Today’s Menu: Turkey Meatball Mimi Sub Sandwich

Well I started out on having Spaghetti and Turkey Meatballs but by the time it was dinner I just wasn’t that hungry but I had already made my Turkey Meatballs and Sauce. So I went ahead and used three of the Meatballs along with 1 1/2 tablespoons of the Sauce and put them on a Healthy Life Whole Grain Hot Dog Bun, and I had my Mini Sub! I used Honeysuckle White Turkey Meatballs, I think the best tasting pre-made Meatballs there are, Bella Vita Low Carb Pasta Sauce, fresh grated Smoked Dutch Gouda Cheese, and Healthy Life Whole Grain Buns for my ingredients. Lite, Healthy, and delicious! I could have used a 2% Mozzarella Cheese but I just can’t pass up a chance to use that Gouda! No sides needed with this. For dessert later a bowl of Breyer’s Carb Smart Vanilla Ice Cream topped with Del Monte No Sugar Added Sliced Peaches.

I was looking for a Turkey Meatball recipe when I came across this on on the Honeysuckle White web site and they sounded too good not to pass along! The home page link is:

Maple-Glazed Meatballs

2 packages (about 1 1/2 pounds) Honeysuckle White® Fresh Italian Style Turkey Meatballs

Sauce:
1/3 cup ketchup
3 tablespoons water
3 tablespoons soy sauce
1/4 cup pure maple syrup
1/2 teaspoon ground allspice

*Combine sauce ingredients in a saucepan over medium heat. Cook 5 minutes or until bubbly, stirring occasionally.
*Add meatballs and simmer for 15 minutes or until meatballs and sauce are hot.
*Serve on small plates with decorative picks and extra sauce drizzled on top.

Today’s Menu: Shrimp and Linguine Alfredo

Tried a new one for dinner tonight, Shrimp and Linguine Alfredo. I used a medium size White Shrimp, Ronzoni Healthy Harvest Whole Wheat Linguine, Kraft 2% Sharp Cheddar Shredded Cheese, Kraft Shredded Parm Cheese, and seasoning. The Classico Light Creamy Alfredo Sauce is only 60 calories and 3 carbs and very tasty! With using the Light Sauce along with the Whole Wheat Pasta, and 2% Cheese your saving a lot of calories and carbs. It’s the first time I made Shrimp Alfredo and it turned out delicious and I’ll be fixing it again soon. I had Healthy Life Whole Grain Bread on the side. For dessert/snack later I made some Stuffed Bacon Mushrooms. I’ll leave the Mushrooms recipe on a separate post.

Classico Light Alfredo Shrimp Linguine

Ingredients

1 jar (15 oz.) Classico® Creamy Alfredo Pasta Sauce
8 ounces Ronzoni Healthy Harvest Whole Grain Linguine
1 tablespoons olive oil
1 pound large, peeled and deveined raw shrimp
1/4 cup chopped fresh basil or parsley

Directions

Cook pasta according to package instructions. Drain and keep warm.
Meanwhile, heat oil in a large skillet over medium heat. Cook shrimp and basil for 2 to 3 minutes, or until shrimp are pink, stirring occasionally. Add Pasta Sauce, and cook for 3 to 4 minutes or until heated through, stirring occasionally. Season with salt and pepper to taste if desired. Serve hot with cooked pasta.

Asian Pork & Mushrooms w/ Brown Rice and pita Bread

Today’s Menu; Asian Pork & Mushrooms w/ Brown Rice and pita Bread

I used some of the leftover Asian Pork & Mushrooms for dinner. I took a Meijer Bakery Wheat Pita Bread and topped it with Uncle Ben’s Brown Rice and then topped that with the Asian Pork & Mushroom. It wasn’t anything difficult or fancy but it was delicious! The Brown Rice went great with The Asian Pork and the Pita Bread was great as it absorbed all the juice from the Asian Pork &Mushrooms. Really a great trio together! For dessert later a Jello Sugar Free Chocolate Pudding topped with Cool Whip Free.

Today’s Menu: Spaghetti and Turkey Meatballs w/ Bella Vita Low Carb Pasta Sauce and…

It was spaghetti and Meatballs tonight! I used Ronzoni Healthy Harvest Whole Wheat Spaghetti along with Honeysuckle White Turkey Meatballs. Topped everything with Shredded Parmesan Cheese and Bella Vita Low Carb Pasta Sauce (Roasted Garlic Flavored). Along with the great taste the Sauce is only 70 Calories and a mere 6 Carbs! I also had Healthy Life Whole Grain Bread. For dessert/snack later some Chip‘ins Popcorn Chips along with Fiesta Salsa.
