Today’s Menu: Creamy Potato Soup w/ Grilled Cheese Sandwich

Just a cup of Bigelow Decaf Green Tea for Breakfast. Still not feeling up to par, Sinus Infection still really bothering me. So nothing going on and I did nothing but sleep and relax all day! Wanted a good hot meal that I could make real easy. So for Dinner tonight I’m having Creamy Potato Soup w/ Grilled Cheese Sandwich.

It’s an easily made Comfort Food Dinner tonight, Creamy Potato Soup w/ Grilled Cheese Sandwich! I’m using one of my favorite Soups, Bear Creek Creamy Potato Soup Mix. I really love all the Bear Creek Products! So delicious and easy to prepare.

To prepare a package of it; In a 2 quart sauce pan bring 8 cups of water to a rolling boil. Whisk in the soup mix. Reduce the heat to medium and simmer for 10 minutes, stirring occasionally. Salt and pepper to taste and serve! Perfect seasoning, thickened up just right, plenty of Diced Potato and a fantastic Potato flavor. The package makes 8 cups and very easy to prepare.

To make my Grilled Cheese I’ll be using; Kraft Sliced Sharp Cheddar Cheese, Blue Bonnet Light Butter, and Healthy Life Whole Grain Bread. I started by buttering the outside half of a slice of bread. Layered 2 slices of the Sharp Cheddar on top. Added my top half of the sliced bread, buttering the outside of the slice. I then got out a skillet, heated it up on medium heat and lightly coated it with a 1/2 pat of Butter. When the Butter was melted I added my sandwich. Grilled it on both sides until it was golden brown and the Cheese melted. For Dessert/Snack later a bowl of Skinny Pop – Pop Corn and a Diet Peach Snapple to drink.

Today’s Menu: Creamy Potato Soup w/ Grilled Cheese Sandwich

Foggy morning out there today. So for Breakfast I made a packet of Pioneer Peppered White Gravy. I also toasted a couple of slices of Healthy Life Whole Grain Bread, fried 2 Jennie – O Turkey Breakfast Sausage Links, and my morning cup of Bigelow Decaf Green Tea. Outside it started of foggy and from there a cloudy and dreary day, a high in the 40’s with rain on and off with a little sleet. My thumb I burnt is a mess, burned it pretty good. I have to change the dressing twice a day. Hope it heals up good but I think it will be scared up. Stayed home all day and caught up on some house cleaning. Also did a load of laundry for Mom. Everything done, spent the rest of the day watching the NCAA March Madness Basketball. For Dinner tonight I’m having Creamy Potato Soup w/ Grilled Cheese Sandwich.

It’s a Comfort Food Dinner tonight, Creamy Potato Soup w/ Grilled Cheese Sandwich! I’m using one of my favorite new foods, Bear Creek Creamy Potato Soup Mix. I really love all the Bear Creek Products I’ve tried so far. So delicious and easy to prepare. I had made a package of this for Lunch the day before, this is how I got my thumb burned. I had a container of it in the fridge so I just reheated it on medium heat in a small sauce pan.

This week’s Soup Special of the Day is Potato Soup. A classic Comfort Food!

Potato Soup

Recipe Ingredients:

1 medium Onion, chopped
1/4 cup Blue Bonnet Light Butter – divided use
3 cups Water
1 tablespoon Chicken Bouillon Granules
1 teaspoon Sea Salt
1/4 teaspoon White Pepper
1/4 teaspoon Ground Cumin
6 medium Potatoes, peeled and cut into 1/2-inch cubes
1/4 cup All-Purpose Flour
3 cups 2% Milk
1 tablespoon Dried Flat-Leaf Parsley
Additional Parsley for garnish

Cooking Directions:

1 – In a Dutch oven or large soup pot, melt 2 tablespoons butter over medium heat; add onion and cook until softened. Add water, chicken base, salt, pepper and potatoes; bring to a boil. Cover and simmer until potatoes are tender, about 12 minutes.
2 – In a 2-cup glass measure, melt the remaining 2 tablespoons of butter in the microwave on HIGH, about 15 to 20 seconds. Stir in the flour mixing well then microwave on HIGH for 30 seconds, stir and microwave another 30 seconds.
3 – Slowly stir about 1 cup of the milk into flour/butter mixture until smooth and add to the soup, along with the remaining milk and bring to a boil, stirring constantly (mixture can easily scorch on the bottom of pan, stirring prevents this). Continue to cook and stir for another 2 to 3 minutes until broth is slightly thickened and bubbly. Remove from heat and stir in parsley.
4 – To serve, ladle soup into bowls and sprinkle with additional parsley to garnish, if desired.
Makes 6 servings.
