Today’s Menu: Baked Chicken Breast Strips w/ Mashed Potatoes and Cut Green Beans

 

 

 

Started the morning off by Scrambling 2 Eggs, toasted 2 slices of Aunt Millie’s Light Whole Grain Bread (lightly buttered), and a cup of Bigelow Decaf Green Tea. After Breakfast I started a load of laundry for Mom. Then went to Kroger for Mom and then to McDonald’s to pick up Breakfast for Mom and Dad. Back home took my  Hoveround outside and gave it a good cleaning. Outside passing showers and not quite as hot but even more humid! Stayed inside after it started getting bad, sinus and allergies going nuts in this weather. For Dinner tonight its Baked Chicken Breast Strips w/ Mashed Potatoes and Cut Green Beans.

 

 

One of those days where I didn’t feel like putting a whole lot of effort into preparing my dinner. So there’s nothing easier than baking some Pilgrim Chicken Strips. Pilgrim’s Southern Style Breast Strips, it’s always a great go to when you want that easy to prepare meal! I had not had these in a while. I switched over to Perdue Chicken Strips so I wanted to change it over to Pilgrim’s. Preheat the oven to 350° F. Arrange frozen chicken breast strips in a single layer on an ungreased baking sheet. Bake, uncovered, for 25-30 minutes, to an internal temperature of 165° F as measured by use of a food thermometer placed in the thickest part of the Chicken Strip . And Chicken is served! It’s some of the best frozen Chicken you can find! Excellent seasoned breading and very meaty, and easy to prepare. Served it with a side of Hidden Valley Ranch Buffalo Dressing.

 

To go with the Chicken I prepared some Bob Evan’s Mashed Potatoes. Just microwave for 6 minutes and serve, just as good as homemade, if not better. Next I made a packet of the Pioneer Peppered White Gravy to top the Mashed Potatoes.

 

 

 

 

 

Then I heated up a large can of Del Monte Cut Green Beans. Just empty the can into a sauce pan and heat until heated through. I also baked a loaf of Pillsbury French Bread, One delicious meal tonight. For Dessert/Snack later a bowl of Skinny Pop – Pop Corn and a Diet Dr. Pepper to drink.

Fryer: Heat oil to 350° F. Fry frozen chicken breast fritters for 6 minutes or an internal temperature of 165° F as measured by use of a food thermometer placed in the thickest part of the chicken breast fritter.

Due to variations in equipment, heating times and/or temperature may require adjustment. DO NOT MICROWAVE.

Today’s Menu: Banquet Homestyle Bakes – Baked Lasagna and Baked French Bread

 

 

For Breakfast I fried a couple of al fresco Chicken Breakfast Sausage Patties and toasted 2 Slices of Healthy Life Whole Grain Bread, lightly buttered with I Can’t Believe It’s Not Butter. Also had my morning cup of Bigelow Decaf Green Tea. Mostly sunny out today with a of sunshine, had a high of 81 degrees. I went to the Kroger up the road to pick up a couple of items and stopped by McDonald’s to pick up Breakfast for Mom and Dad. Got the cart out and trimmed a couple of bushes at the side of the house. I had planted a couple of Tomato Plants on side of the shed and they’ve really grown. I’m not a huge fan of raw tomatoes but Mom and Dad love them. Everything has really grown good this year, the herb plants, flowers, and a bush that I planted all this year. For Dinner tonight its Baked Lasagna and Baked French Bread.

 

 

 

I’m having the Banquet Homestyle Bakes – Lasagna Complete Meal Kit. I love these Banquet Homestyle Bakes so easy to make and delicious! As it says, it’s a Complete Meal Kit. All I added was a 1/2 cup of Water, a little Sea Salt for taste, Sargento Shredded Mozzarella, and some Kraft Reduced Fat Grated Parmesan Cheese.

 

 

 

To prepare it you can bake it in the oven or cook it in a skillet on the stove top. I’m baking mine. Start by preheating the oven to 425 degrees F. Stir together both cans of sauce and 1/2 cup water in 8″ x 8″ baking dish. Stir in the pasta until well coated. Cover with foil and bake for 40 minutes, until pasta is tender. Carefully uncover. Stir until well blended. Let stand 5 minutes; sauce will thicken. Ready to serve!

 

 

 

 

Came out hot and delicious. Nothing fancy, just good and hearty Dinner. I topped it with some Kraft Reduced Fat Grated Parmesan Cheese. I also reheated the leftover Pillsbury French Bread, which is perfect with Pasta Dishes. For Dessert later a Weight Water’s Cookies and Cream Ice Cream Bar.

Today’s Menu: Fried Ocean Perch w/ Sharp White Cheddar Mac and Cheese

 

 

 

To start my Friday morning off I Scrambled a couple of Eggs, toasted 2 slices of Healthy Life Whole Grain Bread, and as always my morning cup of Bigelow Decaf Green Tea. Mostly sunny out today and 80 degrees. Went up and had my car washed, really needed it! Drove on over to Walmart, I wanted to check out the Lawn and Garden Department for a few things. Back home got the cart out for a while and drove around the neighborhood and down by the lake. Relaxing day! For Dinner tonight it’s Fried Ocean Perch w/ Sharp White Cheddar Mac and Cheese.

 

 

I picked up the Ocean Perch at Kroger the day before. Really love the Kroger Seafood Department. Good selection. I first rinsed the fillets off in cold water and patted dry with a paper towel. To prepare them I preheated a medium size skillet, that I had sprayed with Pam Cooking Spray and added Extra Light Olive Oil, on medium heat. Rinsed the Perch with cold water and patted dry with a paper towel. Lightly seasoned them with the McCormick Sea Salt. I then put them in a Hefty Zip Lock Bag and added Zatarain’s Seasoned Fish Fri, shaking the bag then until the Perch Fillets were coated. Added the Fillets to the heated skillet and fried them 3 minutes per side. They came out Golden Brown! Delicious and fresh tasting, I love all Fish and Seafood!

 

For a side dish it was leftover Cracker Barrel Macaroni and Cheese Dinner – Sharp White Cheddar. I just reheated the Mac and Cheese leftover from Dinner last night. I put it into a bowl, covered the bowl with a paper towel, and microwaved it for 1 minute and 10 seconds. Heated up great and still delicious. Really enjoyed the Cracker Barrel Mac and Cheese. For Dessert later a Weight Watcher’s Cookies and Cream Ice Cream Bar.

Mostly cloudy out today with passing showers and it hit about 75 degrees. Our electric was turned off today from 1:00 – 5:00. It was actually after 5:00 before it came back on. They were replacing electrical boxes throughout the neighborhood today. So after the power went out I stopped by some friends house to catch up with them and then headed over to see Dad for the rest of the afternoon. Back home for Dinner tonight its Baked Lasagna and Baked French Bread.

Today’s Menu: Cumin Spiced Pork Chop w/ Mashed Potatoes, Golden Hominy, and French Bread

 

 

 

Chilly morning out there today, about 44 degrees with a cold wind blowing. So to start this Chilly morning off I had a bowl of Kroger Brand Bran Flakes also had that morning cup of Bigelow decaf Green Tea. After Breakfast went to the local Kroger for a couple of items and stopped at McDonald’s to pick Breakfast for Mom. Did some laundry for Mom and cleaned up a bit inside and outside. Hard to anything outside because it’s so windy. I was bringing in the neighbors trash cans for them and had to chase one of them blowing down the street. So for Dinner tonight I prepared a Cumin Spiced Pork Chop w/ Mashed Potatoes, Golden Hominy, and French Bread.

 

 

On my last visit to Meijer I picked up a large Center Cut Pork Chops from the Meijer Meat Department. I really love the Meijer selection and quality of all their meats, and all their products and produce.

 

 

 

 

So to prepare my Chops I’ll need; The Cumin Spiced Rub which consists of; 1 tbsp Roasted Cumin, 1 tsp Garlic Powder, 1 tsp Chili Powder, 1 teaspoon Sea Salt, 1/2 teaspoon Hungarian Paprika, 2 teaspoons Dried Oregano, and 1/4 teaspoon Black Pepper. To prepare it preheat oven to 400°. Combine all the ingredients; rub it all over the pork chop. Let stand 20 minutes. Start by heating the Extra Virgin Olive oil in a Cast Iron Skillet over medium-high heat. Add Chops to pan; cook 3 minutes, browning both sides. From the stove to the oven and bake at 400° for 15 minutes until the thermometer registered 150° (slightly pink), turning after 5 minutes. Let stand 5 minutes before slicing. Fantastic combo of Spices, which makes one incredible Crust on the Chop with the inside being tender and moist! Love this seasoning on Pork.

 


For a side dish I opened up a can of one of my favorite side dishes, Kroger Brand Golden Hominy, and its been a while since I’ve any. For those that has never had or heard of Hominy; Hominy is a food made from kernels of corn which are soaked in an alkali solution of either lime or lye. The corrosive nature of the solution removes the hull and germ of the corn and causes the grain itself to puff up to about twice its normal size. There is White and Golden Hominy, my favorite is the Golden Hominy. If you’ve never tried it do, makes a delicious side dish!

 

 

 

For another side I prepared some Bob Evan’s Mashed Potatoes. Just microwave for 6 minutes and serve, just as good as homemade, if not better. Then I baked a loaf of Pillsbury French Bread. For Dessert later a Jello Sugar Free Dark Chocolate Pudding topped with Cool Whip Free.

Today’s Menu: Parmesan Gnocchi and Baked French Bread

 

 

 

I just had a cup of Bigelow Decaf Green Tea for Breakfast. I guess I’m kind of burned out on Breakfast this morning. 68 degrees and mostly sunny today. Good day to finish up some yard work. I got the cart out and started on the yard work. I love getting out and do what I can from the cart. Really miss getting out and doing all the yard work. I had worked for a lawn service many years ago out of high school. But I do what I can from the wheelchair or cart. Had everything done so I took the cart for a ride around the neighborhood. For Dinner tonight I prepared Parmesan Gnocchi and Baked French Bread.

 

 

I prepared the Three Bridges Parmesan Gnocchi. I came across this at Meijer a while back. It had turned out so good I purchased another package of it. It’s fresh Potato Gnocchi blended with aged Parmesan Cheese. It comes in a sealed plastic box already seasoned with the Parmesan Cheese.

 

 

 

 
To prepare I used a medium size pot, sprayed it with Pam Cooking Spray. Filled it half way with water and heated it on high till it started to boil and reduced the heat to gentle boil and added the Gnocchi. Cooking it for 3 minutes, stirring often. Removed it from the heat and drained the water. Put it in a large bowl and added a 1/2 tablespoon of Light Olive Oil and added a shake of Kraft Reduced Fat Grated Parmesan Cheese and tossed it in the bowl. A Pesto Sauce would be good but Pestos are high in calories and carbs so I stuck with Olive Oil and Kraft Reduced Fat Grated Parmesan Cheese. I’ll be buying more of this. I also baked a loaf of Pillsbury French Bread. For Dessert later a Weight Watchers Cookies and Cream Ice Cream Bar.

I had this for Breakfast yesterday and enjoyed it so much I’m having it again! I Scrambled 2 Eggs and toasted 2 Slices of Healthy Life Whole Grain Bread, lightly buttered with I Can’t Believe It’s Not Butter. Also had my morning cup of Bigelow Decaf Green Tea. Cooler outside today, high of 41 and windy. It was house cleaning day today, inside and outside. After cleaning inside I went outside and trimmed the vines along the driveway. Got the leaf blower out and cleaned the deck and driveway off. Back inside I did a couple of loads of laundry for Mom. Had everything done and went to Walmart, needed some Bigelow Green Tea and few other things. For Dinner tonight its Leftovers. I reheated the Baked Lasagna and Baked French Bread.

All I added was a 1/2 cup of Water, a little Sea Salt for taste, and some Kraft Reduced Fat Grated Parmesan Cheese. To prepare it is real easy and reheating it even easier. To prepare it you can bake it in the oven or cook it in a skillet on the stove top. I’m baking mine. Start by preheating the oven to 425 degrees F. Stir together both cans of sauce and 1/2 cup water in 8″ x 8″ baking dish. Stir in the pasta until well coated. Cover with foil and bake for 40 minutes, until pasta is tender. Carefully uncover. Stir until well blended. Let stand 5 minutes; sauce will thicken. Ready to serve!

 

 

 

 

Came out hot and delicious. Nothing fancy, just good and hearty Dinner. I also reheated the Pillsbury French Bread, perfect with Pasta Dishes. Another great item to have in the pantry! For Dessert later a bowl of Dole Sliced Peaches.

Alternate preparation: Baking dish size – 11 x 7-inch baking dish. Temperature – 425 degrees F. Baking time – 35-40 minutes. Baking dish size – 2-quart casserole dish. Temperature – 425 degrees F. Baking time – 35-40 minutes. Baking dish size – 13 x 9-inch baking dish (for 2 box prep). Temperature – 425 degrees F. Baking time -40-45 minutes. High altitude preparation (3500-6500ft). Cooking adjustments: Oven: reduced water by 1/4 cup for all baking dish sizes; no bake time adjustment. Stove Top: reduced water by 1/4 cup; simmer 15-20 minutes.

Today’s Menu: Banquet Homestyle Bakes – Baked Lasagna and Baked French Bread

 

 

 

For Breakfast on this second day of Spring I Scrambled 2 Eggs and toasted 2 Slices of Healthy Life Whole Grain Bread, lightly buttered with I Can’t Believe It’s Not Butter. Also had my morning cup of Bigelow Decaf Green Tea. Mostly cloudy out today and it hit about 60 degrees. After Lunch I went over to see Dad and took him a big bowl of the 3 Bean Turkey Chili I made yesterday. We signed the Release papers today. He comes home Saturday Morning. I just hope he remains strong enough to remain here. Back home for Dinner tonight its Baked Lasagna and Baked French Bread.

 

 

 


I’m trying the Banquet Homestyle Bakes – Lasagna Complete Meal Kit. I have Banquet Pizza Pasta quite often, so I thought I would give this one a try. As it says, it’s a Complete Meal Kit. Today’s Menu: Creamy Chicken Pasta w/ Baked French Bread

 

 

For Breakfast this morning I Poached an Egg and served it on a toasted Healthy Life Whole Grain English Muffin. creamy-chicken-pasta-w-baked-french-bread-007And as always my morning cup of Bigelow Decaf Green Tea. I prepared Mom a Scrambled Egg and toasted her some Raisin Bread. After Breakfast it house cleaning day, vacuumed and dusted. Then cleaned the fridge also. After Lunch I went and spent the day with Dad. He seems to be getting somewhat better. His appetite is back and a lot less stomach pain. They have him on light therapy until later in the week. Not a bad Winters Day out, partly sunny and 34 degrees. For Dinner tonight I’m trying a new item, Bear Creek Country Kitchens Creamy Chicken Pasta Mix. Tonight its Creamy Chicken Pasta w/ Baked French Bread.

I had seen the Bear Creek ads in all the Cooking Magazines so when I came across several of their products I grabbed a couple to try. One of the items is the Bear Creek Country Kitchens Creamy Chicken Pasta Mix. It uses Orecchiette Pasta, which comes in a rich and creamy Chicken flavored Sauce with Carrots. All I added was Water and some Pulled Chicken.

To prepare the dish I’ll need; 1 package of Bear Creek Country Kitchens Creamy Chicken Pasta Mix, water, and Pulled Chicken. While at Kroger I had purchased a Simple Truth Whole Roasted Chicken. Pulled all the Meat and I had my Chicken.

To make the Dish; I took a 2 Quart Saucepan, gave it a light spray of Pam Cooking Spray and added 3 1/2 cups water to it. Heated the water to a rolling boil. Whisked in the Pasta and Sauce Mix. Brought the mixture back to a rolling boil. Reduced the heat to a medium boil. Cooked 14 minutes, stirring it occasionally. Removed it from the heat and let it set for 8 minutes. as it cooled it thickened up. As it was cooking it had a mouth watering aroma. And the taste is just as good! Good Chicken and Cheese taste and along with the Pasta, Carrots, and added Chicken makes a delicious Dinner! Love hearty, comfort food, meals.

I also reheated the Pillsbury French Bread which went perfect with the Chicken/Pasta Mixture. For Dessert later a bowl of Breyer’s Carb Smart Vanilla Ice Cream topped with some Smucker’s Sugar Free Hot Fudge Topping.

Today’s Menu: Cumin Spiced Pork Chop w/ Mashed Potatoes, Golden Hominy, and French Bread

Topped it off with my morning cup of Bigelow Decaf Green Tea. Good light and healthy Breakfast! More rain overnight and into the morning before it stopped. The day it was cloudy and high around 49 degrees. It was laundry and house cleaning today, all day. With everyone recovered from the stomach virus we had, we washed all the bed sheets and quilts. Then I ran the vacuumed, dusted, and sprayed the house down good with Lysol. All looks great! So for Dinner tonight I prepared another one of those delicious Chops from Meijer! Tonight its a Cumin Spiced Pork Chop w/ Mashed Potatoes, Golden Hominy, and French Bread.

On my last visit to Meijer I picked up a package of Center Cut Pork Chops from the Meijer Meat Department. I really love the Meijer selection and quality of all their meats, and all their products and produce.

 

 

 

 

 
So to prepare my Chops I’ll need; The Cumin Spiced Rub which consists of; 1 tbsp Roasted Cumin, 1 tsp Garlic Cumin Spiced Pork Chops w Golden Hominy and Harvest Apples 001Powder, 1 tsp Chili Powder, 1 teaspoon Sea Salt, 1/2 teaspoon Hungarian Paprika, 2 teaspoons Dried Oregano, and 1/4 teaspoon Black Pepper. To prepare it preheat oven to 400°. Combine all the ingredients; rub it all over the pork chop. Let stand 20 minutes. Start by heating the Extra Virgin Olive oil in a Cast Iron Skillet over medium-high heat. Add Chops to pan; cook 3 minutes, browning both sides. From the stove to the oven and bake at 400° for 15 minutes until the thermometer registered 150° (slightly pink), turning after 5 minutes. Let stand 5 minutes before slicing. Fantastic combo of Spices, which makes one incredible Crust on the Chop with the inside being tender and moist! Love this seasoning on Pork.

 

Cumin Spiced Boneless Pork Loin Roast w Mashed Potatoes and Gold 014
For a side dish I opened up a can of one of my favorite side dishes, Kroger Brand Golden Hominy, and its been a while since I’ve any. For those that has never had or heard of Hominy; Hominy is a food made from kernels of corn which are soaked in an alkali solution of either lime or lye. The corrosive nature of the solution removes the hull and germ of the corn and causes the grain itself to puff up to about twice its normal size. There is White and Golden Hominy, my favorite is the Golden Hominy. If you’ve never tried it do, makes a delicious side dish!

 

 

 

Mashed Potatoes
For another side I prepared some Bob Evan’s Mashed Potatoes. Just microwave for 6 minutes and serve, just as good as homemade, if not better. Then I baked a loaf of Pillsbury French Bread. For Dessert later a Weight Watcher’s Cookies and Cream Ice Cream Bar.
