Today’s Menu: Baked Bone-In Whole Chicken Breast w/ Mashed Potatoes and Cut Italian Green Beans

 

Baked Bone-In Whole Chicken Breast Mashed Potatoes Cut Ita 004
For Breakfast I prepared a Egg Beater’s Egg Whites Cheese Omelet and 2 slices of Healthy Life Whole Grain Bread. I used Sargento Reduced Fat Shredded Sharp Cheddar Cheese for the Omelet. I also had a cup of Bigelow Decaf Green Tea. I really enjoy the Egg White Omelet. Cleaned up outside around the house and deck area. Then after Lunch headed out to go spend the afternoon visiting Dad. Back out home for Dinner tonight I prepared a Baked Bone-In Whole Chicken Breast w/ Mashed Potatoes, Cut Italian Green Beans, and Baked Italian Loaf Bread.

 
I picked The Perdue Chicken up at Kroger yesterday. My favorite bagged fresh Chicken, the PERDUE® OVEN READY Whole Seasoned Roaster Bone-In Breast. As it says “Baked Bone-In Whole Chicken Breast Oven Ready”, perdue-whole-chicken-breast-002 (1)already seasoned, and little clean-up needed afterwards. To prepare it just preheat the oven to 400ºF. Cut open outer bag and remove Oven Ready Roaster Bone-In Breast, sealed in a cooking bag. Place in a shallow roasting pan, seasoned side up. Cut one small 1″ slit in cooking bag over the breast to vent during cooking. If cooking from Fresh: Place pan with breast (still in cooking bag) on lower shelf of oven and roast for approximately 80-90 minutes, until internal temperature of the breast reaches 180ºF. Comes out piping hot, well seasoned, and delicious! Plenty leftovers for some Chicken Sandwiches or Burritos! Such an easy way to have an excellent Baked Chicken Dinner!

For one side I made some of my favorite Mashed Potatoes, Bob Evans Mashed Potatoes. Just microwave for 6 minutes and serve. Just as good as homemade, if not better. Then I also heated up a can of Allens Cut Italian Green Beans. Finally I baked a loaf of Pillsbury Italian Loaf Bread. For dessert later a Healthy Choice Dark Fudge Swirl Frozen Greek Yogurt.

I prepared some Jennie – O Turkey Breakfast Sausage Links and a Healthy Life Whole Grain English Muffin for breakfast, and a cup of Bigelow Decaf Green Tea. Did my morning workout and went to McDonald’s to pick up Mom and Dad’s Breakfast for them. Back home I got the leaf blower out, for the last time this year, and blew out the remaining leaves and such from around the house, ramp, and deck. Nice day out today, sunny and a high close to 50 degrees. For dinner tonight I prepared a Baked Bone-In Whole Chicken Breast w/ Mashed Potatoes, Italian Cut Green Beans, Whole Baby Carrots, and Baked French Bread.

 

 

 

I picked The Perdue Chicken up at Kroger yesterday. My favorite bagged Chicken, the PERDUE® OVEN READY Whole Seasoned Roaster Bone-In Breast. For one side I made some of my favorite Mashed Potatoes, Bob Evans Mashed Potatoes. Just microwave for 6 minutes and serve. Just as good as homemade, if not better. Then for another side dish I heated a can of Allens Cut Italian Green Beans. My Aunt had grown some in her garden and brought us over some last Summer and loved them. Then just the other day while at Kroger I came across the Allens Cut Italian Green Beans, so I bought 4 cans of them. Prepared 1 can the other night. To prepare them just empty the can into a small sauce pan and simmer until heated. I love the taste of these, just season with a bit of Sea salt and it’s ready! I could have Beans every day and never get tired of having them. Mom and Dad are starting to enjoy these finally.

 

 

Noodles n Chicken Baby Carrots 004
Mom and dad love their side dishes so I also heated up a can of Kroger Brand Baby Carrots. Love these Carrots in a can, easily prepared and they don’t go bad. Fresh Carrots take a while to boil but with these just open the can and let them simmer until heated through. And finally I baked a loaf of Pillsbury French Bread. For dessert later a Jello Sugarless Dark Chocolate Mousse.

Started my day off with a couple of Egg’s Low Fat Waffles, topped with I Can’t Believe It’s Not Butter. After my morning workout did a little house cleaning and on to the outside cleaning. A lot of leaves around the car port and driveway. It’s a beautiful Last Day of Summer outside! The first day of Fall is tomorrow. The year has flown by. After I had all the cleaning done I got the cart out and rode around the neighborhood and spent some time down by the lake. For dinner tonight I prepared a Baked Bone-In Whole Chicken Breast w/ Mashed Potatoes, Canned Green Beans, and Crescent Rolls.

Well as they predicted the heat and humidity has returned to the Ohio Valley! Don’t mind the heat but can’t stand the humidity. Can you believe how fast this year is going! July is almost over with August approaching with its so called “Dog Days of Summer.” Got the cart out, before it got too hot and humid, and cleaned and raked up around the house. Took the car up the road and had it washed and the inside vacuumed. Then came back home and just did some odd and ends chore around the house. For dinner tonight it’s a Baked Bone-In Whole Chicken Breast w/ Mashed Potatoes, Canned Green Beans, and Rustic French Bread.

We have another beautiful Spring Day out! It’s been one beautiful weekend outside. Got the cart out and did some minor repairs on it and cleaned it up a bit. Took a ride around the neighborhood on it and went down to the lake for a while. For dinner tonight I prepared a Baked Bone-In Whole Chicken Breast w/ Canned Green Beans, Mashed Potatoes, Mini Ears of Sweet Corn, and Multi Grain Batard Bread.

For one side I opened up a Mason Jar of our Canned Green Beans, canned last summer. Love these Beans, they taste just as fresh as the day we bought them. Then I also prepared our favorite household Mashed Potato, Bob Evan’s Original Mashed Potatoes. Just microwave for a total of 6 minutes and serve. Then I boiled Mom and Dad some Mini Ears of Green Giant Mimi Ears of Sweet Corn. If you’ve never tried this, it’s some of the Sweetest Sweet Corn on the cob you’ll find. It comes frozen, just boil it for about 9 minutes and it’s ready. Then last baked a loaf of Mom’s favorite Bread, Kroger Baked at Home Multi Grain Batard Bread. I’m happy with one or two side dishes, but Mom and Dad love side dishes so I always fix plenty for them. For dessert later a Skinny Cow Chocolate Truffle Ice Cream Bar.

Colder day out there today, back to a wind chill. They had predicted some snow overnight but it missed us, thankfully!. After a light breakfast, Whole Grain English Muffin topped with Sugarless Black Berry Jam, I worked out and done some minor chores around the house. Then and afternoon of some Computer sprucing up and cleaning. Updated some programs, deleted some programs, ran all the computer checks and such. Quiet day! For dinner tonight I prepared a Baked Bone-In Whole Chicken Breast w/ Steam Crisp Sweet Corn and Cut Green Beans & Potatoes.

 
I used the PERDUE® OVEN READY Whole Seasoned Roaster Bone-In Breast. As it says “Baked Bone-In Whole Chicken Breast 004Oven Ready’, already seasoned, and little clean-up needed plus always delicious. To prepare it just preheat the oven to 400ºF. Cut open outer bag and remove Oven Ready Roaster Bone-In Breast, sealed in a cooking bag. Place in a shallow roasting pan, seasoned side up. Cut one small 1″ slit in cooking bag over the breast to vent during cooking. If cooking from Fresh: Place pan with breast (still in cooking bag) on lower shelf of oven and roast for approximately 80-90 minutes, until internal temperature of the breast reaches 180ºF. Comes out piping hot, well seasoned, and delicious! Plenty leftovers for some Chicken Sandwiches or Burritos! Such an easy way to have an excellent Baked Chicken Dinner!

Got the big three of vegetables tonight; Corn, Green Beans, and Potatoes! For one side I heated up a can of Green Giant Steam Crisp Super Sweet Yellow and White Whole Kernel Corn. My favorite canned corn, delicious Sweet Corn. Then I also heated up a couple of cans of Del Monte Cut Green Beans & Potatoes. Love this, contains my 2 favorites of Green Beans and Potatoes all in one can. We also had Healthy Life Whole Grain Sliced Bread. For dessert later a bowl of Breyer’s Low Carb Vanilla Ice Cream.

 

 

* And I got to try out my newest Kitchen Aid, Bear Paws. Great purchase I love using these. They lift and carve hot food, shred chicken and pork for sandwiches, and the handles stay cool. These are great to have around the Kitchen. I left the details of these at the bottom of the post.

It’s been one cold and blustery day here today! Yes, I said COLD! Rolled out and grabbed the morning paper and it was 39 degrees with one cold wind blowing. They said with the wind chill factor we would struggle to get out of the 40’s and they were right. I can’t complain though, I love this cooler weather. Went to Kroger for Mom and myself and back home for an afternoon of College Football. For dinner tonight prepared a Baked Bone-In Whole Chicken Breast w/ Steam Crisp Sweet Corn and Cut Green Beans & Potatoes.

Another gorgeous morning and day here today, 53 degrees this morning. Ran some errands for Mom and back home. Had the cart out for most of the afternoon enjoying the sunshine. Dad is a lot better today, so that’s good. For dinner tonight it’s a Baked Bone-In Whole Chicken Breast w/ Potato Pancakes and Glazed Baby Carrots.

Perdue Baked Whole Chicken Breast 001
For one side dish I prepared Potato Pancakes. I used Manischewitz Potato Pancake Mix, my favorite (Never made a cake I didn’t like!). Just add 2 Egg Beater’s (1/2 Cup), 2 1/4 Cups Water, to the mix stir and fry! Easy and makes one good Potato Pancake and their only 80 calories and 18 carbs per serving (3 Potato Pancakes). Then I also prepared some Glazed Baby Carrots. I needed Whole Baby Carrots, Water, 2 tablespoons I Can’t Believe It’s Not Butter, and 2 tablespoons of Splenda Brown Sugar. To prepare them just cook the carrots in a small amount of water until tender. Drain. In a saucepan, combine the butter and brown sugar; heat until sugar dissolves. Add carrots and toss to coat. Heat through and done! Delicious Carrot Recipe! I also baked Mom and Dad a loaf of Pillsbury Rustic French Bread. For dessert later a Jello Sugar Free Dark Chocolate Pudding.

Manischewitz Potato Pancake Mixpotato pancake

Ingredients
Potatoes ( Contains Sulfites to Maintain Whiteness), Potato Starch, Salt, Onion, Vegetable Shortening (Partially Hydrogenated Cottonseed Oil).

Directions
Makes 18-24 pancakes. You Will Need: Medium bowl, 2 eggs, 2 1/4 cups cold water, vegetable oil, large skillet. 1. Mix: In a medium bowl, beat two eggs with a fork until blended. Add 2 1/4 cups cold water and mix well. Stir in the contents of this package. Allow batter to thicken for 3 to 4 minutes. Stir. 2. Fry: Drop tablespoons of batter into 1/8 inch hot vegetable oil in a large skillet and brown on both sides.

One of our warmest Spring Days of the year so far, Sunny and 83 degrees! If you have allergies though it was rough day out there. A very high tree pollen count out there today. Caught up on laundry and had the cart out most of the day after that, beautiful out! For dinner tonight; Baked Chicken Breast w/ Mashed Potatoes and Green Beans.

I also prepared some Bob Evans Mashed Potatoes, microwave a total of 6 minutes and their done and just as good as anyone’s homemade Mashed Potatoes. Then I also heated up a small can of Del Monte Cut Green Beans and had a slice of Klosterman Wheat Bread. To drink an ice-cold Diet Dr. Pepper that I had let set in the freezer for about 15 minutes. Then for dessert/snack some sliced Turkey Spam on top of Ritz Whole Grain Crackers.

Early rain and then sunny and a bit cooler than it’s been the last couple of days, but still nice. They say we have some heavy rain and thunderstorms moving in late tonight and for the next couple of days. Dad is home from rehab, still not quite at full strength but getting there. They told him he’s got to lower his Salt intake and eat a little healthier, which I’ve been telling my Mom and Dad that for quite some time. For dinner tonight I prepared a Baked Bone-In Whole Chicken Breast w/ Roasted Red Potatoes with Rosemary, Cut Green Beans, and Baked French Bread Loaf.

If cooking from Fresh: Place pan with breast (still in cooking bag) on lower shelf of oven and roast for approximately 80-90 minutes, until internal temperature of the breast reaches 180ºF. Comes out piping hot, well seasoned, and delicious! Plenty leftovers for some Chicken Fajaita for lunch tomorrow.

 

 

 
One side I prepared was Roasted Red Potatoes with Rosemary. Love potatoes and love this recipe also! A real simple one to prepare. You’ll need 6 to 8 small red potatoes, quartered into 1/2-inch pieces, 1 tablespoon Extra Virgin Olive Oil, 1 tablespoon minced fresh rosemary leaves, 1/2 teaspoon sea salt, and 1/4 teaspoon ground black pepper. To prepare it preheat oven to 400 degrees F. Then combine all ingredients in a large bowl and toss to coat potatoes. Transfer potatoes to a large baking sheet or shallow roasting pan. Roast 25 to 30 minutes, until tender and golden. Then for another side I heated up a can of Del Monte Cut Green Beans. I also baked a loaf of, Mom’s Favorite, Pillsbury Rustic French Bread. For dessert later a bowl of Del Monte No Sugar Added Peach Chunks.

PERDUE® OVEN READY Whole Seasoned Roaster Bone-In Breast (3 lbs.)

 

Deliciously seasoned and juicy, whole bone-in chicken breast. Oven ready for convenience. Cooks perfectly in the bag for easy clean up.

INGREDIENTS
*Ingredients: Chicken, water, salt, potassium and sodium phosphates, brown sugar, dextrose, carrageenan, yeast extract, maltodextrin, natural flavor.

*Seasoning Ingredients: Dextrose, modified food starch, onion, maltodextrin, natural flavor, garlic, cottonseed oil, dried carrot, xanthan gum, dried parsley, calcium chloride, potassium chloride, carrageenan.
PRODUCT HANDLING
Keep refrigerated or frozen. Thaw in refrigerator or microwave. Cook thoroughly.
**If breast temperature is below 180ºF, return to oven and continue cooking, checking the temperature every 10 minutes until the temperature reaches 180ºF.

COOKING AND PREP
• Preheat oven to 400ºF. Cut open outer bag and remove Oven Ready Roaster Bone-In Breast, sealed in a cooking bag. Place in a shallow roasting pan, seasoned side up.
• Cut one small 1″ slit in cooking bag over the breast to vent during cooking. Note: Cooking bag will expand during cooking; allow enough room for the bag to expand without touching oven rack or walls.
• Cook from Fresh: Place pan with breast (still in cooking bag) on lower shelf of oven and roast for approximately 80-90 minutes, until internal temperature of the breast reaches 180ºF.**
• Cook from Frozen: Place pan with breast (still in cooking bag) on lower shelf of oven and roast for approximately 80-90 minutes until internal temperature of the breast reaches 180ºF.**
• Remove from oven and let stand for 10 minutes. Cut open cooking bag (use care to avoid hot steam and juices) and transfer breast to serving plate or cutting board. Remaining juices in bag can be used for a delicious seasoned gravy.

Roasted Red Potatoes with Rosemary

Ingredients
6 to 8 small red potatoes, quartered into 1/2-inch pieces
1 tablespoon olive oil or garlic-flavored olive oil
1 tablespoon minced fresh rosemary leaves
1/2 teaspoon salt
1/4 teaspoon ground black pepper

Directions
Preheat oven to 400 degrees F.

Combine all ingredients in a large bowl and toss to coat potatoes. Transfer potatoes to a large baking sheet or shallow roasting pan. Roast 25 to 30 minutes, until tender and golden.
