Today’s Menu: Leftover – Shrimp w/ Pasta Roni – Parmesan Cheese

 

For Breakfast this morning I prepared an Egg Beater’s Egg White Cheese Omelet, I used Sargento Reduced Fat Shredded Sharp Cheddar Cheese. I also prepared 2 Jimmy Dean Turkey Breakfast Sausage Links, toasted a slice of Healthy Life Whole Grain Bread, and my morning cup of Bigelow Decaf Green Tea. Breakfast is served! Had a high of 56 outside today but showers moved in later in the day, not bad for a February Winter’s day! After Lunch I went over to spend a few hours with dad at rehab. He has really been doing good in therapy! Eating good and building his strength back up. If he’s able to come home he has to exercise a bit or he’ll end up right back in the Hospital. So we’ll see. Back home did a load of laundry and cleaned up around the house a bit. For Dinner tonight its Leftover – Shrimp w/ Pasta Roni – Parmesan Cheese and Italian Round Loaf Bread.

 

As usual when I make the Shrimp w/ Pasta Roni – Parmesan Cheese dish I have the leftovers the next day. So for Dinner tonight its Leftovers! Below is the original post of Shrimp w/ Pasta Roni – Parmesan Cheese and Italian Round Loaf, which contains ingredients and directions.

 

For the Shrimp part of the dish I used Kroger Brand Jumbo Shrimp. I had them in the freezer so I let them thaw overnight in the fridge. I love Shrimp and all Seafood. For the Shrimp; I started by rinsing the Shrimp off in cold water and letting it dry in a colander. Using a medium size skillet, that I sprayed with Pam Cooking Spray and a 1 tablespoon of Extra Virgin Olive Oil, that I heated on medium heat I cooked the Shrimp. I seasoned them with Old Bay Seasoning. Cooked them 2 minutes per side, turning the Shrimp once. And as the Shrimp was cooking I started to prepare the Pasta.

 

 

I’ve prepared this many times now, sometimes I make it using Chicken but Shrimp is my favorite. Pasta Roni – Parmesan Cheese. It comes with the Pasta Parm Sauce and I added; 1 1/3 cups of water, 2/3 cups of 2% milk, and 2 tablespoons of Blue Bonnet Light Butter. Then to prepare it; In a medium saucepan bring water, milk, margarine or butter to a boil. Then slowly stir in pasta and Special Seasonings. Separate pasta with a fork, if needed. Return to a boil. Reduce heat to medium. Boil uncovered, 4-5 min. or until pasta is just tender, stirring frequently. Sauce will be thin. Let stand 3-5 min. to thicken. There’s 2 servings per box. Nice seasoning and the Parmesan Sauce is very flavorful. I topped the Pasta with some Kraft Reduced Fat Grated Parmesan Cheese and the Shrimp. Too good, this makes one delicious Shrimp and Pasta Dish! Love these Semi-Homemade Meals! I also reheated a couple of slices of La Brea Multi Grain Bread. For Dessert later a Weight Watcher’s Cookies and Cream Ice Cream Bar.

To start my Saturday morning off I toasted a Healthy Life Whole Grain English Muffin and topped it with Smucker’s Sugar Free Blackberry Jam. Also made my morning cup of Bigelow Decaf Green Tea. Started a load of laundry for Mom. Outside it’s mostly sunny, 82 degrees and not quite as humid. After Lunch I repaired a shelf in the shed and then got the clippers out and trimmed the vines along the driveway. For Dinner tonight I prepared Shrimp w/ Pasta Roni – Parmesan Cheese.

 

 

 

 

For the Shrimp part of the dish I used Kroger Brand Jumbo Shrimp. I had them in the freezer so I let them thaw overnight in the fridge. I love Shrimp and all Seafood. For the Shrimp; I started by rinsing the Shrimp off in cold water and letting it dry in a colander. For the Shrimp; I started by rinsing the Shrimp off in cold water and letting it dry in a colander. For Breakfast I toasted a couple of Whole Grain Eggo Waffles, topped with I Can’t Believe It’s Not Butter, and made my morning cup of Bigelow Decaf Green Tea. In the 20’s to start the day. Partly Sunny and around 47 degrees for the day, not bad for February Weather! Did a load of laundry for Mom. After Lunch I went over to see Dad. He is getting stronger and he has his appetite back. He’s working hard to build his strength back up, hope he keeps it up! For Dinner tonight I prepared Shrimp w/ Pasta Roni – Parmesan Cheese.

For Breakfast on this first day of 2017 I’m having a toasted Eggo Waffle topped with a Poached Egg. And as every morning, a cup of Bigelow Decaf Green Tea. Wow, 2017! Not a bad day out there to be January 1st, a high of 45 degrees and mostly sunny. Mom went to Church and I stayed home to keep an eye on Dad. So while Mom was gone I did some laundry then moved on to cleaning the house, vacuumed and dusted. Had everything done after Lunch and settled back for an afternoon of watching NFL Football. Started my day off with a Poached Egg. Today’s Menu: Leftovers – Shrimp w/ Pasta Roni – Parmesan Cheese

 

 
For Breakfast this morning I fried some Jennie – O Turkey Breakfast Sausage Links, had some Simply Potatoes shrimp-w-pasta-roni-parmesan-cheese-004Shredded Hash Browns, toasted 1 slice of Healthy Life Whole Grain Bread (lightly buttered with I Can’t Believe It’s Not Butter), and a cup of Bigelow Decaf Green Tea. Big change in our weather, finely feeling like Fall. Low 40’s this morning and a cool breeze a blowing. We didn’t hit 60 degrees today, about 58 degrees. After Lunch I went to the local Kroger for a few items, stopped by the bank, and stopped and got gas before heading home. Did some light cleaning and then caught up on some shows I had recorded. For Dinner tonight its the easiest prepared Dinner, Leftovers! I heated up the leftover Shrimp w/ Pasta Roni – Parmesan Cheese.

 
As always when I prepare this meal its leftovers for the next meal. I really enjoy the Pasta Roni Meals, whether it’s with Shrimp or Chicken. In this case its Shrimp and far be it from me to ever waste Shrimp. So I put the leftovers on a microwavable plate, covered it, and reheated it. It’s just as good the 2nd time around! I also reheated some Pillsbury French Bread that I had baked yesterday. For dessert later, I baked a box of Pillsbury Sugar Free Chocolate Brownies. Below is last night’s Dinner description. Shrimp, Tomato Pesto Sauce, Whole Grain Rotini, and Baked French 003
For the Shrimp part of the dish I used Kroger Brand Jumbo Shrimp. I had them in the freezer so I let them thaw overnight in the fridge. I love Shrimp and all Seafood. For the Shrimp; I started by rinsing the Shrimp off in cold water and letting it dry in a colander. Using a medium size skillet, that I sprayed with Pam Cooking Spray and a 1 tablespoon of Extra Virgin Olive Oil, that I heated on medium heat I cooked the Shrimp. I seasoned them with Old Bay Seasoning. Cooked them 2 minutes per side, turning the Shrimp once. And as the Shrimp was cooking I started to prepare the Pasta.

 
I’ve prepared this several times now, sometimes I make using Chicken but Shrimp is my favorite. Rice – A – Roni, shrimp-w-pasta-roni-parmesan-cheese-003Pasta Roni is an Angel Hair Pasta in a Parmesan Sauce with other natural flavors. It comes with the Pasta Parm Sauce and I added; 1 1/3 cups of water, 2/3 cups of 2% milk, and 2 tablespoons of Blue Bonnet Light Butter. Then to prepare it; In a medium saucepan bring water, milk, margarine or butter to a boil. Then slowly stir in pasta and Special Seasonings. Separate pasta with a fork, if needed. Return to a boil. Reduce heat to medium. Boil uncovered, 4-5 min. or until pasta is just tender, stirring frequently. Sauce will be thin. Let stand 3-5 min. to thicken. There’s 2 servings per box. Nice seasoning and the Parmesan Sauce is very flavorful. I topped the Pasta with some Kraft Reduced Fat Grated Parmesan Cheese and the Shrimp. Too good, this makes one delicious Shrimp and Pasta Dish! Love these Semi-Homemade Meals!

Started my Saturday Morning off with Hash Browns, Scrambled Eggs and Toast. I used Simply Potatoes Shredded Hash Browns and Scrambled 2 medium size Eggs that I seasoned with Salt, Pepper, and a couple of shakes of Ortega Smokey Chipotle Taco Sauce. Then I toasted a couple of slices of Healthy Life Whole Grain Bread and made my morning cup of Bigelow Decaf Green Tea. Nice start to the day! After Breakfast I ran a couple of errands for Mom and then I stopped by Walmart and Penny’s and did some early Christmas shopping, but it’s never too early! For Dinner tonight I prepared Shrimp w/ Pasta Roni – Parmesan Cheese.

Today’s Menu: Leftovers – Shrimp w/ Pasta Roni – Parmesan Cheese

 
For Breakfast it was a toasted a Healthy Life Whole Grain English Muffin that I topped with Smucker’s Sugar Free Blackberry Jam. Also had the morning cup of Bigelow Decaf Green Tea. It was cleaning day around the house today, inside and outside. I did the outside early to avoid the heat and humidity. Then inside it was dusting and the vacuum. Everything done and kicked back the rest of the afternoon. For Dinner tonight it was leftovers! I reheated the leftover Shrimp w/ Pasta Roni – Parmesan Cheese from last night.

I love the Pasta Roni – Parmesan Cheese. I top it with Chicken and now Shrimp. So for Dinner tonight it was the leftover Shrimp w/ Pasta Roni – Parmesan Cheese. No way these leftovers were going to waste! For Dessert later a Jello Sugar Free Dark Chocolate Mousse. I left the post from last night’s Dinner which has all the details of the Shrimp w/ Pasta Roni – Parmesan Cheese. Later!

Then to prepare it; In a medium saucepan bring water, milk, margarine or butter to a boil. Then slowly stir in pasta and Special Seasonings. Separate pasta with a fork, if needed. Return to a boil. Reduce heat to medium. Boil uncovered, 4-5 min. or until pasta is just tender, stirring frequently. Sauce will be thin. Let stand 3-5 min. to thicken. There’s 2 servings per box. For Dinner tonight I prepared Shrimp w/ Pasta Roni – Parmesan Cheese.
