The Meatballs are made from Ground Turkey, Quick Cooking Oats, Green Onions, Jalapeno, Egg Whites, Coarsely Ground Black Pepper, and Canola Oil. HOISIN-WHISKEY GLAZED MEATBALLS
Hoisin sauce, also called Chinese barbecue sauce, adds a lot of flavor and helps to thicken this Asian-inspired glaze. Recipe for Hoisin-Whiskey Glazed Meatballs from our Appetizer recipe section.

Ingredients
8 oz ground turkey 250 g
1/3 cup quick cooking oats 75 mL
1/3 cup finely chopped green onion (green and white parts) 75 mL
1 medium jalapeno chili pepper, finely chopped (with seeds)
2 egg whites
1/4 tsp coarsely ground black pepper 1 mL
2 Tbsp canola oil 30 mL

Glaze
2 Tbsp hoisin sauce 30 mL
2 Tbsp Bourbon or Canadian whiskey 30 mL
2 tsp

Directions

1 – In medium bowl, combine turkey, oats, green onion, chili pepper, egg whites, pepper and 1 Tbsp (15 mL) of canola oil and shape into 24 small meatballs (about 1 Tbsp/15 mL each).
2 – Heat 1 Tbsp (15 mL) canola oil in large, nonstick skillet over medium heat. Cook meatballs 6 minutes or until no longer pink in center, turning frequently.
3 – Meanwhile, in small bowl, stir together hoisin sauce, bourbon and sugar substitute.
4 – Pour hoisin mixture over meatballs in skillet and cook 15 seconds, stirring gently until well coated. Serve with wooden picks.
NOTES:

Recipe Yield: Yield: 6 servings.

Where’s the Beef Bean Burgers
Ingredients
Preparation time: 15 minutes
Cooking time: 4–6 minutes.
Standing time: 15 minutes

1 can (15 ounces) pinto beans, rinsed and drained
1/2 15-ounce can black beans, rinsed and drained
1/2 cup uncooked quick-cooking oats
1/4 cup liquid egg substitute
1/4 cup no-salt-added ketchup
1/8 teaspoon garlic powder
1/4 teaspoon liquid smoke
2 dashes cayenne pepper
2 green onions, finely chopped
Cooking spray
2 tablespoons corn oil

Directions
Yield: 5 burgers

Serving size: 1 burger

1 – Combine rinsed and drained pinto and black beans in a large bowl; mash well using a potato masher. Stir in oats, egg substitute, ketchup, garlic powder, liquid smoke, cayenne pepper, and green onions; mix well. Allow mixture to stand 15 minutes to thicken, then shape into 5 (4-inch) patties approximately 1/2-inch in thickness.

2 – Coat a large, nonstick skillet with cooking spray, add oil, and warm over medium to medium-high heat. Add burgers and cook 2–3 minutes on each side, or until lightly browned; turn using a large spatula to prevent burgers from breaking apart. Serve on whole wheat buns topped with favorite burger toppings.

Mini Chipotle-Spiced Turkey Meatloaves
Miniature veggie-stuffed turkey meatloaves, spiced with a smoky chipotle sauce and baked in a muffin pan, make for a fun weeknight dinner recipe that’s a departure from the norm.

INGREDIENTS
MEATLOAF
1 small onion, chopped
1 stalk celery, chopped
1 medium carrot, peeled and chopped
2 chipotle peppers (canned in adobo sauce)
1 (16-ounce) package JENNIE-O® Extra Lean Ground Turkey Breast
½ cup quick-cooking oats
2 egg whites
TOPPING
¼ cup ketchup
1 tablespoon chipotle pepper adobo sauce (from canned peppers used in meatloaf)
1 tablespoon brown sugar

DIRECTIONS
1) Heat oven to 350°F. Mist 6 hole large muffin pan with cooking spray. In bowl of food processor, place onion, celery and carrot. Process until finely chopped. Add chipotle peppers; pulse until combined. In large bowl, combine turkey breast and vegetable mixture. Add oats and egg whites; mix until combined.
2 ) Place ⅔ cup turkey into each muffin cup. Bake 20 minutes. For topping in small bowl, combine ketchup, chipotle pepper adobo sauce and brown sugar; set aside.
3) Spoon topping over each meatloaf. Bake 5 to 10 minutes or until meatloaves are well-done, 165°F as measured by a meat thermometer. Let meatloaves stand 5 minutes before serving.
* Always cook to an internal temperature of 165°F.
