Today’s Menu: Fried Walleye Fillet w/ Mac and Cheese

 


For Breakfast morning I prepared a Poached Egg and served it on a Thomas 100 Calorie Light Multigrain English Muffin. I Also had 2Johnsonville Turkey Breakfast Sausage Links and a cup of Bigelow Decaf Green Tea.Rain and 36 degrees out this morning. 46 degrees and cloudy for the rest of day. Cleaned the house and did a load of laundry. Everything else done for the day and not much else going on. For Dinner tonight I prepared Fried Walleye Fillet w/ Mac and Cheese.

 

 

 

 


While at Kroger yesterday I bought a package of 2 fresh Walleye Fillets. To prepare it I first rinsed the fillets in cold water and patted it dry with paper towel. Next I cut the Fillets in half. Then I seasoned it with McCormick Grinder Sea Salt and Black Pepper Medley. Put the fillet in a Hefty Plastic Bag and added some Progresso Italian Style Bread Crumbs, sealed the bag and shook till the fillet was well coated. I then fried it in Extra Light Olive Oil on medium heat, about 4 minutes per side till golden brown! I love Walleye, as I do most Fish. Walleye is so meaty and has such a fresh flavor!

 

 

 

 


Then for a side I microwaved Stouffer’s Classic Mac and Cheese Mac Cup. Frozen individual Mac Cups, just microwave and serve. Mac and Cheese in a single serving cup! Tastes great, excellent Cheesy Mac. For Dessert/Snack later a bowl of Skinny Pop – Pop Corn with a Diet Peach Snapple to drink.

Humid and 87 degrees out today. Finished the cleaning and storing remaining outside lawn furniture. Everything else done for the day so it was an afternoon of College Football. For Dinner tonight I prepared Fried Walleye Fillet w/ Mac and Cheese.

 

 

 

While at Kroger yesterday I bought a package of 2 fresh Walleye Fillets. To prepare it I first rinsed the fillets in cold water and patted it dry with paper towel. Next I cut the Fillets in half. Then I seasoned it with McCormick Grinder Sea Salt and Black Pepper Medley. Put the fillet in a Hefty Plastic Bag and added some Progresso Italian Style Bread Crumbs, sealed the bag and shook till the fillet was well coated. I then fried it in Extra Light Olive Oil on medium heat, about 4 minutes per side till golden brown! I love Walleye, as I do most Fish. Walleye is so meaty and has such a fresh flavor!

Today’s Menu: Fried Walleye Fillet w/ Fresh Green Beans and AppleWood Smoked Bacon Potato Casserole

 

 

To start the morning off I had a cup of Bigelow Decaf Green Tea. No appetite this morning. After my Tea and morning workout I went to McDonald’s to pick up Breakfast for Mom. I headed back out and went to Menard’s. I’m looking for a battery operated weed trimmer. Stopped off at the Post Office and mailed a few letters for Mom. Partly sunny and humid out today, high of 84 degrees. For Dinner tonight I prepared a Fried Walleye Fillet w/ Fresh Green Beans and AppleWood Smoked Bacon Potato Casserole.

 

 

 

While at Meijer a while back I bought a few fillets of Walleye. I had used a couple of them and had the last one in the freezer. So I grabbed that bag and sit in the fridge overnight to thaw. To prepare it I first rinsed the fillet in cold water and patted it dry with paper towel. Then I seasoned it with McCormick Grinder Sea Salt and Black Pepper Medley. Put the fillet in a Hefty Plastic Bag and added some Progresso Italian Style Bread Crumbs, sealed the bag and shook till the fillet was well coated. I then fried it in Extra Light Olive Oil on medium heat, about 4 minutes per side till golden brown! I love Walleye, as I do most Fish. Walleye is so meaty and has such a fresh flavor!

 

 

For a side I cooked up the last bag of the fresh Green Beans for Dinner last night. Boiled them with a piece of Fatback Pork in the kettle. Reheating the leftovers tonight. Love these fresh Green Beans!

 

 

 

 

 

 

Then I also prepared a box of Idahoan Applewood Smoked Bacon Homestyle Casserole. Like the other Idahoan dishes their a breeze to prepare and a delicious Potato Dish. And like the others this turned out fantastic! Very well seasoned, and you can taste that Applewood bacon flavor. I love my Potatoes! I also had a slice of Aunt Millie’s Light Whole Grain Bread that I lightly Buttered with I Can’t Believe It’s Not Butter. For Dessert/Snack later a bowl of Skinny Pop – Pop Corn with a Coke Zero to drink.

Oven Preparation
Best for Golden Browning

1 – Preheat oven* to 450°F. Combine potatoes and sauce mix in 1 1/2-quart baking dish.
2 – Stir in 2 cups boiling water, 3/4 cup milk, and 2 Tbsp. butter or margarine with whisk.
3 – Bake uncovered for 25 minutes or until top is golden brown and potatoes are tender. Remove from oven and let stand a few minutes before serving (sauce will thicken slightly when cooling).
* At 400 degrees, bake 30 – 35 min. or until tender

Today’s Menu: Fried Walleye Fillet w/ Seasoned Pinto Beans and Golden Hominy

 

 

For Breakfast this morning I just had a cup of Bigelow Decaf Green Tea. It was a beautiful Sunrise this morning the east horizon was just lit up with color. Finished up a few things around the yard before rain moved back in around 11::00 this morning. For the day it was 58 degrees with rain. The yard is looking a lot better! I was able to finally get caught up with a lot of yard work. Later in the day Hoveround came over to make some repairs on my Hoveround Mobility Chair. Being an amputee I don’t know what I would without my Hoveround! For Dinner tonight I prepared Fried Walleye Fillet w/ Seasoned Pinto Beans and Golden Hominy.

 


Last time I was at Costco yesterday I bought a package of fresh Canadian Walleye Fillets! There was 7 Fillets in the package, I gave Mom a couple of them that she froze and I had one that day and had froze the rest. So I laid a bag of 2 Fillets out in the fridge to thaw overnight.

 

 

 

So I’m preparing 2 Fillets. To prepare them I seasoned them with McCormick Grinder Sea Salt and Black Pepper Medley. Put the fillets in a Hefty Plastic Bag and added some Progresso Italian Style Bread Crumbs, sealed the bag and shook till the fillet was well coated. I then fried them in Extra Light Olive Oil on medium heat, about 4 minutes per side till golden brown! I love Walleye, as I do most Fish. Walleye is so meaty and has such a fresh flavor! Costco has an excellent Fish and Seafood selections!

 

 

As the Fillets were cooking I prepared my side dishes. I prepared a can of Margaret Holmes Seasoned Pinto Beans. It doesn’t get much better for a canned Beans than these! To prepare it just empty the contents into a medium saucepan. Cover it and bring it to a boil. Stir and reduce the heat to slow simmer and serve when ready. I love Beans of all kinds and these Seasoned Pinto Beans are at the top of the list, love the Seasoning.

 

 

 

For another side I opened up a can of one of my favorite side dishes, Kroger Brand Golden Hominy. For those that has never had or heard of Hominy; Hominy is a food made from kernels of corn which are soaked in an alkali solution of either lime or lye. The corrosive nature of the solution removes the hull and germ of the corn and causes the grain itself to puff up to about twice its normal size. There is White and Golden Hominy, my favorite is the Golden Hominy. If you’ve never tried it do, makes a delicious side dish. For Dessert/Snack later a bowl of Skinny Pop – Pop Corn with a Coke Zero to drink.

Today’s Menu: Fried Chicken Breasts w/ Roasted Asparagus, Cut Green Beans, and Crescent Rolls

 

 

To start my Saturday morning off I prepared a packet of Pioneer Peppered White Gravy and I toasted 2 slices of Aunt Millie’s Light Whole Grain Bread. Also had my morning cup of Bigelow Decaf Green Tea. A cool morning outside, 58 degrees with a cool wind. Had a high of 66 degrees with rain and clouds. Dad is slowly recovering from the pneumonia, not feeling real good today though. So with the rain, there’s not a lot going on outside. Vacuumed and dusted the house. Then cleaned and straightened up the pantry. Everything done so I watched some College Football the rest of the afternoon. For Dinner tonight its Fried Chicken Breasts w/ Roasted Asparagus, Cut Green Beans, and Crescent Rolls.

 

 

 

I bought a package of 2 Boneless/Skinless Chicken Breasts from Meijer the day before and had them in the fridge. To prepare them I’ll need; Flour, Litehouse Poultry Seasoning, Morton’s Lite Salt, and Ground Black Pepper.

 

 

 

 

I’m using a medium size skillet to fry the Chicken. I first sprayed it with Pam Cooking Spray and then added a tablespoon of Extra Light Olive Oil to it, preheated on medium heat. As the skillet was heating I grabbed a pie pan and added a couple of tablespoons of flour to it. I then took the Chicken Breasts and rolled them in the flour, making sure both sides were fully floured. Next I seasoned them with the Poultry Seasoning and the Salt and Pepper. With the skillet heated, I added the Chicken to the skillet. I fried the Chicken until it was golden brown on one side and flipped it over and fried the other side the same way. Checked it with a meat thermometer and it was 165 degrees, perfect. The Chicken came out moist and tender with a nice crust. I served it with a side of Hidden Valley Ranch Buffalo Dressing.

 

Then for one side dish I prepared Roasted Asparagus. prepare the Asparagus I needed Extra Virgin Olive Oil, Garlic (minced), Sea Salt, Freshly grated Black Peppercorn, Lemon Juice, and Shredded Parmesan Cheese. To prepare it; Rinse clean the asparagus. Break the tough ends off of the asparagus and discard. Lay the asparagus spears out in a single layer in a baking dish or a foil-covered roasting pan. Drizzle olive oil over the spears, roll the asparagus back and forth until they are all covered with a thin layer of olive oil. Sprinkle with minced garlic, salt, and pepper. Rub over the asparagus so that they are evenly seasoned. Place pan in the preheated 400 degree oven and roast for approximately 8-10 minutes, depending on how thick your asparagus spears are, until lightly browned and tender when pierced with a fork. Drizzle with a little fresh lemon juice and shredded Parm Cheese before serving.

 

Then I heated up a large can of Del Monte Cut Green Beans. Just empty the can into a sauce pan and heat until heated through. I also baked a small can of Pillsbury Crescent Rolls. For Dessert/Snack later a bowl of Skinny Pop – Pop Corn and a Diet Peach Snapple to drink.

Today’s Menu: Herb-Crusted Red Snapper w/ Mini Ear of Sweet Corn and Baked Potato

 

 

 

For Breakfast on this Saturday morning I cooked up some Simply Potatoes Shredded Hash Browns, topped them with some cooked diced Ham, Sargento Reduced Fat Shredded Sharp Cheddar, and finally a Sunnyside Up Fried Egg. Also toasted a slice of Aunt Millie’s Light Whole Grain Bread and a cup of my Bigelow Decaf Green Tea. I had seen a similar Hash Brown dish like this on Food Network’s Dinners, Drive – In’s, and Dives. It looked delicious and I gave it a try, and it is delicious!

 

 

After I had Breakfast and did the dishes I went to McDonald’s to pick up Breakfast for Mom and Dad. It’s not quite as hot out, 81 degrees but still a tad muggy. We had one strong storm move through our area late yesterday. Some areas are still without power and other areas are flooded. So after Breakfast I had some cleaning up to do outside, a lot leaves, limbs, and garbage. For Dinner tonight it’s Red Snapper! I prepared a Herb-Crusted Red Snapper w/ Mini Ear of Sweet Corn and Baked Potato.

 

 

I purchased a beautiful Red Snapper Fillet while at Kroger the day before. I’ll be preparing it by a new recipe I found on the Taste of Home website, Herb-Crusted Red Snapper. I’ll need the following; 1 tablespoon Progresso Italian Style Bread Crumbs, 1 teaspoon Dried Basil, 1 teaspoon Hungarian Paprika, 1/2 teaspoon Sea Salt, 1/2 teaspoon Fennel Seeds, 1/2 teaspoon Dried Thyme, 1/2 teaspoon Dried Oregano, 1/4 teaspoon Pepper, 1/4 teaspoon Crushed Red Pepper Flakes, 1 Red Snapper fillets, and 2 teaspoons Extra Light Olive Oil. I only had 1 fillet of the Red Snapper, the original recipe and ingredient amounts are for 2 fillets. I only used 1/2 of amount of the above ingredients.

 

To prepare it was very easy. To start; In a food processor, combine the first nine ingredients; cover and process until Fennel is finely ground. Transfer to a shallow bowl; dip fillets in herb mixture, coating both sides. In a heavy skillet over medium-high heat, cook fillets in oil for 3-4 minutes on each side or until fish flakes easily with a fork. So easy and quick to prepare this. The crust was excellent and provided great flavor while the Snapper remained moist.

 

 

 

For the Corn I used my favorite, Green Giant Mini Ears of Sweet Corn. You can not beat this for frozen or not frozen Ears of Sweet Corn. It’s frozen, so it rare it goes bad, prepared in 10 minutes, and some of the Sweetest Corn on the cob you’ll find! Topped it with some Morton’s Lite Salt and I Can’t Believe It’s Not Butter.

 

 

 

 

I also had a Baked Russet Potato. Topped this with McCormick Grinder Sea Salt and Peppercorn Medley and some I can’t Believe It’s Not Butter. Any Potato Dish works for me! For Dessert/Snack later a bowl of Skinny Pop – Pop Corn and a Diet Dr. Pepper.

Ingredients
1 tablespoon dry bread crumbs
1 teaspoon dried basil
1 teaspoon paprika
1/2 teaspoon salt
1/2 teaspoon fennel seeds
1/2 teaspoon dried thyme
1/2 teaspoon dried oregano
1/4 teaspoon pepper
1/4 teaspoon crushed red pepper flakes
2 red snapper fillets (5 ounces each), skin removed
2 teaspoons canola oil

Directions
1. In a food processor, combine the first nine ingredients; cover and process until fennel is finely ground. Transfer to a shallow bowl; dip fillets in herb mixture, coating both sides.
2. In a heavy skillet over medium-high heat, cook fillets in oil for 3-4 minutes on each side or until fish flakes easily with a fork. Yield: 2 servings.

Today’s Menu: Orange Roughy Fish Hoagie w/ Baked Potato

 

 

It was Gravy and Toast this morning for Breakfast. I prepared a packet of Pioneer Peppered White Gravy and toasted a couple slices of Aunt Millie’s Whole Grain Bread. Also had a cup of my favorite Tea, Bigelow Decaf Green Tea. Warmer and a little more humid out today. A little more like our normal June/July weather. Did a couple of loads of laundry and then off to Walmart for a few items. Stopped and had the car washed on the way back home. Other than that not much else going on. For Dinner tonight an Orange Roughy Fish Hoagie w/ Baked Potato.

 

 

I had picked up the Orange Roughy at Kroger a while back and had a fillet left in the freezer. I normally don’t purchase Orange Roughy due to its sustainability classification. But it was in the case already packaged and I grabbed it. So to make it I’ll need; the Orange Roughy Fillet, McCormick Grinder Sea Salt and Peppercorn Medley, Flour, egg Beater’s (1/2 cup), Paprika, and Shake and Bake Panko Bread Crumbs. I’ll also need McCormick Tarter Sauce and Kroger 100% Whole Wheat Hoagie Roll.

 

 

I had laid the Roughy in the fridge overnight to thaw. To prepare it I first rinsed the fillet off in cold water and patted dry with a paper towel. I then grabbed a skillet and sprayed it with Pam Cooking Spray and added a tablespoon of Extra Light Olive Oil. Then preheated the skillet on medium heat. Back to the fillet, I seasoned both sides of the fillet with McCormick Grinder Sea Salt and Peppercorn Medley. Then in a pie pan I added some Flour and seasoned it with some Paprika. Rolled the Roughy in the Flour till it was completely covered. Next in another pie pan I added a 1/2 cup of Egg Beater’s and dipped the fillets in the Egg Wash, shaking off the excess. Finally the third pie pan, I added a package of Shake and Bake Panko Seasoned Bread Crumbs to it and put the fillet in, making sure the fillet was well covered.

 

With the skillet heated I added my fillets. I then fried it for 3 minutes per side. It fried up perfect! Golden Brown on the outside and a moist center. I served it on a Kroger Whole Grain Hoagie Roll. Topped the Roughy fillet with some McCormick Tarter Sauce. Orange Roughy makes a perfect Fish Sandwich. Fries up great and an excellent taste to it.

 

 

 

For a side I prepared a Russet Baked Potato. Seasoned that with the McCormick Grinder Sea Salt and Peppercorn Medley, and topped with I Can’t Believe It’s Not Butter. For Dessert later a Weight Watcher’s Cookies and Cream Ice Cream Bar.

Today’s Menu: Fried Walleye w/ Boiled Yukon Gold Potatoes and Vegetarian Baked Beans

 

 

 

I t was one of those restless nights dealing with Phantom Pains all night into the morning before they finally eased up! So there won’t be a whole lot done today except for catching up on some sleep. Went out to get the Sunday Papers this morning and there was 2 Wild Turkeys out in the side yard, first I’ve seen in quite a while! For Breakfast I toasted a Healthy Life Whole Grain English Muffin that I topped with Smucker’s Sugarless Blackberry Jam. Also had a cup of Bigelow Decaf Green Tea. After Breakfast went outside and got the leaf blower out and cleaned off the deck and driveway areas. Back inside I did a load of laundry and done for the day. After Lunch I laid down for the afternoon and caught up on sleep! For Dinner tonight it’s Fried Walleye w/ Boiled Yukon Gold Potatoes and Vegetarian Baked Beans.

 

 

While at Meijer yesterday I seen they had some beautiful looking Walleye Fillets and just couldn’t pass them up. I rinsed it off in cold water, sliced into smaller pieces, and put them in a sealed plastic bag in the fridge until ready to use today. To prepare them I seasoned them with McCormick Grinder Sea Salt and Black Pepper Medley. Put the fillets in a Hefty Plastic Bag and added some Progresso Italian Style Bread Crumbs, sealed the bag and shook till the fillet was well coated. I then fried them in Extra Light Olive Oil on medium heat, about 3 to 4 minutes per side till golden brown! I love Walleye, as I do most Fish. Walleye is so meaty and has such a fresh flavor!

 

 

For 1 side I boiled some Baby Yukon Gold Potatoes. Picked these up at Meijer also yesterday. To prepare them I took a large pot and filled it half way with water and heated it on high. As the water started to boil I added Salt to the water. I then added the Potatoes and boiled them until fork tender. To serve, I put a few them on the plate and smashed them up a bit. Seasoned them with McCormick Grinder Sea Salt and Peppercorn Medley along with some I Can’t Believe It’s Not Butter.

 

 

Then for another side I prepared some Bush’s Reduced Sodium Vegetarian Baked Beans. I had these sometime back and fell in love with the flavor and taste of the Vegetarian Beans! Only 130 calories, 0 fat, and 24 net carbs per serving. To prepare the; just open the can and empty the Beans Into Saucepan. Heat To Simmer until heated through. Love these Beans! For Dessert later a Weight Watcher’s Cookies and Cream Ice Cream Bar.

Orange Roughy Fish Hoagie w/ Baked Potato

Today’s Menu: Orange Roughy Fish Hoagie w/ Baked Potato

 

 

I picked up the Orange Roughy while at Kroger yesterday and decided to have it as a Fish Sandwich. I normally don’t purchase Orange Roughy due to its sustainability classification. But it was in the case already packaged and I grabbed it. So to make it I’ll need; the Orange Roughy Fillet, Morton’s Lite salt and Black Ground Pepper, and Progresso Italian Style Bread Crumbs. I’ll also need McCormick Tarter Sauce, Bib Lettuce, and Kroger 100% Whole Wheat Hoagie Roll.

 

 

 

To prepare it I first rinsed the fillet off in cold water and patted dry with a paper towel. I then grabbed a skillet and sprayed it with Pam Cooking Spray and added a tablespoon of Extra Light Olive Oil. Then preheated the skillet on medium heat. Back to the fillet, I seasoned both sides of the fillet with salt and pepper. Next I took a pie pan and added some of the Progresso Italian Style Bread crumbs to it and put the fillet in, making sure all sides were well covered.

 

 

 

With the skillet heated I added my fillet. I then fried it for 3 minutes per side. It fried up perfect! Golden Brown on the outside and a moist center. I then got one of the Hoagie Rolls and laid a couple of the Bib Lettuce Leaves on the bottom bun, then the Orange Roughy Fillet, then got the Tarter sauce and spread it on the bottom of the top bun and it was ready! Orange Roughy makes a perfect Fish Sandwich. Fries up great and an excellent taste to it.

 

 

 

 

 

 

For a side I prepared a Baked Potato. Seasoned that with the McCormick Grinder Sea Salt and Peppercorn Medley, and topped with I Can’t Believe It’s Not Butter. For Dessert later a Weight Watcher’s Cookies and Cream Ice Cream Bar. See everyone tomorrow!

Today’s Menu: Fried Walleye w/ Hash Browns and Cut Green Beans

 

 

For Breakfast this morning I toasted a couple of slices of Healthy Life Whole Grain Bread and Scrambled a couple of Eggs. Also had my morning cup of Bigelow Decaf Green Tea. Outside we have rain showers, cloudy, and a high in the 40’s. I had planned to do some things around the house then go to see Dad but late yesterday I was making a pot of the Bear Creek Creamy Potato Soup and as I was ladling it out into a plastic container, the container started to turnover. I stopped it from turning over but the ladle was full and went on to my left thumb area. I burned my thumb pretty good. I went to the Emergency Care this morning to get it checked out. They said I did burn it pretty bad but I had done everything right to prevent infection and such. So spent most of the day relaxing with my left hand elevated. Anyway for Dinner tonight I prepared Fried Walleye w/ Hash Browns and Cut Green Beans.

 

I had purchased a of large Walleye Fillet at Kroger Wednesday. Cleaned it and sliced into 6 pieces. I froze 3 pieces and kept the other 3 out for my Dinner tonight. Simply Potatoes Hash Browns

Then for one side I prepared some Simply Potatoes Hash Browns. Fried in Light Olive Oil and seasoned them with Sea Salt, Ground Pepper, and Parsley. I love Hash Browns, they make the perfect side for any Dish, especially Fish. I also heated up a small can of Del Monte Cut Green Beans. For dessert later a small bowl of Del Monte No Sugar Added Diced Mangos, love Mangos!
