This week’s Jennie – O Turkey Recipe of the Week is a Turkey Bruschetta Panini. Celebrate the Fall Season with this wee’s recipe. It’s made with JENNIE-O® All Natural Oven Browned Turkey Breast and topped with olive oil reduced-fat mayonnaise, mozzarella cheese, basil pesto, and sun-dried tomatoes in oil. Turkey Bruschetta Panini


1 tablespoon olive oil reduced-fat mayonnaise
4 slices Italian bread
4 ounces thinly sliced JENNIE-O® All Natural Oven Browned Turkey Breast, from the service deli
2 slice mozzarella cheese
¼ cup basil pesto
6 sun-dried tomatoes in oil, drained

1) Heat panini grill. Spread mayonnaise on bread slices. Add turkey, cheese, basil pesto and tomato. Top with second slice of bread.
2) Grill 3 minutes or until golden brown.

Today’s Menu: Ham and Cheese Panini w/ Velveeta Whole Grain Rotini and Cheese

Breezy but at least it’s sunny out today, a high in the low 50’s. Went to bank and on to Walmart and Kroger. I picked up a few items at walmart for myself and then Mom had a small list of items she wanted from Kroger that I picked up for her. Then a lot of computer updates and virus scans. In case you haven’t heard there was a big security breach that could affect a lot of on-line users. Everyone should check their on-line accounts. For dinner tonight I prepared a Ham and Cheese Panini w/ Velveeta Whole Grain Rotini and Cheese.

For my Panini I used Kroger Brand Private Selection Off- the Bone Smoked Ham. One of my favorite packaged sliced Hams. It has a really great taste to it. I also used Sargento Ultra Thin Pepper-Jack Cheese, Kraft Reduced Fat Mayo, and a Flatout Foldit 100% Whole Wheat with Flax Flatbread. Used my Panini Sandwich Press. I love using this, I make a lot of Panini for Lunch. Made the Sandwich and put it in the Press for about 4 minutes and it was ready! The Ham, Pepper-Jack, and Mayo are a great combination for a Panini.



I had been wanting some Mac and Cheese for a while now so tonight my side with the Panini was Mac and Cheese. I used Velveeta Whole Grain Rotini and Cheese. I don’t use a lot of mac and Cheese due to the calories and carbs but the Velveeta Whole Grain Rotini and Cheese isn’t too bad, plus every now and then doesn’t hurt. I left all the product info on the Velveeta Whole Grain Rotini and Cheese at the end of the post. For dessert later a Healthy Choice Vanilla Bean Frozen Yogurt.

Italians call it a tramezzino. Examples of bread types used are ciabatta, rosetta and baguette. The bread is cut horizontally and filled with deli ingredients such as salami, ham, cheese, mortadella, or other food, and sometimes served warm after having been pressed by a warming grill. A toasted sandwich made from sliced bread is not called “panino” but “toast” or “tosto” by Italians, and is usually filled with ham and a few slices of cheese, and heated in sandwich press. A popular version of panino in Central Italy is filled with porchetta, slices of pork roasted with garlic, salt, rosemary, and sage.
In the United States, United Kingdom and Canada, the term panini has been adopted to refer to a pressed and toasted sandwich; there is widespread availability and use of sandwich presses, often known as “panini presses” or “toasted sandwich makers.”


The word panino [pa’ni:no] is Italian for “small bread roll“; its plural form is panini. The word is the diminutive form of pane (bread). In some English- and French-speaking countries, panini is sometimes used as a singular word (like salami, also an Italian plural noun) and sometimes incorrectly pluralized as paninis.
In Italian, panino refers properly to a bread roll and panino imbottito (stuffed panino) to a sandwich. Paninoteca is the word for a sandwich bar.
Panino is also often used to refer to a sandwich in general.


Although the first U.S. reference to panini dates to 1956, and a precursor appeared in a 16th-century Italian cookbook, the sandwiches became trendy in Milanese bars, called paninoteche, in the 1970s and 1980s. Trendy U.S. restaurants, particularly in New York, began selling panini, whose popularity then spread to other U.S. cities, each producing distinctive variations of it.
During the 1980s, the term paninaro was used to denote a youngsters’ culture typical of teenagers supposed to eat and meet in sandwich bars such as Milan’s Al Panino and then in the first US-style fast food restaurants opened in Italy. Paninari were depicted as fashion-fixated, vain individuals, delighting in showcasing early 1980s status symbols such as Timberland shoes, Moncler accessories, Ray-Ban sunglasses, and articles from Armani, Coveri, Controvento. They were lampooned in the Italia 1 comedy show Drive-in by Enzo Braschi. A track entitled “Paninaro” appears on Pet Shop Boys‘ albums Disco and Alternative.


Panini are cooked in specific grilling machines called either panini presses or simply panini machines. Domestic panini machines are usually made of teflon-coated metal or glass-ceramic, whereas professional units are made out of glass-ceramic or cast-iron. A few brands offer special features on their machines, such as cooking plates that can be removed for safe cleaning in the dishwasher.

Today’s Menu: Rotisserie Chicken & Monterey Cheese Panini w/ Pop Chips

Light and Easy dinner tonight! I fixed a Chicken Panini topped with a slice of Monterey/Jack Cheese and Reduced Mayo w/ Olive Oil. For the Chicken I used Walmart Rotisserie Chicken and Healthy Life Whole Grain for my Bread.  As a side I had a half of serving of Salt and Pepper Pop Chips. For dessert later Walmart Bakery Sugar Free Angel Food Cake topped with Del Monte Sugarless Peaches.
