Today’s Menu: Creamy Potato Soup w/ Grilled Cheese Sandwich

For Breakfast on this cold Sunday Morning I had a toasted Healthy Life Whole Grain English Muffin. I then got out the Egg Beater’s Egg Whites and Scrambled a 1/2 cup of it, 1/2 equals 2 Eggs. Next I fried some al fresco Uncured Chicken Bacon and I also used a slice of Sargento Ultra Thin Swiss Cheese. Put it all together and I had one delicious Breakfast Sandwich! Also had my morning cup of Bigelow Decaf Green Tea. The al fresco Uncured Chicken Bacon I used is some of the best Bacon I’ve come across in a while. It fries up so crisp and has an excellent taste! As I said its cold, 15 degrees and a wind chill of 10 degrees. It was mostly sunny but only got up to 25 degrees. Did a load of laundry after Breakfast. Then after Lunch I cleaned the house, vacuum and dusted. Not much else going on so I kicked back and watched some College Basketball. So for Dinner tonight I’m having Creamy Potato Soup w/ Grilled Cheese Sandwich.

Nothing like a easily made Comfort Food Dinner! Creamy Potato Soup w/ Grilled Cheese Sandwich. I’m using one of my favorite Soups, Bear Creek Creamy Potato Soup Mix. I really love using all the Bear Creek Products! So delicious and easy to prepare.

To prepare a package of it; In a 2 quart sauce pan bring 8 cups of water to a rolling boil. Whisk in the soup mix. Reduce the heat to medium and simmer for 10 minutes, stirring occasionally. Salt and pepper to taste and serve! Perfect seasoning, thickened up just right, plenty of Diced Potato and a fantastic Potato flavor. The package makes 8 cups and very easy to prepare and makes one delicious Potato Soup.

To make my Grilled Cheese I’ll be using; Kraft Sliced Sharp Cheddar Cheese, Blue Bonnet Light Butter, and Healthy Life Whole Grain Bread. I started by buttering the outside half of a slice of bread. Layered 2 slices of the Sharp Cheddar on top. Added my top half of the sliced bread, buttering the outside of the slice. I then got out a skillet, heated it up on medium heat and lightly coated it with a 1/2 pat of Butter. When the Butter was melted I added my sandwich. Grilled it on both sides until it was golden brown and the Cheese melted. For Dessert a Jello Sugarfree Dark Chocolate Pudding topped with Cool Whip Free.

Bear Creek Creamy Potato Soup Mix

A favorite original Bear Creek® soup. Very creamy and delicious with a delicate blend of parsley, herbs and spices to give it a little kick.

Yields about 8 one-cup servings.

Try adding crumbled bacon, sour cream and shredded cheddar cheese for variety.
While they simmer on the stove, you can smell the hearty goodness of Bear Creek® soups. They’re quick and easy to make and come in 15 delicious varieties. These soups have a homemade taste that will satisfy every appetite.

Today’s Menu: Creamy Potato Soup w/ Grilled Cheese Sandwich

Foggy morning out there today. So for Breakfast I made a packet of Pioneer Peppered White Gravy. I also toasted a couple of slices of Healthy Life Whole Grain Bread, fried 2 Jennie – O Turkey Breakfast Sausage Links, and my morning cup of Bigelow Decaf Green Tea. Outside it started of foggy and from there a cloudy and dreary day, a high in the 40’s with rain on and off with a little sleet. My thumb I burnt is a mess, burned it pretty good. I have to change the dressing twice a day. Hope it heals up good but I think it will be scared up. Stayed home all day and caught up on some house cleaning. Also did a load of laundry for Mom. Everything done, spent the rest of the day watching the NCAA March Madness Basketball. For Dinner tonight I’m having Creamy Potato Soup w/ Grilled Cheese Sandwich.

This week’s Soup Special of the Day is Potato Soup. A classic Comfort Food!

Potato Soup

Recipe Ingredients:

1 medium Onion, chopped
1/4 cup Blue Bonnet Light Butter – divided use
3 cups Water
1 tablespoon Chicken Bouillon Granules
1 teaspoon Sea Salt
1/4 teaspoon White Pepper
1/4 teaspoon Ground Cumin
6 medium Potatoes, peeled and cut into 1/2-inch cubes
1/4 cup All-Purpose Flour
3 cups 2% Milk
1 tablespoon Dried Flat-Leaf Parsley
Additional Parsley for garnish

Cooking Directions:

1 – In a Dutch oven or large soup pot, melt 2 tablespoons butter over medium heat; add onion and cook until softened. Add water, chicken base, salt, pepper and potatoes; bring to a boil. Cover and simmer until potatoes are tender, about 12 minutes.
2 – In a 2-cup glass measure, melt the remaining 2 tablespoons of butter in the microwave on HIGH, about 15 to 20 seconds. Stir in the flour mixing well then microwave on HIGH for 30 seconds, stir and microwave another 30 seconds.
3 – Slowly stir about 1 cup of the milk into flour/butter mixture until smooth and add to the soup, along with the remaining milk and bring to a boil, stirring constantly (mixture can easily scorch on the bottom of pan, stirring prevents this). Continue to cook and stir for another 2 to 3 minutes until broth is slightly thickened and bubbly. Remove from heat and stir in parsley.
4 – To serve, ladle soup into bowls and sprinkle with additional parsley to garnish, if desired.
Makes 6 servings.
