One of America’s Favorites – Chicago-Style Pizza

Deep-dish pizza from Gino’s East in Chicago

Chicago-style pizza refers to several different styles of pizza developed in Chicago. Arguably, the most famous of these is known as deep-dish pizza. The pan in which it is baked gives the pizza its characteristically high edge which gives a lot of space for large amounts of cheese and a chunky tomato sauce. Chicago-style pizza may be prepared in deep-dish style and as a stuffed pizza.

Deep-dish pizza
According to Tim Samuelson, Chicago’s official cultural historian, there is not enough documentation to determine with certainty who invented Chicago-style deep-dish pizza. It is often reported that Chicago-style deep-dish pizza was invented at Pizzeria Uno in Chicago, in 1943, by Uno’s founder Ike Sewell. However, a 1956 article from the Chicago Daily News asserts that Uno’s original pizza chef Rudy Malnati developed the recipe.

The primary difference between deep-dish pizza and most other forms of pizza is that, as the name suggests, the crust is very deep, creating a very thick pizza that resembles a pie more than a flatbread. Although the entire pizza is very thick, in traditional Chicago-style deep-dish pizzas, the crust itself is thin to medium in thickness.

Deep-dish pizza from Pizzeria Uno

Deep-dish pizza is baked in a round, steel pan that is more similar to a cake or pie pan than a typical pizza pan. The pan is oiled in order to allow for easy removal as well as to create a fried effect on the outside of the crust. In addition to ordinary wheat flour, the pizza dough may contain corn meal, semolina, or food coloring, giving the crust a distinctly yellowish tone. The dough is pressed up onto the sides of the pan, forming a bowl for a very thick layer of toppings.

The thick layer of toppings used in deep-dish pizza requires a longer baking time, which could burn cheese or other toppings if they were used as the top layer of the pizza. Because of this, the toppings are assembled “upside-down” from their usual order on a pizza. The crust is covered with cheese (generally sliced mozzarella), followed by various meat options such as pepperoni or sausage, the latter of which is sometimes in a solid patty-like layer. Other toppings such as onions, mushrooms and bell peppers are then also used. An uncooked sauce, typically made from crushed canned tomatoes, is added as the finishing layer; though sometimes, a sprinkling of Parmesan cheese is added for extra flavor. It is typical that when ordered for carry-out or delivery, the pizza is uncut, as this prevents moisture from the sauce and toppings from soaking into the crust, causing the pie to become soggy.

Some Chicago deep-dish pizza restaurants ship their pizzas, partially baked and frozen, within the continental United States.

Stuffed pizza

Stuffed pizza from Giordano’s

By the mid-1970s, two Chicago chains, Nancy’s Pizza, founded by Rocco Palese, and Giordano’s Pizzeria, operated by brothers Efren and Joseph Boglio, began experimenting with deep-dish pizza and created the stuffed pizza. Palese based his creation on his mother’s recipe for scarciedda, an Italian Easter pie from his hometown of Potenza. Chicago Magazine articles featuring Nancy’s Pizza and Giordano’s stuffed pizza popularized the dish.

Stuffed pizzas are often even deeper than deep-dish pizzas, but otherwise, it can be hard to see the difference until it is cut into. A stuffed pizza generally has much deeper topping density than any other type of pizza. As with deep-dish pizza, a deep layer of dough forms a bowl in a high-sided pan and the toppings and cheese are added. Then, an additional layer of dough goes on top and is pressed to the sides of the crust.

At this stage, the thin dough top has a rounded, domed appearance. Pizza makers often poke a small hole in the top of the “lid” to allow air and steam to escape while cooking, so that the pizza does not explode. Usually, but not always, tomato sauce is ladled over the top crust.

Thin-crust pizza

Chicago-style party-cut thin-crust pizza

There is also a style of thin-crust pizza found in Chicago and throughout the rest of the Midwest. The crust is thin and firm enough to have a noticeable crunch, unlike a New York-style pizza. This pizza is cut into squares, also known as “tavern style” or “party cut”, as opposed to being cut into wedges. Among locals, thin-crust actually outsells the more widely known deep-dish style.

Toppings
In most of the United States, the most popular pizza topping is pepperoni, but in Chicago the most popular topping is sausage.

To start my morning off I prepared a Poached Egg and served it on a toasted Healthy Life Whole Grain English Muffin. I also had a cup of Bigelow Decaf Green Tea. He was doing pretty good today! Back home did a few things around the house and outside. Then at 2:00 I had to take Mom to an eye appointment. It took a while, she has to schedule a Cataract Removal. The Family Doc called and said all my test results came back great! Diabetes 2 numbers looked good along with the Cholesterol and the rest. Back home too much running around today so the Kitchen is Closed! Tonight its Domino’s Pizza!

We got out favorite, Domino’s Hand Tossed Pizza Large with Cheese, Sauce, Pepperoni, Italian Sausage, Mushrooms, and Black Olives, Green Olives. First Pizza in a while, and it was over due! As always the Pizza arrived on time, hot and delicious! I had a Diet Dr. Pepper to drink. For Dessert/Snack later a bowl of Skinny Pop – Pop Corn with a Coke Zero to drink. The Hasselback techinique—making crosswise cuts in a vegetable, fruit or in this case, a baguette, to create space for adding in additional flavors like cheese—turns whole-grain bread into a fast and easy pizza in this fun recipe. We like classic pepperoni and basil, but feel free to squeeze in your favorite toppings…….

Today’s Menu: Dominos Pozza

Not much time to cook tonight so I ordered a Domino’s Pizza. Hopefully things will be back to normal tomorrow. Hope so it’s my Mom’s Birthday, she’s turning 90! She went to eat with some friends and I stayed home and kept an eye on dad. I had a ton of problems with him. So without going into details I didn’t feel like cooking after a very long day. Till tomorrow, take care all!

Today’s Menu: The Kitchen is closed!……..LaRosa’s MEAT DELUXE Pizza

For Breakfast this morning I tries a new Bacon I cam across at Meijer yesterday, al fresco Uncured Chicken Bacon. It fried up good and was crispy after frying. It had good taste, I’ll have this more often! So for Breakfast I had the Chicken Bacon, 1 Egg Sunnyside Up, 2 toasted slices of Aunt Millie’s Light Whole Grain Bread (lightly buttered), and that morning cup of Bigelow Decaf Green Tea. Another morning of below zero temperatures, minus 2 degrees. Mostly cloudy and 18 degrees for a high. It was good to get out for a while yesterday. I had a case of cabin fever! I’ll be glad when this weather breaks and we have days with sunshine and above freezing temperatures! So anyway I cleaned the, vacuum and dusted. Then later a load of laundry. For Dinner tonight I shut down the Kitchen and ordered a Pizza. Tonight it’s a LaRosa’s MEAT DELUXE Pizza.

It has been a very long time since I’ve had a Pizza from LaRosa’s Pizzeria! My Cousin’s son was selling LaRosa’s Gift Cards to earn money for their Football Team so I bought 1 for Mom and 1 for my neighbor next door. Mom and Dad wanted a Pizza so we’re using her LaRosa’s Gift Card. We ordered a LaRosa’s MEAT DELUXE Pizza.

We ordered a large Pizza. It comes with toppings of LaRosa’s Family Recipe Pizza Sauce and Provolone, topped with lots of Pepperoni, Sausage, Ground Beef, Capocolla Ham, and Bacon. We added Mushrooms and Olives to it also. The Pizza arrived right on time and piping hot! I forgot just how good the Pizza is at LaRosa’s. The Crust, LaRosa’s Sauce, and all the toppings make for one delicious Pizza and Meal! We really enjoyed this! More calories and carbs than I’m used to having but worth it. I make my Pizza, Lasagna, and Spaghetti Sauce all using the LaRosa’s Sauce. For Dessert later a Dole No Sugar Added Peach Chunk Cup. Well the Kitchen will reopen tomorrow, later!

A little LaRosa’s History……

LaRosa’s Pizzeria

LaRosa’s Pizzeria is a chain of pizzerias serving neighborhoods in Cincinnati, Greater Dayton, Central Ohio, Northern Kentucky, Southeast Indiana and central Tennessee. It was founded in 1954 by Donald “Buddy” LaRosa, along with partners Richard “Muzzie” Minella, Mike Soldano and Frank “Head” Serraino. Originally called Papa Gino’s, LaRosa later bought out his partners, and changed the name to LaRosa’s.

In addition to serving guests in its pizzerias, LaRosa’s is also the exclusive pizza served at the Kings Island and Coney Island amusement parks, the Cincinnati Zoo and Botanical Garden, Riverbend Music Center, Perfect North Slopes and the Great American Ball Park (home of the Cincinnati Reds).

Beginning with just one location on Boudinot Avenue in the Westwood area of Cincinnati, the family and franchise owners now operate more than 60 pizzerias, with total annual sales of over $130 million.

In 1991, LaRosa’s invested heavily in the implementation and marketing of a single number call distribution center for delivery and carry out orders. Its phone number is prominently featured in advertising. LaRosa’s is very popular in Greater Cincinnati, exceeding Domino’s, Donatos PizzaPizza Hut and Papa John’s in consumer reported purchase frequency.

LaRosa’s has always been active in the neighborhoods it serves, sponsoring local youth sports programs. On February 27, 2008, Michael Larosa became CEO of LaRosa’s, Inc., succeeding T.D. Hughes (CEO, LaRosa’s 1990-2007).

LaRosa’s signature pizza is a thin crust variety made with a distinctive thick, sweet sauce (a family recipe created by Buddy’s Aunt Dena) and topped with provolone cheese. Their menu also includes subs or “hoagys” with a variety of fillings and condiments, as well as calzones, salads, and pastas. LaRosa’s also offers its pasta sauce and other selections from its menu at
