Quad-City Style Pizza – This style of pizza usually has most of the toppings under the cheese

Quad City-style pizza is a unique pizza style that centers around the Quad Cities region of Iowa and Illinois in the United States. Characteristics of this style of pizza include a pizza crust made with malt, tomato sauce sometimes made with cayenne and red chili flakes, toppings placed under the cheese, and strips being cut instead of slices.

The first business to bring “Quad City”-style pizza to the public was Frank’s Pizza in 1955.

Tony’s Club Capri was the only sit-down style restaurant and bar. Phyllis Maniscalco, Tony’s wife, worked the cash registers, helped in the kitchen when needed and helped manage the business overall. Throughout the years, Tony’s children Giana and Tony Jr., as well as other family members, would also help out in the various locations. The sausage was always handmade, and Tony would pre-mix his spices by hand and measure them out in bags for his employees to then mix with the ground pork he butchered himself. Cheese was always grated in house and imported from a Chicago-area supplier. In addition to pizza, Tony served up Italian beef sandwiches, stromboli, house-made sausages, a variety of pasta dishes with his own signature marinara sauce. Desserts included spumoni ice cream and cannoli. This was his first location to offer more than just pizza.

Tony Sr.’s brother Frank Maniscalco also moved to the Quad Cities upon hearing of his brother’s success and decided to open up an additional location called Frank’s in Davenport off of Locust St. This is not to be confused with Frank’s in Silvis, IL. Tony Sr. was friends with the Serra family, and they had approached Tony Sr. about his recipe as they wanted to start a restaurant in Minnesota. Tony obliged, and after the Minnesota location failed the Serra’s came back to Tony Sr. and asked if they could open up in the Quad Cities. Since Tony Sr. did not have any restaurants in the Silvis/East Moline area at the time, it was decided that they would open a location in 1955 which still stands to this day – Frank’s Club Napoli Pizza in Silvis, IL. Also, contrary to popular belief, Harris Pizza was not the original “Quad Cities-style pizza”. Leonard and his wife Mary owned a small package liquor store in Rock Island, IL. Patrons often requested food, and Leonard saw this as an opportunity to expand his business. In 1960, an employee of Tony Sr. named Dick Kennedy, who also happened to be a good friend of Leonard Harris, had helped the Harris family develop the base recipe for Harris’ that they still use to this day.

In addition to the brick-and-mortar locations, Tony Sr. also made a name for himself in the grocery store’s freezer section. In the late 1950s and early 1960s, Tony had started delivering par-baked/half-baked pizzas to the local A&P grocery stores. These were the first frozen pizzas in the Quad Cities at the time. In 1968, Tony Sr.’s pizza businesses and the recipes were sold to the family of Mama Bosso’s, who to this day still make pizzas you can purchase in the freezer section of local Quad Cities grocers such as Hy-Vee.

After that sale, Tony Sr. decided to venture into the home improvement business, but the restaurant industry still called his name. He would go on to open two additional locations in the 1970s – one in East Moline and one in the Wells Fargo Bowling Alley (where Clint’s used to be on the Avenue of the Cities in Moline). Tony finally got out of the restaurant business in the late 1970s when these locations were sold. He continued to work in home improvement until his untimely passing on July 6th, 1994.

Quad City-style pizza dough contains a “spice jam”, which is heavy on malt, which lends a toasted, nutty flavor. The pizzas are hand-tossed to be stretched into an even quarter-inch thin crust with a slight lip ringing the edge. The sauce contains both red chili flakes and ground cayenne, and the smooth, thin tomato spread is more spicy than sweet. The sausage is typically a thick blanket of lean, fennel-flecked Italian sausage sometimes ground twice and spread from edge to edge. The pizzas are cooked using a special gas oven with an average cooking time of about 12 minutes. The pizza is cut into strips, as opposed to being cut in slices. An average 16-inch pizza has about 14 strips, and a 10-inch pizza has about 10 strips.

Just a cup of Bigelow Decaf Green Tea for Breakfast. 37 degrees and cloudy out today. We had company over most of the day and when it came time to prepare Dinner neither myself or Mom felt like cooking so the Kitchen is Closed! Mom wanted Pizza tonight so, Pizza it is!

 

 

 

 

 

So Pizza it was and my Dinner I had planned was put on hold. I ordered Mom’s favorite, Domino’s Hand Tossed Pizza Large with Cheese, Sauce, Pepperoni, Italian Sausage, Mushrooms, and Black Olives, Green Olives. First Pizza in a while, and it was over due! As always the Pizza arrived on time, hot and delicious! For Dessert/Snack later a bowl of Skinny Pop – Pop Corn with a Sprite Zero to drink. The Kitchen reopens tomorrow! Just a cup of Bigelow Decaf Green Tea for Breakfast. 41 degrees and sunny out today. Well most of our snow is gone except for a few spots. Cleaned the house today and that was about it as my sinuses are going crazy today. Settled back and watched College Football for the afternoon. Mom wanted Pizza tonight so, Pizza it is!

 

 

 

 

 

 

I ordered Mom’s favorite, Domino’s Hand Tossed Pizza Large with Cheese, Sauce, Pepperoni, Italian Sausage, Mushrooms, and Black Olives, Green Olives. First Pizza in a while, and it was over due! As always the Pizza arrived on time, hot and delicious! For Dessert/Snack later a bowl of Skinny Pop – Pop Corn with a Coke Zero to drink. The Kitchen reopens tomorrow! Today’s Menu: Subway Sliders and Reduced Fat Potato Chips

 

 

For Breakfast this morning I just had a cup of Bigelow Decaf Green Tea. Did some light house cleaning around the house. 91 degrees, partly cloudy, and more humid out today. After Lunch I got the cart out of the shed along with the rake and leaf blower. Cleaned off the deck and driveway. Then raked the backyard and side yards. Amazing the leaves for this time of year! That was about it for the day. Something new for Dinner tonight, Subway Sliders.

 

 

 

I wanted something light for Dinner and I had been wanting to try the New Subway Sliders. So the Kitchen is closed and having Subway tonight. I’m trying 2 of the Subway Sliders, the Ham and Jack Slider and the Italian Spice Slider.

 

 

 

 

 

The Ham and Jack Slider is made using a Telera Slider Roll along with Black Forest Ham Pepper Jack Cheese. Topped the Meat with Subway Vinaigrette. The Italian Spice Slider is also served on a Telera Slider Roll with Pepperoni, Salami and American Cheese. Also topped with the Subway Vinaigrette. The Ham and Jack is 150 calories and 16 net carbs per sandwich. The Italian Spice Slider is 230 calories and 17 net carbs.

 

 

 

I also had a few Mike Sell’s reduced Fat Potato Chips to go with the Sliders. For Dessert later a bowl of Sliced South Carolina Peaches. These are so good!

Today’s Menu: Baked Cheesy Pizza Pasta w/ Baked Garlic Loaf Bread

 

 

To start this day off I Poached an Egg and served it on a toasted Thomas Light English Muffin. Also had my morning cup of Bigelow Decaf Green Tea. After Breakfast I went to Walmart, stopped by the ATM, and got my car washed. It’s partly cloudy, 92 degrees, and humid out today. Did a few things around the yard and not much else going on. Pretty quiet Labor Day Weekend. For Dinner tonight I had a Baked Cheesy Pizza Pasta w/ Baked Garlic Loaf Bread.

 

 

 

While at Walmart I bought a Michael Angelo’s Cheesy Pizza Pasta. They have several different kinds but I thought I would give this one a try! It comes frozen and you prepare it from frozen.

 

 

 

 

 

 

To prepare it I’m baking it. To start I preheat the oven to 400°F. Removed the tray from the carton. Placed the tray on a cookie sheet. Cooked with the film on for 50 minutes. Removed it from the oven and removed the film, let it stand for 5 minutes before serving.

 

 

 

 

 

Wow! This is the second Michael Angelo’s product I’ve tried, we tried the Chicken Parmigiana also. The Michael Angelo’s products are some of the best frozen foods that will find. The Michael Angelo’s Chessy Pizza Pasta was so good. Plenty of Home Style Meat (Pork and Pepperoni) along with Mozzarella Cheese. Plus the taste and Seasoning are perfect! They have several products and look forward to trying them all. Meijer used to carry them but now I think Walmart is the only store to have them.

 

 

 

Then I also baked a loaf of La Baguetterie Roasted Garlic Oval Bread. For Dessert later a bowl of South Carolina grown fresh sliced Peaches. These Peaches we have been buying from Jungle Jim’s Market are so good!

Today’s Menu: Kitchen Closed – It’s Pizza Tonight from Domino’s

 

Just a cup of Bigelow Decaf Green Tea for Breakfast. Mostly Sunny and 72 degrees out today. We went to pick up the vacuum at repair shop and then I dropped Mom off back at home and went to the Bank and ran an errand. Back home as I was coming down the street I seen a neighbor run over to our house. I pulled up and Mom had tripped and fell in the driveway. I didn’t want to move her because she said her shoulder and left hip were hurting. I called 911 and they were here in about 5 minutes or so. They got her up and sat her in a chair. She had bruises on left arm and a scrape on her left knee. She wouldn’t go the hospital so they helped her into the house. Our 911 Responders in this area are the best, thank you guys! They told me to call them back and they would take her to the hospital if needed. She’s sore but doing good and nothing broken! So anyway not a lot of time to cook so she said she would like to have a Pizza.

Today’s Menu: Tombstone 4 Meat Pizza

 

 

For Breakfast this morning I had a bowl of Cherrios’s Cereal and had my morning cup of Bigelow Decaf Green Tea. Cloudy and 85 degrees out today. After Breakfast I went Kroger for Mom and stopped by the McDonald’s Drive Thru to pick up Breakfast for Mom. Later on ran a couple of errands and then went over to see a friend of mine I had not seen in a while. For Dinner tonight a Tombstone 4 Meat Pizza.

 

 

 

 

 

Mom wanted me to pick up a Pizza when I was at Kroger earlier. She had seen the Tombstone 4 Meat Pizza in a Magazine Ad and it looked so good she wanted to try it. The 4 Meats were Sausage, Beef, Pepperoni, and Canadian Bacon.

 

 

 

 

 

To prepare it; I heated the oven on 400 degrees. I grabbed our Pizza Pan and took the Pizza out of the wrapping and got it onto the Pizza Pan. Baked it for 20 minutes, and done!

 

 

 

 

 

Pizza cooked up perfect, Cheese Melted and Crust Golden Brown. The Pizza turned out great. Plenty of the the 4 Meats and Cheese. Excellent Crust. Next time we have a frozen Pizza I’ll buy another of the Tombstone 4 Meat Pizza! For Dessert later a Jello Sugar free Dark Chocolate Pudding topped with Cool Whip Free.

Toasted a couple of Eggo Nutri Grain Waffles and had a cup Bigelow Decaf Tea for Breakfast this morning. Lot of rain overnight into the morning. Then partly sunny and 60 degrees out. Rested most of the day, dealing with a painful sinus headache. They say our pollen count outside is extremely high and my head can feel it! Like most plans, they are made to be broken. I was going to prepare Dinner tonight Mom wanted Pizza so…….

 

 

 

 

 

……..Pizza it is! I ordered Mom’s favorite, Domino’s Hand Tossed Pizza Large with Cheese, Sauce, Pepperoni, Italian Sausage, Mushrooms, and Black Olives, Green Olives. First Pizza in a while, and it was over due! As always the Pizza arrived on time, hot and delicious! I had a Caffeine Free Diet Coke  to drink. For Breakfast on this morning I made some Simply Potatoes Shredded Hash Browns, Heated up some Meijer Diced Ham, fried an Egg Sunnyside Up, made a cup of Bigelow Decaf Green Tea. I made a bed of the Hashbrowns in a bow and sprinkled some Sargento Reduced Fat Sharp Cheddar Cheese. Next I put the Diced Ham over top the Hash Browns then put the Sunnyside Up Egg on to top it off. Did a load of laundry after Breakfast. Then later I went to Walmart for printing ink for my printer and a couple of other items. Back home I got caught up a couple of shows I had recorded. For Dinner tonight Mom wanted Pizza so…….

Packaged pepperoni

Pepperoni is an American variety of salami, made from cured pork and beef mixed together and seasoned with paprika or other chili pepper.

Pepperoni is characteristically soft, slightly smoky, and bright red in color. Thinly sliced pepperoni is a popular pizza topping in American-style pizzerias and is used as filling in the West Virginia pepperoni roll.

The term “pepperoni” is a borrowing of peperoni, the plural of peperone, the Italian word for bell pepper. The first use of “pepperoni” to refer to a sausage dates to 1919. In Italian, the word peperoncino (diminutive of peperone) refers to hot and spicy peppers.

Pepperoni is a cured dry sausage similar to the spicy salamis of southern Italy, such as salsiccia Napoletana piccante, a spicy dry sausage from Naples, or the soppressata from Calabria. The main differences are that pepperoni has a finer grain (akin to salami of Milan, a spiceless regional variant of salami), is usually softer, and is produced with the use of an artificial casing (instead Italian salami are produced using natural gut for casing and are made of pure pork). Pepperoni is mass-produced to meet the demand for the sausage. In most of Italy pepperoni would be considered a type of salamino piccante.

Pepperoni is usually made from a mixture of pork and beef. Turkey meat is also commonly used as a substitute, but the use of poultry in pepperoni must be appropriately labeled in the United

States.

Curing, with nitrates or nitrites (usually used in modern curing agents, to protect against botulism and other forms of microbiological decay) also contributes to pepperoni’s reddish color, by reacting with heme in the myoglobin of the proteinaceous components of the meat.

According to Convenience Store Decisions, Americans annually consume 251.7 million pounds of pepperoni on 36% of all pizzas produced nationally. Pepperoni has a tendency to curl up from the edges in the heat of a pizza oven. Some pepperoni is produced in thicker slices, so that the edges curl intentionally.

Pepperoni can also be found accompanying different types of cheeses as a cheap snack food in convenience stores or gas stations.

In Nova Scotia, deep-fried pepperoni served on its own (usually with a honey mustard dipping sauce) is common pub food.
