Today’s Menu: Leftover – Prime Rib Sandwich and Green Beans

Just a cup of Bigelow Decaf Green Tea for Breakfast. 38 degrees and cloudy out all day. Did laundry, cleaned the house and did a few things outdoors. Just not a lot going on again. For Dinner tonight I prepared the Leftovers, Prime Rib Sandwich and Green Beans. I sliced the remaining Prime Rib into nice size slices and made Sandwiches out of them. Served it on a Healthy Life Wheat Bun and topped with some Woeber’s Horseradish Mustard. I left the original post from last night for ingredients and cooking instructions. Take Care and Stay Safe All!

For the Prime Rib, I purchased it at Costco. It’s a 3 1/2 lb. Heartland Farm Foods Sous Vide Prime Rib. It’s already cooked so all I do is reheat it. I had it in the freezer and sat it in the fridge overnight to thaw. Then to prepare it I heated the oven to 425 degrees. Took it out of the package and heated it in a foil lined baking pan for 40 minutes. Internal temperature of 100 degrees. Removed it from the pan to a serving dish.

The Prime Rib turned out perfect! Very tender and moist with excellent flavor. Came out a nice Rare to Medium Rare. We’ll purchase one from Costco again next time we have one! I sliced off an extra slice. I prepared a plate for a elderly woman who lives up the street. I usually make her a plate of our Holiday Meals and take them to her.

For a  side I heated up the leftover Del Monte Cut Green Beans. Just reheat them in a small sauce pan and heat until heated through on medium heat. Ready to eat!

Today’s Menu: Prime Rib w/ Shredded Potatoes Casserole and Green Beans

To start this rainy morning off I made some Simply Potatoes Shredded Hash Browns and heated up some Meijer Diced Ham. I made a bed of the Hash Browns in a bowl and sprinkled some Sargento Reduced Fat Sharp Cheddar Cheese. Then topped them off with Diced Ham. I love combinations of Potatoes and Ham. Also had a cup of Bigelow Decaf Green Tea. 38 degrees and a lot of rain to start off 2021. Not a lot going on, just did a few chores around the house. For Dinner tonight I prepared a Prime Rib w/ Shredded Potatoes Casserole and Green Beans.

For the Prime Rib, I purchased it at Costco. It’s a 3 1/2 lb. Heartland Farm Foods Sous Vide Prime Rib. It’s already cooked so all I do is more less is reheat it. I had it in the freezer and sat it in the fridge overnight to thaw. Then to prepare it I heated the oven on 425 degrees. I sliced off an extra slice. I prepared a plate for a elderly woman who lives up the street. I usually make her a plate of our Holiday Meals and take them to her.

So to go with the Prime Rib I prepared some RESER’S MAIN STREET BISTRO – BAKED SHREDDED POTATO CASSEROLE. It comes in a tray that you can microwave or bake in the oven. As usual I’m going with the Oven Baking way.

Very easy to prepare. Preheat the oven to 350 degrees. Just remove the tray from the package and remove the film covering the tray. Place the tray on a baking sheet and heat in the oven for 22 minutes. And it’s ready to serve!

Seasoned with a shake of Salt and Pepper along with a sprinkle of Kraft 2% Shredded Sharp Cheddar Cheese. This turned out delicious! Came out bubbling hot. Plenty of Potatoes and loaded with flavor! Fantastic Potato item to have in the fridge.

For a 2nd side I prepared a can of Del Monte Cut Green Beans. Easy to prepare, just empty the can into a small sauce pan and heat until heated through on medium heat. Ready to eat! Then I also baked a small can of Pillsbury Crescent Rolls. For Dessert later a bowl of Breyer’s Carb Smart Vanilla Ice Cream that I topped with some Smucker’s Sugar Free Chocolate Topping. Stay Safe and Take Care, Happy New Year!

Healthy Christmas Holiday Recipes
It’s the best time of year, and we’re here to help your celebrate with all of our healthy Christmas recipes. From prime rib to scalloped potatoes, we have a plethora of recipes to make sure you have a delicious holiday season!

Fresh Ham with Red Pepper Glaze
For this fresh roast ham recipe, look for meat that hasn’t been cured or smoked. Many markets stock fresh hams, but you may need to special-order one to be sure. Ask your butcher to remove the skin and leave a layer of fat to self-baste the ham as it roasts…………………..

Easy Stuffed Mushrooms
This healthy stuffed mushroom appetizer is a nice balance of soft mushrooms, creamy filling and crunchy topping. This combination tastes downright decadent, but it’s actually good for you. Be sure to get all of the moisture out of the chopped mushrooms before moving on to the next step; if not, the filling will be soggy and make the mushroom caps watery………………

Roasted Beet Salad
Walnuts, red onion and dill make this roasted beet salad recipe a fantastic accompaniment to chicken or topping for hummus. If you can’t find beets with greens attached, use 1 pound of beets and 8 ounces of chard leaves……………………

Slow-Cooker Chuck Roast with Potatoes and Carrots, Perfect Prime Rib,

This slow-cooker chuck roast is winter comfort food at its finest. A bright, slightly sweet sauce balances the rich and tender braised beef. You can substitute multi-colored baby potatoes (halved) for the Yukon variety and fresh fennel fronds for the parsley, if desired…………………………

Perfect Prime Rib
Cooking prime rib can be intimidating–it’s such a big piece of meat and you’re usually making it for a special occasion, like Christmas or a formal dinner, so you want to get it just right. But it needn’t be stressful: This easy prime rib recipe calls for just a handful of ingredients and lays out how to cook prime rib so it’s juicy, tender and full of flavor, without a lot of fuss. Cooking the prime rib low and slow safeguards the meat from cooking unevenly. See the Tips section below for more advice on making the perfect prime rib. And if you have leftovers, they make a killer sandwich!……………………………….

Beef Rib Roast with Mushrooms and Fennel
The edible wild mushrooms you can find depend on where you live. They add woodsy and earthy flavors, but cultivated cremini and white buttons are delicious here too. Well-stocked supermarkets often have cultivated “wild” varieties like hen of the woods, matsutake, yellowfoot and hedgehog–all great in this recipe………………………………

Today’s Menu: Leftovers – Prime Rib, Mashed Potatoes, and Green Beans

For Breakfast this morning I just had a cup of Bigelow Decaf Green Tea. A little later I had to take our vacuum to the repair shop. I cracked one of the wheels and it would have taken 5-6 weeks to order one on-line and receive it. So the repair shop said it should be repaired by Friday. Then stopped and got Mom Breakfast at McDonald’s and filled the car up with gas. Later I went to Kroger for a few items. For Dinner tonight its leftovers from Christmas Dinner! I reheat the leftover Prime Rib, Mashed Potatoes, Canned Green Beans, and Hawaiian Rolls. For Dessert a slice of Apple Pie. Mom had a baked an Apple Pie and a Pecan Pie the day before. Both were made using Splenda Sweetner.

I’m preparing Christmas Dinner for me and Mom. It’s our first Christmas without Dad and it’s a bit sad but I’m trying to keep things upbeat for Mom. We’re having Dinner for just the 2 of us but later in the afternoon or early evening there will be several people coming over so that will help her spirits. For our Dinner I prepared a 4 lb. Prime Rib, Mashed Potatoes, opened up a quart jar of the Canned Green Beans, and Baked some Hawaiian Rolls. Mom had a baked an Apple Pie and a Pecan Pie yesterday. Both were made using Splenda Sweetner. I’d like to wish each and every one of you along with your families a Very Merry Christmas! And to all a good night…..
