Today’s Menu: Peppercorn and Herb Crusted Pork Tenderloin w/ Savory Herb Potatoes and Seasoned Pinto Beans

 

 

 

For Breakfast on this morning i toasted a Healthy Life Whole Grain English Muffin. I topped it with a Poached Egg and I also had a cup of Bigelow Decaf Green Tea. Yesterday morning was cold and this morning its even colder! It’s a minus 8 degrees. It was sunny out today but only a high of 18 degrees. So with the cold weather outside I stayed indoors. Today was computer cleanup day. Cleaned off the desk and did some rearranging. Then I did some computer cleaning and maintenance. Ran all the scans, deleted old files, and up dated some passwords. Then I unhooked everything and cleaned the inside of the processor. For Dinner tonight I prepared a Peppercorn and Herb Crusted Pork Tenderloin w/ Savory Herb Potatoes and Seasoned Pinto Beans.

 

 

 

I purchased the Pork Tenderloin at our local Kroger up the road. It’s a Smithfield Pork Tenderloin. Usually I use my Cumin Spiced Rub when having a Pork Tenderloin so I thought I would give the Peppercorn and Herb Rub a try. To prepare it I’ll need; the Pork Tenderloin, Extra Light Olive Oil, McCormick Grinder Sea Salt, McCormick Grinder Peppercorn Medley, Dried Parsley, and Dried Thyme.

 

 

 

To prepare it; preheat oven to 350°. Combine all the ingredients, except the Peppercorn, in a small bowl. Next rub a light coat of Extra Light Olive Oil all over the Pork. Then rub the combined ingredients on all sides of the Pork. I then got a plate, and got the McCormick Grinder Peppercorn Medley and ground the Peppercorn on to the plate. Took the Pork Tenderloin and rolled in the Peppercorn. I then let the Pork rest for 5 minutes. As that was resting I got a Cast Iron Skillet sprayed it with a light coat of Pam Non-Stick Cooking Spray and added a tablespoon of Extra Light Olive Oil. Heated the Skillet on medium high heat. Add the Pork to the skillet and cook 2 minutes per side. From the stove to the oven; Bake at 400° for 10 minutes or until a thermometer registers 155° (slightly pink), turning after 7 minutes. Remove from the skillet into a platter or dish and let stand 10 minutes before slicing. That’s one excellent Pork Tenderloin! Moist, juicy, and love the seasoning. The Peppercorn Medley gives it great flavor and a nice crust. Served it with Horseradish Sauce and baked a loaf of La Brea Multi Grain Bread.

 


For one side I prepared Potatoes; the Little Potato Company Savory Herb Potatoes. I have these quite often and really enjoy them. The Potatoes come in a microwavable tray. Just pop the tray in the microwave for five minutes and mix in the seasoning pack and you have a nutritious and tasty Potato Dish. These are definitely a good item to have in the pantry! So easy to prepare and no clean up.

 

 

 

 

For another side I heated up a can of Margaret Holmes Seasoned Pinto Beans. I purchased a few of cans of this at a nearby Walmart, they carry a good selection of a lot of the Margaret Holmes Products. To prepare it just empty the contents into a medium saucepan. Cover it and bring it to a boil. Stir and reduce the heat to slow simmer and serve when ready. And I have delicious side dish! I love Beans of all kinds and these Seasoned Pinto Beans are delicious, love the Seasoning. I also baked a loaf of La Brea Multi Grain Bread. So easy to prepare and no clean up. For Dessert later a Weight Watcher’s Divine Triple Chocolate Ice Cream Bar.

Today’s Menu: Cumin Spiced Pork Tenderloin w/ Slow Cooker Parmesan Potatoes and Green Beans

 

 

I had a Scrambled Egg and a toasted slice of Aunt Millie’s Light Whole Grain Bread. I topped the Egg with a sprinkle of Sargento Reduced Fat Shredded Sharp Cheese. Also had a cup of Bigelow Decaf Green Tea. I’m not sure but I may be coming down with a cold, a Summer cold (blah). Hopefully I’ll be up and feeling better by tomorrow. I went to Walgreen’s and picked up something to take in case it is a cold. After that a day of bed rest! For Dinner tonight I prepared a Cumin Spiced Pork Tenderloin w/ Slow Cooker Parmesan Potatoes and Green Beans.

 

 

I purchased the Simple Truth Pork Tenderloin from Kroger yesterday, a small one at just over 1 lb. To make the dish I’ll need; 1 tablespoon Extra Virgin Olive Oil, 1 pork Tenderloin, 1 tbsp Roasted Cumin, 1 tsp Garlic Powder, 1 tsp Cumin Spiced Chili Powder, 1 teaspoon Sea Salt, 1/2 teaspoon Hungarian Paprika, 2 teaspoons Dried Oregano, and 1/4 teaspoon Black Pepper. To prepare it preheat oven to 350°. Combine all the ingredients; rub it all over the pork. Let stand 20 minutes. Heat the oil in a Cast Iron Skillet over medium-high heat. Add pork to pan; cook 4 minutes, browning on all sides. From the stove to the oven; Bake at 400° for 10 minutes or until a thermometer registers 155° (slightly pink), turning after 7 minutes. Remove from the skillet into a platter or dish and let stand 10 minutes before slicing. Then get ready to enjoy one delicious Pork Tenderloin! Fantastic combo of Spices, which makes one incredible Crust on the Pork with the inside being tender and moist! The other “White Meat” sure is good!

 

Tried a new Potato Recipe, Slow Cooker Parmesan Potatoes. Got the idea from several similar recipes. I’ll need; 1 pound Baby Gold Potatoes (halved), 1⁄4 cup Water, 2 tablespoons Extra Light Olive Oil, 2 tablespoons Blue Bonnet Light Butter, 1/2 teaspoon dried Oregano, 1/2 teaspoon dried Basil, 1/2 teaspoon dried Dill, Sea Salt and freshly Ground Black Pepper (to taste), 1/4 cup Kraft Reduced Fat Grated Parmesan, and 2 tablespoons chopped fresh Parsley leaves.

 

 

 

To prepare them; Line your Slow Cooker or Crock Pot with a disposable plastic liner. Lightly coat the plastic liner with nonstick spray. Add water. Place potatoes, olive oil, butter, oregano, basil and dill into the slow cooker; season with salt and pepper, to taste. Cover and cook on low heat for 4-5 hours, you can also cook them on high heat for 2-3 hours. When they are fork tender serve them immediately, sprinkle with Parmesan and garnished with parsley. These came out incredible, another one of those Keeper Recipes! Plus easy clean up using the slow cooker liners.

 

 

 

I also cooked some more of the fresh Green Beans. I love beans, but they are even better when fresh. I also baked a loaf of Pillsbury French Bread. For Dessert later a bowl of Skinny Pop – Pop Corn and a can of Coke Zero to drink.

 

 

 

 

 

 

SLOW COOKER PARMESAN POTATOES

INGREDIENTS:

1 pound Baby Gold Potatoes, halved
1⁄4 cup Water
2 tablespoons Extra Light Olive Oil
2 tablespoons Blue Bonnet Light Butter
1/2 teaspoon dried Oregano
1/2 teaspoon dried Basil
1/2 teaspoon dried Dill
Sea Salt and freshly Ground Black Pepper, to taste
1/4 cup Kraft Reduced Fat Grated Parmesan
2 tablespoons chopped fresh Parsley leaves

DIRECTIONS:
1 – Line your Slow Cooker or Crock Pot with a disposable plastic liner. Lightly coat the plastic liner with nonstick spray. Add water. Place potatoes, olive oil, butter, oregano, basil and dill into the slow cooker; season with salt and pepper, to taste.
2 – Cover and cook on low heat for 4-5 hours or high heat for 2-3 hours, or until tender.*
3 – Serve immediately, sprinkled with Parmesan and garnished with parsley, if desired.

Ginger Grilled Tenderloin

Fresh ginger always wakes up tired palates. This Oriental-inspired marinade gives pork tenderloin a new attitude on the grill, and makes this dish perfect for an after-work dinner party or for family supper.

Ingredients

2 pork tenderloin, (about 1 1/2 pounds total)
2 cups chicken broth
4 tablespoons ginger, grated
2 tablespoons soy sauce
2 tablespoons sesame oil
2 cloves garlic, minced
Directions

1 – Combine all ingredients in a self-sealing plastic bag; seal bag and refrigerate 2-24 hours.
2 – Remove tenderloins from marinade; discarding marinade. Grill tenderloins over medium-hot coals, turning occasionally, for 15-20 minutes, until thermometer inserted reads 160 degrees F. Slice to serve.

For Breakfast I had one of my favorites, Skillet Potatoes and Ham for Breakfast. I used 1 package of Simply Potatoes Steakhouse Seasoned Diced Potatoes and a package of Meijer Diced Ham to prepare it. Just cook the Potatoes according to the package instructions and with about 5 minutes of cooking time left add the Diced Ham. I topped it with a Sunnyside Up Fried Egg. Just love this skillet meal!

Another cool morning to start the day, about 42 degrees this morning. Beautiful day out, sunny and a high in the mid 60’s, love these beautiful Autumn Days! Did a few things in the house and did a load of laundry. Outside got the leaf blower out and cleaned the deck and driveway. Had everything done by Lunch. Then after Lunch got the cart out for a spin around the neighborhood. Noticed that there’s quite a few trees around the neighborhood that are already turning colors. Afterwords a day of NFL Football. For Dinner tonight it’s a Boneless Pork Loin Fillet w/ Whole Baby Carrots and Whole White Potatoes.

Tried another one of the Swift Premium Products, Swift Premium Dry Rubbed Whiskey Black Pepper Boneless Pork Loin Fillet. i love using these Swift Premium Pork Products. So easy to prepare and all come out lean and moist with fantastic flavor! I’ve only found this at Kroger so far.

To prepare it; Preheat the oven to 350°F. Remove the Pork Loin from package and place in an uncovered roasting pan that is sprayed with Pam Cooking Spray. I then took some JB’s Fat Boy Haug Waush and rubbed some over top of the Roast, for added flavor. Cook approximately 35 minutes or until internal temperature on a meat thermometer reached 145°F in the thickest part of the Roast. Remove it from oven and let rest 3 minutes before slicing and serving. And as the other Swift Premium Products, one delicious Roast! The Roast was very moist and tender. The JB’s BBQ Sauce was just right for the added flavor.

Then for another side dish I heated up a can of Kroger Whole New Potatoes. Just heat and serve, seasoned with McCormick Grinder Sea Salt and Black Peppercorn Medley, Parsley, and I Can’t Believe It’s Not Butter. Also had a slice of Baked Pillsbury French Bread that was leftover from last nights Dinner.Excellent Sunday Dinner! Cooking Directions:
Oven:

Preheat oven to 350°F.

Wow, some weather we had in the past day! Yesterday started off windy but by Noon it was a strong wind around 40 mph. By 2:00 the winds were 50-60 mph. and that’s when things started going bad. We kept our power, but a brief flicker, but some finer optic lines came down across I – 75 which blocked the interstate for about 4 hours and we lost our internet service. Ours was down from around 2:00 till well after Midnight. Some of our neighbors lost their internet, cable tv, and phone service. They have the Time Warner Bundle which you have service for all 3 items. I never did like that for that very reason that happened, one goes and you lose everything. I have internet service through them but have DirectTV and phone service through Cincinnati Bell. It was only 28 degrees this morning and went up to around 50 degrees, but sunny out and just a light breeze. Had to do some cleaning outside, a lot of tree limbs, leaves, and debris scattered about. So anyway for dinner tonight I prepared a Cumin Spiced Pork Tenderloin w/ Mashed Potatoes and Italian Cut Green Beans.

Fried Walleye w Cut Roma Beans and Baked Roasted Fingerling Pota 003
For one side I heated some Bob Evan’s Mashed Potatoes. Microwave for a total of 6 minutes and done. Then for another side dish I heated a can of Allens Cut Italian Green Beans. To prepare them just empty the can into a small sauce pan and simmer until heated. Just season with a bit of Sea Salt and it’s ready! I could have Beans every day and never get tired of having them. For dessert later a Skinny Cow Chocolate Truffle Ice Cream Bar.

Went out to get the morning papers early this morning and it was really windy out and a lot cooler than it’s been. For Breakfast I toasted a Healthy Life Whole Grain English Muffin that I topped with some Smucker’s Sugarless Blackberry Jam. I love the Smucker’s Sugarless Jams. There’s no difference in taste but fewer calories and carbs. I’ve even got Mom and Dad using them now. Did some cleaning around the house and took my Hoveround outside and gave it a good cleaning, it’s a dust magnet under the seat and around the batteries. For dinner tonight I prepared a Tuscan Seasoned Pork Medallions w/ Cut Italian Beans, Whole Potatoes, and Baked Italian Loaf Bread.

 

 

Tuscan Seasoned Pork Loin Medallions

While at Costco a while back I came across a package of Tuscan Seasoned Pork Loin Medallions. it was a good size package with 24 slices. I kept 4 slices out and froze the remaining 20 pieces. Prepared 4 of them and they were excellent and couldn’t wait to have them again! So I got a bag of 4 medallions out and let them thaw in the fridge oversight.

 

 

 

 

Tuscan Seasoned Pork Medallions w Cut Italian Beans, Whole Potat 002
I started by preheating the oven on 400 degrees. To prepare them I used a Cast Iron Skillet. Sprayed it with Pam Cooking Spray and 1 tablespoon of Extra Virgin Olive Oil and heated it on medium heat. I then lightly Salted the Pork with Sea Salt and a sprinkle of McCormick Dried Parsley. Added the Pork to the skillet and cooked it for 2 minutes a side, just started to brown. Then from the stove to the oven, love Cast Iron Skillets! I then baked them to a medium rare, 145 degrees in the center of the medallions using a meat thermometer. Pork Tenderloin is one of my favorites. The Pork was so tender and flavorful. Seasoned just right and very moist. I’ll have to buy another package next visit to Costco!

Today’s Menu: Tuscan Seasoned Pork Medallions w/ Roasted Fingerling Potatoes and Cut Italian Beans

Not quite as cold this morning, sunny and about 27 degrees. For Breakfast I scrambled a couple of medium size Eggs and toasted a couple of slices of Healthy Life Whole Grain Bread. After Breakfast I helped Mom out with a couple of loads of laundry and did a little house work. About Noon or so a friend of mine came over and helped replace the hard drive on my computer. Bit of a pain, had to transfer all the files to the new hard drive and reinstall Windows. When I bought the computer it came with Windows 7 already installed so I had to purchase a Windows 7 disc to reinstall. If this happens again I think I’ll just buy a new computer! Anyway long afternoon, thankfully I had help. For dinner tonight I prepared Tuscan Seasoned Pork Medallions w/ Roasted Fingerling Potatoes and Cut Italian Beans.

While at Costco the other day I came across a package of Tuscan Seasoned Pork Loin Medallions. it was a good size package with 24 slices. I kept 4 slices out and froze the remaining 20 pieces.

 

 

 

 
I started by preheating the oven on 400 degrees. To prepare them I used a Cast Iron Skillet. Sprayed it with Pam Tuscan Seasoned Pork Medallions w Roasted Fingerling Potatoes an 003Cooking Spray and 1 tablespoon of Extra Virgin Olive Oil and heated it on medium heat. I then lightly Salted the Pork with Sea Salt and a sprinkle of McCormick Dried Parsley. Added the Pork to the skillet and cooked it for 2 minutes a side, just started to brown. Then from the stove to the oven, love Cast Iron Skillets! I then backed them to a medium rare, 145 degrees in the center of the medallions using a meat thermometer. Pork Tenderloin is one of my favorites and this one ranked way up the chart! The Pork was so tender and flavorful. Seasoned just right and very moist. Can’t wait to prepare the other pieces in the freezer!

For a side I had some Fingerling Potatoes left so I used them tonight, prepared Roasted Fingerling Potatoes. Started by washing the Potatoes off in cold water. I then cut the Fingerling Potatoes in half, lengthwise. Put the Potatoes in a large bowl seasoned them with; Extra Virgin Olive Oil, Garlic Powder, Sea Salt, Pepper, Chili Powder, Parsley, and Kraft Reduced Fat Parmesan Grated Cheese to top the Potatoes with. Using a cookie sheet lined with foil I spread the Potatoes out on the sheet . Then Roasted them at 400 degrees until they were fork tender, about 20 minutes. Still can’t figure out why it’s so hard to find Fingerling Potatoes in this area, only 1 store around here locally that sells them (Thank you Jungle Jim’s).

Then for one side dish I heated a can of Allens Cut Italian Green Beans. To prepare them just empty the can into a small sauce pan and simmer until heated. I love the taste of these, just season with a bit of Sea Salt and it’s ready! I could have Beans every day and never get tired of having them.

 

 

 

 
Oven-Roasted Fingerling Potato Fries

Ingredients:Tuscan Seasoned Pork Medallions w Roasted Fingerling Potatoes an 002

Fingerling Potatoes
Extra Virgin Olive Oil
Garlic Powder
Sea Salt
Pepper
Chili Powder
Kraft Reduced Fat Parmesan Grated Cheese
Directions:

1.) Thoroughly clean and scrub the potatoes.

2.) Cut the potatoes in half and add to a large mixing bowl.

3.) Add the olive oil. I used about 1 tablespoon, but this will vary by how many potatoes you use. Just use enough oil to give the potatoes a nice coat. Add your seasonings.

4.) Put on a baking sheet and sprinkle with the Parmesan Grated Cheese

5.) Roast in the oven for 25-35 minutes at 450 degrees. The potatoes should be tender in the middle when done.

For Breakfast I had Scrambled Eggs, Jennie – O Turkey Breakfast sausage Links, Aunt Millie’s Toasted Whole Grain Toast, and a cup of Bigelow Decaf Green Tea. Good way to start a rainy Monday Morning. Lot of rain today, temps in the 50’s. All caught up on house work and laundry so did some much needed cleaning on and around my computer desk. Got that done and did some cleaning of the computer, deleted some old files and programs. Not much else going on today. For dinner tonight I prepared a Cumin Spiced Pork Tenderloin w/ Mashed Potatoes and Italian Cut Green Beans.

I’ve been using the Cumin Spiced Rub for quite some time now. I purchased the Simple Truth Pork Tenderloin from Kroger and had it in the freezer. I let it thaw overnight in the fridge. To make the dish I’ll need; 1 tablespoon Extra Virgin Olive Oil, 1 pork Tenderloin, 1 tbsp Roasted Cumin, 1 tsp Garlic Powder, 1 tsp Chili Powder, 1 teaspoon Sea Salt, 1/2 teaspoon Hungarian Paprika, 2 teaspoons Dried Oregano, and 1/4 teaspoon Black Pepper. To prepare it preheat oven to 350°. Combine all the ingredients; rub it all over the pork. Let stand 20 minutes. Heat the oil in a Cast Iron Skillet over medium-high heat. Add pork to pan; cook 4 minutes, browning on all sides. From the stove to the oven; Bake at 350° for 15 minutes or until a thermometer registers 155° (slightly pink), turning after 7 minutes. Remove from the skillet into a platter or dish and let stand 10 minutes before slicing. Then get ready to enjoy one delicious Pork Tenderloin! Fantastic combo of Spices, which makes one incredible Crust on the Pork with the inside being tender and moist! This is my favorite Pork Recipe!

For one side I heated some Bob Evan’s Mashed Potatoes. Microwave for a total of 6 minutes and done. Then for another side dish I heated a can of Allens Cut Italian Green Beans. To prepare them just empty the can into a small sauce pan and simmer until heated. Just season with a bit of Sea Salt and it’s ready! I could have Beans every day and never get tired of having them. For dessert later a Skinny Cow Chocolate Truffle Ice Cream Bar.

For Breakfast I had an Egg Beater’s Egg White Scrambled Egg, 2 Jennie – O Turkey Breakfast Sausage Links, 2 slices of Toasted Aunt Millie’s Whole Grain Bread, and a cup of Bigelow Decaf Green Tea. Love a good Breakfast! After my morning workout it was house cleaning day. Ran the vacuum and dusted. Swept up and cleaned outside on the deck and driveway, getting a lot of leaves this year. After cleaning got the cart out for a while to enjoy another beautiful Fall Day, sunny and 70 degrees! Clouds and rain moving in though overnight and Saturday, much needed rain. For dinner tonight anew recipe, I prepare a Chili Rubbed Pork with Mango Salsa w/ New Potatoes.

 

 

I had come across this recipe from a McCormick Recipe email and had been wanting to try for some time, like dinnerChili Rubbed Pork with Mango Salsa w New Potatoes 001 tonight! To make this I’ll need the following; 1 package McCormick® Chili Seasoning Mix, 1 tablespoon packed Splenda Brown Sugar, 1 large ripe Mango (peeled) – seeded and finely chopped (1 cup), 1/3 cup finely chopped Red Onion, 2 tablespoons Orange Juice, 1 tablespoon chopped Cilantro, 2 Pork Tenderloins (about 1 pound each), and 1 tablespoon Extra Virgin Olive Oil. The ingredients of one delicious Pork Tenderloin! I used Splenda Brown Sugar instead of the regular Brown Sugar and I also used the McCormick® Chili Seasoning Mix instead of the Gluten-Free McCormick® Chili Seasoning Mix (Kroger was out of stock of it). The original recipe and web link is at the end of the post.

 
To prepare the dish I mixed the Seasoning Mix and Sugar in small bowl. For the Mango Salsa, mixed the Mango, Onion, Orange Juice, Cilantro and 1 teaspoon of the Seasoning Mixture in medium bowl. Covered and refrigerated Chili Rubbed Pork with Mango Salsa w New Potatoes 010until ready to serve.

I then brushed the Pork Tenderloins with Oil. Coated evenly with remaining seasoning mixture. Refrigerated for 1 hour, for extra flavor.

To prepare it preheat the oven to 375°. Add Pork to pan; cook 4 minutes, browning on all sides. Bake at 375° for 15 minutes or until a thermometer registers 145° (slightly pink), turning after 7 minutes. Let stand 5 minutes before slicing. I use this cooking method when I prepare my Cumin Spiced Pork Tenderloin and it always comes out perfect. The Tenderloin came moist and delicious! Love the McCormick® Chili Seasoning Mix along with Brown Sugar, nice crust and perfect flavor. A definite “Keeper Recipe”.

 

Seasoned Haddock w Whole New Potatoes and Asparagus Cuts and Tip 002
For a side I heated up a can of Del Monte Whole New Potatoes, just emptied the contents of the can into a sauce pan and heated on medium heat until heated through. I also had a slice of Aunt Millie’s Whole Grain Bread. For dessert later a Healthy Choice Dark Fudge Swirl Frozen Greek Yogurt.

 

 

 

 

Chili Rubbed Pork with Mango Salsa

IngredientsMcCormick

Serves: 8
1 package McCormick® Chili Seasoning Mix
1 tablespoon packed brown sugar
1 large ripe mango, peeled, seeded and finely chopped (1 cup)
1/3 cup finely chopped red onion
2 tablespoons orange juice
1 tablespoon chopped fresh cilantro
2 pork tenderloins, about 1 pound each
1 tablespoon oil

DirectionsChili Rubbed Pork with Mango Salsa w New Potatoes 008

Mix Seasoning Mix and sugar in small bowl. For the Mango Salsa, mix mango, onion, orange juice, cilantro and 1 teaspoon of the seasoning mixture in medium bowl. Cover. Refrigerate until ready to serve.
Brush pork tenderloins with oil. Coat evenly with remaining seasoning mixture. Refrigerate 30 minutes or longer for extra flavor.
Grill pork over medium heat 20 to 30 minutes or until desired doneness, turning occasionally. Let stand 5 minutes before slicing. Serve pork with Mango Salsa.

 
Cooking tip

To bake pork: Prepare pork as directed. Place on foil-lined shallow baking pan. Bake in preheated 450°F oven 20 to 25 minutes or until desired doneness.
