Slow-Cooker Chuck Roast with Potatoes and Carrots, Perfect Prime Rib,

This slow-cooker chuck roast is winter comfort food at its finest. A bright, slightly sweet sauce balances the rich and tender braised beef. You can substitute multi-colored baby potatoes (halved) for the Yukon variety and fresh fennel fronds for the parsley, if desired…………………………

Perfect Prime Rib
Cooking prime rib can be intimidating–it’s such a big piece of meat and you’re usually making it for a special occasion, like Christmas or a formal dinner, so you want to get it just right. But it needn’t be stressful: This easy prime rib recipe calls for just a handful of ingredients and lays out how to cook prime rib so it’s juicy, tender and full of flavor, without a lot of fuss. Cooking the prime rib low and slow safeguards the meat from cooking unevenly. See the Tips section below for more advice on making the perfect prime rib. And if you have leftovers, they make a killer sandwich!……………………………….

Beef Rib Roast with Mushrooms and Fennel
The edible wild mushrooms you can find depend on where you live. They add woodsy and earthy flavors, but cultivated cremini and white buttons are delicious here too. Well-stocked supermarkets often have cultivated “wild” varieties like hen of the woods, matsutake, yellowfoot and hedgehog–all great in this recipe………………………………

Today’s Menu: Leftovers – Prime Rib, Mashed Potatoes, and Green Beans

For Breakfast this morning I just had a cup of Bigelow Decaf Green Tea. A little later I had to take our vacuum to the repair shop. I cracked one of the wheels and it would have taken 5-6 weeks to order one on-line and receive it. So the repair shop said it should be repaired by Friday. Then stopped and got Mom Breakfast at McDonald’s and filled the car up with gas. Later I went to Kroger for a few items. For Dinner tonight its leftovers from Christmas Dinner! I reheat the leftover Prime Rib, Mashed Potatoes, Canned Green Beans, and Hawaiian Rolls. For Dessert a slice of Apple Pie. Mom had a baked an Apple Pie and a Pecan Pie the day before. Both were made using Splenda Sweetner.

I’m preparing Christmas Dinner for me and Mom. It’s our first Christmas without Dad and it’s a bit sad but I’m trying to keep things upbeat for Mom. We’re having Dinner for just the 2 of us but later in the afternoon or early evening there will be several people coming over so that will help her spirits. For our Dinner I prepared a 4 lb. Prime Rib, Mashed Potatoes, opened up a quart jar of the Canned Green Beans, and Baked some Hawaiian Rolls. Mom had a baked an Apple Pie and a Pecan Pie yesterday. Both were made using Splenda Sweetner. I’d like to wish each and every one of you along with your families a Very Merry Christmas! And to all a good night…..

Today’s Menu: Leftovers – Prime Rib w/ Mashed Potatoes, Green Beans, and Baked French Bread

I had to fast over night and skip Breakfast this morning. I had my 4 month checkup at the Family Doctor for my for my cholesterol, sugar and etc. Really great timing to have to have this done. Fasting on Christmas Night with everything to eat and snack on. This will be the last time I let them schedule this around a Holiday! Anyway I had to be at the Doctor at 8:15. It’s one COLD morning out there today! A low of 14 degrees and a high of only 24 along with one cold breeze. I guess our mild Winter is over. Back home gave Mom a hand with a couple of loads of laundry. Then after Lunch I cleaned the house, vacuum and dusted. For Dinner tonight it’s Christmas Dinner leftovers! I reheated the Prime Rib w/ Mashed Potatoes and Green Beans. Then I also baked a loaf of Pillsbury French Bread.

I reheated the Green Beans and Mashed Potatoes in the microwave. We had used Del Monte Cut Green Beans along with Bob Evan’s Mashed Potatoes

Then to reheat the Prime Rib I heated the oven on 350 degrees. Sliced off my Prime Rib from the remaining Roast and put the slice into a small baking pan. Covered the pan with Foil and reheated it for about 15 minutes. It reheated perfectly, and tasted just as delicious! You got to leftovers especially when its Prime Ribs and Sides! As I said I also baked a loaf of Pillsbury French Bread. For Dessert/Snack tonight I had a bowl of Skinny Pop – Pop Corn along with a Diet Dr. Pepper to drink.

Prime Rib

A slice of prime rib from a standing rib roast, topped (on the right side) with mushrooms

A standing rib roast, also known as prime rib, is a cut of beef from the primal rib, one of the nine primal cuts of beef. While the entire rib section comprises ribs six through 12, a standing rib roast may contain anywhere from two to seven ribs.

It is most often roasted “standing” on the rib bones so that the meat does not touch the pan. An alternative cut removes the top end of the ribs for easier carving.

Rib eye steaks are cut from a standing rib, boned with most of the fat and lesser muscles removed.

While often referred to as “prime rib”, the USDA does not require the cut to be derived from USDA Prime grade beef.

Today’s Menu: Prime Rib w/ Savory Herb Potatoes, Cut Green Beans, and Whole Baby Carrots

For Breakfast on this Easter Morning I toasted a Healthy Life Whole Grain English Muffin, Scrambled 1 Egg, and a cup of Bigelow Decaf Green Tea. Not much going on today. Mom went on to Church early, she was meeting some friends for Breakfast. I stayed home and did a load of laundry and cleaned the house. Cloudy this morning and rain moved in by the afternoon. Went over to see Dad for a while and back home to fix an Easter Dinner for me and Mom. I prepared a Prime Rib w/ Savory Herb Potatoes, Cut Green Beans, and Whole Baby Carrots.

We had a Prime Rib Roast in the freezer that I had purchased at Mejier. I like Prime Rib but it’s so overpriced. This was one that weighed just over 3 lbs., 3.7 lbs. Just the right size for myself and Mom.

I preheated the oven on 325 degrees. I took a small roaster pan and sprayed it Pam Cooking Spray and I rubbed a light coat of Extra light Olive Oil on it. Once the oven was heated I put the Roast in the pan and baked it for about 75 minutes. I took the pan out and checked the internal temperature with my meat thermometer and it was right where we wanted at 121 degrees.

I let the Roast sit for 10 minutes before slicing it. The Roast was cooked to a perfect Medium Rare. The Roast came moist and juicy! Cutting in to it was very tender and has an excellent taste. We’ll definitely purchase this again from Meijer!

Mom loves having multiple side dishes with meals so I prepared a good variety. For one side I prepared some Little Potato Company Savory Herb Potatoes. Then I prepared a can of Del Monte Cut Green Beans. Then I opened up a can of Kroger Brand Whole Baby Carrots. I also baked some of Mom’s favorite Rolls, Hawaiian Rolls. For my Dessert later a Breyer’s 100 Calorie Cup of Vanilla Ice Cream. Hope everyone had a great Easter!
