Today’s Menu: Reames Chicken and Dumplings and Sliced Carrots

 

 

 

For Breakfast I prepared a packet of Pioneer Peppered White Gravy. I also toasted a couple of slices of Aunt Millie’s Light Whole Grain bread, fried 2 Jennie – O Turkey Breakfast Sausage Links, and had my Morning Cup of Bigelow Decaf Green Tea. Mom was gone most of the day so I stayed home to keep an eye on Dad. Did some house work and outside got the leaf blower out and cleaned the deck and driveway area off. With everything done I kicked back and watched some shows I had recorded. For Dinner tonight I prepared Reames Chicken and Dumplings and Sliced Carrots.

 

 

Here’s another one I haven’t prepared in a long time, Reames Chicken and Dumplings. Why i can’t tell you, the Noodle/Dumplings are fantastic to use! While at Meijer I seen a package of these in the Frozen Foods and grabbed a package. To prepare the dish I’ll need; 2 tablespoons Extra Light Olive Oil, 3 Perdue Perfect Portions Boneless, Skinless chicken breasts (cut into 3/4″ chunks), 1 quart (32oz) Swanson Low Sodium Chicken Broth, 1 tablespoon Parsley flakes, 1/2 teaspoon Black pepper, and 1 bag (12oz) Reames Frozen Flat Dumplings.

 

 

I’m using Perdue Perfect Portions Boneless and Skinless Chicken Breasts. I love using these. Their individually wrapped, perfect size, and cook up perfectly. To prepare it; In a large pot, heat oil, add Chicken and cook until chicken is slightly browned.

 

 

 

 

Add Broth, Parsley and Pepper, Bring mixture to a boil. Add Reames Frozen Flat Dumplings, stirring to separate, return to a boil, reduce heat and simmer 25 min. Stir occasionally to prevent dumpling from sticking. Or until dumplings are desired tenderness. All done, and serve! I’ve got to remember to have these more often! They always turn out so good. Easy to prepare and an excellent Noodle. They go perfect with Chicken.

 

 

 

I also heated up a can of Del Monte Sliced Carrots. Just empty the contents into a small sauce pan , bring it to a boil, reduce the heat and simmer until heated through. For Dessert later a Jello Dark Chocolate Pudding topped with Cool Whip Free.

 

 

 

 

 

 

Reames Chicken and Dumplings

Ingredients
2 tablespoons Extra Light Olive Oil
Perdue Perfect Portions Boneless, Skinless chicken breasts, cut into 3/4″ chunks
1 quart (32oz) Swanson Low Sodium Chicken Broth
1 tablespoon Parsley flakes
1/2 teaspoon Black pepper
1 bag (12oz) Reames Frozen Flat Dumplings

Directions
1) In a large pot, heat oil, Add chicken and cook until chicken is slightly browned.
2) Add broth, parsley and pepper, Bring mixture to a boil.
3) Add Reames Frozen Flat Dumplings, stirring to separate, return to a boil, reduce heat and simmer 25 min. Stir occasionally to prevent dumpling from sticking. Or until dumplings are desired tenderness. Serve.

Directions
Cooking Instructions: Bring 4 quarts of water to a rapid boil. Add 2 teaspoons salt, if desired. Add frozen dumplings and return to a full rolling boil, stir to separate. Cook dumplings uncovered for 30 minutes or until desired tenderness, stir occasionally. Drain thoroughly. Dumplings will be tender but still slightly firm. For Soups and Stews: Cook dumplings in broth for the same length of time. Omit salt. Keep frozen.

Today’s Menu: Chicken ‘n’ Noodles w/ Sliced Carrots and Whole Grain Bread

 

 

Woke up hungry this morning. So for Breakfast I prepared 2 Jennie – O Turkey Breakfast Sausage Patties, 1 Egg (Sunnyside Up), 2 toasted slices of Healthy Life Whole Grain Bread (Lightly Buttered), and a cup of Bigelow Decaf Green Tea. Right after Breakfast I had to be at the Doctor’s office. I had my 2 year check up of my right hip replacement. I go every 2 years and they take x-rays to make sure everything is good, and it was! The x-rays came back looking good. After that I stopped and picked up Breakfast for Mom and Dad. Back home I repaired an outdoor chair for Mom, replaced a couple of screws and cleaned it up. Then got the cart out and did some yard work, having trouble with weeds in the back yard. Everything done took the cart out for a ride and picked the mail up. For dinner tonight its Chicken ‘n’ Noodles w/ Sliced Carrots and Whole Grain Bread.

 

To start; I cut up 2 Perdue Perfect Portions Chicken Breasts into bite size pieces, seasoning them with Sea Salt, Ground Black Pepper, and Litehouse Poultry Seasoning . I then fried them in Extra Light Olive Oil in a large skillet until done.

 

 

 

 

As the Chicken finished I then added the can of Fixins’ to the skillet. The Fixins’ is a can of Margaret Holmes Simple Suppers Chicken n Noodles Fixins’. Margaret Holmes no longer makes it, lack of sales they say. I’ve been purchasing cans of it on various web sites but I can no longer can find it online and I’m down to my final 4 cans. But anyway, it comes in a 5 serving can and contains the Noodles and Seasoning, Cooked until it the Sauce was bubbling and heated throughout. The broth that’s with Noodles is incredible! Rich and thick and seasoned just right. The Sauce coats the Chicken and gives it incredible flavor.

 

I also had heated up a small can of Del Monte Sliced Carrots. Also had a couple of slices of Aunt Millie’s Whole Grain Bread topped with I Can’t Believe It’s Not Butter. Then for dessert later tonight a Weight Watcher’s Cookies and Cream Ice Cream Bar.

Today’s Menu: Chicken and Wild Mushroom Ravioli

 

 

 

For Breakfast this morning I prepared a Poached Egg and served it on a toasted Healthy Life Whole Grain English Muffin. Also had the morning cup of Bigelow Decaf Green Tea. After Breakfast I went up to McDonald’s and picked up Breakfast for Mom. Another overcast day but not as windy out and a high of 51 degrees. Finished up some cleaning today, cleaned the oven and fridge. Still having problems with my thumb, wish this would hurry up and heal! For Dinner tonight I prepared a new item, Three Bridges Wild Mushroom Ravioli. Tonight its Chicken and Wild Mushroom Ravioli.

 

Chicken and Wild Mushroom Ravioli for Dinner. Had this a while back and really liked it. For the Chicken I used Perdue Perfect Portions Skinless and Boneless Chicken Breasts. I had them in the freezer so I let them thaw overnight in the fridge. I love the Perdue Perfect Portions Chicken Breasts. Always taste fresh and nice size. To prepare; removed them from the package and seasoned them with Sea Salt and Litehouse Freeze Dried Poultry Herb Blend, my favorite seasoning for Chicken. Then I sprinkled them with a light dusting of Flour. Cooked them in a medium size skillet that was sprayed with Pam Cooking Spray w/ Olive Oil and a tablespoon of Extra Light Olive Oil. Fried them on medium high heat for about 11 minutes, flipping it over 3 times. Removed from the heat and set aside.As the Chicken was cooking I sliced up some Mushrooms and Sauteed them in the skillet also. Removed from the heat and set aside. After they had cooled I sliced the Chicken Breasts up.

 

 

 

As the Chicken was finishing I prepared the Three Bridges Wild Mushroom Ravioli. First time preparing this and its very easy to prepare. Bring a large pot of water to a gentle boil. Add ravioli and cook for 5 minutes. Remove the pot from heat and strain the Ravioli.

 

 

 

Then tossed with Kraft Reduced Fat Grated Parmasen Cheese, 1 tablespoon of Light Olive Oil, and some Buitoni Marinara Sauce. To serve I made a bed of the Ravioli in a bowl and topped it with the sliced Chicken Breast, Sauteed Sliced Mushrooms, and a bit more of the remaining Sauce and a sprinkle of Kraft Reduced Fat Grated Parmesan Cheese. The Ravioli is very tender and an excellent Mushroom taste! The Chicken and sauce worked perfect with it. Another very good item I came across at Meijer. I’m always finding new products to try at Meijer. For Dessert later a Jello Sugar Free Dark Chocolate Pudding.

For Breakfast this morning I toasted a Healthy Life Whole Grain English Muffin, lightly buttered, and a cup of Bigelow Decaf Green Tea. We had a cold morning today, 31 degrees with ha cold breeze. Had a pretty good frost on the roof tops and low areas. After Breakfast I went to Meijer for a few items. Stopped and got gas on the way home, $1.80 a gallon. Haven’t seen that in a while! Back home ran the vacuum and outside gathered up some leaves around the deck and driveway. Then had to work on the vacuum , guess I’m going to have to take it to be repaired tomorrow. For Dinner tonight I’m trying a new product, Three Bridges Parmesan Gnocchi. Tonight I prepared Seasoned Chicken and Parmesan Gnocchi.

For the Chicken I’m using Perdue Perfect Portions Skinless and Boneless Chicken Breasts. I had them in the freezer so I let them thaw overnight in the fridge. I love the Perdue Perfect Portions Chicken Breasts. Always taste fresh and nice size. To prepare; removed them from the package and seasoned them with Sea Salt and Litehouse Freeze Dried Poultry Herb Blend. Then I sprinkled them with a light dusting of Flour. As my Chicken was cooking I prepared the Three Bridges Parmesan Gnocchi. I came across this at Meijer the other day and looked good so I bought a package. Its Potato Gnocchi blended with aged Parmesan Cheese. It comes in a sealed plastic box already seasoned with the Parmesan Cheese.

To prepare I used a medium size pot, sprayed it with Pam Cooking Spray. Filled it half way with water and heated it on high till it started to boil and reduced the heat to gentle boil and added the Gnocchi. Cooking it for 3 minutes, stirring often. Removed it from the heat and drained the water. Put it in a large bowl and added a 1/2 tablespoon of Light Olive Oil and added a shake of Kraft Reduced Fat Grated Parmesan Cheese and tossed it in the bowl. A Pesto Sauce would be good but Pestos are high in calories and carbs so I stuck with Olive Oil and Parmesan Cheese.

To serve I made a bed of the Gnocchi in a bowl. Then took 1 of the Chicken Breasts and sliced it up and topped the Gnocchi with the Chicken. I really enjoyed this Dinner! The Three Bridges Parmesan Gnocchi was fantastic! Excellent flavor and the Chicken was perfect with it. As I had said I found the Three Bridges Parmesan Gnocchi at Meijer, I’ll be buying more of this. I also baked a loaf of Pillsbury French Bread. For Dessert later a Weight Watchers Cookies and Cream Ice Cream Bar.

Hungry no more! After Breakfast it was house cleaning, vacuum and dusting. Then later in the afternoon I headed back up to the hospital to see my friend that’s up there. Cloudy, rain on and off, and in the 70’s. For dinner tonight its Chicken ‘n’ Noodles w/ Sliced Carrots and Whole Grain Bread.

Today’s Menu: Leftovers – Seasoned Chicken Breast w/ Whole Grain Rotini

Went out early this morning and grabbed the morning papers and it was a bit nippy out there, about 26 degrees! After I made my Breakfast I went to McDonald’s and picked up Mom and Dad’s Breakfast for them. Too much McDonald’s for me, but that’s what they like. Mom and Dad went on to Church after they ate. While they were gone I gave the house a good cleaning; ran the vacuum, mopped, and dusted. After that it was an afternoon of NFL Football. For dinner tonight, Leftovers! I reheated Seasoned Chicken Breast w/ Whole Grain Rotini.

 
The other night I had prepared a Seasoned Chicken Breast w/ Whole Grain Rotini, along with a Larosa’s Sauce. So Seasoned Chicken Breast w Whole Grain Rotini and Baked Mozzarell 005for dinner tonight I reheated the Chicken and the Pasta Sauce. Then I made some fresh Pasta, Ronzoni Healthy Harvest 100% Whole Grain Rotini.
To prepare it; start by bringing 4 quarts water to a rapid boil. Add the Pasta And stir; return to rapid boil. Cook uncovered, stirring occasionally, for 13 to 15 minutes. When done drain well and put into a large bowl. Season with Sea Salt and McCormick Italian Seasoning, lightly tossed and serve.

In a medium size dinner bowl; I made a bed of the pasta, topped it with the leftover LaRosa’s Sauce, and then topped with the leftover sliced Chicken Breast Tender. I really enjoy this dish! The Pasta came out perfect and the Chicken came out browned, juicy, and seasoned just right. Then to tie it all together was the LaRosa’s Sauce. It’s my favorite Sauce, so well seasoned and just brings fantastic flavor to any dish. For dessert later a Jello Sugarless Dark Chocolate Mousse.

Much colder out this morning, about 28 degrees. And it didn’t get a whole lot warmer today, about 37 with a wind chill around 20 at times. For Breakfast I had an Eggo (Nutrigrain), topped with a Egg Beter’s Egg White Scramble, and 2 Jennie – O Turkey Breakfast Sausage Links. Add my morning cup of Bigelow decaf Green Tea and I was set!

Felt like staying in for the day so I thought I would bake some Devil’s Food Chocolate Cupcakes. I used Pillsbury Sugar Free Devil’s Food Cake Mix and for the icing Pillsbury Sugar Free Chocolate Fudge Frosting. To make the cakes I substituted Eggs with Egg Beater’s, used Extra Virgin Olive Oil. and added 1 Jello Sugar Free Chocolate Pudding Cup. When making Cakes I usually add a Sugar Free Pudding Cup, the added Pudding will make your cakes moister than usual. Everyone that has tried them agrees the added moister works great. I’ll have a couple of Cupcakes over the next couple of days, mainly made them for Mom and Dad and a few for the neighbors. Anyway for dinner tonight I prepared Seasoned Chicken Breast w/ Whole Grain Rotini and Baked Mozzarella Bread.

 
To start I opened up a can of LaRosa’s Sauce, which I’ve decided to use as my Pasta Sauce. Emptied the can into a small sauce pan ; covered it with the lid and let it it simmer on low heat.

For the Chicken part of the dish I used Perdue Perfect Portions Chicken Breasts (2 of them). I had them in the freezer so I let them thaw overnight in the fridge. To prepare; removed them from the package and seasoned them with Sea Salt and Litehouse Freeze Dried Poultry Herb Blend. Then I sprinkled them with a light dusting of Flour. Cooked them in a medium skillet that was sprayed with Pam Cooking Spray and a tablespoon of Extra Virgin Olive Oil. Fried them on medium high heat for about 10 minutes, flipping it over 3 times. Removed from the heat and set aside. Before serving them with the Pasta I sliced the Chicken Breasts up.

For the Pasta part of the dish I used Ronzoni Healthy Harvest 100% Whole Grain Rotini. I love pasta, but with Diabetes 2 I can’t have as often as I like. So as they say You pick and choose your battles”. So when I have a Pasta meal I try to have Whole Grain Pasta. The Ronzoni Healthy Harvest 100% Whole Grain Rotini is the best I’ve found. It has an excellent Pasta taste and it’s only 180 calories and 34 net carbs, which isn’t bad for Pasta! It cooks up perfectly, start by bringing 4 quarts water to a rapid boil. Add the Pasta And stir; return to rapid boil. Cook uncovered, stirring occasionally, for 13 to 15 minutes. When done drain well and put into a large bowl. Season with Sea Salt and McCormick Italian Seasoning, lightly tossed and serve.

In a medium size dinner bowl; I made a bed of the pasta, topped it with the LaRosa’s Sauce, and then topped with the sliced Chicken Breast Tender. I really enjoyed this dinner! The Pasta came out perfect and the Chicken came out browned, juicy, and seasoned just right. Then to tie it all together was the LaRosa’s Sauce. It’s my favorite Sauce, so well seasoned and just brings fantastic flavor to any dish.

I also prepared 2 slices of Baked Mozzarella Bread.Took 2 slices of Aunt Millie’s Light Whole Grain Bread and topped it with a bit of I Can’t Believe It’s Not Butter. Then I added Sargento Shredded Mozzarella Cheese and topped it all with a sprinkle of Kraft Reduced Fat Grated Parmesan Cheese. Had the oven preheated on 400 degrees, Put the 2 slices on a small cookie sheet and baked them until the Bread was toasted and the Cheese melted. An easy prepared Cheese bread, goes great with Pasta Dishes. For dessert later a Devilsfood Chocolate Frosted Cupcake.

COOKING AND PREP
SKILLET: Preheat lightly oiled pan to medium-high. Brown chicken 1 minute per side. Reduce heat to medium-low. Cook covered, turning occasionally, for 4-7 minutes, to an internal temperature of 170ºF. GRILL OR BROIL: Lightly brush with oil and season. Grill or broil 6-8 inches from heat source, 5-10 minutes per side, turning once, to an internal temperature of 170ºF. If bars on grill are widely spread, place tenderloins on lightly oiled aluminum foil over medium-hot coals; poke holes in foil. Grill as above. FROM FROZEN: Preheat oven to 350ºF. Place frozen breast tenderloins on foil-lined baking sheet and cook 25-30 minutes, to an internal temperature of 170ºF.
