Fast-Paced Turkey Frittata
Egg-based recipes are the cornerstone of any good brunch, and this Fast-Paced Turkey Frittata takes the cake. Chock full of veggies and Hickory Smoked deli turkey, this gluten free recipe has 70 calories per serving!

Total Time – 30 Minutes
Serving Size – 4 Servings

Ingredients
1 ¼ – cup eggs substitute or 5 eggs
¼ – cup plain low-fat yogurt
2 – tablespoons water
¼ – teaspoon dried dill weed
4 – slices JENNIE-O® DELI FAVORITES® Hickory Smoked Turkey Breast, cut into 0.5-inch pieces
½ – cup shredded zucchini
¼ – cup shredded carrot
1 – tablespoon butter

Directions
1) In medium bowl, whisk eggs, yogurt, water and dill weed; set aside. In medium skillet over medium heat, cook turkey, zucchini and carrot in butter 2 to 3 minutes or until vegetables are tender.

2) Spread mixture evenly over bottom of skillet. Pour egg mixture into skillet. Reduce heat to medium. As eggs begin to set, run a spatula around the edge of the skillet, lifting egg mixture to allow uncooked portion to run underneath.

3) Cook 10 to 12 minutes or until eggs are set. Cut into 4 wedges.

Almond Berry Parfaits
Make the most of the berry harvest with this high-fiber and delicious dessert!

Ingredients
1 container (8 ounces) plain low-fat yogurt
1 cup sliced strawberries
1/2 cup raspberries
1/2 cup blueberries
1/8 teaspoon almond extract
1 tablespoon plus 2 teaspoons pourable sugar substitute,* divided
2 tablespoons slivered or sliced almonds, toasted

Directions
Yield: 2 servings
Serving size: 1/2 cup yogurt, 1 cup berries

1 – Line strainer with coffee filter or 2 sheets paper towel; place over bowl. Place yogurt in strainer; refrigerate at least 2 hours or up to 24 hours to drain.

2 – In medium bowl, combine strawberries, raspberries, and blueberries. Add extract and 2 teaspoons sugar substitute; toss lightly. Chill at least 30 minutes or up to 2 hours.

3 – Transfer drained yogurt to small bowl, stir in remaining 1 tablespoon sugar substitute. Spoon 1/3 cup berry mixture into each of 2 wine or parfait glasses. Spoon half of yogurt mixture over berries. Repeat layering with half of remaining berries, remaining yogurt, and remaining berries. Top with almonds.

*Note: This recipe was tested using sucralose-based sugar substitute.

Strawberries with Honeyed Yogurt Sauce
Looking for an easy but elegant dessert for your next garden party? Look no further than this simple dish. A sweet seasonal selection, it features a light sauce of yogurt, honey, cinnamon and a hint of orange over a delicate bed of fresh strawberries.

Ingredients
1 cup plain low-fat yogurt
1 tablespoon orange juice
1 to 2 teaspoons honey
Ground cinnamon
1 quart fresh strawberries, stems removed

Directions
Yield: 4 servings
Serving size: about 1/4 cup dip with about 7 strawberries (1 cup)

1 – Combine yogurt, juice, honey, and cinnamon to taste in small bowl; mix well. Serve sauce over strawberries.
