Today’s Menu: Prime Rib Sandwich w/ Mashed Potatoes

 

Just a cup of Bigelow Decaf Green Tea for Breakfast this morning. Another cloudy and gloomy day out. But a lot cooler. We had a high of 32 degrees but the wind chill made it feel like the low twenties! Did a load of laundry after Breakfast. Then cleaned the house, dusted and ran the vacuum. That was it for me today! It’s Leftovers tonight. For Dinner tonight I reheated the Prime Rib and made Sandwiches with it. Also heated up some Bob Evan’s Mashed Potatoes.

 

I wrapped the Prime Rib in foil and reheated it at 250 degrees. After heating it I let it sit for 10 minutes before slicing. I served it on Aunt Millie’s Live Carb Smart Hamburger Buns. The Prime Rib came out Delicious! Tender and flavorful.

 

For a side I prepared some Bob Evan’s Mashed Potatoes. Just microwave for 6 minutes and serve, just as good as homemade, if not better. For Dessert later a Jello Sugar Free Dark Cherry Jello. For the Prime Rib, I purchased it at GFS (Gordon Food Service). It’s a 6 1/4 lb. Prime Rib. It’s already cooked so all I do is reheat it. I had it in the freezer and sat it in the fridge overnight to thaw. Then to prepare it I heated the oven to 425 degrees. Took it out of the package and heated it in a baking pan for 3 1/2 hours at 250 degrees. Removed it from the oven when done and let it rest for 15 minutes.

 

The Prime Rib turned out perfect! So very tender and moist with excellent flavor. Came out a nice Medium Rare. We’ll purchase one from GFS again next time we have one! I sliced off an extra slice. I prepared a plate for a elderly woman who lives up the street. I usually make her a plate of our Holiday Meals and take them to her.

Today’s Menu: Prime Rib w/ Au Gratin Potato Casserole and Cut Green Beans

 

To start this 1st day of 2022 off I Fried up some slices of a Cook’s Ham Steak, Simply Potatoes Southwest Style Hash Browns, i Egg Sunny Side Up, and a cup of Bigelow Decaf Green Tea. Great way to start the New Year! Another day of rain, clouds, and gloomy weather, high of 60 degrees. The rain was steady and heavy at times all day. I was all caught up on everything so I watched some Football Bowl Games and got the Prime Rib Roast in the oven! For Dinner tonight I prepared a Prime Rib w/ Au Gratin Potato Casserole and Cut Green Beans.

For one side dish I prepared a Idahoan Au Gratin Homestyle Casserole. I love using these, Delicious and easy to prepare. I left the Idahoan Product info and instructions at the end of the post.

 

 

Then I also heated up a can of Del Monte Cut Green Beans. Just empty the can into a sauce pan and heat until heated through. I just love Green Beans, all Beans! I also baked a loaf of New York Bakery Garlic Bread. For Dessert/Snack later a bowl of Skinny Pop – Popcorn with a Coke Zero to drink.

 

 

 

 

 

 

 

 

Idahoan Au Gratin Homestyle Casserole
Product Description

Preparation Instruction

Oven Directions

Best for Golden Browning

PREHEAT oven to 450°F. COMBINE potatoes and sauce mix in 1 1/2 quart baking dish.
STIR in 1 1/2 cups boiling water, 3/4 cup milk, and 1 1/2 Tbsp. margarine or butter with whisk.
BAKE uncovered for 25 minutes or until top is golden brown and potatoes are tender (sauce will thicken slightly when cooling).
Remove from oven and let stand a few minutes before serving.
BAKING NOTES: To prepare 2 casseroles at once, double all ingredients, increase baking dish size accordingly, and bake about 30 min. To bake potatoes and roast meat at the same time, bake at 375°F for about 45 min; 350°F for about 50 min; or 325°F for about 60 min.

Today’s Menu: Leftover – Prime Rib Sandwich and Green Beans

 

Just a cup of Bigelow Decaf Green Tea for Breakfast. 38 degrees and cloudy out all day. Did laundry, cleaned the house and did a few things outdoors. Just not a lot going on again. For Dinner tonight I prepared the Leftovers, Prime Rib Sandwich and Green Beans. I sliced the remaining Prime Rib into nice size slices and made Sandwiches out of them. Served it on a Healthy Life Wheat Bun and topped with some Woeber’s Horseradish Mustard. I left the original post from last night for ingredients and cooking instructions. Take Care and Stay Safe All!

 

 

For the Prime Rib, I purchased it at Costco. It’s a 3 1/2 lb. Heartland Farm Foods Sous Vide Prime Rib. It’s already cooked so all I do is reheat it. I had it in the freezer and sat it in the fridge overnight to thaw. Then to prepare it I heated the oven to 425 degrees. Took it out of the package and heated it in a foil lined baking pan for 40 minutes. Internal temperature of 100 degrees. Removed it from the pan to a serving dish.

 

 

The Prime Rib turned out perfect! Very tender and moist with excellent flavor. Came out a nice Rare to Medium Rare. We’ll purchase one from Costco again next time we have one! I sliced off an extra slice. I prepared a plate for a elderly woman who lives up the street. I usually make her a plate of our Holiday Meals and take them to her.

 

 

For a  side I heated up the leftover Del Monte Cut Green Beans. Just reheat them in a small sauce pan and heat until heated through on medium heat. Ready to eat!

Today’s Menu: Prime Rib w/ Shredded Potatoes Casserole and Green Beans

 

 

To start this rainy morning off I made some Simply Potatoes Shredded Hash Browns and heated up some Meijer Diced Ham. I made a bed of the Hash Browns in a bowl and sprinkled some Sargento Reduced Fat Sharp Cheddar Cheese. Then topped them off with Diced Ham. I love combinations of Potatoes and Ham. Also had a cup of Bigelow Decaf Green Tea. 38 degrees and a lot of rain to start off 2021. Not a lot going on, just did a few chores around the house. For Dinner tonight I prepared a Prime Rib w/ Shredded Potatoes Casserole and Green Beans.

So to go with the Prime Rib I prepared some RESER’S MAIN STREET BISTRO – BAKED SHREDDED POTATO CASSEROLE. It comes in a tray that you can microwave or bake in the oven. As usual I’m going with the Oven Baking way.

 

 

 

 

Very easy to prepare. Preheat the oven to 350 degrees. Just remove the tray from the package and remove the film covering the tray. Place the tray on a baking sheet and heat in the oven for 22 minutes. And it’s ready to serve!

 

 

 

 

Seasoned with a shake of Salt and Pepper along with a sprinkle of Kraft 2% Shredded Sharp Cheddar Cheese. This turned out delicious! Came out bubbling hot. Plenty of Potatoes and loaded with flavor! Fantastic Potato item to have in the fridge.

 

 

 

 

 

 

For a 2nd side I prepared a can of Del Monte Cut Green Beans. Easy to prepare, just empty the can into a small sauce pan and heat until heated through on medium heat. Ready to eat! Then I also baked a small can of Pillsbury Crescent Rolls. For Dessert later a bowl of Breyer’s Carb Smart Vanilla Ice Cream that I topped with some Smucker’s Sugar Free Chocolate Topping.
