad to snack on later tonight. For dessert later a Del Monte No Sugar Added Peach Chunk Cup.
