Today’s Menu: Hamburger Sliders w/ Baked Fries

 

 

Happy 4th of July to everyone out there! Please, as always, remember those out there serving our Country so we can enjoy Holidays like this. For Breakfast this morning I had purchased a package of Smithfield Anytime Favorites Sliced Ham. Just heat up for 1 minute in a skillet and it’s ready! I then toasted a Healthy Life Whole Grain English Muffin. I topped the Ham with a slice of Sargento Reduced Calorie Swiss Cheese and served it on the Muffin. Made a delicious Breakfast sandwich. I also had a cup of Bigelow Decaf Green Tea. Hot and muggy with a passing shower outside today. Not a lot going on today, very laid back. I cleaned up around the house and then spent the afternoon watching a couple of movies I had recorded. For Dinner tonight it’s Sliders again! I prepared Hamburger Sliders w/ Baked Fries.

 

It’s 2 days of Sliders for me. yesterday it was Crabcake Sliders and tonight Beef Sliders. Well it doesn’t happen often, rarely ever, but I’m having Beef tonight! I was at Kroger yesterday and I came across a bag of Kroger Ground Beef Sliders – Mini Beef Burgers. They looked good and I had just bought a package of Pepperidge Whole Wheat Slider Buns so I had a perfect pairing. I switched from Beef to Bison, or Buffalo, several years ago when i was diagnosed with Diabetes 2. Healthier, leaner, less fat, and tastes better so the switch was easy. But these looked good and Mom and Dad would really like them! They come frozen and there are 16 2 oz. Slider Patties per package.

 

 

To prepare them; You prepare them frozen, no need to thaw. Just place the Patties in a preheated skillet, preheated on medium heat. Heat on the first side until the juices start to flow. Flip it over and cook till done with about 1 minute of frying time left I added a 1/2 slice of Arla Gouda Cheese. First time trying the Arla Gouda Cheese also. Very good Gouda, smooth, nice flavor, and only 80 calories per slice. The Burgers fry up perfect, I seasoned them with some Morton’s Lite Salt and Ground Black Pepper. I served them on Pepperidge Wheat Slider Buns. I still prefer my Buffalo but these were pretty good!

 

 

And as usual when having any type of Burger you must have fries! I I’m using Alexia Organic Yukon Select Fries, I used Ore Ida yesterday. Seasoned them with McCormick Grinder Sea Salt and Black Peppercorn Medley. Baked them at 425 degrees for 16 minutes. They bake up beautifully and seasoned just right, excellent Shoestring Fry! Plus they are only 120 calories and 15 net carbs. For Dessert later a Weight watcher’s Cookies and Cream Ice Cream Bar.

For breakfast this morning I toasted a Healthy Life Whole Grain English Muffin and I reheated a slice of the Cubed Steak leftover from last night’s dinner. Made a great Breakfast Sandwich! Cold and overcast out today, just an overall dreary day. My back is still giving me problems but it is slowly getting better. Stayed busy today cleaning. Helped out with some laundry for Mom and then dusted and vacuumed the house. For dinner tonight it’s a Crab Cake Slider w/ Roasted Finger Potatoes.

I’m using the Kroger Private Selection Maryland Style Crab Cakes. They come frozen and there’s 2 to a box. To prepare them just preheat the oven on 400 degrees and bake for 30 minutes. Nothing beats a fresh made Crab Cake, but these are too good to be frozen! They’re just the right size, about 3.5 ounces each, and full of flavor. Baked them for about 30 minutes and they were done. Served then on a Pepperidge Farm Wheat Slider Buns. Topped them with Louisiana Remoulade Dressing. This makes one delicious Slider! The taste of the Crab Meat and Remoulade Sauce is perfect together! If you want one flavorful Remoulade Sauce you have to try the LOUISIANA Remoulade Dressing. This sauce is incredible and is good on about anything you put it on!

Then I also Baked some Fingerling Potatoes. I actually found some other than Jungle Jim’s Market, found them finally at the Kroger up the road from us! They come in a small bag, Melissa’s Fingerling Potato Medley. It’s a variety of 4-5 different Potatoes including Fingerling Potatoes, which I love using! To prepare them I started by washing the Potatoes off in cold water. I then cut the Fingerling Potatoes in half, lengthwise. Put the Potatoes in a large bowl seasoned them with; Extra Virgin Olive Oil, Garlic Powder, Sea Salt, Pepper, Chili Powder, and Kraft Reduced Fat Parmesan Grated Cheese to top the Potatoes with. Using a cookie sheet lined with foil I spread the Potatoes out on the sheet . Then Roasted them at 400 degrees until they were fork tender, about 20 minutes. Love those Potatoes! Perfect side dish for any dinner. Later for dessert I had a Healthy Life dark Fudge Swirl Frozen Greek Yogurt.

Another beautiful day out again! We set a record low for the morning, 51 degrees. For Breakfast I got the Goetta out, Glier’s Turkey Goetta. I had a Sunny Side Up Egg, Turkey Goetta, and Whole Wheat Toast. Nice start to any day. Got the cart out and went fishing today. Didn’t catch a whole lot but caught some fantastic Sun all day. For dinner tonight I prepared BBQ Turkey Sliders w/ Jalapeno Cheddar Fried Potatoes.

 

 
If you’re having Sliders they might as well be healthy Sliders. The Jennie – O Turkey is only 120 calories with the Buns being 100 calories. To prepare them I formed the Ground Turkey into Slider Bun size patties. Seasoned them with McCormick Grinder Sea Salt and Black Peppercorn with just a pinch of Sage in each. I pan fried them in Canola Oil. Served them on the Pepperidge Farm Wheat Slider Buns and topped with JB’s Fat Boy Sticky Stuff BBQ Sauce. Now this a slider, the Sauce just sets everything off. I could eat a plate full of these.

 

 

Jalapeno Cheddar Fried Potatoes
For a side dish for the Sliders I prepared Jalapeno Cheddar Fried Potatoes. Came across this a while back in an issue of Cuisine at Home Magazine. Made some changes from the original recipe. I used Simply Potatoes Steakhouse Seasoned Diced Potatoes, Canola Oil instead of Peanut Oil, Scallions, 1 Jalapeno (sliced), Sea Salt and Ground Pepper, Sargento Reduced Fat Mexican Style Shredded Cheese, and I also added some diced Red Onion. To prepare it; Add the Canola Oil to a Cast Iron Skillet and heat on medium. Prepare the Diced potatoes according to the package instructions. About midway through the cooking process add the Diced Red Onion and continue cooking. Then Scallions and Jalapeno; saute 2 more minutes, then season with Sea Salt & Pepper. Off the heat sprinkle with the Sargento Reduced Fat Mexican Style Shredded Cheese. And another keeper Potato Dish! This has turned out to be one of my favorite Potato Side Dishes. For dessert later a bowl of Del Monte No Sugar Added Peach Chunks.

1 -Package Simply Potatoes Steakhouse Seasoned Diced Potatoes
2 T. Canola Oil
1/4 cup chopped Scallions
1 Jalapeno, sliced
1/2 Medium sized Red Onion, diced
Sea Salt & Pepper to taste
1/2 cup Sargento Reduced Fat Mexican Style Shredded Cheese
Directions:

To prepare it; Add the Canola Oil to a Cast Iron Skillet and heat on medium. Add the Potatoes and prepare the Diced potatoes according to the package instructions. About midway through the cooking process add the Diced Red Onion and continue cooking. Then Scallions and Jalapeno; saute 2 more minutes, then season with Sea Salt & Pepper. Went for my yearly eye check-up this morning, everything looked good; no changes. Then it turned to a frustrating day! I get my prescriptions through the mail and the drug co. said my doctor will not respond to their faxes and of course the doctor’s office says they didn’t receive any faxes. Finally got that straightened up and ran into a computer operating snag. Nothing major just annoying, Google Chrome bugs that wont let me access certain sites and functions. Still working to correct that. Besides all that not a bad day! For dinner tonight Crab Cake Slider w/ Baked Fries.

Another cloudy and rainy day out again. Ran dad for a check-up at his family doctor. Then stopped by Kroger to pick up some Apples and Boston Lettuce and back home. Been fighting with a mild case of the Phantom Pains since last night, It hasn’t been too bad though. For dinner tonight Crab Cake Slider w/ Baked Fries.

 

 

 
I just had Crab Cakes the other night and they were so delicious I’m having more tonight, but as a Slider Sandwich. Once again I used Kroger Private Selection Maryland Style Crab Cakes. Finally a beautiful, and warm, Spring Day today! It started out in the 40’s but warmed up after that. Sunny all day and high in the 70’s! Now that’s Spring Time Weather. Went to Walmart and Kroger to pick up some items for myself and my Mom. After that started going through the shed again, throwing out some things and straightening up. Still a lot of junk to go through. For dinner tonight Crab Cake Slider w/ Baked Fries.

They nailed our weather forecast of snow, wind, and falling temperature. We ended up with 3″ more inches with a strong wind that took the temps to single digits and below. It’s only January but we’re already above our average of yearly snowfall. Plus our temperatures have been lower than what we’ve in the past few years, single digits and below zero through Saturday. Just cook and be happy! For dinner tonight, Chicken Thigh Sliders w/ Baked Fries.

I picked up a package of Boneless and skinless Chicken Thighs yesterday at Walmart. So to prepare them I cut them in half, to fit the slider buns, and seasoned them with Sea Salt, Ground Black Pepper, and a little Garlic Powder. I then rolled them in some Flour that I had seasoned with Hungarian Sweet Ground Paprika. I then preheated the oven to 400 degrees. Heated a cast iron skillet over medium-high heat, added in the Canola Oil. Seared both sides of the chicken until golden, about 5 minutes and then placed it in the oven to finish off, and the chicken registers 165 degrees F on an instant-read thermometer. They came out perfect! Crispy coating on the outside and moist and flavorful on the inside. I served them on Pepperidge Farms Slider Wheat Buns. For a side for the Sliders I baked some of our favorite Fries, Ore Ida Simply Cracked Black Pepper and Sea Salt Country Style Fries. Best Fries out there in my opinion. Then for dessert/snack later some Newman’s Own Black Bean and Corn Salsa along with Tostios Multi Grain Scoops.
