Today’s Menu: Tuna Cheesy Pasta w/ Dinner Rolls

 

 

Just a cup of Bigelow Decaf Green Tea to start the morning off. 87 degrees, humid and partly cloudy outside today. Well the Cicadas are out here around the neighborhood! The house across the street had quite a few already. After Lunch I took Mom over to the Dollar Store and then by Walmart. She wanted a couple of new bushes for the back side of the house. Back home I did a few chores around the house. Really getting humid out there today. For Dinner tonight I prepared Tuna Cheesy Pasta w/ Dinner Rolls.

 

 

I bought a box of Betty Crocker Tuna Helper Tuna Cheesy Pasta at Meijer the other day and it just sounded good for Dinner tonight. I’ve fixed many of the Helper styles before, first time we had the Tuna in a while. To make the Dish I’ll need; 1 Box of Tuna Helper, Water, 2% Milk, Butter, and 2 cans of Chicken of the Sea Tuna.

 

 

So to prepare it is very easy. I start by stirring the Pasta, Sauce Mix, Hot Water, Milk, Butter, and Tuna  in 10-inch skillet. I heat to  to boiling. Then I reduced the heat. Covered and simmer for about 10 minutes, stirring occasionally, until pasta is tender. Then I uncovered it and cooked, while stirring, an additional 3 minutes. Done and ready to serve!

 

 

Good Dinner and so easy to prepare! Pasta was excellent with a lot good Cheese and the Tuna was perfect with the Noodles. The Dish is 280 calories and 21 net carbs per serving. I also heated up some of Aunt Millie’s Live Carb Smart Dinner Rolls. These are great for those of us with Diabetes 2, or for anyone who loves good rolls. The Rolls are only 35 calories and 1 carb per roll! That’s right 1 net Carb per roll! So a big thank you to Aunt Millie’s for these! For Dessert later a Jello Sugar Free Dark Cherry Jello.

1 2/3 CUPS HOT WATER
2 CUPS MILK
4 TBSP BUTTER
2 (5-oz) CANS TUNA or CHICKEN, DRAINED OR 2 CUPS COOKED ROTISSERIE CHICKEN CUT IN BITE-SIZE PIECES
1. HEAT: Stir Pasta, Sauce Mix, hot water, milk, butter, and tuna (OR chicken) in 10-inch skillet. Heat to boiling.
2. SIMMER: Reduce heat. Cover; simmer about 10 minutes, stirring occasionally, until pasta is tender.
If necessary, uncover and cook, while stirring, an additional 1 to 3 minutes to desired consistency.

Today’s Menu: Lasagna with Meat and Sauce w/ Texas Toast (Light)

 

To start this morning off I prepared a packet of the Pioneer Peppered White Gravy. I also toasted a couple of slices of Aunt Millie’s Light Whole Grain Bread, heated up a couple of Johnsonville Turkey Breakfast Sausage Links, and had a cup of Bigelow Decaf Green Tea. 80 degrees and partly cloudy out today, also a bit humid out. I hate the humidity! Did a couple of loads of laundry . Then took out the old furnace filter and put in a new one. Later I got the cart out of the shed and went to the back yard in it. We are still having Mole problems so I had to use some Mole Bait to try to stop them. They’ve ruined a few back yards around here. Anyway for Dinner tonight I prepared a Stouffer’s Lasagna with Meat and Sauce w/ Texas Toast (Light).

 

We had not had this for quite some time. So I bought a box of it in my pick-up order from Kroger yesterday. I purchased the Large Size, about 2 1/2 servings. I’m also baking a few slices of the New York Bakery Texas Toast – Lite.

 

To prepare it s very easy. It comes frozen and to prepare it; Preheat the oven to 350°F. Leave the film on tray, but do not vent. Place the tray on a baking sheet on the center rack of the oven. Cook 56 Minutes. Remove baking sheet from oven. Let stand 1 Minute and Dinner is ready. I really enjoy this Lasagna! Plenty of Sauce and Meat and the Noodles are good size and tender. One easy way to have a Lasagna Dinner! The Lasagna is 260 calories and 25 net carbs per serving.

 

 

I also baked a slice of New York Bakery Lite Texas Toast. I thought we were out of the Texas Toast Light but Mom found a box of it in the floor freezer! This will be the final box, they no longer make the Light version anymore. For Dessert/Snack later a bowl of Skinny Pop – Pop Corn and a Coke Zero to drink.

 

 

 

 

 

 

 

Stouffer’s Lasagna with Meat and Sauce
Large Size
Traditional lasagna noodles layered with an herb seasoned tomato and meat sauce and three kinds of natural cheese

Conventional Oven
1) Preheat to 350°F
2) Leave film on tray, do not vent.
3) Place tray on a baking sheet, center rack. Cook 56 Minutes.
4) Remove baking sheet from oven. Let stand 5 Minutes.

Today’s Menu: Shrimp w/ Pasta Roni – Angel Hair Pasta with Herbs

 

 

I had a cup of Bigelow Decaf Green Tea for Breakfast. Real Foggy out early this morning, cleared up by 10:00. 62 degrees and mostly sunny out today. After my Tea I headed out to check out a couple of the local Garden Centers. After that I stopped by Meijer to grab a couple of items and from there to the ATM Machine and finally stopped and got gas. Back home I got the cart out of the shed and did some yard work. For Dinner tonight a favorite of mine, Shrimp w/ Pasta Roni. Take Care and Stay Safe everyone!

 

So for the Shrimp part of the dish I used Meijer Brand Frozen Jumbo Shrimp. This is my frozen Shrimp of choice, best I’ve found. I had them in the freezer so I let them thaw overnight in the fridge. I love Shrimp and all Seafood. For the Shrimp; I started by rinsing the Shrimp off in cold water and letting it dry in a colander. Using a medium size skillet, that I sprayed with Pam Cooking Spray and a 1 tablespoon of Extra Virgin Olive Oil, that I heated on medium heat. I seasoned them with Old Bay Seasoning and a sprinkle of Morton’s Lite Salt and added the Shrimp to the skillet. Cooked them 2 minutes per side, turning the Shrimp once. And as the Shrimp was cooking I started to prepare the Pasta.

 

I love having Shrimp with the Pasta Roni – Angel Hair Pasta with Herbs. It comes with the Pasta Special Seasonings Packet and I added; 1 1/3 cups of water, 2/3 cups of 2% milk, and 2 tablespoons of Blue Bonnet Light Butter. Then to prepare it; In a medium saucepan bring water, milk, margarine or butter to a boil. Then slowly stir in pasta and Special Seasonings. Separate pasta with a fork, if needed. Return to a boil. Reduce heat to medium. Boil uncovered, 4-5 min. or until pasta is just tender, stirring frequently. Sauce will be thin. Let stand 3-5 min. to thicken. There’s 2 servings per box, leftovers coming tomorrow. Nice seasoning and the Parmesan Sauce is very flavorful. I topped the Pasta with some Kraft Reduced Fat Grated Parmesan Cheese and the Shrimp. Too good, this makes one easily prepared and delicious Shrimp and Pasta Dish! For Dessert/Snack later a 100 Calorie Mini Bag of Snyder’s Pretzels with a Diet Peach Snapple to drink.

 

 

 

 

Pasta Roni Angel Hair Pasta with Herbs

Today’s Menu: Chef Boyardee Lasagna w/ Texas Toast (Lite)

 

 

For Breakfast this morning I prepared a Sunny Side Up Egg, Simply Potato Shredded Hash Browns, 2 Buffalo Breakfast Sausage Patties, 2 slices of Aunt Millie’s 1 Calorie Wheat Bread (topped with I Can’t Believe It’s Not Butter), and had a cup of Bigelow Decaf Tea. I usually don’t have a Big Breakfast but I was starved this morning! First time I prepared the Wild Idea Ground Breakfast Sausage. It comes in a 1 lb. package and I form the Patties. These cam out delicious, another great Buffalo Product from Wild Idea Buffalo!

 

 

 

Cloudy, rain and 52 degrees out today. Just did a few chores around the house today. I got everything done and just kicked back and got caught up on some shows I had recorded. Had no clue on what to have for Dinner. Wanted a hot Meal but something not real heavy and easy to prepare. Bring on the Chef! For Dinner tonight Chef Boyardee Lasagna and Texas Toast (Light).

 

I’ve always been a huge fan of Chef Boyardee products and love their Chef Boyardee Lasagna, Ravioli, and Spaghetti and Meatballs. To prepare it; the easy part! Just empty the contents into a small sauce pan, put the lid on, and heat on medium until heated through. Just stir it occasionally and your done. The Pasta Lasagna is excellent and the Tomato and Beef Sauce it comes in is very good. I know there’s better stuff out there but from time to time I love having Chef Boyardee.

 

I also baked a slice of New York Bakery Lite Texas Toast, one of my slices of this. I hear they no longer make it. For Dessert later a Jello Sugar Free Dark Cherry Jello.

Today’s Menu: Fried Catfish Fillet w/ Mac and Cheese and a skillet of Cornbread

 

For Breakfast I had my morning cup of Bigelow Decaf Green Tea. 59 degrees and sunny out today. Got the cart out of the shed along with a rake and leaf blower and did some yard work. Then sprayed for weeds. We have a lot of weeds this year. Weeds and Moles! More Moles than I have ever seen. I had to out more the Mole Bait and then got a couple of neighbors yards for them. Good to be outside! So for Dinner tonight I prepared Fried Catfish Fillets w/ Mac and Cheese and a skillet of Cornbread.

 

I had purchased the Catfish Fillets from Meijer and had them in the freezer. I laid the fillets in the fridge overnight to thaw.

 

I rinsed the Fillets off in water and dried them with a paper towel. To prepare them I’ll just need some Morton’s Lite Salt and Zatarain’s Fish Fri Seasoned Seafood Breading Mix. I got a large Cast Iron Skillet sprayed it with Pam Non Stick Spray and added 1 tablespoon of Extra Light Olive Oil. Heated the skillet on medium heat. As the skillet was heating I Seasoned the Catfish with the Salt and then got pie pan and added the Breading Mix to it. Then rolled the Fillets in it making sure the Fillets were well covered with Breading. With the Cast Iron heated I added the Fillets. I fried them 4 minutes a side, nice and golden brown. The Zatarain’s Breading Mix give’s it fantastic flavor.

 

To go with my Catfish I prepared a cup of Kraft 50% Whole Grain Mac and Cheese. They come in a microwavable plastic container. To prepare it just remove the lid, add water and stir, microwave for 3 1/2 minutes, and stir in the packet of cheese sauce. And you have your Mac and Cheese! Another nice item to have in the pantry. Easy to prepare, nothing like good old-fashioned Kraft Mac and Cheese! Container makes 1 serving. Love these Kraft Mac and Cheese!

 

I also made a small Cast Iron Skillet of Cornbread. Mom loves Cornbread so I made it for her. As always I used Martha White Corn Meal Mix, something I think I could eat every meal. I like a nice fresh and hot slice with Butter on it. When I make this I just make it by the instructions on the package but I only use half the ingredients because I use a small cast iron skillet to make it. I use Egg Beaters and Extra Virgin Oil instead of Eggs and Vegetable Oil the recipe calls for. Bake at 450 degrees for about 25 minutes and you have some golden brown piping hot Cornbread! If you use a small Cast Iron Skillet just cut the recipe in half and it comes out just right for the skillet size. What a dinner tonight! For Dessert/Snack a 100 Calorie Mini Bag of Snyder’s Pretzels and a Diet Peach Snapple to drink.

Today’s Menu: Whole Wheat Spaghetti and Turkey Meatballs w/ Texas Toast

 

To start this Tuesday Morning off I had a Poached Egg that I served on a Thomas Light English Muffin. I also had my morning cup of Bigelow Decaf Green Tea. 67 degrees and mostly sunny outside today. After Breakfast I went to Wendy’s and picked up Breakfast for Mom and stopped by Dunkin Donuts and picked a couple of Glazed Donuts for her. Back home I got the Shop Vac out and vacuumed my car and then Mom’s. Both needed it. Then I got the Lysol Wipes out and wiped down the dashboards and indoor door panels down in both cars. Also cleaned the inside and outside windows. That was about it for my day. So for Dinner tonight I prepared Whole Wheat Spaghetti and Turkey Meatballs w/ Texas Toast.

 

It’s Spaghetti and Meatballs tonight, one of our favorites! And you can always make it healthier by using Whole Wheat Spaghetti and Turkey Meatballs. For the Meatballs I’m using Meijer Turkey Meatballs. These Meatballs are 150 calories and 5 carbs per serving (6 Meatballs). For the Spaghetti I’ll be using Ronzoni Healthy Harvest Whole Grain Spaghetti.

 

 

I’ll be cooking the Meatballs in LaRosa’s Sauce, one of my favorites! The Sauce goes great on Pasta, Pizza, or as a Dipping sauce. I grabbed a small Sauce Pan, sprayed it Pam Non Stick Cooking Spray, added the sauce to it, and heated on medium low heat. As the sauce started to heat up I added the Turkey Meatballs, stirred until covered with the Sauce. Cooked them for 7 minutes and then reduced the heat to low until I was ready to use them.

 

As I said I’m using Ronzoni Healthy Harvest Whole Grain Spaghetti. It’s my favorite and I use all the Ronzoni Healthy Harvest Pastas. The Spaghetti is 180 calories and 35 net carbs, which isn’t bad for Pasta. To prepare the Spaghetti; I cooked the Spaghetti as to the package instructions. I used a large Sauce Pan and filled it 1/2 way up with water. Turned the burner on high and brought the water to a rapid boil. Added the Spaghetti and stirred, returning it to the rapid boil. Cooked it uncovered, stirring it occasionally. Cooked it for a total of 8 minutes and done! Love this Pasta so tender and tasty. As the Spaghetti was cooking I baked the New York Bakery Texas Toast. Today’s Menu: Leftover Shrimp and Smoked Turkey Sausage Gumbo

 

For Breakfast I prepared some Simply Potatoes Shredded Hash Browns, 2 Johnsonville Turkey Breakfast Sausage Links, and a cup of Bigelow Decaf Green Tea. 53 degrees and rain showers most of the day. I was down for a while today with a Sinus Headache. All due to this weather with the temps going up and down. I did do a load of laundry and wiped the Kitchen down with Lysol Wipes. For Dinner tonight I heated up the Leftover Shrimp and Smoked Turkey Sausage Gumbo from the other night. Below is the original post from the other night, left for description and directions. Gumbo is always one of my favorite meals, Shrimp and Smoked Turkey Sausage Gumbo! Plus the leftovers are just as good if not better! To make it I used a box of Zatarain’s Gumbo Pasta Dinner Mix for the Gumbo base, 1 1/2 Butterball Hardwood Smoked Turkey Sausages (sliced into bite size slices), a bag of Meijer Brand Jumbo Shrimp and Frank’s Red Hot Sauce. I precooked the Sausage and Shrimp, according to the package instructions, before adding it to the Gumbo.

 

The Zatarain’s Gumbo Pasta Dinner Mix uses Pasta instead of Rice. It’s very easy to prepare, takes about 25-30 minutes. To start; I just boil the stock that’s in the packet, add the sliced Turkey Sausage to the stock along with a few shakes of Frank’s Red Hot Sauce and continued to cook for 10-15 minutes. Then I added the Shrimp and simmered another 2-3 minutes. And the Gumbo is ready to serve and It turns out fantastic! Nice flavor, incredible tasting stock, meaty Shrimp and Sausage, and plenty of Pasta, makes one easily prepared hearty and delicious dish. Plus enough leftovers for a couple of lunches too, I took a small bowl over to my neighbor also. Then for Dessert/Snack later a 100 Calorie Mini Bag of Snyder’s Pretzels with a Snapple Diet Mango/Tea to drink.

Orzo (Pasta)……………………

Orzo, also known as risoni, is a form of short-cut pasta, shaped like a large grain of rice. Orzo is traditionally made from white flour, but it can also be made of whole grain. The name orzo is common for this pasta shape in North America, and less common in Italy; the Italian word orzo means barley.

A two oz. serving of orzo is 200 calories. This small pasta is a good source of carbohydrates; one serving of orzo contains 42 grams of carbohydrates and two grams of fiber. You can get more fiber from this pasta by choosing orzo made from whole grain flour instead of white flour.

Ginger Noodle Salad
Spicy Asian noodles are served on a bed of greens for an attractive side dish.

Recipe Ingredients:
4 ounces dry spaghetti or capellini

Dressing:
1 tablespoon minced ginger
3 tablespoons Splenda® Granulated No Calorie Sweetener
1 tablespoon ketchup
1/4 cup lite soy sauce
1/4 teaspoon Chinese chile paste (add more if you want it spicier)
1 tablespoon water
2 tablespoons fresh lime juice
1 teaspoon sesame oil or vegetable oil

2 cups mixed salad greens

Cooking Directions:
1 – Cook pasta following package directions.
2 – Place ginger, Splenda® Granulated Sweetener, ketchup, soy sauce, chili paste, and water in a medium saucepan. Simmer on medium-low heat 1 minute.
3 – Remove from heat. Add lime juice and sesame oil. Mix well. Add noodles and stir well. Serve immediately for a warm salad. Chill 15 to 20 minutes for a cold salad.
4 – To serve: place noodles on top of greens. Garnish, if desired.
Makes 4 servings.

Serving Suggestion: Garnish with fresh basil or cilantro, carrots and snow peas.
