California Dreamin’ Turkey Burger
INGREDIENTS
4 slices JENNIE-O® Turkey Bacon
1 (16-ounce) package JENNIE-O® Lean Turkey Burger Patties
4 slices pepper Jack cheese
4 whole grain hamburger bun, split
4 tablespoons guacamole
DIRECTIONS
1 – Cook turkey bacon according to package directions and set aside. Cook turkey burgers according to package directions. Always cook until well done, 165°F as measured by meat thermometer. Place cheese on turkey burger during the last 5 minutes of heating to melt cheese.
2 – On bottom half of bun, spread guacamole. Place turkey burger with melted cheese on guacamole and top with turkey bacon. Add bun top.
* Always cook to an internal temperature of 165°F.

SOUTHWEST BUFFALO BURGER
This fantastic burger was the winner and favorite in our buffalo burger cook off! This simple recipe makes one fantastic burger. (Makes 3 to 4 burgers or 8 to 10 sliders)
Ingredients:
1 Wild Idea 1 lb. Premium Ground Buffalo
1 Tb. olive oil +
1 tsp. salt
1 tsp. black pepper
1 tsp. cumin
1 tsp. garlic powder
1 cup pepper jack cheese, small cubes
½ cup (2) green chili’s, roasted, peeled coarse chopped
Pico de Gallo
Jalapeno Hollandaise
Buns of choice
Preparation:
1.) Mix meat, olive oil, spices, cheese and chili’s together in bowl with hands and portion into desired patty size.
2.) Refrigerate for ½ hour to assist with binding.
3.) Preheat clean grill to 500*+.
4.) Brush burgers with a little extra olive oil and place burgers on hot grill, grilling 2 minutes each side. Keep grill lid closed.
5.) Brush with olive oil and grill ½ minute each side to give burger a bit of a crust.
Serve on buns and top with Pico de Gallo and Jalapeno Hollandaise! Accompany with *Tequila, Lime Buffalo Chips. *Recipe included with purchase.
Pico de Gallo (makes 2 cups)
Ingredients:
1¼ cup finely diced cherry tomatoes
½ cup finely diced onion, white, red or green
¼ cup finely chopped cilantro
1 Tb. sugar
¼ tsp. cardamom
½ tsp. each: coriander, cumin, salt & pepper
Juice of 1 – Lime
*optional: pinch of cayenne
Toss all ingredients together. Season to taste.
Jalapeno infused Hollandaise
Ingredients:
2 organic eggs, yolks only
½ teaspoon coarse mustard
½ teaspoon garlic, chopped
2 tablespoons lemon juice
½ teaspoon black pepper
1 Jalapeno, roasted, peeled and seeded
1 stick salted organic butter, melted
1.) Place all ingredients in blender and puree.
2.) With blender going, slowly add melted butter. Blend until mixture becomes thick.
Place leftover hollandaise in container and store in refrigerator for up to 5 days. Use as a spread on sandwiches or as a dip for crudités.

Turkey Sausage and Biscuit Sandwich
INGREDIENTS
2 cups flour
1 tablespoon baking powder
½ teaspoon salt
⅓ cup butter or shortening
¾ cup milk
2 tablespoons chopped chives
8 JENNIE-O® Lean Turkey Breakfast Sausage Patties
8 slices pepper jack cheese
DIRECTIONS
1) Heat oven to 450°F. In large bowl, mix flour, baking powder and salt. Cut in butter until mixture resembles coarse crumbs. Add milk and chives; stir with fork until soft dough forms.
2) Place dough on lightly floured surface; knead 20 times or until smooth. Pat or roll lightly until dough in ½-inch thick. Cut with floured 2-inch cookie cutter to make 8 biscuits, rerolling dough scarps as necessary. Place on baking sheet. Bake 10 to 12 minutes or until golden brown.
3) Cook sausage patties as specified on the package. Always cook to well-done 165°F as measured by a meat thermometer.
4) Split biscuits horizontally in half. Place sausage patty on each biscuit bottom. Top with cheese slice. Cover with biscuit top.
* Always cook to an internal temperature of 165°F.

Loaded Turkey Breakfast Burritos
Loaded with veggies, protein and flavor, these breakfast burritos are the key to wrapping your morning up right. A filling, fantastic meal at under 500 calories per serving!
INGREDIENTS
2 teaspoons olive oil
2 teaspoons butter
1 medium red potato, unpeeled and diced into ½-inch pieces
salt and freshly ground pepper, if desired
½ (16-ounce) package JENNIE-O® Lean Ground Turkey Roll
1½ cup egg substitute or 6 eggs, beaten
1 cup HERDEZ® Salsa Verde
6 slices JENNIE-O® Turkey Bacon, cooked until crisp and crumbled
¾ cup shredded pepper jack cheese
6 flour tortillas
¾ cup shredded Cheddar cheese
1 cup Original WHOLLY GUACAMOLE® dip
DIRECTIONS
1) In medium skillet, heat oil and butter over medium-high heat. Add potato, season with salt and pepper, if desired and cook, stirring 5 minutes or until golden brown stirring frequently. Cover. Cook 10 minutes longer or until tender.
2) Cook turkey sausage as specified on the package. Add eggs and cook, stirring, until scrambled. Add salsa verde, cooked bacon and pepper Jack cheese. Stir gently until cheese is melted. Always cook to well-done, 165°F as measured by a meat thermometer.
3) Wrap tortillas in a damp paper towel and microwave on HIGH (100%) 10 to 15 seconds or until warm and pliable. Lay each tortilla on work surface and evenly distribute scrambled egg mixture on tortillas. Sprinkle Cheddar cheese over egg mixture and top with guacamole dip. Roll burritos.
* Always cook to an internal temperature of 165°F.

Southwest Pesto Turkey Burgers
Avocado? Salsa? PEPPER JACK CHEESE? These are the makings of an epic burger. The addition of cilantro pesto cinches it. Get ready for a tasty southwestern weeknight dinner that’s ready in under 30 minutes.
INGREDIENTS
1 (19-ounce) package JENNIE-O® Lean Seasoned Turkey Burger Patties
4 slices pepper jack cheese
2 tablespoons mayonnaise
1 tablespoon prepared cilantro pesto
4 Kaiser rolls, split
1 ripe avocado, peeled and sliced
4 tablespoons CHI-CHI’S® salsa, divided
DIRECTIONS
1) Cook turkey patties as specified on the package. Always cook to well-done,165°F. as measured by a meat thermometer. Add cheese to patties during last minute of cooking.
2) While patties are cooking, combine mayonnaise and cilantro pesto in small bowl; mix well. Top cooked patties with mayonnaise mixture. Serve on rolls with avocado and salsa.
