Mouth-Watering Turkey Patty Melts
The name says it all! Caramelized onions, melted cheese and lean turkey patties served on rye. At under 500 calories per serving, this is a lean burger favorite that the whole family will love.
Total Time – 1 Hour
Serving Size – 4 Servings

INGREDIENTS
1½ tablespoons butter, divided
1 cup chopped onion
1 (16-ounce) package JENNIE-O® Lean Turkey Burger Patties
8 slices American or Cheddar cheese
8 slices rye or pumpernickel bread

DIRECTIONS
1) In skillet, melt 1 tablespoon butter over medium heat. Add onion and cook 5 to 10 minutes or until tender and golden brown, stirring occasionally.

2) Spray skillet with nonstick cooking spray or add 1 to 2 teaspoons of oil. Preheat skillet over medium heat. Place burger patties in hot skillet. Cook approximately 15 to 17 minutes turning occasionally (2-3 times). Always cook to well-done, 165°F. as measured by a meat thermometer.

3) Place 1 cheese slice over each slice of bread. Add patties and top with onions. Close sandwiches with remaining bread, cheese side down. In skillet, melt 1 tablespoon butter.

4) Cook sandwiches 3 minutes per side or until browned and cheese is melted.
* Always cook to an internal temperature of 165°F.

Grilled Turkey Pastrami Rachel
If you love a good Rueben, you’ll love its better half, the Rachel. This Grilled Turkey Pastrami Rachel is piled high with lean turkey pastrami, melted Swiss cheese and and crunchy coleslaw. It’s a lean take on a classic favorite.
Total Time 15 Minutes
Serving Size 2 Servings

INGREDIENTS
2 – slices pumpernickel or sourdough rye bread
2 – slices Swiss cheese
4 – ounces thinly sliced JENNIE-O® 95% Fat Free Turkey Pastrami
½ – cup deli coleslaw
2 – tablespoons low-calorie Russian dressing

DIRECTIONS
1) On one bread slice layer cheese, turkey pastrami, coleslaw and dressing. Cover with remaining bread slice.

2) Place sandwich in skillet or griddle. Cook 4 to 6 minutes or until bread is toasted and golden brown, turning once. Cut sandwich in half.

REUBEN SANDWICH
The O’Brien household’s version of this pub favorite. So good, it will become a weekly request!

Serves 4

Ingredients:

1 package Buffalo Pastrami or Corned Buffalo Brisket
1 ½ cup “Bubbies” Sauerkraut (it’s really, really good)
4 ounces Irish Cheddar Cheese
6 slices Pumpernickel Bread
1 tablespoon Butter
*Reuben Sauce

Preparation:
1 – On flat top griddle or in a large sauté pan over medium heat place Buffalo Pastrami in lightly oiled pan to heat through. Turn while heating.
2 – Arrange Buffalo Pastrami in 4 equal piles and top with cheese. Add sauerkraut to the pan too. Cover and heat until cheese is melted, and sauerkraut is warm.
3 – Remove from pan and cover to keep warm.
4 – Spread butter on one side of the bread and grill bread until golden brown.
5 – Stack meat, cheese and kraut on inside of grilled bread and spread the other slice with *Rueben sauce (recipe below), and sandwich together.
Serve with Potato, Leek Soup.

*Rueben Sauce

Ingredients:

1/2 cup Mayonnaise
¼ cup Salsa
¼ cup Roasted and Peeled Red Peppers
Salt
Pepper

Preparation:
1 – Place all ingredients in food processor and puree.
2 – Season with slat & pepper to taste.

Buffalo Pastrami “Reuben” Sandwich
