Egg White Delight McMuffin: McDonald’s To Roll-Out Breakfast Item Nationally
McDonald’s is rolling out a yolk-free version of its Egg McMuffin this spring.

The world’s biggest hamburger chain says the “Egg White Delight” will be made with a whole grain muffin, Canadian bacon and white cheddar cheese. It will be available nationally April 22 and clock in at 250 calories, compared with 300 calories for a regular Egg McMuffin.

The Oak Brook, Ill.-based chain says the egg whites will be cooked on the grill with a spatula. Customers can request the egg whites for Egg White Delight McMuffinother breakfast sandwiches as well. When asked whether there would be an extra charge for the egg white substitutes, McDonald’s spokeswoman Ofelia Casillas said in an email that the company doesn’t stipulate pricing to franchisees.

McDonald’s had announced last year that it was testing the breakfast sandwich. It was revealed as part of the company’s announcement that it would begin posting calorie counts on menu nationwide ahead of a new federal regulation.

The move was also intended to address criticism that fast-food chains such as McDonald’s Corp. contribute to rising obesity rates and appeal to customers looking for healthier menu options.

The launch date was reported earlier by The Daily Meal, a website that covers food news.

Today’s Menu: BBQ Baked Pork Chop w/ Sliced New Potatoes, Seasoned Blackeye Peas, and Whole Grain BreadBaked BBQ Chop 002

Not much going on around here today and outside it’s gloomy, cold, and snow flurries, BLAH! For dinner I prepared a BBQ Baked Pork Chop w/ Sliced New Potatoes, Seasoned Blackeye Peas, and Whole Grain Bread.

I had a Center Cut Pork Loin Chop in the freezer that I set out over night in the fridge to thaw. About noon today I marinated it in JB’s Fat Boy HaugWaush BBQ Sauce until I was ready to bake it. To prepare I baked it a small broiler pan that has a rack in it. After I preheated the oven to 400 degrees I baked the Chop for minutes, until the temperature reached 165 degrees. The Chop came out moist and flavorful. The JB’s Fat Boy Sauces are the best, whether it’s Pork, Chicken, or Beef their sauces are hard to beat.
For side dishes I had Del Monte Sliced New Potatoes, Margaret Holmes Seasoned Blackeye Peas, and a baked small castiron skillet of Martha White Cornbread. For the Potatoes and Blackeye Peas just empty the cans into a small sauce pan and heat and serve. The Cornbread was made with Martha White Brand Corn Meal. For dessert later a Jello Sugarless Dark Chocolate Pudding.

Today’s Menu: Sweet Asian Chili Flavored Chicken Wings w/ Oven-Roasted Fingerling Potato Fries

I picked up some more of the Tyson Sweet Asian Chili Flavored Chicken Wings. Their a breeze to prepare; just bake at 450 degrees for 38 minutes and you have Wings! I love the Sweet Asian Seasonings on these. A nice mild heat with a bit of Chili taste, fantastic with Litehouse Light Bleu Cheese dressing/Dip.

Along with the Wings I made some Oven-Roasted Fingerling Potato Fries. I seasoned them all with McCormick Spices; Grinder Sea Salt, Grinder Black Peppercorn, Garlic Powder, and Chili Powder. I baked them at 450 degrees for 26 minutes. Like the Wings these are full of flavor! The seasonings blend just right for the fries. When you first take them out of the oven sprinkle them with Crumbled Bleu Cheese. For dessert/snack later a 100 Calorie Mini Bag of Jolly Time Pop Corn.

CONVENTIONAL OVEN
1 Preheat oven to 450°F.
2. Line a rimmed baking sheet with foil and spray with non-stick spray.
3. Place frozen chicken wing sections on pan in a single layer.
4. Cook on upper rack for 35 – 38 minutes or until juices run clear when thickest part of the chicken is pierced and temperature on instant read thermometer reaches 180°F. For crisper wings: Cook wing sections on a non-stick sprayed baking rack over a foil-lined rimmed baking sheet.

Oven-Roasted Fingerling Potato Fries

Ingredients:

Fingerling Potatoes
Extra Virgin Olive Oil
Garlic Powder
Sea Salt
Pepper
Chili Powder
Crumbled Bleu Cheese

Directions:

1.) Thoroughly clean and scrub the potatoes.

2.) Cut the potatoes in half. This will allow the fingerlings to cook faster and also gives them a nice crisp.

3.) Toss in olive oil. I used about 2 tablespoons, but this will vary by how many potatoes you use. Just use enough oil to give the potatoes a nice coat. Add your seasonings.

4.) Put on a baking sheet.

5.) Cook in the oven for 25-35 minutes at 450 degrees. The potatoes should be tender in the middle when done. Sprinkle with Crumbled Bleu Cheese when done.

Today’s Menu: Baked Sweet Asian Chili Wings w/ Baked Crinkle Fries

 
What better to have to eat while watching a full day of football than Chicken Wings, Baked Sweet Asian Chili Wings! I love these Wings from Tyson. The seasoning is just too good! They taste like the name; a little sweet with a hint of chili heat. Served them with a Litehouse Big Bleu (Bleu Cheese) Dipping Sauce. Great Dip, thick and full of Bleu Cheese. For a side I also had Ore Ida Crinkle Fries. I baked both at 450 degrees. My type of dinner used 1 large baking sheet and 1 small baking sheet. Easy clean up! For dessert later picked up a new dessert the other day, Weight Watchers Vanilla Bean and Dutch Chocolate Ice Cream Mini Sandwiches. Their only 80 calories and 18 carbs.

Uncooked: For safety, product must be cooked to an internal temperature of 180°F as measured by a thermometer.
CONVENTIONAL OVEN
1 Preheat oven to 450°F.
2. Line a rimmed baking sheet with foil and spray with non-stick spray.
3. Place frozen chicken wing sections on pan in a single layer.
4. Cook on upper rack for 35 – 38 minutes or until juices run clear when thickest part of the chicken is pierced and temperature on instant read thermometer reaches 180°F. For crisper wings: Cook wing sections on a non-stick sprayed baking rack over a foil-lined rimmed baking sheet.
GRILL

1. Spray grill with non-stick spray prior to cooking.
2. Gas Grill: Heat only one side of grill. Charcoal Grill: Pile coals on only one side of grill and heat.
3. Place wings on grill away from the heat. Cook, covered, until wings begin to brown.
4. Move wings directly over heated side of the grill and turn frequently.
5. Cook until the temperature in the thickest part reaches 180°F on an instant read thermometer. Appliances vary. Cooking times approximate. Adjust accordingly to ensure internal temperature reaches 180°F.

COOKING TIMES AND OVEN TEMPERATURES MAY VARY, ADJUST ACCORDINGLY.

Tried a new Tyson Wing for dinner tonight, Sweet Asian Chili Flavored Chicken Wings. Like the others easy to prepare; just bake at 450 degrees for 38 minutes and you have Wings! These Wings were fantastic! The Sweet Asian Chili seasoning was perfect and made a nice glaze on the Wings. I had a side of Litehouse Gorgonzola Dressing and Dip to dip the Wings in. For a side I had Alexia Julienne Fries again. Really like these low calorie and carbs and baked in 25 minutes. For dessert later a Jello Sugarless Chocolate Pudding.

Pickled Beets

Pickled Beets
I’m not a fan of Beets but I thought I would pass along my Mom’s recipe, which came from my Grandmother, for Pickled Beets. My Mom loves Pickled Beets but I never aquired the taste for them. Anyway here’s her recipe.
Ingredients;
4 – 5 bunches of Beets, the bunches will contain anywhere from 4 – 5 Beets. This amount, depending on the size of the Beets, will make 2 – 3 quarts.
Quart Mason Jars and Lids
1 cup Water
2 cups Sugar
2 cups White Cider Viniger
1 – 1.5 oz. container of McCormick Pickling Spice
Directions:
(Preparing the Beets)
* Wash the Beets and trim the leaf steams, except 1″ from the top of the Beet.
* Heat a large kettle of water to a full boil and add Beets.
* Boil Beets until they are tender, fork tender
* Drain water from Beets and cut remaining stem and peel Beets. Cut Beets in half or thirds and set aside.
(Preparing the Pickling Mixture)
* In a large sauce pan add: 1 cup Water, 2 cups Sugar, 2 cups White Cider Viniger, and 1/2 of the 1.5 oz. container of McCormick Pickling Spice. Heat and bring to a boil. this amount will picle 2 – 3 quarts. The recipe as is can be doubled or tripled depending on how many quart you’ll be doing.
* When mixture comes to a boil you can add your Beets to the mixture and reduce heat. Turn off heat and slowly pour the mix into the quart jars. Another way is to add your Beets to the jars and after the Pickling Mixture comes to boil add it to the jars that already contain your Beets. Either way when jars are full seal your quart jars and fasten lids.
*The 4 bunches of Beets my Mom had produced 2 quarts.*

Today’s Menu: Spaghetti and Turkey Meatballs w/ Bella Vita Low Carb Pasta Sauce

It was spaghetti and Meatballs tonight. I used Ronzoni Healthy Harvest Whole Wheat Spaghetti along with Honeysuckle White Turkey Meatballs. Topped everything with Shredded Parmesan Cheese and Bella Vita Low Carb Pasta Sauce (Roasted Meat Flavored). Along with the great taste of the Pasta Sauce it’s also only 70 Calories and a mere 6 Carbs! I also had Healthy Life Whole Grain Bread. For dessert a Yoplait Banana/Chocolate Smoothie.

Fried Shrimp w/ Mac & Cheese

Today’s Menu: Deep Fried Shrimp w/ Mac & Cheese

Broke out the ole Fry Daddy to fry my Shrimp with! haven’t used it in years and with a little cleaning it’s as good as new. I used Large White Shrimp and I rolled them in Hooter’s Wing Breading. I fried them in extra Virgin Olive Oil for 5 minutes and then laid them on a paper towel lined plate to drain the excess Oil off. Served with a side of Kroger Brand Medium Wing Sauce for dipping. Shrimp came out delicious! Next time though I’ll use a bigger Shrimp if I deep fry them. The smaller ones got done real quick.

For a side I had Chef Boyardee Mac & Cheese. First time I tried the Boyardee Brand of Mac & Cheese and it was quite good. It comes in a microwavable can and has 2 servings in it. For dessert later a Smart One Fudge Brownie Chocolate Sundae.

It’s National ‘Eat Italian Food’ Day today so it was spaghetti night tonight! I used Ronzoni Healthy Harvest Whole Wheat Spaghetti along with Honeysuckle White Turkey Meatballs. Topped everything with Shredded Parmesan Cheese and Bella Vita Low Carb Pasta Sauce (Meat Flavored). Along with the great taste the Sauce is only 70 Calories and 6 Carbs! I also had healthy Life Whole Grain Bread that I buttered and then sprinkled with Shredded Parm Cheese. Then I baked it at 350 degrees for 7 minutes. Makes a good side for any Pasta dish. For dessert/snack later a Yoplait Delight Chocolate Eclair Parfait.
