Beautiful Autumn Day out today! Went to Meijer this morning to pick up some Jennie – O Turkey Products; Ground Breakfast Sausage,Extra Lean Ground Turkey Breast, Italian Sweet Sausages, and Breakfast Links. While there I watched the most extreme Couponer I have ever seen, she was amazing! She had a good size binder, notebook type, and on front of the binder a printout of each store aisle and the major products in that aisle. Then pockets in the binder that contained coupons for items in that aisle. I talked to her for a bit and said the biggest savings she had been just over $200! She said it took a lot of time but had a nice pay off! Quite impressive. On to Dinner. Tonight one of my favorites, Turkey and Black Bean Tacos.

 

 
I used Jennie – O Extra Lean Ground Turkey Breast, I had this leftover from the other night when I made Stuffed Peppers. I fried it in Canola Oil and seasoned it with Sea Salt, Ground Roasted Cumin, Cilantro Flakes, and 1 package of Old El Paso Low Sodium Taco Seasoning. As I added the Taco Seasoning Mix I also added 1 can of Bush’s Low Sodium Black Beans, I drained and rinsed them before I added them. Black Beans with Ground Turkey is a perfect pairing for Tacos. Mixed well until everything was coated and then simmered another 5 minutes until heated through.

 

 
For my other toppings I used 1 small can of Mario Sliced Black Olives, 1 small diced Tomato, Sargento 4 Cheese Mexican Shredded Reduced Fat Cheese, Dole Shredded Lettuce, Old El Paso Taco Sauce, and all in a Ortega Whole Grain Corn Taco Shells. Love these Tacos! For dessert later a Jello Sugarless Chocolate Pudding topped with Cool Whip Free.

Rainy day around here today. We needed some rain though it was getting a little dry around here. Not much going on, just bummed around doing odds and ends till football started up in the afternoon. For dinner I prepared Black Bean and Turkey Tacos.

 

 

I used Jennie – O Extra Lean Ground Turkey Breast, I had this leftover from the other night when I made Stuffed Peppers. I fried it in Canola Oil and seasoned it with Sea Salt, Ground Roasted Cumin, Cilantro Flakes, and 1 package of Old El Paso Low Sodium Taco Seasoning. As I added the Taco Seasoning Mix I also added 1 can of Bush’s Low Sodium Black Beans, I drained and rinsed them before I added them. Black Beans with Ground Turkey is a perfect pairing for Tacos. Mixed well until everything was coated and then simmered another 5 minutes until heated through.

Another perfect day outside, hope our streak continues! Moving sort of slow earlier today, stayed up late watching the Cincinnati Reds and Cardinals play a 16 inning ball game last night. Managed to go to the store and picked up a few items to make a Cheesecake for dessert tonight. For dinner it’s one of my favorites, Black Bean and Turkey Tacos.

 

 

I used the leftover Jennie – O Extra Lean Ground Turkey Breast from last night when I made a Turkey Burger. I fried it in Canola Oil and seasoned it with Sea Salt, Ground Roasted Cumin, Cilantro Flakes, and 1 package of Old El Paso Low Sodium Taco Seasoning. As I added the Taco Seasoning Mix I also added 1 can of Bush’s Low Sodium Black Beans, I drained and rinsed them before I added them. I love pairing the Black Beans with Ground Turkey. Mixed well until everything was coated and then simmered another 5 minutes until heated through.

 

 

For my other toppings I used 1 can Green Giant Steam Crisp Super Sweet Yellow and White Whole Kernel Corn, 1 small can of Mario Sliced Black Olives, 1 small diced Tomato, Sargento 4 Cheese Mexican Shredded Reduced Fat Cheese, a bag of Dole Shredded Lettuce, and all in a Ortega Whole Grain Corn Taco Shells. I love these Tacos! The crunch of the shells and all the different flavors and spices make a perfect Taco. For dessert later Cheesecake. Today’s Menu: Sweet Asian Chili Flavored Chicken Wings w/ Oven-Roasted Fingerling Potato Fries

I picked up some more of the Tyson Sweet Asian Chili Flavored Chicken Wings. Their a breeze to prepare; just bake at 450 degrees for 38 minutes and you have Wings! I love the Sweet Asian Seasonings on these. A nice mild heat with a bit of Chili taste, fantastic with Litehouse Light Bleu Cheese dressing/Dip.

Along with the Wings I made some Oven-Roasted Fingerling Potato Fries. I seasoned them all with McCormick Spices; Grinder Sea Salt, Grinder Black Peppercorn, Garlic Powder, and Chili Powder. I baked them at 450 degrees for 26 minutes. Like the Wings these are full of flavor! The seasonings blend just right for the fries. When you first take them out of the oven sprinkle them with Crumbled Bleu Cheese. For dessert/snack later a 100 Calorie Mini Bag of Jolly Time Pop Corn.

Sweet Asian Chili Flavored Chicken Wings (3 lb. bag)
Tyson® Individually Frozen Sweet Asian Chili 1st and 2nd joint Wings are perfect for game time or a fun family meal. These oven-bake wings pair perfectly with easy-to-prepare dip recipes on the back of the bag! Contains up to 22% seasoning solution.

CONVENTIONAL OVEN
1 Preheat oven to 450°F.
2. Line a rimmed baking sheet with foil and spray with non-stick spray.
3. Place frozen chicken wing sections on pan in a single layer.
4. Cook on upper rack for 35 – 38 minutes or until juices run clear when thickest part of the chicken is pierced and temperature on instant read thermometer reaches 180°F. For crisper wings: Cook wing sections on a non-stick sprayed baking rack over a foil-lined rimmed baking sheet.

Oven-Roasted Fingerling Potato Fries

Ingredients:

Fingerling Potatoes
Extra Virgin Olive Oil
Garlic Powder
Sea Salt
Pepper
Chili Powder
Crumbled Bleu Cheese

Directions:

1.) Thoroughly clean and scrub the potatoes.

2.) Cut the potatoes in half. This will allow the fingerlings to cook faster and also gives them a nice crisp.

3.) Toss in olive oil. I used about 2 tablespoons, but this will vary by how many potatoes you use. Just use enough oil to give the potatoes a nice coat. Add your seasonings.

4.) Put on a baking sheet.

5.) Cook in the oven for 25-35 minutes at 450 degrees. The potatoes should be tender in the middle when done. Sprinkle with Crumbled Bleu Cheese when done.

Today’s Menu: Herb Crusted Pork Tenderloin w/ Sliced Carrots, Portabella Marsala Pasta, and Multi Grain Demi- Baguette.

 

 
Early morning shopping at Meijer. They had pork Roasts on special so I’m going with Herb Crusted Pork Tenderloin. I preheated the oven to 475 degrees F. I placed the pork loin on a rack in a roasting pan. I then combined Sea Salt, Extra Virgin Olive Oil, Minced Garlic, Thyme, Rosemary, and Basil in a small bowl. Then with my fingers, massaged the mixture onto the pork loin, covering all of the meat and fat. I roasted the pork for 30 minutes, make sure you have your stove overhead fan running as it start to smoke somewhat after about 20 minutes. I then reduced the heat to 425 degrees F and roasted it for an additional 30 minutes, normally you continue roasting up to an hour but this was smaller roast. Test for doneness using an instant-read thermometer. When the internal temperature reaches 155 degrees F, remove the roast from the oven. Allow it to sit for about 20 minutes before carving. It will continue to cook while it rests. Then be ready to slice one delicious and juicy Pork Tenderloin! The Herb Mix makes a perfect crust for the roast.

For sides I prepared Sliced Carrots and Portabella Marsala Pasta, Meijer Bakery Multi Grain Demi- Baguette. I just boiled the Carrot Chips and it was the first time I tried The Healthy Choice 100% Natural Portabella Marsala Pasta. Easy to fix; microwave for 5 1/2 minutes and you have a great side dish. It’s a Nine-grain mafalda pasta topped with slices of rich crimini mushrooms tossed with a savory marsala wine sauce and topped with rich fontina cheese, and totaling 250 calories. i had a 1/2 serving of this which was plenty. I’ll be using this again it was delicious. I left product info and web link at the end of the post. For dessert later a Jello Sugar Free Dark Cherry Jello, 10 calories!

 

Herb Crusted Pork Tenderloin
Recipe courtesy Paula Deen, 2007

Ingredients
1 (4-pound) boneless pork loin, with fat left on

Ready for the oven

1 tablespoon salt
2 tablespoons olive oil
4 cloves garlic, minced
1 teaspoon dried thyme or 2 teaspoons minced fresh thyme leaves
1 teaspoon dried basil or 2 teaspoons fresh basil leaves
1 teaspoon dried rosemary or 2 teaspoons minced fresh rosemary
Directions
Preheat oven to 475 degrees F.

Place the pork loin on a rack in a roasting pan. Combine the remaining ingredients in a small bowl. With your fingers, massage the mixture onto the pork loin, covering all of the meat and fat.

Tried a new Tyson Wing for dinner tonight, Sweet Asian Chili Flavored Chicken Wings. Like the others easy to prepare; just bake at 450 degrees for 38 minutes and you have Wings! These Wings were fantastic! The Sweet Asian Chili seasoning was perfect and made a nice glaze on the Wings. I had a side of Litehouse Gorgonzola Dressing and Dip to dip the Wings in. For a side I had Alexia Julienne Fries again. Really like these low calorie and carbs and baked in 25 minutes. For dessert later a Jello Sugarless Chocolate Pudding.

Today’s Menu: Chicken ‘n’ Noodles w/ Boiled Mini Carrots and Baked 9 Grain Bread

 

 

Busy running errands most of the day. It was another perfect day out, about 81degrees, sunny with a slight breeze. Anyway for dinner tonight I went with the Margaret Holmes Simple Suppers Chicken ‘n’Noodles Fixins’. It comes in a 5 serving can and contains the Noodles and Seasoning, I added the Chicken. I cut up 2 Chicken Breasts seasoning them with Sea Salt, Ground Black Pepper, Ground Smoked Cumin, and Parsley. I then fried them in a large skillet until done and added the can of Fixins’. Cooked until it the Sauce was bubbling and heated throughout. The broth that’s with Noodles is incredible! Rich and thick and seasoned just right. I left the info and web site link to Margaret Holmes at the end of the post. I had sides of sliced Carrots and Baked 9 Grain Bread. First time I tried the 9 Grain Loaf. It’s from the Walgreen Bakery and it’s a keeper! It’s a real moist and delicious tasting bread. The combination of all the different grains come together to give it a unique and delicious fresh taste. Just baked at 400 degrees for 12 minutes and it’s done. For dessert later a Jello Sugar Free Dark Cherry Jello, only 10 calories!

 

 

Margaret Holmes Simple Suppers Chicken n Noodles Fixins’

Today’s Menu: Buitoni All Natural Whole Wheat Four Cheese Ravioli w/ Bella Vita Pasta Sauce, Chicken Breast, and Baby Bella Mushrooms.
Went Italian for dinner tonight. I used Buitoni All Natural Whole Wheat Four Cheese Ravioli. It had been a while since I had the Buitoni Ravioli and it was on sale and I had a $1 off coupon to make it an even bigger bargain. The pasta is very easy to fix, just boil 7 – 9 minutes and drain and it’s done! Along with the pasta I added a Chicken breast that I had also boiled and seasoned with McCormick Grinder Italian Seasoning. I sliced the breast up into several pieces and tossed it with the pasta and sauteed Baby Bella Mushrooms. I then topped everything with Bella Vita Low Carb Pasta Sauce (Roasted Garlic Flavor). The sauce is only 70 calories and 6 carbs! Plus it’s loaded with flavor. The Buitoni Pasta is a tender and delicious pasta but be sure to follow the cooking instructions so you don’t over cook it. For dessert later a bowl of Blue Bunny All Natural Frozen Yogurt Chocolate Vanilla Swirl. Another product you have to try if you already haven’t!

Today’s Menu: Chicken ‘n’ Noodles

 

I’m feeling a whole lot better today! I’m glad it was just a 24 hour bug. The rest of the family is dealing with it though. So for dinner tonight I went with the Margaret Holmes Simple Suppers Chicken ‘n’Noodles Fixins’. It comes in a 5 serving can and contains the Noodles and Seasoning, I added the Chicken. I cut up 2 Chicken Breasts seasoning them with Sea Salt, Ground Black Pepper, Ground Smoked Cumin, and Parsley. I then fried them in a large skillet until done and added the can of Fixins’. Cooked until it the Sauce was bubbling and heated throughout. The broth that’s with Noodles is incredible! Rich and thick and seasoned just right. I left the info and web site link to Margaret Holmes at the end of the post. I had sides of sliced Carrots and Healthy Life Whole Grain Bread. For dessert later I made some Chocolate Cupcakes using Pillsbury Sugar free Cake Mix and Sugar Free Frosting!

Kellogg’s Special K Cheddar Cracker Chips

I seen these advertised yesterday and while at Meijer earlier seen that they had them in stock and purchased a box. Glad I did, great tasting Chip! They had 4 different kinds and I went with the Cheddar, I’m a Cheese lover! Very good tasting chip. Crisp and good size chips. The good part only 110 calories and 22 carbs for 27 of them. 13 would be plenty for a snack or to go with your sandwich so you could cut those totals in half. Found a new snack!
