Steak, Potato and Green Bean Salad
It’s hard not to love a salad that has both meat and potatoes in it! Of course the green stuff makes for a well balanced meal that will leave you completely satiated. And, the garlic, lemon and herb vinaigrette, you’ll want to make again and again.

Ingredients: (serves 2 to 3)
1 – 10 oz. Ribeye or New York Strip Steak (or other cut would work too)
2 to 3 – medium-sized potatoes, steamed or boiled
1/4 – pound fresh green beans, stem end clipped
1 – tomato or cherry tomatoes, chopped
Optional: Crumbled Feta Cheese, Fennel Fronds, or green onion for garnish
Greek Vinaigrette

Preparation:

1 – Prep steak, by rinsing under cold water and blotting dry. Drizzle with olive oil, salt and pepper. Allow to rest at room temperature for about two hours.
2 – Quarter the potatoes after they are steamed or boiled. You can also pan fry in a little olive oil to lightly brown.
3 – Steam or pan sauté green beans until el dente.
4 – Grill the steak according to thickness, three to four minutes each side, turning at one and a half minute intervals. Remove the steak from the grill, tent with foil and allow to rest for 5 minutes.
5 – Arrange potatoes and green beans on the plates.
6 – Slice the steak thin and divide between plates.
7 – Add the tomatoes and drizzle the whole salad with the vinaigrette.
8 – Garnish with feta cheese and fennel fronds. Season with a little finishing salt and fresh cracked pepper to taste.

Greek Vinaigrette:
Ingredients:
1/3 – cup white wine vinegar
1 – tablespoon fresh squeezed lemon juice
1/3 – cup extra virgin olive oil
1 to 2 – garlic cloves
¼ – cup fresh basil leaves
4 – green onions, white part only, chopped (reserve greens for garnish)
2 – teaspoons oregano
1 – tablespoon crushed fennel
1 – teaspoon black pepper
½ teaspoon salt

* Preparation: Mix all ingredients in blender until well incorporated. Transfer to a lidded container until ready to serve. Shake before drizzling onto salad. Keeps well in the refrigerator.

New England Clam Chowder
Jam-packed with clams, this classic seafood dish is sure to warm you up! With just seven ingredients and less than 30 minutes of preparation time, it’s the perfect dish for cozying up by the

fireside.
Yield: 2 servings
Serving size: 1 bowl chowder (1/2 of total recipe)

Ingredients
1 can (5 ounces) whole baby clams, undrained
1 baking potato, peeled and coarsely chopped
1/4 cup finely chopped onion
2/3 cup evaporated skimmed milk
1/4 teaspoon white pepper
1/4 teaspoon dried thyme
1 tablespoon reduced-fat margarine

Directions
1 – Drain clams, reserving juice. Add enough water to reserved juice to measure 2/3 cup. Combine clam juice mixture, potato, and onion in large saucepan. Bring to a boil over high heat; reduce heat and simmer 8 minutes or until potato is tender.

2 – Add milk, pepper, and thyme to saucepan. Increase heat to medium-high. Cook and stir 2 minutes. Add margarine. Cook 5 minutes or until soup thickens, stirring occasionally.

3 – Add clams; cook and stir 5 minutes or until clams are firm.

Yield: 2 servings. Serving size: 1 bowl chowder (1/2 of total recipe).

Mashed Potatoes……………..

Add cream cheese to your mashed potatoes so they are extra creamy. Add boursin cheese for potatoes that rich, creamy, and lighter in calories. Add a teaspoon of Wasabi powder for spicy Japanese style potatoes. Mash your potatoes with Greek yogurt to make a healthier version that is still creamy and tangy. You can also add minced garlic or garlic powder which enhances potatoes, especially when followed by a healthy sprinkling of shredded cheese. Bottled ranch dressing or dry ranch dressing mix offers a zesty kick. Other favorites are dill, chives and crumbled bacon. Enjoy those Mashed Taters!

Buying and Storing Sweet Potatoes………………

Select sweet potatoes with tight, unwrinkled skins that show no signs of blemishes or bruises. Look for small- to medium-sized ones as the larger they get, the starchier they become. Sweet potatoes range from cream-colored varieties to the deep orange ones sometimes mistakenly referred to as yams.

They are best stored in a cool, dry place with suitable ventilation. You can put them in woven baskets or wooden boxes to minimize damage. They should also be kept off the ground to prevent rodents and other pests from getting to them. Make sure the area where you store the sweet potato is well-ventilated.

Fried Walleye w/ Baked Scalloped Potatoes

Today’s Menu: Fried Walleye w/ Baked Scalloped Potatoes

 

 

 

Just a cup of Bigelow Decaf Green Tea for Breakfast. 75 degrees and sunny out today. Not a lot going on today but rest. I’ve a bad sinus headache all day. Hopefully better later tonight! For Dinner tonight I prepared Fried Walleye w/ Baked Scalloped Potatoes.

 

 

So to prepare it I first rinsed the fillets in cold water and patted it dry with paper towel. Then I seasoned it with McCormick Grinder Sea Salt and Black Pepper Medley. Put the fillet in a Hefty Plastic Bag and added some Progresso Italian Style Bread Crumbs, sealed the bag and shook till the fillet was well coated. I then fried it in Extra Light Olive Oil on medium heat, about 4 minutes per side till golden brown! I love Walleye, as I do most Fish. Walleye is so meaty and has such a fresh flavor!

 

 

For a side I tried another Reser’s Main Street Bistro side dish, Baked Scalloped Potatoes. I came across these Meijer. And we are hooked on them!. We had the Sliced Potato Casserole last night and having the Baked Scalloped Potatoes. This one also comes in a tray that you can microwave or bake in the oven, I’m going with the Oven Baking way.

 

 

 

Very easy to prepare , as the others were. Preheat the oven to 350 degrees. Just remove the tray from the package and remove the film covering the tray. Place the tray on a baking sheet and heat in the oven for 22 minutes. And it’s ready to serve! Seasoned with a shake of Salt and Pepper and a sprinkle of Kraft 2% Shredded Sharp Cheddar Cheese. Another delicious Potato Dish! Seasoned just right and you can hints of taste from the Butter and Sour Cream. For Dessert later a Jello Sugar Free Dark Cherry Jello.

Loaded Potato Hearty Soup

Today’s Menu: Loaded Potato Hearty Soup

 

 

Just a cup of Bigelow Decaf Green Tea for Breakfast. 60 degrees and partly cloudy out there today. 68 degrees and partly cloudy out today. After my Tea I went to Kroger and then over to Meijer. Stopped and got the car washed and got gas on the way home. Back home it was raking leaves time again. So many leaves out there and we are not even in prime time leaf falling yet! For Dinner tonight I prepared Loaded Potato Hearty Soup.

 

I wanted something light for Dinner so Soup seemed perfect! I’m trying the Idahoan Loaded Potato Hearty Soup. It comes in a packet and easy to prepare. I’ll be preparing the Soup on the stovetop. Start by heating 4 cups of water to a boil in a 2 quart pot. Whisk in the contents of one pouch of soup all at once. Reduce heat and simmer uncovered for 5 min, stirring occasionally. Remove the pot from heat and let stand 5 min to cool slightly before serving.

 

Really a very good Potato Soup! I topped it off with Sargento Off the Block 4 State Cheddar Cheese. Plenty of Potatoes and the Soup had excellent Seasoning. I’ll be adding this to the Pantry! For Dessert/Snack later a bowl of Skinny Pop – Pop Corn with a Coke Zero to drink.
