I had ordered a Wild Idea Buffalo Holiday Package that included a 1 lb. package of Buffalo Brats. So today for lunch I prepared my first one. It was real easy to prepare; just put about a 1/2 ich of water in a medium skillet and heated on medium heat. As the water started to boil I added the Brat and put the lid on, Cooked for about 10 minutes and removed the lid and let it cook another 4 minutes. It’s one good Buffalo Brat! Seasoned just right and very tender. Just another one I’ll have to keep in stock in the freezer.

Wild Idea Buffalo – Italian Buffalo Meatballs

Here’s the third and final Buffalo Meatball recipe from Jill O’Brien of Wild Idea Buffalo. The first two were made of Ground Buffalo and this one is made with Buffalo Italian Sausage, which can be purchased on line at the Wild Idea Buffalo web site.

 

 

Wild Idea Buffalo Italian Buffalo Meatballs
Italian Buffalo Meatballs (Makes 20 to 24 meatballs)

Ingredients:

1 lb. Buffalo Italian Sausage

¼ cup basil, chopped

¼ cup sundried tomatoes, chopped

2 cloves garlic, minced

4 oz. mozzarella cheese, shredded

2 teaspoons butter

1 medium onion, diced

1 tablespoon sugar

1 teaspoon fennel

Preparation:

1) Mix basil, sundried tomatoes, garlic and cheese together.

2) In sauce pan over medium high heat, heat oil. Add onions, sugar and fennel and sauté until slightly caramelized. Transfer to plate and allow to cool before adding to other ingredients.

3) Crumble ground buffalo meat into other ingredients. Mix thoroughly with hands.

4) Place mixture in food processor and flash pulse process, until slightly sticky. Allow meat mixture to rest 2 to 24 hours before cooking. This can be done before or after making meatballs.

5) Form into 1 oz. or desired size meatballs and place on lightly oiled baking sheet.

6) Broil meatballs in oven on middle rack, until browned, about 5 minutes.

Serve warm. Great by themselves or serve with marinara on a bed of creamy risotto.

Jill’s Favorite Buffalo BurgersWild Idea Buffalo Jill’s Favorite Buffalo Burgers

Makes 3 to 4 Buffalo Burgers
A little extra seasoning makes these buffalo burgers oh so good.

Ingredients:

1 tablespoons olive oil
1/4 teaspoon mustard
1 teaspoon ketchup
1/4 teaspoon thyme
1 teaspoon salt & pepper
1 lb. Ground Buffalo
Preparation:

1) – Mix all ingredients, but Buffalo together
2) – Add Buffalo& mix thoroughly with hands. Pat into 3 or 4, 1/2″ patties.
3) – Place in refrigerator to firm up burgers
4) – Grill over high heat (500* gas grill) for 3 minutes each side, closing grill lid during cooking time for Medium Rare.
5) – Finish with a sprinkle of high quality finishing salt

Today’s Menu: Provolone Buffalo Burger w/ Reduced fat Potato Chips and a side of Peaches

 

 

A beautiful day out today! About 71 degrees and sunny , a perfect day. I was able to get the 4 wheeler out for a while and got around to cleaning the shed , finally! For dinner I went light, not much of an appetite today. I prepared a 1/4 lb. buffalo Burger topped with Provolone Cheese with sides of Light Potato Chips and Sliced Peaches.

 
I used my favorite burger, Wild Idea Buffalo 1/4 Buffalo Burger. I seasoned it with McCormick Grinder Sea Salt and Black Peppercorn. IBuffalo burger 001 then pan fried it in Canola Oil about 3 1/2 minutes per side. Buffalo gets done rather quickly due to it’s so lean. I topped it with a slice of Sargento Ultra Thin Provolone Cheese and served it on a Aunt Millie’s Light Whole Grain Bun.

 
For sides for my Buffalo Burger I had some Ruffles Light Wavy Chips, 80 calories and 17 carbs per serving and I had a small bowl of Del Monte No Sugar Added Sliced Peaches. For dessert/snack later a 100 Calorie Mini Bag of jolly Time Pop Corn.

Today’s Menu: Velveeta/Kraft Dinners Chili Cheese Mac Velveeta Cheesy Skillets w/ Whole Grain Bread

 

With Dad in rehab and Mom staying there the biggest part of the day I’ve been taking over all the daily house work, still looking for an Velveeta Turkey Chiloi Mac 001easier way to vacuum while in a wheelchair! I’ve scanned the net but nothing out there. As hey say you gotta do what you have to do! Anyway for dinner I prepared Velveeta/Kraft Cheesy Skillets Dinner Chili Cheese Mac, using Jennie – O Extra Lean Ground Turkey and added 1 can of Joan of Arc Light Red Kidney Beans. This is has become one of my favorite comfort foods. 1 pan so easy clean up, has, cheese, pasta, and for a meat it has ground turkey, and you can add a can of kidney beans to make it that much heartier!

 

 

As in all the Chessy Skillet Dinners the kit includes: Pasta, Velveeta Cheese Sauce, and Seasoning pack. All I had to do was add the 2 cups of water and 1 lb. of Ground Turkey, and 1 can of Joan of Arc Light Red Kidney Beans. I used Jennie – O Extra Lean Ground Turkey. Using the Extra Lean Ground Turkey instead of the Ground Beef you can lower the calorie count by anywhere from 60 – 80 calories! As I browned the Turkey I added Sea Salt, Pepper, and Ground Smoked Cumin for seasoning. It’s ready in about 10 minutes. I then add 2 cups of water, the seasoning and pasta. Simmer for 10 – 12 minutes and add the Velveeta Cheese and your ready for dinner. I’ll leave the instructions at the end of the post. It’s 380 calories and 28 carbs but you can lower the calorie count by using the Ground Turkey as stated above. The Ultimate Cheeseburger Dinner is very good but i think this is my new favorite. I really like the Chili Seasoning! Another one pan quick, easy, and delicious Velveeta/Kraft Dinner! I also had a couple of slices of Aunt Millie’s Light Whole Grain Bread. For dessert later a Healthy Choice Chocolate Swirl Frozen Yogurt.

Today’s Menu: Bison Smoked Cheddar Burger w/ Baked Crinkle Fries
I’m having one of those Wild Idea 1/4 lb. Buffalo Burgers. I seasoned it with McCormick Grinder Sea Salt and Black Peppercorn. I pan fried it in Extra Virgin Olive Oil about 3 1/2 minutes per side. It fried up perfectly! Great tasting and juicy Burger and as good as it looks in the picture it tasted even better. I topped it with a slice of Bordon’s Smoked Cheddar Cheese and served it on a Healthy Life Whole Grain Bun. I love these Buffalo Burgers!

For a side I had I baked some Alexia Crinkle Fries. Baked at 450 degrees for 20 minutes and I seasoned them with Sea Salt and Ground Black Pepper. For dessert later/snack later a 100 Calorie Mini Bag of Jolly Time Pop Corn.

The one pot meals, you have to love them! I used Kraft/Velveeta Cheesy Skillets Dinner Kit/Ultimate Cheeseburger Mac. The dinner kit includes: Pasta, Velveeta Cheese Sauce, and Seasoning pack. All I had to do was add the 2 cups of water and 1 lb. of Ground Turkey. I used Jennie – O Extra Lean Ground Turkey. Today’s Menu: Catfish Nuggets w/ Shells & Cheese and Whole Grain Bread

Fried up about 1 1/2 lbs. of Catfish Nuggets for everyone tonight. Easy to make I seasoned the Nuggets with Sea Salt and Mrs. Dash Lemon Pepper and then rolled in Italian Bread Crumbs. Fried in Extra Virgin Olive Oil about 3 minutes per side on medium heat. As sides had Velveeta/Kraft Shells and Cheese (Made w/ 2% Milk)  and Healthy Life Whole Grain Bread.
