Today’s Menu: Fried Yellow Lake Perch w/ Mac and Cheese and Baked French Bread

 

Just a cup of Bigelow Decaf Green Tea for Breakfast. 77 degrees, very windy and partly cloudy out today. I had to return a rake I bought from Meijer, it came apart after using it 1 time. While at Meijer I picked up a couple of other items also. On the way back I picked up Breakfast for Mom at McDonald’s. Too windy to do a lot outside today. Did a few things in the house and then cleaned out the shed. For Dinner tonight I prepared Fried Yellow Lake Perch w/ Mac and Cheese and Baked French Bread.

 

I purchased the Yellow Lake Perch from Meijer this morning. I rinsed the Fillets in cold water then patted them dry and put them in a Hefty Plastic Bag and on into the fridge until ready to use. I love using Yellow Lake Perch, fries up a beautiful golden brown and like most fresh water fish has a fantastic taste. It’s not too often I find Yellow Lake Perch so I grabbed these when I seen them.

 

I then seasoned them with Sea Salt and rolled the fillets in my favorite Breading Mix, Zatarain’s Crispy Southern Fish Fri. Pan fried them in Bertolli Cooking Olive Oil, on medium heat for 3 minutes per side. They came out with a golden brown crust and delicious! I love Fish!

 

 

 

To go with my Perch I prepared a cup of Kraft Mac and Cheese. They come in a microwavable plastic container. To prepare it just remove the lid, add water and stir, microwave for 3 1/2 minutes, and stir in the packet of cheese sauce. And you have your Mac and Cheese! Another nice item to have in the pantry. Easy to prepare, nothing like good old-fashioned Kraft Mac and Cheese! Container makes 1 serving. Love these Kraft Mac and Cheese! I also baked a loaf of Pillsbury French Bread. For Dessert later a Breyer’s 90 Calorie Vanilla Bean Ice Cream Cup.

Today’s Menu: Boneless Pork Ribeye w/ Diced Potatoes, Mini Sweet Ears of Corn, and Baked French Bread

 

 

For Breakfast I toasted Thomas Light English Muffin that I topped with Smucker’s Sugar Free Blackberry Jam. I also had a cup of Bigelow Decaf Green Tea. Another nice day out there. 86 degrees and sunny, low humidity. After Breakfast I went to Kroger for Mom and stopped by McDonald’s and picked up Breakfast for her. I picked another 10 Roma Tomatoes and 5 Bell Peppers this morning. The plants have really produced this year! Later raked the yard and sprayed for weeds. I have to get that tree in our front yard cut down, all I do is rake leaves year around! Hopefully soon! For Dinner tonight I prepared Boneless Pork Ribeyes w/ Diced Potatoes, Mini Sweet Ears of Corn, and Baked French Bread.

 

I bought another of the AdapTable Pork Products at my last visit to Meijer. This on is the Chophouse Seasoned Boneless Pork Ribeye, Seasoned with the Chophouse – Garlic, Onion and Bell Pepper. I’m so happy that Meijer started carrying the AdapTable Products!

 

 

I’ll be preparing them on the stove in a Cast Ron Skillet. To prepare them I heated one tablespoon of oil in a skillet on medium-high. Cooked the Chops in a covered skillet for 8-9 minutes per side until product reaches 145°F on a meat thermometer. Removed them from heat, and let them rest for 3 minutes. And serve!

 

 

These were as just as Delicious as the other ones we tried! Seasoned just right and the Chops came out moist and juicy! You have to give the AdapTable Products a try!

 

 

 

 

 

 

For one side I prepared some Simply Potatoes Seasoned Diced Potatoes. Just love using all the Simply Potatoes Products, always easy to prepare, fresh and delicious Potato Dishes. These come seasoned with Seasoning, I added some Sea Salt.

 

For another side dish I boiled some Green Giant Mini Ears of Sweet Corn. It’s frozen Mini Ears of Sweet Corn and you just boil for 10 minutes and you have some of the Sweetest Corn you can find! I also baked a loaf of Pillsbury French Bread. For Dessert/Snack later a bowl of Skinny Pop – Pop Corn and a Coke Zero to drink.

Chophouse Blend Pork Ribeye Chops

Directions:

Toady’s Menu: Dirty Rice and Ground Turkey w/ Baked French Bread

 

For Breakfast I prepared 3 slices of Bacon, a Sunny Side Up Egg, toasted 2 slices of Aunt Millie’s Live Carb Smart Wheat Bread, and had a cup of Bigelow Decaf Green Tea. I’m ready to face the day, I think! Started a load of laundry after Breakfast. Then it was outside. I watered my Pepper Plants and my Tomato Plants. Now that the weather has stayed hot my Plants are getting loaded with Peppers and Tomatoes. Got the leaf blower out and cleaned off the driveway area. Well hopefully the Cicadas are dying out, not nearly as many so far today! Before heading in, the garbage trucks ran this morning and went around and got 8 of them and moved them up to their house for them. Inside finished up the laundry. Then I dug out some large Plastic Tubs out of the shed. Cleaned them up and used them to pack stuff out of the spare room. I’m getting it straightened up for when they install the new flooring later in July. For Dinner tonight I prepared Dirty Rice and Ground Turkey w/ Baked French Bread.

 

For the Dirty Rice I used a box of Zatarain’s Dirty Rice. The Mix includes a Long Grain Rice Mix with Vegetables and Spices. I added the Ground Turkey Sausage and 1 can of Bush’s Chili Black Beans. I also baked a loaf of Pillsbury French Bread Loaf.

 

I first got a skillet and cooked the the Jennie – O Lean Ground Turkey. To prepare the Turkey, I started by browning the Jennie -O Ground Turkey. Using a large skillet sprayed with Pam Cooking Spray and 1 tablespoon of Extra Virgin Olive Oil. Preheat the skillet on medium heat. Seasoned the Turkey with Sea Salt, Ground Pepper, Ground Cumin and Dried Cilantro. About half way through I added a can of Drained Bush’s Chili Beans – Black Beans. Stirred until well mixed and continued cooking until the Turkey was almost done. I didn’t want to over cook the Turkey or Beans because I was going to add them to the Dirty Rice as it was cooking.

 

As the Ground Turkey was cooking I grabbed another skillet and prepared the Dirty Rice. Stirred in 2 1/2 cups of Water and the Rice Mix into the saucepan until it was well blended. Brought it to a boil. Reduced the heat to low and covered. Simmered for 25 minutes until the Rice was tender. With about 5 minutes of cooking time left I added the Turkey and Black Bean Mix. I stirred that in until it was well mixed and finished out the cooking time.

 

 

I also baked a loaf of Pillsbury French Loaf Bread. Very Good Meal tonight! The Jennie – O Ground Turkey and Black Beans worked perfect with the Zatarain’s Dirty Rice! Excellent Meal tonight. For Dessert/Snack later a bowl of Skinny Pop – Pop Corn with a Diet Dr. Pepper to drink.

Today’s Menu: Fried Chicken Tenders w/ Mashed Potatoes and Green Beans

 

 

Another day of 95 degrees, mostly sunny and very humid out with a heat index around 101 degrees. Once again after Breakfast I got some yard work done before the heat and humidity kicked in. There must be a high pollen or mold count outside today. When I came in my head was killing me and sneezing. I’m done for the day! For Dinner tonight its Fried Chicken Tenders w/ Mashed Potatoes and Green Beans.

 

 

I had to hit the freezer to search for Dinner. I came across a package of Simple Truth Chicken Tenderloins (Tenders) last night. So I sat them in the fridge to thaw overnight. To prepare them I’ll need McCormick Grinders of Sea Salt and Peppercorn Medley, LiteHouse Poultry Herb Blend, Garlic Salt, Flour, Pam Cooking Spray, and Extra Light Olive Oil.

 

 

 

I seasoned and Floured the Tenders and set then aside. I grabbed a large skillet and sprayed it with the Pam Spray and heated the skillet on medium heat. As the skillet heated I added 2 tablespoons of Extra Light Olive Oil. When the skillet was heated I added the Tenders, I cooked them in 2 batches so not to over crowd the skillet. I cooked them for about 5 minutes and flipped them over to continue cooking them another 4 minutes. I checked the Tenders with a meat thermometer and I had the correct reading of 165 degrees F. Removed the first batch on to a paper towel lined plate and cooked the next batch.

 

They came out excellent! Good Seasoning and the Flour gave it a good crust. Served these with sides of LiteHouse Lite Blue Cheese and Hidden Valley Ranch Buffalo Dressing.

 

 

I prepared some Bob Evan’s Mashed Potatoes. Just microwave for 6 minutes and serve, just as good as homemade, if not better.

 

 

I also prepared a Quart Jar of the Canned Green Beans. I cooked them with a piece of Fatback Pork in the kettle. Love these Canned Green Beans, they are so fresh tasting! Then I also baked a loaf of Pillsbury French Bread. For Dessert/Snack later a bowl of Skinny Pop – Pop Corn and a Diet Peach Snapple to drink.

Today’s Menu: Rotisserie Chicken w/ Cut Green Beans, Mashed Potatoes, Baked French Bread

 

 

For Breakfast this morning I had a Jimmy Dean Simple Scramble Cup – Egg Whites, Crumbled Turkey Sausage, Cheddar Cheese. Along with my morning cup of Bigelow Decaf Green Tea. Plenty of Sun, 99 degrees, and very humid outside today! It’s really almost too hot to do anything outside. They said the heat index was over 100 degrees! After Breakfast I went to Costco as they opened up at 10:00 this morning. I need some Vitamins, picked up a couple of cases of Canned Goods for the Reach Out Lakota Center, Shrimp, and a Rotisserie Chicken. Back home and stayed in the AC all day! For Dinner tonight its a Rotisserie Chicken w/ Cut Green Beans, Mashed Potatoes, Baked French Bread.

 

 

 

 

I had no clue on tonight’s Dinner until going to Costco this morning. I came across some beautiful and large Kirkland Rotisserie Chickens. I mean these Chickens were really big!

 

 

 

 

 

 

So the Chicken was already cooked and all I had to do was reheat it. I grabbed a small baking sheet and lined it with foil. Heated the oven on 350 degrees. When ready I put the Chicken in and cooked until it heated through, about 25 minutes. It came out perfect and looked delicious! When I sliced it the juices in it came flowing out. It was seasoned just perfect with an incredible flavor. Very glad I went to Costco!

 

 

 

 

 


For one side I prepared a can of Del Monte Low Sodium Cut Green Beans. Just emptied the can into a small sauce pan and heated on high to a boil. Reduced the heat to low and simmered until heated through.

 

 

 

 

 

 

Then it was leftover Bob Evan’s Mashed Potatoes for another side. Heated the leftovers in the microwave and served. I also baked a loaf of Pillsbury French Loaf Bread. Very Good Meal considering I had no clue on what to have earlier! For Dessert later a Jello Sugar Free Dark Chocolate Pudding.

Today’s Menu: Turkey Meatballs and Rotini Pasta w/ Baked French Bread

 

 

For Breakfast I had a bowl of Cheerios’s along with a cup of Bigelow Decaf Green Tea. Cold morning out at 19 degrees. Sunny and 34 degrees for the afternoon. After Breakfast I went and picked up Breakfast for Mom at McDonald’s. Later I went Walmart to pick up the last couple of Gift Cards I needed for Christmas Gifts and a few Christmas Cards. Stopped by the ATM and got gas before heading home. Did a few things around the house and later went outside and got the leaf blower out and cleaned the deck and driveway areas, so many leaves still! For Dinner tonight its Turkey Meatballs and Rotini Pasta w/ Baked French Bread.

 

 

 

 

You can make any Meal healthier by using healthier ingredients. That includes Meatballs and Pasta! I’ll be using Honeysuckle White Turkey Meatballs Kroger finally started having these back in stock! The Honeysuckle White Turkey Meatballs are some of the best I’ve found, fantastic taste and they’re 190 calories and 6 carbs for 3 large Meatballs. For the Sauce I’m using LaRosa’s Original Pasta Sauce. Then for the Rotini Pasta I’ll be using Ronzoni Healthy Harvest Whole Grain Rotini. For the added Cheese topping I’m using Sargento Off the Block Mozzarella Cheese and Kraft Reduced Fat Grated Parmesan Cheese.

 

 

 

 


As I said, for the Meatballs I’m using my favorite, Honeysuckle White Turkey Meatballs. Kroger finally started having these back in stock! The Honeysuckle White Turkey Meatballs are some of the best I’ve found, fantastic taste and they’re 190 calories and 6 carbs for 3 large Meatballs.

 

 

 

 

 


I’ll be cooking them in LaRosa’s Original Pasta Sauce, one of my favorites! The Sauce goes great on Pasta, Pizza, or as a Dipping sauce. I grabbed a Sauce Pan, sprayed it Pam Cooking Spray, added the Sauce to it, and heated on medium low heat. As the Sauce started to heat up I added the Turkey Meatballs, stirred until covered with the Sauce. Reduced the heat to low and let the Meatballs simmer in that Sauce until ready to use.

 

 

 

 

 


For the Rotini Pasta I’m using my favorite, Ronzoni Healthy Harvest Whole Grain Rotini. Easy to prepare; I used a large sauce pan and added 1 1/2 quarts of water and Salt and brought it to a rapid boil. Added the Pasta and brought it back to a boil. Cooked uncovered for 10 minutes, stirring often. Drained the Pasta and put it into the Baking Dish. Then Seasoned the Rotini with 2 teaspoons of Extra Light Olive Oil, some McCormick Grinder Italian Seasoning, and Kraft Grated Reduced Fat Parmesan Cheese.

 

 

 

 

I made a bed of the Rotini Pasta in a bowl. I topped it with the Turkey Meatballs that slow cooked in the LaRosa’s Sauce and Sargento Off the Block Mozzarella Cheese. The Meatballs and Rotini came out incredible! The Turkey Meatballs, Rotini Pasta, Cheese, and Sauce combined to make one delicious Dish! I also baked a loaf of Pillsbury French Bread. One delicious Dinner! For Dessert later a bowl of Breyer’s Carb Smart Vanilla Ice Cream topped with Smucker’s Sugar Free Chocolate Hot Fudge Topping.

Today’s Menu: Baked Chicken Breast Strips w/ Mashed Potatoes and Cut Green Beans

 

Started the morning off with just a cup of Bigelow Decaf Green Tea. I was wanting to go to Meijer for groceries early this morning but it was pouring the rain. It let up later in the morning and I headed out. Stopped by Kroger for a few things for Mom. After Lunch I got up on a few projects around the house. We had to have the air conditioner inspected and cleaned. We also had to have a new spigot put in along with some new water lines to it put in. Everything coming along good at the old homestead! For Dinner tonight its Baked Chicken Breast Strips w/ Mashed Potatoes and Cut Green Beans.

 

I’m baking some Pilgrim Chicken Strips. Pilgrim’s Southern Style Breast Strips, it’s always a great go to when you want that easy to prepare meal! Preheated the oven to 350° F. Arranged frozen chicken breast strips in a single layer on an ungreased baking sheet. Bake, uncovered, for 25-30 minutes, to an internal temperature of 165° F as measured by use of a food thermometer placed in the thickest part of the Chicken Strip . And Chicken is served! It’s some of the best frozen Chicken you can find! Excellent seasoned breading and very meaty, and easy to prepare. Served it with a side of Hidden Valley Ranch Buffalo Dressing.

 


To go with the Chicken I reheated the leftover Bob Evan’s Mashed Potatoes. Just microwave for 2 minutes and serve, just as good as homemade, if not better. Next I made a packet of the Pioneer Peppered White Gravy to top the Mashed Potatoes.

 

 

 

 

Then I reheated up the Del Monte Cut Green Beans. Just empty the leftovers into a sauce pan and heat until heated through. I also baked a loaf of Pillsbury French Bread, One delicious meal tonight. For Dessert/Snack later a bowl of Skinny Pop – Pop Corn and a Diet Peach Snapple to drink.

Cooking Instructions:
Oven: Preheat oven to 350° F. Arrange frozen chicken breast fritters in a single layer on an ungreased baking sheet. Bake, uncovered, for 25-30 minutes until no pink remains or an internal temperature of 165° F as measured by use of a food thermometer placed in the thickest part of the chicken breast fritter.

Fryer: Heat oil to 350° F. Fry frozen chicken breast fritters for 6 minutes or an internal temperature of 165° F as measured by use of a food thermometer placed in the thickest part of the chicken breast fritter.

Due to variations in equipment, heating times and/or temperature may require adjustment. DO NOT MICROWAVE.

Today’s Menu: Baked Chicken Breast Strips w/ Mashed Potatoes and Cut Green Beans

 

 

 

Started the morning off by Scrambling 2 Eggs, toasted a Healthy Life Whole Grain English Muffin (lightly buttered), and a cup of Bigelow Decaf Green Tea. A little under the weather still, fighting a Sinus Infection. So I took it easy today and didn’t do a whole lot. I don’t think its anything that some sunny and warm days won’t be able to cure! For Dinner tonight its Baked Chicken Breast Strips w/ Mashed Potatoes and Cut Green Beans.

 

 

 

One of those days where I didn’t feel like putting a whole lot of effort into preparing my dinner. So there’s nothing easier than baking some Pilgrim Chicken Strips. Pilgrim’s Southern Style Breast Strips, it’s always a great go to when you want that easy to prepare meal! I had not had these in a while. I switched over to Perdue Chicken Strips so I wanted to change it over to Pilgrim’s. Preheat the oven to 350° F. Arrange frozen chicken breast strips in a single layer on an ungreased baking sheet. Bake, uncovered, for 25-30 minutes, to an internal temperature of 165° F as measured by use of a food thermometer placed in the thickest part of the Chicken Strip . And Chicken is served! It’s some of the best frozen Chicken you can find! Excellent seasoned breading and very meaty, and easy to prepare. Served it with a side of Hidden Valley Ranch Buffalo Dressing.

 

 


To go with the Chicken I prepared some Bob Evan’s Mashed Potatoes. Just microwave for 6 minutes and serve, just as good as homemade, if not better.

 

 

 

 

 


Then I also heated up a large can of Del Monte Cut Green Beans. Just empty the can into a sauce pan and heat until heated through. I also baked a loaf of Pillsbury French Bread, One delicious meal tonight. For Dessert/Snack later a bowl of Skinny Pop – Pop Corn and a Coke Zero to drink.

Today’s Menu: Chicken Topped with Mozzarella w/ Chive Pappardelle and Marinara Sauce

 

 

For Breakfast this morning I made a Breakfast Sandwich. I toasted a Healthy Life Whole Grain English Muffin. I then lightly fried a few slices of Boar’s Head Sweet Sliced Ham and got a slice of Boar’s Head Sliced Gouda Cheese and made my Sandwich. I also had a cup of Bigelow Decaf Green Tea. Outside had some sunshine early and a high of 45 degrees. After Lunch I got the leaf blower out and cleaned off the deck and driveway areas. Not much else going on today. For Dinner tonight I prepared a Chicken Topped with Mozzarella w/ Chive Pappardelle and Marinara Sauce.

 

 

For my Dinner tonight I’m preparing Chicken Topped with Mozzarella w/ Chive Pappardelle and Marinara Sauce. For the Chicken I purchased a package of Katie’s Best Thin Cut Chicken Breasts then for Seasoning I’ll need; Flour, McCormick Grinders of Sea Salt and Peppercorn Medley, Litehouse Poultry Seasoning, Buitoni Marinara Sauce, Boar’s Head Deli Sliced Mozzarella Cheese, Extra Light Olive Oil.

 

 

 

To prepare everything I grabbed a Large Sauce Pan and a Skillet. Sprayed each with Pam Non Stick Cooking Spray. I filled the Sauce Pan with 4 quarts Water and a couple of shakes of Morton’s Light Salt. Turned it on medium heat. I’ll be using this to cook my Pappardelle Pasta with.

 

 

 

 

 

As the Water was heating up I Seasoned the Chicken. I Seasoned it with the Sea Salt, Peppercorns, Poultry Seasoning, and then rolled the Chicken Breasts in Flour. Next I added a tablespoon of Extra Light Olive Oil and heated the Skillet on medium high heat. When the Skillet was ready I fried the Chicken, turning it occasionally, 18-20 minutes, to 170ºF internal temperature. Uncovered the last 2 minutes of cooking. I then topped each Chicken Breast with a slice of the Mozzarella Cheese. Then a spoonful of the Marinara Sauce and finished cooking. The Chicken came out great! Browned up good, moist, and excellent flavor with the added Mozzarella Cheese and Marinara Sauce. I put the lid on the Skillet and set it aside while the Pasta finished.

 


To prepare the Buitoni Roasted Garlic and Chive Pappardelle; As the Chicken was cooking I had already started boiling the Water. When it was a full boil I added the Pasta. Reduced the heat for a gentle boil of the Pasta, stirred frequently with a pair of tongs to separate the Pasta. Drained the Water and served.

 

 

 

 

To serve it I got a plate and made a bed of the Pasta and added a spoonful of the Marinara Sauce. Then topped that with one of the Mozzarella Chicken Breasts. I also baked a loaf of Pillsbury French Bread. Everything turned out delicious! First time I had the Buitoni Roasted Garlic and Chive Pappardelle in quite a while. The Pappardelle and Chicken combo worked great, Excellent dish! For Dessert later a Jello Sugar Free Dark Chocolate Pudding.

Today’s Menu: Catfish Nuggets w/ Potato Pancakes and Cut Green Beans

 

 

For Breakfast this morning I fried up a package of Thin Cut Breakfast Pork Chops. I purchased these at Meijer. I had been wanting something different and I saw the Chops. So I seasoned them with Sea Slat and Ground Black Pepper and then put a light coat of flour on them. I sprayed a large skillet Pam Cooking Spray and added a 1/2 tablespoon of Extra Light Olive Oil. Fried them on medium heat for 2 minutes per side, and done! To go with the Chops I fried some Simply Potatoes Shredded Hash Browns, Scrambled some Eggs, and toasted slices of Aunt Millie’s Light Whole Grain Bread. I skipped the Eggs, they were for Mom and Dad. Cloudy and 65 degrees today, rain moved in later in the day. After Lunch I went to a Medical service Warehouse and picked up a wheel chair for Dad. He really needed this. Back home just did some odds and ends jobs around the house. For Dinner tonight one of my favorites, Catfish Nuggets w/ Potato Pancakes and Cut Green Beans.

 

Picked up the Catfish Nuggets at Meijer yesterday. To prepare them I rinsed the Catfish Nuggets off in cold water and patted dry with a paper towel. Seasoned them with Sea Salt. Then put them in a Hefty Plastic Storage Bag and added Zatarain’s Crispy Southern Fish Fri Breading Mix, shook the bag until all the Nuggets were coated. Then pan fried them in a medium size skillet in Extra Light Olive Oil. Fried each side about 3 1/2 minutes, until a golden brown. The Zatarain’s Crispy Southern Fish Fri is perfect for the Catfish, great flavor and the Nuggets were good size and meaty. You can bake Catfish but for me you just can’t beat fried Catfish.

 

The whole family love’s Potato Pancakes! So for a side I prepared some Manischewitz Potato Pancake Mix, my favorite (Never made a cake I didn’t like!). Just add 2 Egg Beater’s (1/2 Cup), 2 1/4 Cups Water, to the mix stir and fry! Easy and makes one good Potato Pancake and their only 80 calories and 18 carbs per serving (3 Potato Pancakes).

 

 

 

 

Next I heated up a can of Del Monte Cut Green Beans. Just open the can and heat the beans up in a small sauce pan. The Beans are done! I also baked a loaf of Pillsbury French Bread, Mom has to have Bread with every meal. For Dessert later a Jello Sugar Free Dark Chocolate Pudding topped with Cool Whip Free.

 

 

 

 

 

Manischewitz Potato Pancake Mix
Ingredients
Potatoes ( Contains Sulfites to Maintain Whiteness), Potato Starch, Salt, Onion, Vegetable Shortening (Partially Hydrogenated Cottonseed Oil).

Directions
Makes 18-24 pancakes. You Will Need: Medium bowl, 2 eggs, 2 1/4 cups cold water, vegetable oil, large skillet. 1. Mix: In a medium bowl, beat two eggs with a fork until blended. Add 2 1/4 cups cold water and mix well. Stir in the contents of this package. Allow batter to thicken for 3 to 4 minutes. Stir. 2. Fry: Drop tablespoons of batter into 1/8 inch hot vegetable oil in a large skillet and brown on both sides.
