For Breakfast this morning I prepared 1 medium size Egg (Sunnyside Up), 3 slices of Jennie – O Turkey Bacon, toasted 2 slices of Healthy Life Whole Grain Bread, and my morning cup of Bigelow Decaf Green Tea. Hungry no longer! After Breakfast it was house cleaning day; dusted, ran the vacuum, and did some laundry for Mom. I also had bought 2 more packages of furniture coasters. I’ve been putting the coasters under all our furniture, it makes it a lot easier to move furniture around and to move it to clean. Full day of cleaning and time for Dinner. Tonight I prepared a Chili Rub Boneless Pork Loin Fillet w/ Whole New Potatoes and Sliced Carrots.

I had purchased the Boneless Pork Loin Fillet at Meijer a while back and had it in the freezer. Last night before I hit the sack I layed the Pork in the fridge to thaw overnight. To make the dish I’ll need; 1 Boneless Pork Loin Fillet, 2 Tablespoons Chili Powder, 1 1/2 Teaspoons Sea Salt, and 1/2 Teaspoon Cayenne Pepper. You can adjust the amount of spices according to your own tastes.

Preheat the oven on 400 degrees. I’m using a Cast Iron Skillet to prepare the Pork. First spray the skillet with Pam Cooking Spray and add 1 tablespoon of Extra Virgin Olive Oil also. Preheat the skillet on the stove on medium heat. As the skillet is heating; In a small bowl, combine the chili powder, salt, and cayenne. Rub the mixture over all sides of the meat, pressing it to adhere.

When the skillet had heated add the Pork Fillet. Sear for 2 minutes and flip it over and sear another 2 minutes. Then put the skillet in the oven and roast. You’ll want to roast until you get an internal temperature of 145 – 150 degrees. I roasted mine for 20 minutes, that will vary depending on the size of the fillet or roast. The Fillet came super moist with a beautiful crust! Slicing into it was so tender! Love the Meijer Pork always delicious. Mom had hers with a side of JB’s Fat Boy Haug Waush BBQ Sauce, with or without Sauce you’ll love this recipe!

For one side dish I opened up a can of Kroger Brand Whole New Potatoes and heated those up. Love using these, so much easier to prepare than normal Potatoes and just as fresh! Then for a second side I heated up a can of Del Monte Sliced Carrots. Another canned Vegetable that’s as good as fresh. Growing up I wouldn’t look at a Carrot, now I could have them every day! I also reheated some leftover Pillsbury Italian Loaf Bread, this is our family’s favorite Bread to bake. Having a Dinner like this is why I never miss eating out. For dessert later a Jello Sugar Free Dark Chocolate Pudding topped with Cool Whip Free.

For Breakfast I prepared a Egg Beater’s Egg Whites Cheese Omelet and 2 slices of Healthy Life Whole Grain Bread. I used Sargento Reduced Fat Shredded Sharp Cheddar Cheese for the Omelet. I also had a cup of Bigelow Decaf Green Tea. I really enjoy the Egg White Omelet. Cleaned up outside around the house and deck area. Then after Lunch headed out to go spend the afternoon visiting Dad. Back out home for Dinner tonight I prepared a Baked Bone-In Whole Chicken Breast w/ Mashed Potatoes, Cut Italian Green Beans, and Baked Italian Loaf Bread.

 
I picked The Perdue Chicken up at Kroger yesterday. My favorite bagged fresh Chicken, the PERDUE® OVEN READY Whole Seasoned Roaster Bone-In Breast. As it says “Baked Bone-In Whole Chicken Breast Oven Ready”, perdue-whole-chicken-breast-002 (1)already seasoned, and little clean-up needed afterwards. To prepare it just preheat the oven to 400ºF. Cut open outer bag and remove Oven Ready Roaster Bone-In Breast, sealed in a cooking bag. Place in a shallow roasting pan, seasoned side up. Cut one small 1″ slit in cooking bag over the breast to vent during cooking. If cooking from Fresh: Place pan with breast (still in cooking bag) on lower shelf of oven and roast for approximately 80-90 minutes, until internal temperature of the breast reaches 180ºF. Comes out piping hot, well seasoned, and delicious! Plenty leftovers for some Chicken Sandwiches or Burritos! Such an easy way to have an excellent Baked Chicken Dinner!

For one side I made some of my favorite Mashed Potatoes, Bob Evans Mashed Potatoes. Just microwave for 6 minutes and serve. Just as good as homemade, if not better. Then I also heated up a can of Allens Cut Italian Green Beans. Finally I baked a loaf of Pillsbury Italian Loaf Bread. For dessert later a Healthy Choice Dark Fudge Swirl Frozen Greek Yogurt.

Remaining juices in bag can be used for a delicious seasoned gravy. **If breast temperature is below 180ºF, return to oven and continue cooking, checking the temperature every 10 minutes until the temperature reaches 180ºF.

It’s was a couple of Eggo’s and a cup of Bigelow Decaf Green Tea for Breakfast this morning. After that did a load of laundry for Mom and while that was going I went to McDonald’s and picked up her Breakfast. Not much going on today did some cleaning around the house and then after lunch headed out to go see Dad for the afternoon. He seems to be getting stronger but still not ready for home yet. For dinner tonight I prepared a Buffalo 6 oz. Fine Cut Sirloin Steak w/ Roasted Cauliflower and Cut Italian Beans.

I’m using the Wild Idea Buffalo 6 oz. Fine Cut Sirloin Steak. Switched from Beef to Buffalo about 6 or so years ago and never looked! I had the Sirloin in the freezer so I laid it in the fridge overnight to thaw. To prepare the it I rubbed the Steak with a 1/2 teaspoon of Extra Virgin Olive Oil. Then seasoned it with a sprinkle of Garlic Salt, Dried Rosemary, and McCormick’s Grinder Sea Salt and Black Peppercorn. As the Steak rested I preheated a Skillet, that I sprayed with Pam Cooking Spray, on medium heat. When the skillet was heated I added my Buffalo Sirloin, I cooked it 4 minutes per side to a beautiful Medium Rare! The Wild Idea Buffalo Steaks are just incredible. So juicy and the best flavor of any Steak, Beef or Buffalo, I’ve ever had. And this one is no exception!

For one side I prepared something new I picked up at Meijer in the frozen food section, Path of Life All Natural Roasted Garlic Cauliflower. Love shopping at Meijer, great selection of products! So to prepare the Cauliflower; It comes in a microwavable steamable bag. Just heated for 4 minutes, let it stand for 1 minute and serve. I’ve got another keeper product here! Fantastic Roasted Garlic flavor and they’re only 80 calories and 3 net carbs.

For another side I heated a can of Allens Cut Italian Green Beans, our family’s favorite Bean Side. To prepare them just empty the can into a small sauce pan and simmer until heated. I love the taste of these, just season with a bit of Sea Salt and it’s ready! Finally I had baked a loaf of Pillsbury Italian Loaf Bread for dinner the other night. So I reheated the leftovers. For dessert later a Healthy Choice Dark Fudge Swirl Frozen Greek Yogurt.

For my Breakfast I toasted a Healthy Life Whole Grain English Muffin topped with I Can’t Believe It’s Not Butter along with my morning cup of Bigelow Decaf Green Tea. After I Breakfast I went to McDonald’s to pick up Mom’s Breakfast for her. Mom went on to Church and then over to see Dad. Besides going to McDonald’s for Mom I stayed home all day! I needed to get some cleaning done, laundry for Mom, and a late afternoon nap. For dinner tonight I prepared a Cumin Spiced Pork Chop w/ Golden Hominy and Cut Green Beans/Potatoes.

I grabbed a couple of Pork Chops from the freezer, that I had purchased from Meijer, and let them thaw overnight in the fridge.

 

 

 

 

 

 

Then to prepare my Chops I’ll need; The Cumin Spiced Rub which consists of; 1 tbsp Roasted Cumin, 1 tsp Garlic Powder, 1 tsp Chili Powder, 1 teaspoon Sea Salt, 1/2 teaspoon Hungarian Paprika, 2 teaspoons Dried Oregano, and Cumin Spiced Pork Chop w Golden Hominy and Cut Green Beans and P 0031/4 teaspoon Black Pepper. To prepare it preheat oven to 400°. Combine all the ingredients; rub it all over the pork chop. Let stand 20 minutes. Start by heating the Extra Virgin Olive oil in a Cast Iron Skillet over medium-high heat. Add Chops to pan; cook 3 minutes, browning both sides. From the stove to the oven and bake at 400° for 15 minutes until the thermometer registered 150° (slightly pink), turning after 5 minutes. Let stand 5 minutes before slicing. Fantastic combo of Spices, which makes one incredible Crust on the Chop with the inside being tender and moist! Love this seasoning on Pork.

For a side dish I opened up a can of one of my favorite side dishes, Kroger Brand Golden Hominy. For those that has never had or heard of Hominy; Hominy is a food made from kernels of corn which are soaked in an alkali solution of either lime or lye. The corrosive nature of the solution removes the hull and germ of the corn and causes the grain itself to puff up to about twice its normal size. There is White and Golden Hominy, my favorite is the Golden Hominy. If you’ve never tried it do, makes a delicious side dish!

For dessert later a Healthy Choice Dark Fudge Swirl Frozen Greek Yogurt.

Today’s Menu: Crispy Chicken Strips w/ Mashed Potatoes and Vegetarian Baked Beans

 
Another muggy morning out there today, 70 degrees by 7:00. For Breakfast I fried up 2 slices of Smithfield Sliced Ham. If you’ve never tried this you are missing out! It’s the best packaged sliced Ham I’ve tried. So I fried the slices Crispy Chicken Strips w Mashed Potatoes and Vegetarian Baked Bea 001up and toasted a Healthy Life Whole Grain English Muffin. Together it makes one good Breakfast Sandwich! Bad day for allergies and sinus suffers, like myself. So I stayed in most of the day. I was over at the rehab center for my Aunt’s birthday party, it was great seeing all my cousins again. Dad is there also. I’m having my doubts about his return home. He’s not getting any stronger and the dementia is getting worse. I hope I’m wrong and he can turn it around. Anyway I stayed home today. Did some laundry for Mom and cleaned the house. Also did some computer cleaning also, ran screens and deleted some old files. Then for Dinner tonight I prepared Crispy Chicken Strips w/ Mashed Potatoes and Vegetarian Baked Beans.

 

Perdue Crispy Chicken Strips

 

I used the PERDUE® Crispy Chicken Strips. To prepare it I preheated the oven to 425°F . Sprayed a small baking sheet with cooking spray. Placed frozen strips in single layer on baking sheet. Baked for 16 to 18 minutes, or until heated through. Internal temperature should reach 150°F – 160°F. Turn the Strips halfway through heating time. They come out golden brown and delicious! Really enjoy these!

For one side dish I prepared my favorite Mashed Potatoes, Bob Evans Mashed Potatoes. Easy to fix and delicious. To prepare it just heat it up in the microwave for 6 minutes and it’s ready. Then for another side I prepared some Bush’s Reduced Sodium Vegetarian Baked Beans. I had tried these a while back and fell in love with the flavor and taste of the Vegetarian Beans! Only 130 calories, 0 fat, and 24 net carbs per serving. To prepare the; just open the can and empty the Beans Into Saucepan. Heat To Simmer until heated through. Love these Beans! I also baked a loaf of Pillsbury Italian Loaf Bread. For dessert later a Healthy Life Dark Fudge Swirl Frozen Yogurt.

Spring bypassed us and Summer has slid right in! It’s 86 degrees and sunny out there today. Not a lot going on today around the house. I went to Kroger, I forgot to pick a couple of Birthday cards yesterday when I was up here. It’s my Aunts Birthday tomorrow. Her and my Dad are in the same rehab center, the family is having a Birthday Party tomorrow for her. So anyway I did a few things around the house and outside. For dinner tonight I prepared Tuscan Seasoned Pork Medallions w/ Hash Browns, Glazed Apples, and Italian Loaf Bread.

On my last visit to Costco I bought another package of the Tuscan Seasoned Pork Loin Medallions. They cut it and seasoned it as I shopped. The package had 20 slices in it and have them in the Freezer. So Last night I grabbed a package out of the freezer and let it thaw overnight in the fridge.

To start I preheated the oven on 400 degrees. To prepare them I used a Cast Iron Skillet. Sprayed it with Pam Cooking Spray and added 1 tablespoon of Extra Virgin Olive Oil and heated it on medium heat. I then lightly Salted the Pork with Sea Salt and a sprinkle of McCormick Dried Parsley. Added the Pork to the skillet and cooked it for 2 minutes a side, as it just started to brown. Then from the stove to the oven, love Cast Iron Skillets! I then backed them to a medium rare, 145 degrees in the center of the medallions using a meat thermometer. Pork Tenderloin is one of my favorites. The Pork is so tender and flavorful. Seasoned just right and so moist.

Then for one side I prepared some Simply Potatoes Hash Browns. I had these yesterday for dinner and were so good I’m having them again for dinner tonight. Fried them in Extra Virgin Olive Oil and seasoned them with Sea Salt, Ground Pepper, and Parsley. I love Hash Browns, they make the perfect side for any Dish.

Today’s Menu: Spaghetti and Meatballs

 
To jump start my day I made one our favorites, Skillet Potatoes and Ham for Breakfast. I used 1 package of Simply Potatoes Steakhouse Seasoned Diced Potatoes and a package of Meijer Diced Ham to prepare it. Just cook the Spaghetti and Turkey Meatballs 004Potatoes according to the package instructions and with about 5 minutes of cooking time left add the Diced Ham. Beautiful morning out, and NO RAIN! Sunny with a high near 70 degrees. I stayed home all day and caught up on some house cleaning and yard work. It was dusting and ran the vacuum inside and outside got the cart out pulled some weeds out of Mom’s flower beds and got the leaf blower out and cleaned around the house. I don’t know how we always end up with all the leaves, limbs, and blowing trash. Everything done took a ride on the cart around the neighborhood and enjoyed the sunshine! For dinner tonight its Spaghetti and Meatballs with a fresh baked Italian Bread Loaf.

It’s been a while since I’ve made Spaghetti and Meatballs and it really sounded good! To make it I’m using Ronzoni Healthy Harvest Whole Wheat Spaghetti, my favorite Pasta. Cooks up great and an excellent tasting Pasta. It’s 180 calories and 35 net carbs per serving. Then for my Meatballs I used Honeysuckle White Turkey Meatballs. The Honeysuckle White Turkey Meatballs are good size, meaty, and have a fantastic taste and their 190 calories and 5 net carbs for 3 Meatballs. For my Pasta Sauce I used Ragu Mushroom Sauce and topped with some Kroger Private Selection Shaved Parmesan Cheese.

To prepare the dish; I cooked the Spaghetti as to the package instructions. In a sauce pan I add my Meatballs and Ragu Sauce, heated on medium low until heated through. In a large bowl I added the finished Spaghetti, the Sauce and Meatballs and mixed and served. Topped the Spaghetti with the Shaved Parmesan Cheese. I also baked a loaf of Pillsbury Italian Loaf Bread. For dessert later a Healthy Choice Dark Fudge Swirl Frozen Greek Yogurt.

Today’s Menu: Cumin Spiced Boneless Pork Loin Roast w/ Mashed Potatoes, Cut Italian Beans, and Baked Italian Loaf Bread

 
Started the day off with a cup of Bigelow Decaf Green Tea. After Breakfast finished up somCumin Spiced Boneless Pork Loin Roast  Mashed Potatoes Cut Ita 001e house cleaning. Then outside we have a huge vine 1/2 the length of our driveway that I had to trim up. It started growing out into the driveway. Cloudy and temperatures in the 60’s with rain in the late afternoon. I had just read an article on we’ve had so much rain local farmers can not get their crops out. I couldn’t make it over to see Dad today at the rehab center, I had to wait around the house today for the carpet cleaners. I had the house carpets all cleaned today. Later on for dinner tonight I prepared a Cumin Spiced Boneless Pork Loin Roast w/ Mashed Potatoes, Cut Italian Beans, and Baked Italian Loaf Bread.

 
I used my favorite Rub for Pork, Cumin Spiced Rub. I had come across the recipe on-line, and use it all the time now. It gives the Pork a fantastic crust and great seasoning. I purchased the Pork Tenderloin Boneless Roast from Kroger Cumin Spiced Boneless Pork Loin Roast  Mashed Potatoes Cut Ita 011yesterday. Using Butcher’s Twine I tied the Roast together. Then to prepare it I’ll need; 1 Pork Tenderloin Roast, 1 tbsp Roasted Cumin, 1 tsp Garlic Powder, 1 tsp Chili Powder, 1 teaspoon Sea Salt, 1/2 teaspoon Hungarian Paprika, 2 teaspoons Dried Oregano, and 1/4 teaspoon Black Pepper. To prepare it preheat oven to 400°. Combined all the ingredients; rub it all over the Pork. Let stand 20 minutes. To Roast it I used a mall Broiler Pan with a Wire Rack in it. Sprayed the Rack with Pam Cooking Spray and put the Pork on it. I baked it for about 70 minutes, until my thermometer registered 145°. Let it stand 10 minutes before slicing. Then sliced into one delicious Pork Tenderloin Roast! Fantastic combo of Spices, which make one incredible Crust on the Pork and the inside being so tender and moist! The only thing I can compare it to would be Prime Rib, delicious!

For one side I made some of my favorite Mashed Potatoes, Bob Evans Mashed Potatoes. Just microwave for 6 minutes and serve. Just as good as homemade, if not better. Then for another side dish I heated a can of Allens Cut Italian Green Beans, our family’s favorite Bean Side. To prepare them just empty the can into a small sauce pan and simmer until heated. I love the taste of these, just season with a bit of Sea Salt and it’s ready! I could have Beans every day and never get tired of having them.

 

 

Italian Loaf Bread
Finally I baked a loaf of Pillsbury Italian Loaf Bread, family’s favorite baked bread. For dessert later a Jello Sugar Free Double Chocolate Pudding.

I just had a cup of Bigelow Decaf Green Tea for Breakfast this morning. After that I headed out to Meijer and Kroger, I was out of a lot of items. I’ll buy my Bigelow Green Tea from Meijer or Walmart, a lot cheaper than Kroger. But at Meijer this morning their price of Tea per box went from $2.36 a box to $2.69 a box. I’ll have to make a trip to Walmart and check the price, didn’t buy any from Meijer. Anyway after Meijer i dropped by Kroger for a few items. I’ve really saved a lot since shopping mainly at Meijer instead of Kroger. So after lunch I headed up to the hospital to see my Dad and a friend of mine that’s in the same hospital but one floor down. Back at home late afternoon and took a quick nap, feeling rundown a bit lately. For Dinner tonight I prepared a Buffalo 8 oz. Top Sirloin Steak w/ Baked Potato and Cut Italian Beans.

 

I’m using the Wild Idea Buffalo 5 oz. Top Sirloin Steak, although it weighed out at 6 oz. Switched from Beef to Buffalo about 6 or so years ago and never looked! I had the Sirloin in the freezer so I laid it in the fridge overnight to thaw. To prepare the it I rubbed the Steak with a 1/2 teaspoon of Extra Virgin Olive Oil. Then seasoned it with a Buffalo 6 oz. Top Sirloin Steak w Baked Potato and Cut Italian B 003sprinkle of Garlic Salt, Dried Rosemary, and McCormick’s Grinder Sea Salt and Black Peppercorn. As the Steak rested I preheated a Skillet, that I sprayed with Pam Cooking Spray, on medium heat. When the skillet was heated I added my Buffalo Sirloin, I cooked it 4 minutes per side to a beautiful Medium Rare! The Wild Idea Buffalo Steaks are just incredible. So juicy and the best flavor of any Steak, Beef or Buffalo, I’ve ever had. And this one is no exception! I topped it with some Sauteed Mushrooms. Using Baby Bella Mushrooms, I quartered the Mushrooms. I seasoned them with Dried Thyme, Ground Smoked Cumin, Dried Parsley, and Sea Salt. Pan fried them in Extra Virgin Olive Oil and a pat of Blue Bonnet Light Butter.
Baked Potato
For one side I had a Baked Potato, seasoned this with McCormick Grinder Sea Salt and Black Peppercorn. Then for another side dish I heated a can of Allens Cut Italian Green Beans. To prepare them just empty the can into a small sauce pan and simmer until heated. I love the taste of these, just season with a bit of Sea Salt and it’s ready! I could have Beans every day and never get tired of having them.

Finally I baked a loaf of Pillsbury Italian Loaf Bread, family’s favorite baked bread. For dessert later tonight a Healthy Choice Dark Fudge Swirl Frozen Yogurt.

Another rainy night and early morning. For Breakfast I made one our favorites Skillet Potatoes and Ham for Breakfast. I used 1 package of Simply Potatoes Steakhouse Seasoned Diced Potatoes and a package of Meijer Diced Ham to prepare it. Just cook the Potatoes according to the package instructions and with about 5 minutes of cooking time left add the Diced Ham. We really enjoy this for Breakfast. The afternoon the sun finally broke through for a while. Cleaned and straightened up the pantry after Breakfast. Went to the hospital to see a friend of mine. Back home took the leaf blower and cleaned around the deck and driveway. So for dinner tonight it’s going to be a Pan Seared Oven Roasted Skinless Boneless Chicken Breast w/ Golden Hominy and Cut Italian Green Beans.

While at Meijer a while back I came across some beautiful huge Chicken Breasts. Perfect for what I had in mind to do with them, Pan Seared Oven Roasted Skinless Boneless Chicken Breast. To season them I ‘ll need McCormick Grinder Sea Salt and Peppercorn Medley along with Litehouse Poultry Herb Blend. I love the Litehouse Poultry Herb Blend it’s a blend of Herbs; Onions, Thyme, Sage, Marjoram, Spring Onions, Garlic, and Rosemary. I had the Chicken in the freezer so I laid it out overnight in the fridge to thaw.

 

 

To prepare; I preheated the oven on 400 degrees and I got my favorite skillet out, the Cast Iron Skillet. Sprayed a light coat of Pam Cooking Spray w/ Olive Oil on it and added 1 tablespoon of Extra Virgin Olive Oil to it. Heated it on the stove on medium high. I then seasoned the Chicken Breasts with my 3 seasonings. With the skillet and oil heated I added my Chicken. Browned both sides for 3-4 minutes each. Transferred the skillet to the preheated oven. Baked for 15-20 minutes until about 165 internal temperature.

The Chicken Breast came out perfect! Moist and full of flavor. I served it with a side of JB’s Fat Boy Sticky Stuff BBQ Sauce. The Cast Iron Skillet is perfect to use when starting a dish on the stove and finishing in the oven!

For one side dish I prepared a can of Allens Golden Hominy. I love Hominy with any meal! For those that has never had or heard of Hominy; Hominy is a food made from kernels of corn which are soaked in an alkali solution of either lime or lye. The corrosive nature of the solution removes the hull and germ of the corn and causes the grain itself to puff up to about twice its normal size.

Directions
Stove top: add contents to saucepan and gently simmer until hot.
Microwave: empty contents into a microwave safe dish and cover loosely. Heat on high power for 2 minutes, or until hot. Stir and serve.
