Today’s Menu: Chicken ‘n’ Noodles w/ Sliced Carrots

Just a cup of Bigelow Decaf Green Tea for Breakfast this morning. I wanted to go to Walmart and if you need an electric mobility cart like myself, you know to go early to get one. Walmart has very few available and the ones they do have your luck to get one that will work the entire time that you are there. Picked up some Bigelow Green Tea, Printing Ink, a couple of new sets of Towels, and Weed Spray. Back home another beautiful day out, a little warmer out but still no humidity. Got my cart out of the shed and did a few things around the yard. Took a ride around the neighborhood before putting it up for the day. For Dinner tonight a favorite of mine that I don’t have nearly enough, Chicken ‘n’ Noodles. I prepared Chicken ‘n’ Noodles w/ Sliced Carrots.

I had the Perdue Perfect Portions Chicken Breasts in the freezer so I let 2 of them thaw in the fridge overnight. To start; I cut up 2 Perdue Perfect Portions Chicken Breasts into bite size pieces, seasoning them with Sea Salt, Ground Black Pepper, Ground Smoked Cumin, and Parsley. I then fried them in a large skillet until done.

As the Chicken finished I then added the can of Fixins’. The Fixins’ is a can of Margaret Holmes Simple Suppers Chicken n Noodles Fixins’. It comes in a 5 serving can and contains the Noodles and Seasoning, Cooked until it the Sauce was bubbling and heated throughout. The broth that’s with Noodles is incredible! Rich and thick and seasoned just right. The Sauce just coats the Chicken and gives it incredible flavor. I’m very sad they no longer make this. I think I still have 4 cans of it left in the pantry though. When I found out they were going to discontinue making it I purchased all I could find online, good thing you can’t even find it online now.

I also had heated up a small can of Del Monte Sliced Carrots. Also had a couple of slices of Healthy Life Whole Grain Bread topped with I Can’t Believe It’s Not Butter. Then for dessert later tonight a Weight Watcher’s Cookies and Cream Ice Cream Bar.

Today’s Menu: Chicken w/ Pasta Roni – Parmesan Cheese

 

 
For Breakfast this morning I toasted a couple of slices of Healthy Life Whole Grain Bread and lightly buttered it with Chicken w Pasta Roni – Parmesan Cheese 011I Can’t Believe It’s Not Butter. Along with the morning cup of Bigelow Decaf Green Tea. Still raining here, and hard from time to time. It’s been raining so much the past few days we have local flooding in the area, nothing like what’s going on in Louisiana though. Did some cleaning around the house and stained some base board wood trim I had replaced a while back. Then did a little cleaning on the computer, deleting old files and running the virus scan. For dinner tonight I prepared Chicken w/ Pasta Roni – Parmesan Cheese.

 

 
For the Chicken part of the dish I used Perdue Perfect Portions Chicken Breasts (2 of them). I had them in the freezer so I let them thaw overnight in the fridge. I love the Perdue Perfect Portions Chicken Breasts. Always taste fresh and Chicken w Pasta Roni – Parmesan Cheese 001nice size. Good for recipes like tonight’s or to serve by their self. To prepare; removed them from the package and seasoned them with Sea Salt and Litehouse Freeze Dried Poultry Herb Blend. Then I sprinkled them with a light dusting of Flour. Cooked them in a medium skillet that was sprayed with Pam Cooking Spray and a tablespoon of Extra Virgin Olive Oil. Fried them on medium high heat for about 10 minutes, flipping it over 3 times. Removed from the heat and set aside. Before serving them with the Pasta I sliced the Chicken Breasts up.

 

 
I’ve prepared this a few times now, Pasta Roni Parmesan Cheese. A product of Rice – A – Roni, Pasta Roni is an Angel Hair Pasta in a Parmesan Sauce with other natural flavors. It comes with the Pasta and Parm Sauce and I Pulled Chicken w Pasta Roni - Parmesan Cheese 001added; 1 1/3 cups of water, 2/3 cups of 2% milk, and 2 tablespoons of Blue Bonnet Light Butter. Then to prepare it; In a medium saucepan bring water, milk, margarine or butter to a boil. Then slowly stir in pasta and Special Seasonings. Separate pasta with a fork, if needed. Return to a boil. Reduce heat to medium. Boil uncovered, 4-5 min. or until pasta is just tender, stirring frequently. Sauce will be thin. Let stand 3-5 min. to thicken. There’s 2 servings per box. Nice seasoning and the Parmesan Sauce is very flavorful. I topped the Pasta with some fresh Shaved Parmesan Cheese and the Chicken. Too good, this makes one delicious Chicken and Pasta Dish! For dessert later a Skinny Cow Chocolate Truffle Bar.

 

 

 

 

 

Pasta Roni – Parmesan Cheese

What You’ll Need
1 1/3 cups of water
2/3 cups of milk
2 tablespoons of margarine*
What You’ll Do:
In a medium saucepan bring water, milk, margarine or butter to a boil. Then slowly stir in pasta and Special Seasonings. Separate pasta with a fork, if needed. Return to a boil.
Reduce heat to medium. Boil uncovered, 4-5 min. or until pasta is just tender, stirring frequently.
Sauce will be thin. Let stand 3-5 min. to thicken.

If bars on grill are widely spread, place tenderloins on lightly oiled aluminum foil over medium-hot coals; poke holes in foil. Grill as above. FROM FROZEN: Preheat oven to 350ºF. Place frozen breast tenderloins on foil-lined baking sheet and cook 25-30 minutes, to an internal temperature of 170ºF.
