Today’s Menu: Turkey Sausage, Turkey Pepperoni 7″ Whole Grain Crust Pizza

 

 
For Breakfast this morning I reheated the leftover Pork Chop from last night. Then I prepared some Simply Potatoes Shredded Hashbrowns, toasted 2 slices of Healthy Life Whole Grain Bread, and my morning cup of Bigelow Decaf Green Tea. Went out to get the Sunday Papers and its a cold one out there this morning, 18 degrees! For the day it was sunny and 39 degrees. After I ate I went to McDonald’s and picked up Breakfast for Mom. Finished up some laundry Mom had started before she went to Church. After Lunch I headed over to see Dad at Rehab. He’s wanting to come home, he’s homesick and bored. It shouldn’t be too much longer before they’ll release him. Hopefully he can stay home once he gets here. Back home watched some College Basketball and relaxed. For Dinner tonight I prepared a Turkey Sausage, Turkey Pepperoni 7″ Whole Grain Crust Pizza.

 


To make the Pizza I used a Mama Mary’s 7″ Whole Grain Pizza Crust. For toppings I used Jennie – O Ground Mild Breakfast Sausage, Hormel Turkey Pepperoni, Mushrooms, Sliced Green and Black Olives, Sargento Shredded Mozzarella Cheese, and Ragu Homestyle Pizza Sauce.

 

 

 

 

To prepare my Pizza; I first preheated my oven to 450 degrees. I then got a medium size skillet, sprayed it with Pam Cooking Spray and heated it on medium heat. Next I got the roll of Jennie – O Turkey Sausage out and sliced about 1/4 of the roll off. I put the remainder in a plastic bag and put it back in the fridge to use later for a meal. I crumbled the Sausage and fried until done. Removed it from the skillet onto a paper towel lined plate and set aside.

 

 

 

I removed the pizza crust from package. Lightly brushed crust with Extra Light Olive Oil. I then gathered my toppings up. The Black Olives are already sliced but the Green Olives come whole and I had to slice them. I then topped the crust with with; the Ragu Pizza Sauce, the Sargento Mozzarella Cheese, Hormel Turkey Pepperoni, Jennie – O Turkey Sausage, and finally the Black and Green Olives. The order of layers is all up to you.

 

 

 

Next I lowered the oven temperature to 425 degrees F. Then baked on oven Pizza Pan (middle position) for about 10 minutes. You can turn the oven on broil if you want to get the crust crisper if you want. I stopped at 10 minutes and it came out perfect! The Crust baked up with a nice crunch to it and all the ingredients worked great together. I love adding these Pizza Nights! For Dessert tonight a Weight Watcher’s Cookies and Cream Ice Cream Bar.

Ham, Diced Potato, Egg, Hash 005
I made one delicious Breakfast this morning! Mom and Dad even got up a bit early and had some. I used Simply Potatoes Diced Steakhouse Potatoes and a package of Meijer Diced Ham. Using a Cast Iron Skillet I started by frying the Diced Potatoes. After about 9 minutes I then added the Diced Ham and stirred. In about 14 minutes it was ready! As the Potato/Ham was finishing I grabbed a small skillet and fried one Egg, Sunnyside Up. To serve made a bed of Potatoes and Ham and topped that with the Sunnyside Egg. Broke the Egg open and it just pulled the entire meal together! One hearty Breakfast this morning.

After Breakfast and the morning workout I went to Costco. Mom needed a few Pharmacy items and I need a few things myself. While there I picked up several cases of canned vegetables and fruits to give to our Church, for the Free Meal Dinners they provide to people and family in need. Then I picked up a couple of boxes of Snack Varieties that I take to a local Cancer Treatment Center, for patients under going out-patient Cancer Treatment. A snack tastes good while you’re getting your treatment. I know, I was there myself! Then I also came across some items for my dinner the next few nights, which I’ll start using tomorrow. Some Cilantro and Lime Seasoned Shrimp, Tuscany Seasoned Sliced Pork Tenderloin, and Walleye Fillets. Good day at Costco! Anyway for my dinner tonight I’m preparing a Mini Flatbread Pepperoni and Sausage Pizza.

 

 
While at Jungle Jim’s Market yesterday I picked up a package of Kontos Pre­Grilled Mini Oval Flatbread. Never had tried it or heard of it until I came across it in the Bakery Department. It’s pregrilled so it’s ready to eat or reheat. What I liked about it was they were the perfect size to make mini Pizzas with, plus they’re only 140 calories and 24 net carbs for a whole one (one serving)!

As I said I knew these would be perfect for Pizzas. To make the Pizzas I’ll need; the Kontos Pre­Grilled Mini Oval Flatbread, Hormel Turkey Pepperoni, Johnsonville Turkey Sausage Links, Sliced Black and Green Olives, Ragu Pizza Sauce, Sargento Reduced Fat Shredded Mozzarella Cheese.

To prepare it I started by preheating the oven on 400 degrees. The Johnsonville Turkey Sausage is precooked so all I had to do was heat up in a small skillet for 5 minutes on medium heat. Removed from the heat and sliced the Links up into small bite pieces. I then got a small baking sheet and lined it with foil and sprayed it with Pam Cooking Spray. I then took one of the Flatbreads and brushed a very light coat of Extra Virgin Olive Oil on the top of them.

Next I made my Pizza! I started by spreading 2 tablespoons of the Ragu Pizza Sauce across the top of the Flatbread. Then added the sliced Olives, Turkey sausage, Mozzarella Cheese, and topped it all with Turkey Pepperoni. Then I made a second one the same way. Laid the Flatbreads on the baking sheet and put it in the oven. I baked them for about 8 minutes, until the Cheese was melted and all items heated through.

The Flatbread provides a perfect Crust (Pizza Pie). It browned up great and had a fantastic flavor with a nice crunch! I’ll have to try different toppings using the Kontos Pre­Grilled Mini Oval Flatbread. I’ve found a good Pizza Pie Crust! For dessert later a Healthy Choice Dark Fudge Swirl Frozen Greek Yogurt.

For my Breakfast I made a Breakfast Sandwich; Fried Kahn’s Deluxe Bologna, Boar’s Head Colby Longhorn Cheese, and a Healthy Life whole Grain English Muffin. Along with my morning cup of Bigelow Decaf Green Tea! After Breakfast helped Mom with a couple of loads of laundry and it was full house cleaning day around the house. Vacuum, dusting, and straightened up the pantry. Finished the afternoon off watching some College Basketball. For dinner some delicious leftovers, Italian Turkey Rotini Pasta w/ Baked French Bread.

I enjoyed last night’s dinner so much I’m having it again! I reheated the Italian Turkey Rotini Pasta w/ Baked French Bread. The Pasta Meat Sauce is off the Jennie – O website. It turned out to be a very flavorful and meaty sauce, perfect for any pasta dish. Below I’ve the post from last night that had the recipe for the sauce. Italian Turkey Rotini Pasta w Baked French Bread 002
This recipe tonight comes from the Jennie – O website, as do many of my recipes and meals! Some Pasta just sounded good, so what better than to top it off with than some homemade Italian Turkey Pasta Sauce. I’ll need the following Ingredients; 1 (16-ounce) package JENNIE-O® Lean Ground Turkey Breast, 2 teaspoons McCormick Italian Seasoning, ½ teaspoon McCormick Garlic Powder, 1 (24-ounce) can of LaRoisa’s Sauce, 1 (1-pound) box Healthy Harvest 100% Whole Grain Rotini Pasta, and Kraft Reduced Fat Grated Parmesan Cheese. The makings of one delicious Sauce and Meal!

To prepare it in large skillet, cook the Ground Turkey as specified on the package. Always cook to well-done, 165°F as measured by a meat thermometer. Sprinkle with Italian Seasoning and Garlic Powder on top of meat. Add the Pasta Sauce and simmer for 10 minutes.

Then while Meat Sauce is simmering, prepare the Rotini Pasta according to package directions. Drain. Place desired amount of Pasta on each plate and top with the Meat Sauce. Sprinkle with Parm Cheese, and done! A winning Italian Turkey Pasta Sauce! Fantastic flavor and the Jennie – O Turkey works perfect. Saved on calories and carbs by using JENNIE-O® Lean Ground Turkey Breast and the Healthy Harvest 100% Whole Grain Rotini Pasta without losing flavor. Plenty of leftovers that I’ll be freezing for use later.

 

 

 

French Bread
To go with my Pasta Dish I baked a loaf of Pillsbury French Bread. For dessert/snack later some Peanut Butter and Crackers. I used Reduced Fat Jif Peanut Butter and Ritz Whole Grain Crackers.

 

 

 

 

 

Italian Turkey Spaghetti

Ingredients
1 (16-ounce) package JENNIE-O® Lean Ground TurkeyItalian Turkey Spaghetti
2 teaspoons Italian seasoning
½ teaspoon garlic powder
1 (24-ounce) jar spaghetti sauce
1 (1-pound) box spaghetti noodles
freshly grated Parmesan cheese, if desired
Directions
In large skillet, cook ground turkey as specified on the package. Always cook to well-done, 165°F as measured by a meat thermometer. Sprinkle Italian seasoning and garlic powder on top of meat. Add spaghetti sauce and simmer for 10 minutes.

While meat sauce is simmering, prepare noodle according to package directions. Drain. Place desired amount of noodles on each plate and top with meat sauce. Sprinkle with cheese, if desired.
Always cook to an internal temperature of 165°F.

I had an early morning Doctor’s appointment so I had to skip Breakfast. I was a bit worried about a health problem but it was nothing major, I’m on a prescription for 60 days. I always get a bit nervous when a health problem pops up, especially with my history of Melanoma Cancer. Not a bad day out today, high in the 30’s and sunny. They say in the 50’s and 60’s by Saturday! For dinner tonight I prepared a Chicken Parmesan Sandwich w/ Baked Potato.

I came across this recipe idea in the latest issue of Taste of Home, Weeknight Chicken Parmesan Sandwiches. Sounded good so I made my version of it. I’ll need; Perdue Perfect Portions Italian Style Boneless and Skinless Chicken Breasts, 1/2 cup Progresso Italian Style Bread Crumbs, 11/2 cup Ragu Pizza Sauce, 1 slice Boar’s Head Mozzarella Cheese, Kraft Reduced Fat Grated Parmesan Cheese, and Aunt Millie’s Deli Style Whole Grain Mini Sub Buns. I only made 2 of these, 1 for myself and 1 for Mom or Dad after they seen how good it looks!

I had the Chicken Breast in the freezer. I laid 2 of the Breasts in the fridge overnight to thaw. To prepare it I preheated the oven to 400°. Placed the bread crumbs in a large plastic container. Add the chicken, a piece and rolled the breast to coat. Transfer to a small baking pan that I lined with foil and sprayed with Pam Cooking Spray.

Baked, uncovered, 15-20 minutes or until no longer pink. Spooned the pasta sauce over the chicken. Sprinkled with cheeses. Baked 2-3 minutes longer or until cheese melted. Serve on the mini sub buns. This makes one delicious Chicken Sandwich! The Chicken, Sauce, Cheese all combine just right. I left the original recipe and web link at the end of the post.

For a side dish I had some large Russet Potatoes. I baked one of them and cut in half, seasoned it with McCormick Grinder Sea Salt and Peppercorn Medley. Topped it with i Can’t Believe It’s Not Butter. For dessert later a Jello Sugar Free Dark Chocolate Mousse.
 

 

 

 

Weeknight Chicken Parmesan Sandwiches

Ingredients
4 boneless skinless chicken breast halves (6 ounces each)Taste of Home
1 cup garlic bread crumbs
1 cup garlic and herb pasta sauce
1 cup (4 ounces) shredded part-skim mozzarella cheese
Grated Parmesan cheese, optional
4 kaiser rolls, split

Directions
Preheat oven to 400°. Pound chicken with a meat mallet to 1/2-in. thickness. Place bread crumbs in a large resealable plastic bag. Add chicken, a few pieces at a time; close bag and shake to coat. Transfer to a greased 15x10x1-in. baking pan.
Bake, uncovered, 15-20 minutes or until no longer pink. Spoon pasta sauce over chicken. If desired, sprinkle with cheeses. Bake 2-3 minutes longer or until cheese is melted. Serve on rolls. Yield: 4 servings.

Started off with breakfast, workout, and shower. Cooler outside today after 68 degrees yesterday. Rain on and off almost all day. So not much going on outside, stayed inside and cleaned the house today. Had to have the repairman we always use to come and do for work for us today also. We had a kitchen drawer break its slider bracket and we had to have the heating tape for our waterline replaced. It seems lately it’s always something, be it the house or car that needs repaired! For dinner tonight a new recipe, Pepperoni Pizza Bake.

Came across this Pillsbury recipe and one other in a cooking magazine and couldn’t wait to give them a try. I’m preparing the Grands Pepperoni Pizza Bake, I’m saving the other recipe for later (Sausage Crescent Cheese Balls). To make this dish I’ll need just 4 ingredients; 1 can (16.3 oz) Pillsbury™ Grands!™ Homestyle refrigerated original biscuits, 1 can (8 oz) pizza sauce, 2 cups finely shredded mozzarella cheese (8 oz), and 16 slices pepperoni (1 1/2 inch). I used Ragu Homestyle Pizza Sauce, Hormel Turkey Pepperoni, and Sargento Shredded Mozzarella Cheese (Traditional Cut).

To prepare the dish I started by heating the oven to 375°F. Sprayed 13×9-inch (3-quart) baking dish with Pam with Olive Oil Cooking Spray. Separate the dough into 8 biscuits. Cut each biscuit into 8 pieces. Then in large bowl, toss with biscuit pieces, pizza sauce and 1 cup of the cheese.Top with pepperoni and remaining 1 cup cheese. Baked for 23 minutes, and the biscuits were golden brown. The dish turned out incredible! Just a fantastic combination of 4 ingredients that work together. The Pillsbury Grands Biscuits gives it that Pizza texture and taste. You could add Mushrooms, Sausage or any of your favorite Pizza toppings to the dish. I’ve left the original recipe and web link at the end of the post. For dessert later a Jello Sugar Free Dark Chocolate Mousse.

Ingredients

1 can (16.3 oz) Pillsbury™ Grands!™ Homestyle refrigerated original biscuitsPillsbury
1 can (8 oz) pizza sauce
2 cups finely shredded mozzarella cheese (8 oz)
16 slices pepperoni (1 1/2 inch)
Directions
