After a light Breakfast I headed out to my Dermatologist to have cyst checked out. With my past history of Melanoma I was worried about it, it came up very quickly. After an exam he told me there is nothing to worry about! All clear. Quite a relief off my mind. After leaving the Doctors I stopped by McDonald’s and let Mom pick up Breakfast for her and Dad. Back at home nothing going on today, all caught up on everything. I had some Shows recorded I’ve been wanting to watch so I caught up on them. For dinner tonight I prepared Baked Chicken Breast Strips w/ Loaded Peppered Bacon and Cheddar Mashed Potatoes and Cut Green Beans.

 

 
I wanted something easy to prepare for dinner tonight, easy but still delicious! Nothing easier and more delicious Pilgrim Chicken Stripsthan Pilgrim’s Southern Style Breast Strips, it’s always a great go to when you want that easy to prepare meal! It’s the best Frozen Chicken that I’ve found by far. Very easy to prepare; Preheat oven to 350° F. Arrange frozen chicken breast strips in a single layer on an ungreased baking sheet. Bake, uncovered, for 25-30 minutes, to an internal temperature of 165° F as measured by use of a food thermometer placed in the thickest part of the chicken breast fritter. And Chicken is served! As I said it’s some of the best frozen Chicken you can find! Excellent seasoned breading and very meaty, and easy to prepare. Served it with a side of JB’s Fat Boy Sticky Stuff BBQ Sauce.

 

 
Then for a side dish I tried a new one, Idahoan Fully Loaded Peppered Bacon and Cheddar. I had seen this the other day at Kroger and had to grab a package to try it out! Easy to prepare; Just add 2 cups of water to a medium-sized sauce pan and heat water on high to a boil. Remove boiling water from heat and immediately stir in entire pouch of potatoes. Mix thoroughly using a fork to moisten all potatoes and let stand 1 minute. Stir well and serve. as I said easy to prepare and it makes one delicious side dish! The Potatoes have great flavor, really enjoyed them. I’ll keep an extra bag or 2 in the pantry.

 

 
I also heated up a small can of Del Monte Cut Green Beans with Sea Salt. I could have Green Beans every day, love them! Then I had 1 slice of Aunt Millie’s Whole Grain Bread topped with I Can’t Believe It’s Not Butter. For dessert later a Healthy Choice Dark Fudge Swirl Frozen Greek Yogurt.

Stove Top Directions

Started off with a Breakfast of 1 toasted slice of Aunt Millie’s Whole Grain Bread, topped with an Egg Beater’s Scrambled Egg Whites, and 2 Jennie – O Turkey Breakfast Sausage Links. Also my morning cup of Bigelow decaf Green Tea. So after that did some laundry for Mom. Then outside to clean up a lot of leaves. Everything done for the day and hit the easy chair with remote in hand for some College Football. For dinner tonight its Baked Chicken Breast Strips w/ Loaded Potato Casserole and Sliced Carrots.

I also heated up a can of Del Monte Sliced Carrots. Had a bottle of Peach Diet Snapple to drink. For dessert later a 100 Calorie Mini Bag of Jolly Time Pop Corn.

Idahoan Loaded Baked Homestyle Casserole

Best for Golden Browning

1 – PREHEAT oven to 450°F. COMBINE potatoes and sauce mix in 1 1/2 quart baking dish.
2 – STIR in 1 1/2 cups boiling water, 3/4 cup milk, and 1 1/2 Tbsp. margarine or butter with whisk.
3 – BAKE uncovered for 25 minutes or until top is golden brown and potatoes are tender (sauce will thicken slightly when cooling).
4 – Remove from oven and let stand a few minutes before serving.
BAKING NOTES: To prepare 2 casseroles at once, double all ingredients, increase baking dish size accordingly, and bake about 30 min. To bake potatoes and roast meat at the same time, bake at 375°F for about 45 min; 350°F for about 50 min; or 325°F for about 60 min.

Stove Top Directions

3 – Remove from heat and let stand a few minutes before serving.

It’s a beautiful Autumn Day outside today! The rain and clouds have passed and the sun is out, Have a cool Autumn wind rustling the leaves, it’s just one of those perfect fall days. After breakfast I had to get the leaf blower out. Our deck and driveway was covered with leaves and branches from yesterday’s wind and rain. After that came in and cleaned the house, dusting and vacuuming. Had everything done and hit that easy chair with remote in hand and watched NFL Football the rest of the afternoon. For dinner tonight I prepared Baked Chicken Breast Strips w/ Mashed Potatoes, Baby Carrots, and Rustic French Bread

Then I also prepared a can of Kroger Brand Whole Baby Carrots. These are so much easier to prepare than boiling fresh Baby Carrots, and they taste just as fresh and good. Also Mom wanted some of her favorite Bread, Pillsbury Rustic French Bread. So I baked a loaf of that for us. For dessert later a bowl of Del Monte Peach Slices.

We have another gorgeous Spring Day outside again. Started off a little cool at 40 degrees. It was sunny and 64 Baked Chicken Breast Strips 005degrees out, beautiful weather. Went to Jungle Jim’s International Market this morning, hadn’t been in a while. It’s one amazing Grocery Store. they always have new items every time you go there. In the Seafood Department this morning they were putting out whole Octopus, wild-looking! They had Tilapia and Ocean Perch on sale so I purchased several fillets of each. They are the Boar’s Head Meat Products of the world, they have every Boar’s Head Meat, Cheese, or Sauce that there is. Ending up spending more than I intended too, as usual! For dinner tonight its Baked Chicken Breast Strips w/ Mashed Potatoes and Cut Green Beans.

For another side I heated up a can of Del Monte Cut Green Beans, a small 2 serving can. I also had a slice of Klosterman Wheat Bread and a Bottle of Half and Half Diet Snapple. For dessert later a SO Mini Ice Cream Sandwich.

It’s been a hectic day around here today! Had a light Breakfast and worked out. Then off to Kroger to pick up a few items for Mom and myself. Came back home and I had to follow Mom over so she could drop her car off to be worked on, nothing serious. Back home and I had to work on the clothes dryer, a leg on the base came off so I had repair good enough to run until the Repairman can come over and replace it. I had planned to do a new recipe but sure as I would start to prepare it, the car repair would call and I would have to leave to take Mom to pick it up. (and they did!) So it was a simple and easily prepared meal tonight, Chicken Breast Strips w/ Cut Green Beans and Mashed Potatoes.

They say we have another beautiful week of weather ahead, bit warmer during the days but no humidity. It was 55 degrees this morning and sunny. Had a light Breakfast, Healthy Life Whole Grain English Muffin topped with Smucker’s Sugarless Blackberry Jam. My Dad is doing better, barring any setbacks he should be home sometime this week. So for my dinner I wanted a hot meal but I wanted one that was easy to prepare. So tonight its Breaded Chicken Breast Strips w/ Cut Green Beans and Mashed Potatoes.

 

 
Nothing easier and more delicious than Pilgrim’s Southern Style Breast Strips, it’s always a great go to when you want that easy to prepare meal! It’s the best Frozen Chicken that I’ve found by far. Very easy to prepare; Preheat oven to 350° F. Arrange frozen chicken breast fritters in a single layer on an ungreased baking sheet. Bake, uncovered, for 25-30 minutes until no pink remains or an internal temperature of 165° F as measured by use of a food thermometer placed in the thickest part of the chicken breast fritter. Chicken is served! As I said it’s some of the best frozen Chicken you can find! Excellent seasoned breading and very meaty, and easy to prepare. Served it with a side of JB’s Fat Boy Sticky Stuff BBQ Sauce.

 

 
For one side I heated up a can of Del Monte Cut green Beans. Then I also prepared some Then I heated up some Bob Evans Mashed Potatoes, just microwave and done. I also had a slice of Healthy Life Whole Grain Bread that I buttered with I Can’t Believe It’s Not Butter. For dessert later a Healthy Choice Dark Fudge Swirl Frozen Greek Yogurt.

It makes for such a long day when you spend it at the hospital. Visited my Dad most of the afternoon at the hospital. He’s doing a lot better today. He got a full nights sleep and ate a good breakfast and lunch. His speech is better and had good coloring to his face, yesterday the speech was slurred and he was pale white. He’s a trooper! Mom had dinner with Dad at the hospital. So for my dinner I wanted a hot meal but I wanted one that was easy to prepare. So for dinner tonight its Breaded Chicken Breast Strips w/ Cut Green Beans and Mashed Potatoes.

Still no break in this humid weather, very bad day out today. They say by Friday we’ll get a big break in this weather, Friday sunny and only a high of 72 degrees! Come on Friday and get here. Went to the bank and stopped by Walmart for a few items and home. Then for dinner tonight its Breaded Chicken Breast Strips w/ Cut Green Beans and Mashed Potatoes.

Rain and more rain today and in the future forecast! A little cooler out also, high in the 60’s. Went for my Cancer Checkup and every thing is looking normal! Really blessed on having one of the finest Oncology Doctors around, but I was informed today that he was going to retire in June. Very sad, I’m losing a Doctor that I trust more than any other and a friend at the same time. Wanted an easy meal to prepare for Dinner tonight So tonight its Breaded Chicken Breast Strips w/ Cut Green Beans and Mashed Potatoes.
