Today’s Menu: Crock Pot 3 Bean Buffalo Chili

 

 

 
The first post of 2014! Hope all of you had a great end of 2013 and a promising start to 2014. Started off windy and quite chilly around here this morning, But it cleared up and the sun came out and warmed to in the low 30’s. They say we have Winter weather moving in overnight and into Thursday though. 2-3 inches overnight and early morning then another 1-3 inches through Thursday, not the way to start 2014. But a good way to start the year off in food is to have Crock Pot 3 Bean Buffalo Chili as my first dinner of the year!

I had made this batch of Chili back in December and had some in the freezer. I set it out overnight in the fridge to thaw. To reheat heat I just emptied the container in a sauce pan and heated it up on medium heat until heated through. Love this Chili!! For dessert later a Del Monte No Sugar Added Peach Chunk Cup.

 

 

 
To prepare it; The Chili has Wild Idea Buffalo Lean Ground Buffalo, Dark Red Kidney Beans, Chili Beans, Great Northern White Beans, and ton of great Spices! Just put it in the Crock Pot, on low, for about 8 hours and you got you some mighty tasty Chili! The Wild Idea Ground Buffalo has such a unique flavor, an almost sweet taste to it. I left the full recipe at the bottom of the post. The longer the Chili simmers the more incredible aroma fills the kitchen!

Crock Pot 3 Bean Buffalo Chili

 

Ingredients

2 lb. Ground Wild Idea Ground Buffalo
2 Cans (6 oz.) Hunt’s Tomato Paste
1 Can (15 oz.) Chili Beans
1 Can (15 oz.) Kidney Beans, rinsed
1 Can (15 oz.) Great Northern Beans, rinsed
1/2 Cup of Water
1 Packet McCormick Chili Mix
1 White Onion (medium), Chopped or Minced
1 Jalapeno Pepper, Unseeded and Chopped
3 Cloves Minced Garlic
1 Tbs Ground Cocoa Chili Blend (McCormick)
1/2 Tsp Ground Chipotle Chili Pepper (McCormick)
1 Tbs. Ground Roasted Cumin
2 Tsps Ground Cinnamon
1 Tbs of Cilantro Leaves
5 Dashes of Frank’s Hot Sauce or to taste.
Shredded Cheese, I used Grated Dutch Gouda (Topping)
Oyster Crackers
Directions:
*Brown Buffalo in large saucepan on medium-high heat 10 min. or until no longer pink, stirring occasionally. Add all remaining spices and ingredients except 1 can of the tomato paste and the cheese and crackers.
*ADD to slow cooker and add in the remaining 1 can of tomato paste.
*COVER with lid. Cook on HIGH 3 to 4 hours (or on LOW 5 to 6 hours).

 

*Serve in bowl or mug with cheese and the oyster crackers, A Tablespoon of fat-free sour cream, or serve with some home made cornbread.

Today’s Menu: Skyline 3 Way – Chili, Spaghetti, Cheese and a Side of Oyster Crackers w/ Hot Dog with Cheese and Mustard

Merry Christmas Eve everyone! It’s been an almost bitter cold day around here most of the day. This morning the wind chill had it around 9 degrees, far cry from our mid 50’s just a or so ago. Ran some errands for Mom, who is almost at full strength again. Then spent most of the afternoon baking some Pumpkin Walnut and Banana Walnut Bread. Baked 12 mini loaves and delivered them to several neighbors. Love Christmas time! For dinner tonight it was a Skyline Chili inspired dinner. I prepared a Skyline 3 Way – Chili, Spaghetti, Cheese w/ Hot Dog with Cheese and Mustard.

 

 

 

I used Skyline 3 Way – Chili, Spaghetti. They sell it packaged for the microwave, a bit smaller size than what you get at a Skyline but just right for those still watching calories and carbs. It comes with Spaghetti topped with Skyline Chili. I added a few dashes of Frank’s Red Hot Sauce and Cheese to make it a 3 Way and used Sargento Reduced Fat Shredded Sharp Cheese. The Chili Spaghetti is 270 calories and 20 carbs.

Then I also prepared an Oscar Mayer Extra Lean Turkey Franks, my new choice of Hot Dogs. Just boiled them for 5 minutes and they were ready. Served on a Aunt Millie’s Reduced Calorie Hot Dog Bun and topped with French’s Yellow Mustard and Sargento Reduced Fat Shredded Sharp Cheddar. For a dessert/snack later a 100 Calorie Mini Bag of Jolly Time Pop Corn.

Today’s Menu: Crock Pot 3 Bean Buffalo Chili w/ Johnny Cakes

Well with my Mom back home everything is getting back to normal! Went and bought a couple of Christmas Wreaths, for the door and outside lamp-post. Then finished up a few decorations on the inside and finished wrapping a few gifts. I wanted 3 Bean Buffalo Chili for dinner tonight but Mom and Dad wanted something different. So for me the 3 Bean Buffalo Chili and for Mom and Dad Breaded Cube Steak, Cream Style Corn, and Green Beans with New Potatoes. I also made some Johnny Cakes for everyone.

 

 

 

The Chili has Wild Idea Buffalo Lean Ground Buffalo, Dark Red Kidney Beans, Chili Beans, Great Northern White Beans, and ton of great Spices! Just put it in the Crock Pot, on low, for about 8 hours and you got you some mighty tasty Chili! The Wild Idea Ground Buffalo has such a unique flavor, an almost sweet taste to it. I left the full recipe at the bottom of the post. The longer the Chili simmers the more incredible aroma fills the kitchen! I say this every time I make a batch of this but I think this is my best batch ever!  As usual I made a Crock Pot full of the Chili so I can have it for dinner, maybe a Chili and Cheese Omelet, lunch, and plenty to freeze!

As the Chili was heating up I made some Johnny Cakes. To prepare these all you’ll need is: Pam w/ Olive Oil Non – Stick Spray, 1/4 cup Extra Virgin Olive Oil, 1 3/4 cups Buttermilk, and 2 cups Martha White Self Rising Enriched White Corn Meal Mix. Just mix all your ingredients in a large bowl. Spray your Pam on a Flat Top Griddle or large Skillet and preheat on medium low, I use the Flat Top Griddle. When the Griddle is heated add your batter. You can make the Cakes any size you want from half-dollar size to regular pancake size cakes. After the bottom side turns golden brown flip over and let the other side get golden brown. To serve I placed mine on a plate and topped it with my 3 Bean Buffalo Chili and Shredded Cheese. And now it’s Comfort Food Heaven! The Chili is a perfect pairing with Cornbread no matter how you prepare your Cornbread. At the bottom of the post I left a little history on the “Johnny Cakes”. There are various ways to fix Johnny Cakes, I make mine using the Martha White Corn Meal Mix. For dessert later a Jello Sugar Free Double Chocolate Pudding.

Ingredients

Today’s Menu: 3 Bean Buffalo Chili w/ Johnny Cakes

 

 

Cloudy, windy, and rain on and off all day today. They say some really cold weather moving in, a Saturday high of only in the 20’s. Really didn’t feel like cooking a lot today so I got in the freezer and grabbed the Crock Pot 3 Bean Buffalo Chili I had frozen. It’s the last of Chili I had frozen, so I’ll be making a new batch soon! For dinner tonight, I prepared the Crock Pot 3 Bean Buffalo Chili along with some Johnny Cakes.

I sat the Chili out overnight in the fridge to thaw and warmed it up in a medium sauce pan. I Love Chili especially this one that I make. I use Wild Idea Buffalo’s Ground Buffalo which is the best tasting Ground Buffalo that I’ve found. The 3 Beans I use are 1 Can (15 oz.) Chili Beans, 1 Can (15 oz.) Kidney Beans (rinsed), and 1 Can (15 oz.) Great Northern Beans (rinsed). Then I mix in 1 White Onion (medium Chopped or Minced), 1 Jalapeno Pepper (Unseeded and Chopped), 3 Cloves Minced Garlic, and 2 tablespoons of Jiff Reduced Fat Creamy Peanut Butter. First time I added Peanut Butter, a friend of mine that enters a lot of Chili Competitions told me to give it a try. It does give your Chili a rich flavor. For my spices I use 1 Packet McCormick Chili Mix, 2 Cans (6 oz.) Hunt’s Tomato Paste, 1 Tbs Ground Cocoa Chili Blend (McCormick), 1/2 Tsp Ground Chipotle Chili Pepper (McCormick), 1 Tbs. Ground Roasted Cumin (McCormick), 2 tbsp Ground Cinnamon (McCormick), 1 Tbs of Cilantro Leaves (McCormick), and 5 Dashes of Frank’s Hot Sauce or to taste (I usually add a lot more dashes!). Throw in a 1/2 cup of Water and put the lid on the Crock Pot and set on low for 5-6 hours. Then you have yourself some good, comfort food Chili! You can serve it many ways; in a bowl or mug and top it with your favorite Cheese or Chopped Green Onions with a side of Oyster Crackers. Another way to have it is served on top of a Johnny Cake (Cornbread), which I did tonight, or have a side of Cornbread with it.

Today’s Menu: Grilled Cheese Sandwich w/ Portobello Mushroom and Madeira Bisque

Heavy rain on and off all day. We are on a tornado and high wind warning till about 9:00 tonight. Hope we avoid that weather! Well they finished my new ramp into the house. They did a great job, it looks fantastic. Paid for the new ramp and our Microwave goes out, when it rains it pours! Hopefully get a new one sometime tomorrow. Kept it simple for dinner tonight preparing a Grilled Cheese Sandwich with a Portobello Mushroom and Madeira Bisque.

 

 
A Grilled Cheese and a Soup (Bisque) just sounded good! For my Grilled Cheese I used Sargento Ultra Thin Sharp Cheddar Cheese and Klosterman Wheat Bread. Buttered the top and bottom of the Bread with I Can’t Believe It’s Not Butter and put my Cheese in between the slices and Grilled it on a flat-top griddle. Made sure both sides were browned and then served it.

 

 

Grilled Cheese and Mushroom Bisque 005
For the Bisque or Soup I used a new one that I haven’t tried before, Campbell’s Slow Kettle Style Portobello Mushroom and Madeira Bisque. It comes in a microwavable container but since our microwave has died I went with heating it up in a sauce pan. Just heated it on medium heat until it started to simmer. Campbell’s has a winner with this one! Nice chunks of Mushrooms with excellent seasoning. Served it with a side of Oyster Crackers. Fantastic Comfort Food Dinner tonight! For dessert/snack later tonight some slices of Cracker Barrel 2% Sharp Cheddar Cheese on Ritz Whole Grain Crackers.

Another beautiful day out, but they say that’s coming too an end. The high’s will be in the 90’s and the humidity almost unbearable. The heat index will be very high starting Sunday. All good days must end, I guess. Earlier today I went fishing here at our community lake. Only caught a few small Blue Gills not much biting but a real relaxing morning. For dinner tonight I didn’t want anything too heavy or filling but still wanted a hot and hearty meal. So I got in the freezer and grabbed the Crock Pot 3 Bean Buffalo Chili I froze from the last time I prepared some. I prepared the Crock Pot 3 Bean Buffalo Chili along with some Johnny Cakes.

 

 

 

The Chili has Ground Buffalo, Kidney Beans, Chili Beans, Great Northern White Beans, and ton of great Spices! Just put it in the Crock Pot, on low, for about 8 hours and you got you some mighty tasty Chili! I would use Ground Turkey to make this but for the past two times I’ve used the Ground Buffalo. Using the Buffalo gives it such a unique flavor, an almost sweet taste to it and it seems to hold up better with any added heat you add to it (Peppers or Hot Sauce). I left the full recipe at the bottom of the post. That’s the last of my Chili in the freezer so I’ll have to make another batch soon.

Johnnycakes – Pouring a batter similar to that of skillet-fried cornbread, but slightly thinner, into hot grease atop a griddle or a skillet produces a pancake-like bread called a johnnycake. This type of cornbread is prevalent in New England, particularly in Rhode Island, and also in the American Midwest and the American South. It is reminiscent of the term hoecake, used in the American South for fried cornbread pancakes, which may date back to stories about some people on the frontier making cornbread patties on the blade of a hoe.

Johnny Cakes (My way)

Ingredients:

Pam w/ Olive Oil Non – Stick Spray
1/4 cup Extra Virgin Olive Oil
1 3/4 cups Buttermilk
2 cups Martha White Self Rising Enriched White Corn Meal Mix

Directions:

Just mix all your ingredients in a large bowl.
Spray your Pam on a Flat Griddle or large Skillet and preheat on medium low, I use the Flat Griddle.
When the Griddle is heated add your batter. You can make the Cakes any size you want from half dollar size to regular pancake size cakes. After the bottom side turns golden brown flip over and let the other side get golden brown. Serve while warm and enjoy!

Today’s Menu: Crock Pot 3 Bean Buffalo Chili w/ Cornbread EarsCrock Pot 3 Bean Buffalo Chili 003

 
Very humid out today, almost like August days out there. Been planning My Parent’s Anniversary for later this week, taking them and a few relatives out to dinner. Believe it I’m going out to eat, at a restaurant! Been a while.I believe we’re going to a local Steak House, more on that Wednesday. For dinner tonight I prepared Crock Pot 3 Bean Buffalo Chili w/ Cornbread Ears.

 
Oh the aroma of the Chili and Spices that this creates when I make it, Incredible! I cook it on low for about 6 hours, I love it! I used 2 lbs. of the finest Ground Buffalo that I’ve ever found, from where else Wild Idea Buffalo. To make this I’ll be needing: 2 Cans (6 oz.) Hunt’s Tomato Paste, 1 Can (15 oz.) Chili Beans, 1 Can (15 oz.) Kidney Beans, rinsed, 1 Can (15 oz.) Great Northern Beans, rinsed, 3/4 Cup of Water, 1 Packet McCormick Chili Mix, 1 White Onion (medium), Chopped or Minced, 1 Jalapeno Pepper, Unseeded and Chopped, 3 Cloves Minced Garlic, 1 Tbs Ground Cocoa Chili Blend (McCormick), 1/2 Tsp Ground Chipotle Chili Pepper (McCormick), 1 Tbs. Ground Roasted Cumin, 2 Tsps Ground Cinnamon, 1 Tbs of Cilantro Leaves, and 5 Dashes of Frank’s Hot Sauce or to taste. With all this now you know why the aroma is so good! To prepare it it’s very easy, start by browning the Ground Buffalo in large saucepan on medium-high heat 10 min. or until no longer pink, stirring occasionally. Then add all remaining spices and ingredients except 1 can of the tomato paste. Then just add it to the Slow Cooker and add in the remaining 1 can of tomato paste. Cover with lid. Cook on HIGH 3 to 4 hours or on LOW 5 to 6 hours. I always cook it on Low not unless I’m pressed for time, it turns out good either setting.

 
This batch came out sooo good! To my bowl I did add a couple of shakes of Frank’s Red Hot Sauce. Topped with a bit of fresh grated

Cornbread Ears

Dutch Gouda Cheese and a small side of Oyster Crackers. As always there are plenty of leftovers so I can put some in the freezer for another time! I also prepared some Cornbread Ears, using Martha White Corn Meal. It’s just normal Cornbread but baked in a cast iron mold that looks like ears of corn, thus Cornbread Ears. For dessert later a bowl of Breyer’s Carb Smart Vanilla Ice Cream topped with Del Monte No Sugar Added Sliced Peaches.

 

 

 

Crock Pot 3 Bean Buffalo Chili

Ground Buffalo

Ground Buffalo

Ingredients
2 lb. Ground Wild Idea Ground Buffalo
2 Cans (6 oz.) Hunt’s Tomato Paste
1 Can (15 oz.) Chili Beans
1 Can (15 oz.) Kidney Beans, rinsed
1 Can (15 oz.) Great Northern Beans, rinsed
1/2 Cup of Water
1 Packet McCormick Chili Mix
1 White Onion (medium), Chopped or Minced
1 Jalapeno Pepper, Unseeded and Chopped
3 Cloves Minced Garlic
1 Tbs Ground Cocoa Chili Blend (McCormick)
1/2 Tsp Ground Chipotle Chili Pepper (McCormick)
1 Tbs. Ground Roasted Cumin
2 Tsps Ground Cinnamon
1 Tbs of Cilantro Leaves
5 Dashes of Frank’s Hot Sauce or to taste.
Shredded Cheese, I used Grated Dutch Gouda (Topping)
Oyster Crackers

*Brown Buffalo in large saucepan on medium-high heat 10 min. or until no longer pink, stirring occasionally. Add all remaining spices and ingredients except 1 can of the tomato paste and the cheese and crackers.

Today’s Menu: 3 Bean Buffalo Chili w/ Shredded 2% Sharp Cheddar Cheese and Oyster Crackers

 

 
It’s a cold but sunny day out today and it’s Opening Day for the Cincinnati Reds. It’s going to be a day long marathon of TV and Baseball. I had been wanting some Chili so I pulled out a container of 3 Bean Buffalo Chili from the freezer last night and let it thaw in the fridge overnight. For dinner; 3 Bean Buffalo Chili w/ Shredded 2% Sharp Cheddar Cheese and Oyster Crackers.

 

 

This was the first time I had made Chili with Buffalo and it turned out delicious! The 3 Bean Turkey Chili was good but I like the Buffalo 3 Bean Buffalo Chili 004even more. I have 2 containers left in the freezer. To make the Chili, along with the 2 lbs. of Wild Idea Ground Buffalo, I added the following; 2 Cans (6 oz.) Hunt’s Tomato Paste, 1 Can (15 oz.) Chili Beans, 1 Can (15 oz.) Kidney Beans, rinsed, 1 Can (15 oz.) Great Northern Beans, rinsed, 1/2 Cup of Water, 1 Packet McCormick Chili Mix, 1 White Onion (medium), Chopped or Minced, 1 Jalapeno Pepper, Unseeded and Chopped, 1 Tbs Minced Garlic, 1 Tbs Ground Cocoa Chili Blend (McCormick), 1/2 Tsp Ground Chipotle Chili Pepper (McCormick), 1 Tbs. Ground Roasted Cumin, 2 Tsps Ground Cinnamon, 1 Tbs of Cilantro Leaves, and 5 Dashes of Frank’s Hot Sauce or to taste. The full recipe and instructions follow at the end of the post.

 
I use our older stand-up Crock Pot whenever I make Chili, it’s my Mom’s and she’s had it for at least 20 years or more and it still works like it’s brand new. I lined it with Reynold’s Crock Pot Liners, a must if you use a Crock Pot a lot! These liners make cooking in a Crock Pot even easier. Just put them in the Crock Pot and spray with Pam Non Stick Cooking Spray. When your food is done just empty it from the Pot and dispose of the liner. It can’t get much easier. I then browned the Buffalo in large saucepan on medium-high heat 10 min. or until no longer pink, stirring occasionally. Added all the remaining spices and ingredients except 1 can of the tomato paste and the cheese and crackers. Stirred until it was well mixed. While that was cooking I opened all 3 cans of Beans, rinsing the Kidney Beans and Great Northern Beans. I mixed all 3 cans together in a large bowl and added the 2nd can of Tomato Paste to the Beans and stirred. Then I added half of the bowl of Beans to the Crock Pot and topped it with the Buffalo and Spices mix and topping that with the rest of the Beans. Covered with the lid , and let simmer and cook, on low, for about 8 hours. About 2 hours into the cooking time your kitchen should fill up the fantastic aroma of the Chili!

 

The Turkey 3 Bean Chili is delicious, as I had said earlier, but it can’t compare with Buffalo 3 Bean Chili! The Buffalo meat just has that sweet taste to it that makes it different from other meats, plus it’s healthier than other meats. If you’ve never had Buffalo Chili you have to try it when you can! As I’ve also said the Wild Idea Buffalo is the best Buffalo I’ve ever had, and a lot of that is how the Buffalo is raised at Wild Idea. I’ve left info all about Wild Idea Buffalo along with the web link at the bottom of the post. Along with The Chili I made a side of Johnny Cakes (Fried Cornbread). For dessert later a slice of Pillsbury Nut Quick Bread topped with a scoop of Breyer’s Carb Smart Vanilla Ice Cream.

Ingredients
2 lb. Ground Wild Idea Ground Buffalo

Dinner Tonight: Cincinnati Style Chili & Cheese Coneys w/ Oyster Crackers and Baked Crinkle Fries

Nasty day out today, dark, gloomy, light rain, and waiting for up to 5 – 6 inches of snow. BLAH! Well to warm it up on the inside I made everybody’s favorite, Cincinnati Style Chili & Cheese Coneys! For dinner I prepared Cincinnati Style Chili & Cheese Coneys w/ Oyster Crackers and Baked Crinkle Fries.

 
To make the Coneys I used Ball Park Smoked White Turkey Franks, Skyline Chili, Kraft 2% Shredded Sharp Cheddar, French’s Yellow Mustard, Frank’s Red Hot Sauce (Optional), Chopped Onions (Optional), and Healthy Life Whole Grain Hot Dog Buns. To assemble a Coney is easy; Bun, Frank, Mustard, Chili, Hot Sauce, and to top it all off Cheese! What is not to like! I served them on Healthy Life Whole Grain Hot Dog Buns with some Oyster Crackers on the side. My parents wanted some fries also so I baked some Ore Ida Crinkle Fries with a side of Hunt’s Ketchup for dipping. For dessert later a Jello Sugar Free Dark Chocolate pudding topped with Cool Whip Free.

Today’s Menu: Cincinnati Style Chili & Cheese Coneys w/ Oyster Crackers
Good news about my Dad, he should be released from rehab next Friday, barring any setbacks. So good news there! A lot less wear on all of us especially Mom as she’s up there every day.

 

On to dinner. Tonight was Cincinnati Style Chili & Cheese Coneys w/ Oyster Crackers! We all always enjoy Coneys! If you take a look at cheese coneys buffalo hot dog 003pictures you’ll see a different Hot Dog, I tried a couple of the Buffalo Hot Dogs that was delivered yesterday from Buffalo Gal. More on those later. The ingredients I need tonight are: Ball Park Smoked White Turkey Franks, Skyline Chili, Kraft 2% Shredded Sharp Cheddar, French’s Yellow Mustard, Frank’s Red Hot Sauce (Optional), Chopped Onions (Optional), and Healthy Life Whole Grain Hot Dog Buns. These are the ingredients that make some excellent Cheese & Chili Coneys! A lot of people add Chopped Onions but I’ve never been a fan of that. I do like adding Hot Sauce to the Dog though, I use Frank’s Red Hot Sauce.

 

 

Yesterday my Buffalo Gal order was delivered so I prepared a couple of the Buffalo Hot Dogs so we could sample them also. I liked them, their very lean as all bison meat is.The taste reminded me more a Brat or Mett than a Hot Dog. I’m saving them for lunch tomorrow. Very quickly just to tell you how to assemble this masterpiece of the Cheese & Chili Coney World it’s: Spread the Hot Dog Bun, Lay your Hot Dog in the Bun, top with Yellow Mustard, add the Chili, top it with Red Hot Sauce (Optional), add the Chopped Onions (Optional), top everything with Kraft 2% Shredded Sharp Cheddar Cheese, you’re ready to eat! For dessert later a Jello Sugar Free Dark Chocolate Pudding.
