Today’s Menu: Healthy Harvest Turkey Lasagna

 

 

For Breakfast this Monday morning I made a Breakfast Sandwich using; a toasted Healthy Life Whole Grain English Muffin, lightly fried a al fresco Country Style Chicken Sausage Breakfast Patty, 1/2 a slice of Kraft Deli Deluxe Sharp Cheddar Cheese, and had a cup of Bigelow Decaf Green Tea. 90 degrees, humid, and rain showers in the area out today. Not much going on today. Puttered around the shed and did a couple of things. Then did a few things around the house. For Dinner tonight I prepared Healthy Harvest Turkey Lasagna.

 

 

 

I had no clue what to prepare for Dinner tonight. Mom suggested Lasagna, so Lasagna it is! As usual when I make Lasagna I’ll be using Jennie – O Extra Lean Ground Turkey Breast, which I had in the freezer so I sat it in the fridge to thaw overnight. I use the recipe that’s on back of the Ronzoni Healthy Harvest Lasagna Box as a guide. Making changes to some of the ingredients to reduce calories and carbs. I used the following; 1lb Jennie – O Extra Lean Ground Turkey Breast, 3 cups (26 oz jar) Ragu Pasta Sauce, Sliced Mushrooms (optional), 1/2 cup Water, 1 3/4 cups (15 oz container) Kroger Part Skim Milk Ricotta Cheese, 2 cups (8 oz) or more Sargento Reduced Fat Shredded Mozzarella Cheese (divided), 1/2 cup grated Kraft Parmesan Cheese, 1/2 cup chopped fresh Parsley, 1/2 tsp Sea Salt, 1/4 tsp ground Black Pepper, and 6 pieces Ronzoni Healthy Harvest Lasagna, uncooked. Cutting calories and carbs by using Jennie – O Extra Lean Ground Turkey Breast and the Kroger Part Skim Milk Ricotta Cheese, Ronzoni Healthy Harvest Pasta, and Sargento Reduced Fat Shredded Cheese.

 

Then to prepare it, Heat oven to 350°F. In a skillet, over medium-high heat, brown Turkey; season to taste and drain of excess fat, very little fat to drain. Add the Pasta Sauce and Water; simmer about 10 minutes. Pour about 1 cup Sauce on bottom of a 13×9 foil pan. Arrange 3 UNCOOKED pasta pieces lengthwise over sauce; cover with 1 cup sauce. Spread one-half Ricotta Cheese and Mozzarella Cheese over Sauce. Repeat layers of RONZONI HEALTHY HARVEST LASAGNA, Sauce and Ricotta Cheese, Mozzarella. Top with layer of RONZONI HEALTHY HARVEST LASAGNA and remaining Sauce; sprinkle with Mozzarella Cheese. Cover with foil. Bake 45 minutes. Remove foil; bake additional 10 minutes or until hot and bubbly. Let stand 10 minutes before cutting.

 

 

Healthy Harvest Turkey Lasagna

The Lasagna came out perfect, love this recipe! Everything tasted so fresh and as usual the Jennie -O Turkey was the star bringing everything together to make one delicious dish! Plenty of leftovers for another meal or to freeze for later use. I’ve frozen this several times and it always comes out great after reheating. I left the original recipe at the bottom of the post. With just a few changes I saved on calories, carbs, and fat grams. The original recipe is at the end of the post. For Dessert/Snack a bowl of Skinny Pop – Pop Corn with a Coke Zero to drink.

 

 

 

Ronzoni Healthy Harvest Whole Grain Lasagna

Ingredients
1 lb ground beef
3 cups (26 oz jar) spaghetti sauce
1 small container of baby bella mushrooms, sliced
1 1/2 cups water
1 3/4 cups (15 oz container) ricotta or small curd cottage cheese
2 cups (8 oz) shredded mozzarella or Monterey Jack cheese, divided
1/2 cup grated Parmesan cheese
2 eggs
1/4 cup chopped fresh parsley
1/2 tsp salt
1/4 tsp ground black pepper
9 pieces RONZONI HEALTHY HARVEST LASAGNA, uncooked

Directions
Heat oven to 350°F. In 3-quart saucepan over medium-high heat, brown meat; drain. Add spaghetti sauce, mushrooms, and water; simmer about 10 minutes. Meanwhile, in medium bowl, stir together ricotta cheese, one-half mozzarella cheese, Parmesan cheese, eggs, parsley, salt and pepper. 5. Pour about 1 cup sauce on bottom of 13×9-inch baking dish. Today’s Menu: Healthy Harvest Turkey Lasagna

Sunny, humid and 88 degrees out this afternoon. Later on went to spend some time with Dad at the center. For Dinner tonight I prepared Healthy Harvest Turkey Lasagna.

 

 

As usual when I make Lasagna I’m using Jennie – O Extra Lean Ground Turkey Breast, which I had in the freezer so I sat it in the fridge to thaw overnight. I use the recipe that’s on back of the Ronzoni Healthy Harvest Lasagna Box as a guide. Making changes to some of the ingredients to reduce calories and carbs. Today’s Menu: Leftovers: Healthy Harvest Turkey Lasagna and Baked Garlic Loaf Bread

 

 


Well another long day as we had to go calm Dad down twice today. The Dementia has really kicked in now. But it’s been a very long day so it was going to be something easy to prepare tonight for Dinner. So I dug through the freezer a bit and found a container with 3 servings of Lasagna in it! No more Dinner problems! I had made the Lasagna and froze the leftovers, which is sure coming in handy for Dinner tonight. I let thaw in the fridge until Dinner time. It heated up great and was delicious! For Dessert later Jello Sugar Free Dark Chocolate Pudding topped with Cool Whip Free. I’ve the original Lasagna post below for ingredients and recipe directions. Today’s Menu: Healthy Harvest Turkey Lasagna and Baked French Bread

 

 

Well why not make my favorite Breakfast for this last Breakfast of 2017! I prepared some Simply Potatoes Shredded Hash Browns, Heated up some Meijer Diced Ham, fried an Egg Sunnyside Up, made a cup of Bigelow Decaf Green Tea. I made a bed of the Hashbrowns in a bowl and sprinkled them with Sargento Reduced Fat Sharp Cheddar Cheese. Next I put the Diced Ham over top the Hash Browns then placed the Sunnyside Up Egg on it it top of off. One of my favorite Breakfasts! Went out to get the Morning Papers and it is down right COLD! 1 degree and with the light wind it was below zero! Grabbed the Papers and got back inside as quick as I could. We seen a couple of rays of sunshine later in the day but only had a high of 17 degrees. So with nothing going on outside I stayed in and did a load of laundry. I then cleaned the Kitchen and cleaned the oven. For Dinner tonight Healthy Harvest Turkey Lasagna and Baked French Bread.

Today’s Menu: Mini Flatbread Pepperoni and Sausage Pizza

 

 

For Breakfast on this 1st day of April I had a Poached Egg that I served on a Healthy Life Whole Grain English Muffin. They moved Dad from the hospital back over to the Rehab Center he was just at last week. They are going to try more therapy and if that doesn’t work he will have to stay in an assisted living center, hope it doesn’t come to that. So after Breakfast I went to Kroger and picked up a few snacks that Dad likes. Then after Lunch I went on over to see Dad. Back home took it easy and watched a few shows that I had recorded. For my dinner tonight I’m preparing a Mini Flatbread Pepperoni and Sausage Pizza.

 

 

 

 

While at Jungle Jim’s Market the other day I picked up a package of Kontos Pre­Grilled Mini Oval Flatbread. I had used these once before and really liked the way they came out. It’s pregrilled so it’s ready to eat or reheat. What I liked about it was they were the perfect size to make mini Pizzas with, plus they’re only 140 calories and 24 net carbs for a whole one (one serving)!

 

 

 

 

 

To make the Pizzas I’ll need; the Kontos Pre­Grilled Mini Oval Flatbread, Hormel Turkey Pepperoni, Johnsonville Turkey Sausage Links, Sliced Black and Green Olives, Ragu Pizza Sauce, Sargento Reduced Fat Shredded Mozzarella Cheese.

 

 

 


To prepare it I started by preheating the oven on 400 degrees. The Johnsonville Turkey Sausage is precooked so all I had to do was heat up in a small skillet for 5 minutes on medium heat. Removed from the heat and sliced the Links up into small bite pieces. I then got a small baking sheet and lined it with foil and sprayed it with Pam Cooking Spray. I then took one of the Flatbreads and brushed a very light coat of Extra Virgin Olive Oil on the top of them.

 

 

 

 

Next I made my Pizza! I started by spreading 2 tablespoons of the Ragu Pizza Sauce across the top of the Flatbread. Then added the sliced Olives, Turkey sausage, Mozzarella Cheese, and topped it all with Turkey Pepperoni. Then I made a second one the same way. Laid the Flatbreads on the baking sheet and put it in the oven. I baked them for about 8 minutes, until the Cheese was melted and all items heated through.

 

 

 

 

 

The Flatbread provides a perfect Crust (Pizza Pie). It browned up great and had a fantastic flavor with a nice crunch! I’ll have to try different toppings, like Ham or Chicken, using the Kontos Pre­Grilled Mini Oval Flatbread. I’ve found a good Pizza Pie Crust and it’s only 140 calories per serving! For dessert later a Weight Watcher’s Cookies and Cream Ice Cream Bar.

Today’s Menu: Spaghetti and Meatballs

To start the day I toasted a couple of Eggo Waffles and had my morning cup of Bigelow Decaf Green Tea. After Breakfast I went to the locaL Kroger up the road, for a few items I needed. Warmer this morning than it’s been in a while, 47 degrees. But showers most of the day and into the mid 50’s. Did a few chores around the house and then went up to spend the afternoon with Dad. Back home, for dinner tonight I prepared Spaghetti and Meatballs.

 

 

It seems like forever since I’ve made Spaghetti and Meatballs and it really sounded good for Dinner tonight! To makeSpaghetti and Meatballs 002 it I’m using my favorite, Ronzoni Healthy Harvest Whole Wheat Spaghetti. Cooks up great and an excellent tasting Pasta. It’s 180 calories and 35 net carbs per serving. Then for my Meatballs I used Honeysuckle White Turkey Meatballs. The Honeysuckle White Turkey Meatballs are good size, meaty, and have a fantastic taste and their 190 calories and 5 net carbs for 3 Meatballs. For my Pasta Sauce I used Ragu Mushroom Sauce and topped with some Kroger Private Selection Shaved Parmesan Cheese.

To prepare the dish; I cooked the Spaghetti as to the package instructions. In a sauce pan I add my Meatballs and Ragu Sauce, heated on medium low until heated through. In a large bowl I added the finished Spaghetti, the Sauce and Meatballs and mixed and served. Topped the Spaghetti with the Shaved Parmesan Cheese.

 

 

Cheesy Bread

I also prepared some Baked Cheesy Bread. Another easy one, using Healthy Life Whole Grain Bread, Sargento Reduced Fat Shredded Mozzarella Cheese, and I Can’t Believe It’s Not Butter. Just Butter the Bread and add your Cheese on top. Then bake on 400 degrees until the Bread is toasted and Cheese is melted. For Dessert later a Weight Watcher’s Cookies and Cream Ice Cream Bars.

For Breakfast this Saturday morning I prepared some Glier’s Turkey Goetta, been too long since I’ve had Goetta. I whole-wheat-spaghetti-and-turkey-meatballs-003also prepared some Simply Potato Shredded Hash Browns, toasted 2 slices of Healthy Life Whole Grain Bread, and had a cup of Bigelow Decaf Green Tea. Love a good Breakfast! Overnight we got some freezing rain but my about 5:00 this morning it started warming up and it was all rain for the rest of the day. You got to love this Ohio weather! The last two days snow and below zero with the wind chill. Today Thunderstorms, rain, and a high in the 50’s! Then Sunday back to 25 degrees and snow flurries. Don’t like the weather here in Ohio,stick around 10 minutes it will change! For Dinner tonight its Whole Wheat Spaghetti and Turkey Meatballs w/ Baked French Bread.

 
You just can’t go wrong with Spaghetti and Meatballs! And you can make it healthier by using Whole Wheat Spaghetti and Meatballs 002Spaghetti and Turkey Meatballs. I used Ronzoni Healthy Harvest Whole Wheat Spaghetti and Turkey Meatballs along with Honeysuckle White Turkey Meatballs. I always use Ronzoni Healthy Harvest Pasta. The Spaghetti is 180 calories and 35 net carbs, which isn’t bad for Pasta. The Honeysuckle White Turkey Meatballs are some of the best I’ve found, fantastic taste and their 190 calories and 6 carbs for 3 Meatballs. For my Pasta Sauce I used Ragu Mushroom Sauce and topped with some Kroger Private Selection Shaved Parmesan Cheese. I also baked a loaf of Pillsbury French Bread.

I only had a cup of Bigelow Decaf Green Tea for Breakfast this morning, not much of an appetite this morning. After my Tea I went to Meijer for a few items I needed. A bit warmer today, 86 degrees with some humidity later in the afternoon. Took my car up to the local car wash and had it cleaned, much needed. Then stopped by the bank and got gas before coming home. Not a whole lot to do today so I caught up on some little jobs in and around the house. For dinner tonight I prepared Spaghetti and Meatballs.

For Breakfast this morning I fried up a couple of Jennie – O Turkey Breakfast Sausage Links. Love these Sausage Links,only 65 calories for 2 links. Then I made some Simply Potatoes Hash Browns, toasted 2 slices of healthy Life Whole Grain Bread, and a cup of Bigelow Decaf Green Tea. Another really humid day out there again! Not quite as hot, 84 degrees, but it was humid early in the morning and had a couple of passing showers. Not a whole lot to do today, just got caught up on some small jobs around the house. So for Dinner tonight I prepared Steak Hoagie Patties w/ Baked Crinkle Fries.

While at Kroger yesterday I was in the frozen foods and spotted some J.T.M. Beef Hoagie Patties. It had been quite some time since I’ve had these and they looked good and I grabbed a package of them. Growing up we would have the J.T.M. Burger Patties all the time, and it’s been even longer since I’ve had the Burgers. So after getting a package of the Hoagie Patties I picked up a package of Kroger Whole Wheat Hoagie Rolls. I’ll also need some Baby Bella Mushrooms, Sargento Ultra Thin Sliced Provolone Cheese, and Ragu Original Pizza Sauce. I’ll also be baking some Ore Ida Crinkle Fries.

 

 

I started by preheating the oven at 400 degrees, I’ll be baking the Fries and toasting the Hoagie Buns. The Fries take 18 minutes and the Buns about 3 minutes.

As I said I’ll be using the J.T.M. Beef Steak Hoagies. They come pre-cooked and frozen so all you have to do is warm them back up. You can bake them, pan fry them, or grill them, I pan fried mine. It took about 3– 4 minutes per side, after flipping them over I added the Provolone Cheese with a minute of cooking time left. As the Hoagies were cooking I sliced up some Mushrooms and sauteed them and in a small sauce pan and I heated up the Sauce in another small sauce pan on medium low.

With everything getting done at the same time I assembled the Hoagie. Started by placing the Cheese covered Hoagie Pattie on the bottom Bun. Next added the Sauce and topped it with the Mushrooms and the top half of the Bun. I’m not a big Beef eater anymore but these are really good! Nice flavor and cook up very easy.

Served it with the baked Ore Ida Crinkle Fries along with a side of Hunt’s Ketchup for dipping. For dessert later a Jello Sugar Free Dark Chocolate Pudding topped with Cool Whip Free.

 

 

 

 

 

J.T.M. Beef Hoagie Patties

Place one frozen patty on a microwave safe plate. Heat on medium power for 2-1/2 minutes, flip, And heat for another 2-1/2 minutes. For multiple patties, add one minute heating time per side for each additional patty.

Today’s Menu: Spaghetti and Meatballs

 
To jump start my day I made one our favorites, Skillet Potatoes and Ham for Breakfast. I used 1 package of Simply Potatoes Steakhouse Seasoned Diced Potatoes and a package of Meijer Diced Ham to prepare it. Just cook the Spaghetti and Turkey Meatballs 004Potatoes according to the package instructions and with about 5 minutes of cooking time left add the Diced Ham. Beautiful morning out, and NO RAIN! Sunny with a high near 70 degrees. I stayed home all day and caught up on some house cleaning and yard work. It was dusting and ran the vacuum inside and outside got the cart out pulled some weeds out of Mom’s flower beds and got the leaf blower out and cleaned around the house. I don’t know how we always end up with all the leaves, limbs, and blowing trash. Everything done took a ride on the cart around the neighborhood and enjoyed the sunshine! For dinner tonight its Spaghetti and Meatballs with a fresh baked Italian Bread Loaf.

Fiber may help lower LDL (bad) cholesterol and total cholesterol, therefore reducing the risk of heart disease. It can also help lower blood sugar to better manage diabetes.

Dietary fiber is the edible part of plants, primarily carbohydrates that are resistant to digestion and absorption in the small intestine. Fiber may be digested by fermentation in the large intestine. By eating high fiber foods you feel fuller, eat less, with fewer absorbed calories.

Fiber comes in two basic forms – soluble and insoluble. Soluble fiber is found in fruits, vegetables, seeds, brown rice, oats and barley. It prevents or reduces the absorption of certain substances into the bloodstream. Insoluble fiber is found mainly in whole grains and on the outside of seeds, fruits, legumes, and other foods. It is like a sponge that swells within the intestine to promote more efficient elimination and alleviate some digestive disorders.

Fiber is found only in plant foods and passes through the digestive tract without being completely broken down. Being indigestible, fiber provides no nutrients to the body, which is why for many years it was removed from processed foods like white bread. But, nutritionists have since discovered that fiber performs valuable functions precisely because it is not digested, and it is essential to good health.
