Today’s Menu: Grilled Beef and Ham on Wheat Bun w/ Baked Fingerling Potatoes

 

 

For Breakfast this morning I prepared a Skillet Diced Potatoes and Ham for Breakfast. I used 1 package of Simply Potatoes Steakhouse Seasoned Diced Potatoes and a package of Meijer Diced Ham to prepare it. Just cook the Potatoes according to the package instructions and with about 5 minutes of cooking time left add the Diced Ham. I topped it with a sprinkle of Sargento Off the Block Sharp Cheddar Cheese. I also had a cup of Bigelow Decaf Green Tea.

 

It’s 90 degrees, humid, and passing rain showers. Lately it seems if one health related thing isn’t bothering me another one is! Last night around 11:00 I started getting Phantom Pains. It was one rough and long night, with little or no sleep. The Pains finally eased up around 10:00 this morning but the damage was done. I was so tired and just drained from the pain I spent most of the day catching up on sleep. I so wish there was a cure for Phantom Pains, but there is not! Maybe one day but until that happens thousands if not more suffer from this. So for Dinner tonight I prepared a Grilled Beef and Ham on Wheat Bun w/ Baked Fingerling Potatoes.

 

So tonight I prepared a Grilled Beef and Ham on Wheat Bun. To make my Sandwich I’ll be needing; For the Meat I used Kroger Brand Private Selection Rare Sliced Roast Beef and Kroger Brand Private Selection Honey Ham then for the Cheese Kraft Deli Style Sharp Cheddar Cheese, all served on a Healthy Life Wheat Bun.

 

I’m using my small Flat Cast Iron Griddle. I love this Griddle, it has 2 sides one a flat surface and the other side with a grate. I heated up the flat surface side on medium heat, spraying it with Pam Non Stick Spray. With the Pan heated I added the Meat. I had small handful of the Roast Beef and Ham. I made 2 stacks, one Roast Beef and the other the Ham. I smashed the piles down with the spatula and flipped each stack. After about 3 minutes I took the Ham pile and placed it on top of the Beef. I then added a slice of Sharp Cheddar Cheese. Next I added both halves of the Bun, bottom side down on the pan to heat the buns a bit.

 

I flipped the bottom half bun over and placed Roast Beef/Ham on top of it and removed it from the pan. I then topped the Sandwich with some Emeril’s Deli Style Mustard. Love this Mustard, fantastic flavor! This really made one delicious Sandwich! Roast Beef and the Ham are perfect together.

 

As my Sandwich was grilling I had preheat the oven to 425 degrees. Then for a side I prepared some Roasted Fingerling Potatoes. I purchased these at Jungle Jim’s. To start I first washed the Potatoes off in cold water and patted dry with a paper towel. I then cut the Fingerling Potatoes in half, lengthwise. Put the Potatoes in a large bowl seasoned them with; Extra Virgin Olive Oil, Garlic Powder, Sea Salt, Pepper, Chili Powder, and Kraft Reduced Fat Parmesan Grated Cheese to top the Potatoes with. Using a cookie sheet lined with foil I spread the Potatoes out on the sheet . Then Roasted them at 425 degrees until they were fork tender, about 20 minutes. I love Fingerling Potatoes, probably my favorite Potato. Just love how easy they cook up and taste. Excellent Meal with the Sandwich and Baked Potato Wedges! For Dessert tonight I’m having a bowl of Breyer’s Carb Smart Chocolate Ice Cream.

Still suffering from the side effects of the flu. This one had kicked my butt! I’m still real sore, feels like somebody beat my ribs and chest are with a ball bat. Mom is no better still, I’ve been trying to get her to eat more. Then dad is about the same in the hospital, no change in him either. My appetite is finally somewhat back and was ready for a hot meal. For dinner a simple but warming and hearty dinner, Chunky Baked Potato with Cheddar and Bacon Bits Soup w/ a Grilled Ham and Swiss Cheese Sandwich.

For my Grilled Ham and Cheese Sandwich I used Kroger Private Selection Wild Flower Honey Sliced Ham. I’ve been using this ham for a while now. It’s 70 calories and 2 carb per serving (3 Slices). For the Cheese I used 2 slices of Sargento Ultra Thin Swiss. My Cheese Brand of choice for about any dish or sandwich. The Swiss is only 40 calories a slice. For a topping spread I used Litehouse Lite Thousand Island Dressing and Dip (70 calories and 4 carbs per serving). Incredibly flavorful dressing and it’s the Lite version. I served it on a couple of slices of Klosterman Wheat Bread (70 calories and 13 net carbs). To prepare just layer you Ham and Cheese on the Bread and then Butter the top and bottom of sandwich, with I Can’t Believe It’s Not Butter. Then I grilled it on a flat top grill sheet till each side was toasted a golden Brown.

 

 

 

 

I also used my favorite Potato Soup, Campbell’s Chunky Baked Potato with Cheddar and Bacon Bits. Love this Soup, it’s nice and thick with some big chunks of Potato with just the right amount of Cheddar and Bacon Bits. Plus it can’t be much easier to prepare, just open the can and heat it up in a small sauce pan. Love the taste and it’s only 190 calories and 19 net carbs. A good meal for an Autumn Day or any Day for that matter. For dessert later a Healthy Choice Dark Fudge Swirl Frozen Greek Yogurt.

Directions

Do not add water. Stove: Pour soup into medium saucepan. Heat slowly until hot, stirring occasionally. Microwave: Pour soup into medium microwave-safe bowl or 2 individual microwave-safe bowls. Cover; microwave on high for 3 1/2 minutes or until hot, stirring once during heating. Careful, keep covered 1 minute. Stir before serving. Promptly refrigerate any unused portion in separate container. Recommend use by date on can end. Store unopened can at room temperature.

Today’s Menu: Baked Cold Cut Trio Mini Sub w/ Creamy Tomato Soup

They hit our forecast on the nose! It started snowing a light snow about 11:00 last night and picked up in the early morning hours. It wasn’t one of those “Cabin Fever Snows” but we ended up with about 4″ or more. It was a wet snow and clung to every limb out there. Some really cold weather to follow the snow. So for dinner tonight I prepared a Baked Cold Cut Trio Mini Sub w/ Creamy Tomato Soup.

I had this a while back and really enjoyed it, so I prepared it again. I used a Trio of Cold Cuts for my Baked Mini Sub; Kahn’s Deluxe Bologna, Kroger Private Selection Off – the Bone Smokehouse Ham, and Private Selection Roasted Turkey. You can use whatever your favorite cold cuts are to make this. For toppings Boar’s Head Sliced Muenster Cheese and Kraft Reduced fat Mayo w/ Olive Oil. For the Bun I used Perfection Deli Mini Wheat Sub Buns, I buy these at Meijer. To prepare it I spread the Mayo on the bottom bun and layered my Cold Cuts on top of that. Topped that with Cheese and spread more Mayo on the bottom of the top bun. To help the bun brown a bit I brushed the top with Extra Virgin Olive Oil. I had already preheated the oven to 400 degrees, I then laid the Sub on a small baking sheet and baked it for about 12 minutes. Took it out and the Sub was a light golden brown and the Cheese was melted. I love using Muenster Cheese for when I melt Cheese on Sandwiches, it melts perfect for that. The Sub tasted great, all the Cold Cuts worked great together, then the with the Muenster Cheese and Mayo give it a perfect taste! I really enjoy these Subs!

Then I also heated up some Amy’s Organic Creamy Tomato Soup. My favorite Tomato Soup by far. I’ve been using this a couple of years now. Creamy with a fantastic flavor and it’s 110 calories and 19 carbs. I also had a Diet Dr. Pepper to drink. For dessert later a bowl of Del Monte No Sugar Added Peach Chunks.

Our warmest day of the year so far, 80 degrees! It was even a bit humid (blah) and partly sunny. Went to the grocery early this morning and then back home. Then I worked on cleaning the shed out a bit. Mom and Dad has boxes packed with stuff they haven’t seen in 5 years or more, so it’s out with the old. I barely made a dent in all the boxes, this will take a while. For dinner something a little different, I prepared a Baked Cold Cut Trio Mini Sub w/ Creamy Tomato Soup.
