Today’s Menu: Baked Chicken Breast Strips w/ Mashed Potatoes and Cut Green Beans

 

 

 

For Breakfast this morning I made a Breakfast Sandwich using; a toasted Healthy Life Whole Grain English Muffin, lightly fried an al fresco Country Style Chicken Sausage Breakfast Patty, And had a cup of Bigelow Decaf Green Tea. Sunny and 86 degrees out today. Finished up touching up the shed trim on the door and around the door. Then I had the last 2 shutters to touch up. Then got the cart out and went around the yard and pulled and sprayed for weeds, weeds are heavy this year. Had everything done and took the cart for a spin around the neighborhood, really nice out. For Dinner tonight its Baked Chicken Breast Strips w/ Mashed Potatoes and Cut Green Beans.

 

 

I love the Pilgrim’s Southern Style Breast Strips, it’s always a great go to when you want that easy to prepare meal! I had not had these in a about a month or so. I switched over to Perdue Chicken Strips for a while so I wanted to change it back to Pilgrim’s. Preheat the oven to 350° F. Arrange frozen chicken breast strips in a single layer on an ungreased baking sheet. Bake, uncovered, for 25-30 minutes, to an internal temperature of 165° F as measured by use of a food thermometer placed in the thickest part of the Chicken Strip . And Chicken is served! It’s some of the best frozen Chicken you can find! Excellent seasoned breading and very meaty, and easy to prepare. Served it with a side of Hidden Valley Ranch Buffalo Dressing.

 

 

 

For one side I prepared some Bob Evan’s Mashed Potatoes. Just microwave for 6 minutes and serve, just as good as homemade, if not better. I could make a meal out of just Mashed Potatoes!

 

 

 

 


Then for another side I prepared a small can of Delmonte Cut Green Beans. Just empty the can into a small sauce pan and heat until heated through. I also had a couple of slices of Garlic Bread. I baked a loaf of the RiverRoad Bake House Garlic Oval Loaf Bread yesterday for Dinner and have some leftover. Then for Dessert/Snack later a bowl of Skinny Pop – Pop Corn and a Coke Zero to drink.

Today’s Menu: Baked Chicken Breast Strips w/ Mashed Potatoes and Golden Hominy

 

 

Scrambled an Egg, fried up a couple of Jennie – O Turkey Breakfast Sausage Links, toasted a slice of Aunt Millie’s Whole Grain English Muffin (lightly buttered), and a cup of Bigelow Decaf Green Tea. One cold morning out there, 18 degrees. Plus a cold wind blowing out there this morning. Gave Mom a hand doing a couple of loads of laundry. Later on cleaned the house, vacuum and dusted. For Dinner tonight its Baked Chicken Breast Strips w/ Mashed Potatoes, Golden Hominy, and Baked Texas Toast.

 

 

I love the Pilgrim’s Southern Style Breast Strips, it’s always a great go to when you want that easy to prepare meal! I had not had these in a about a month or so. For another side I opened up a can of one of my favorite side dishes, Kroger Brand Golden Hominy. For those that has never had or heard of Hominy; Hominy is a food made from kernels of corn which are soaked in an alkali solution of either lime or lye. The corrosive nature of the solution removes the hull and germ of the corn and causes the grain itself to puff up to about twice its normal size. There is White and Golden Hominy, my favorite is the Golden Hominy. If you’ve never tried it do, makes a delicious side dish! I also baked a slice of New York Bakery Lite Texas Toast, One delicious meal tonight. For Dessert/Snack later a bowl of Skinny Pop – Pop Corn and a Diet Dr. Pepper to drink.

Wow I had a long and sleepless night last night. I had to deal with those Phantom Pains all night and most of today. When they are this bad I know I’m in for some pain. It looks as though with as many Amputees there are and most having to deal with Phantom Pins that they could come up with something to ease them or stop them. Just have to deal with it.

 
Wasn’t really hungry this morning so I just had a cup of Bigelow Green Decaf Green Tea. I didn’t do much of anything today the Phantom Pains continued to around mid afternoon. Tried to rest and catch up on some sleep. I had planned something new for dinner but it on hold until tomorrow, just didn’t feel like putting a lot of effort into cooking. So it was an easy prepared dinner tonight! I had Baked Chicken Breast Strips w/ Mashed Potatoes and Baby Carrots.

It’s the best Frozen Chicken that I’ve found by far. Very easy to prepare; Preheat oven to 350° F. Arrange frozen chicken breast strips in a single layer on an ungreased baking sheet. Bake, uncovered, for 25-30 minutes, to an internal temperature of 165° F as measured by use of a food thermometer placed in the thickest part of the chicken breast fritter. And Chicken is served! Mashed Potatoes
For one side I made some of my favorite Mashed Potatoes, Bob Evans Mashed Potatoes. Just microwave for 6 minutes and serve. Just as good as homemade, if not better. Then I also prepared a can of Kroger Brand Whole Baby Carrots. These are so much easier to prepare than boiling fresh Baby Carrots, and they taste just as fresh and good. Delicious meal and easy to prepare. For dessert later a Healthy Choice Dark Fudge Swirl Frozen Greek Yogurt.

Beautiful second day of Winter here today! Sunny and in the mid 40’s, not bad at all. After a light Breakfast and working out, I went to the Bank, Kroger, and got some gas. The gas station right around the corner has dropped the price of Unleaded Gas to $1.93 a gallon, lowest in quite some time. For dinner tonight an easy to prepare but delicious dinner tonight, Chicken Breast Strips w/ Cut Green Beans and Mashed Potatoes.

A very cold morning here in West Chester, 9 degrees with a wind chill of 0 degrees! We ended with about 5″ of snow yesterday. Today’s high is only going to hit 18 degrees, if we’re lucky. So I only ventured out for the morning papers and to take garbage out. Not much going on today. For dinner tonight its Breaded Chicken Breast Strips w/ Cut Green Beans and Mashed Potatoes.

I also had a slice of Klosterman Wheat Bread that I buttered with I Can’t Believe It’s Not Butter. For dessert later a Healthy Choice Dark Fudge Swirl Frozen Greek Yogurt.

A windy and cool but sunny Fall Day here today. Went to Walmart early this morning to pick up some bulk items, only about 39 degrees. All the leaves are falling but it wasn’t a good year for the leaves turning color though. It’s Sunday so it’s afternoon of Football! So for my dinner I wanted a hot meal but I wanted one that was easy to prepare. So tonight its Breaded Chicken Breast Strips w/ Cut Green Beans and Mashed Potatoes.

It sure doesn’t feel like Spring out there today! A very cold wind blowing all day and I’m not sure it even reached 32 degrees. We did miss the snow as that went South and East of us. It will be in the 50’s the rest of the week they say. I was scheduled for my 6 month check-up for Sugar, Cholesterol and such but with all the meds I’ve been taking the last week or so I had to reschedule it for next week to get a better reading on everything. Not real hungry tonight so it was a light dinner. So tonight I prepared Chicken Breast Strips w/ Oven Baked Scalloped Potatoes.

 

 

 
I used Pilgrim’s Southern Style Breast Strips, first time in quite a while. Very easy to prepare; Preheat oven to 350° F. Arrange frozen chicken breast fritters in a single layer on an ungreased baking sheet. Bake, uncovered, for 25-30 minutes until no pink remains or an internal temperature of 165° F as measured by use of a food thermometer placed in the thickest part of the chicken breast fritter. Chicken is served! It’s some of the best frozen Chicken you can find! Excellent seasoned breading and very meaty, and easy to prepare. Then for my only side I prepared some Bob Evan’s Oven Baked Scalloped Potatoes. This one also comes in a microwave package, just heat for 6 minutes and serve, or you can bake it which is how I prepared it. Comes out with plenty of Potatoes with an excellent Cheese Sauce and seasoning. A delicious Meal without much effort or cleanup involved! Our Southern Style Breast Strips feature a juicy piece of chicken with a breading just right to deliver that southern flair. Our special blend of spices and seasonings with the whole muscle goodness of white breast meat will please kids and old-timers alike.

Cooking Instructions:

Oven: Preheat oven to 350° F. Arrange frozen chicken breast fritters in a single layer on an ungreased baking sheet. Bake, uncovered, for 25-30 minutes until no pink remains or an internal temperature of 165° F as measured by use of a food thermometer placed in the thickest part of the chicken breast fritter.

Fryer: Heat oil to 350° F. Fry frozen chicken breast fritters for 6 minutes or an internal temperature of 165° F as measured by use of a food thermometer placed in the thickest part of the chicken breast fritter.

Due to variations in equipment, heating times and/or temperature may require adjustment. DO NOT MICROWAVE.
