Today’s Menu: Izzy’s Lean Corned Beef Sandwich w/ Pringle’s Fat-Free Chips

After an early Breakfast I went to Walmart, needed some Ink for my printer. Back home and after 2 months of paperwork and aggravation to myself and doctors, they finally delivered a new Hoveround Mobility Chair. It was absolutely ridiculous on the amount of paperwork that has to be done to get something done through Medicare. They had sent me a new chair but the seating was incorrect and it took forever to get it replaced. But the new chair arrived, finally. I had a last minute change in my dinner plans, I forgot to lay the Buffalo Sirloin out I was planning to prepare for dinner from the freezer. So it was Izzy’s Lean Corned Beef Sandwich w/ Pringle’s Fat-Free Chips.

 
It was Izzy’s to the rescue for dinner tonight!. Izzy’s is home of some the best Corned Beef there is! All their Sandwiches are delicious and they own the market on the Corned Beef. I always get their Izzy’s Lean Corned Beef Sandwich. The “Lean” version of the Corned Beef it makes it healthier than most also. The sandwich contains 170 calories and 16 carbs per serving (1/2 Sandwich) and 340 calories and 32 carbs for a Full Sandwich. I had the Full Sandwich along with a side of Pasta Salad and Pringle’s. I bought Mom and Dad’s Sandwiches for them also. Mom had the Izzy’s Lean while Dad had the Reuben, which looked incredible also! To go along with it all I had an Ice-Cold Diet Dr. Pepper, 0 calories and 0 carbs. Love sticking a small bottle of Dr. Pepper in the freezer for a bit, just enough to get a layer of ice forming on it! For dessert later a Healthy Choice Dark Fudge Swirl Frozen Greek Yogurt.

I wanted to start off by wishing my Dad a Happy Birthday, he’s 94 today! Wow, quite an achievement! Started my day off with a bowl of Kroger Brand Bran Flakes, this has become one of my favorite cereals. Not a whole lot going on outside today again, humidity is terrible out. So inside I replanted some Herb Plants into a pot display I purchased. Plants are doing good this year. Did a few chores in the house and ran some computer programs, that was about it today. Mom and Dad went out to eat with some friends so I was cooking for 1 tonight. I opted to eat out myself tonight, Izzy’s. Tonight it’s Izzy’s Lean Corned Beef Sandwich w/ Pringle’s Fat-Free Chips.

Izzy’s is home of some the best Corned Beef there is! All their Sandwiches are delicious and they own the market on the Corned Beef. I always get their Izzy’s Lean Corned Beef Sandwich. The “Lean” version of the Corned Beef it makes it healthier than most also. The sandwich contains 170 calories and 16 carbs per serving (1/2 Sandwich) and 340 calories and 32 carbs for a Full Sandwich. I had the Full Sandwich along with a side of small Pasta Salad and Pringle’s Fat Free Chips. To go along with it all I had an Ice-Cold Diet Dr. Pepper, 0 calories and 0 carbs. Love putting a small bottle of Dr. Pepper in the freezer for a bit, just enough to get a layer of ice forming on it! For dessert later a Healthy Choice Dark Fudge Swirl Frozen Greek Yogurt.

Well I had another dinner planned out that I had to scrap at the last minute. My Dad was wanting to go out to eat so him and Mom went out to eat and I put a hold on tonight’s meal until tomorrow night. So it was Izzy’s to the rescue! Today’s Menu: Sweet Italian Turkey Sausage w/ Pringle’s Fat Free Chips

 
It’s been one of those long days today. Dad fell again, in the house and he wasn’t hurt thankfully. Then I got a flat on my Hoveround Chair, luckily I had the new chair that I hadn’t used much yet. The new chair can’t even compare to the my old chair. My neighbors came over and changed the tire on my old one for me. So I got my old hoveround back up and running! I had baked several Pillsbury Nut Quick Bread Loaves yesterday and took a couple of them over to my neighbors who are always there to give me a hand. I really get frustrated not to be able to do the little things, because I’m in a wheelchair. For 40 plus years I had both legs and used to do everything for myself, now I need help with a lot of things which is where the frustration sits in. But I guess you have to do what have to do to get things done. Sorry about the ranting! For dinner tonight I prepared a Sweet Italian Turkey Sausage w/ Pringle’s Fat Free Chips.

I used Jennie O Lean Sweet Italian Turkey Sausage. I pan fried it, using Pam Spray and no oil, a total of about 17 minutes. It fried up excellent, as all Jennie – O Products they have real good and fresh taste to them. They have 160 calories and 0 carbs per Sausage. Served it on a Kroger Lite Wheat Hot Dog Bun topped it with French’s Spicy Brown Mustard. To go with my Sausage I had some Pringle’s Fat Free Chips.

For dessert later a slice of Pillsbury Nut Quick Bread. I had baked a few mini loaves of it yesterday. It comes with a small packet of Walnuts, but I still added some extra Chopped Walnuts to it. I added a small 1 cup serving Sugar Free Vanilla Pudding to it, the pudding gives all cakes an extra kick of moistness. I also used Egg Beater’s and Extra Virgin Olive Oil, replacing the Eggs and Corn Oil. Cut the calories where you can!

Today’s Menu: Muenster and Sweet Italian Turkey Sausage Dog w/ Pringles Fat Free Chips

Been a cold and blustery day here today. A lot of sunshine but only the mid 30’s for a high temperature. Did a few odd and end jobs around the house and that was about it for my day. Ran a couple of scans on the computer and installed a new program. For dinner tonight I prepared a Muenster and Sweet Italian Turkey Sausage Dog w/ Pringles Fat Free Chips.

 

 

 

I used Jennie -O Sweet Italian Turkey Sausages, is there anything else! I prepared a couple of them, I’ll have the other one for lunch tomorrow. To prepare them is very easy, I pan fried them in a medium size skillet that I sprayed with Pam Cooking Spray and 1 tablespoon of Extra Virgin Olive Oil. Added the Sausages and cooked covered, turning occasionally, about 17 – 19 minutes. Always make sure you cook them to well-done, 165º F. as measured by a meat thermometer. Their just a flat-out delicious Sausage, excellent flavor and moist and juicy inside! I served them on a Kroger Lite Wheat Hot Dog Bun topped with French’s Spicy Brown Mustard with a slice of Simple Life Muenster Cheese wrapped around it! I love Muenster Cheese, It’s the perfect cheese for sandwiches, it melts just perfect and still has texture to it. Then for a side I had some Pringles Fat Free Chips. For dessert later a Dark Cherry Sugar Free Jello Cup, 10 calories and 0 carbs.
