Today’s Menu: Baked Buffalo Chicken Breast Sandwich w/ Baked Potato
Come on Spring time give us a break! It was sunny all day but a very cold wind. If the forecast is correct we are supposed to set a record low temperature for in the morning. Come on Summer Breeze! For dinner I prepared one of my favorites anymore; Baked Buffalo Chicken Breast Sandwich w/ Baked Potato.

To prepare my Chicken I needed 2 (4 ounce) Boneless Skinless Chicken Breasts, 6 Tablespoons favorite Wing Sauce (I used Kroger WingBaked Buffalo Chicken Sandwich 004 Sauce), and 1/2 Cup Litehouse Lite Bleu Cheese Dressing/Dip, and Aunt Millie’s Light Whole Grain Buns . To start I Preheated the oven to 400°F. Then Sprayed large non-stick skillet and 8×8″ baking dish with Pam cooking spray. Added the chicken to skillet & cooked 4-5 minutes each side until browned. Placed the chicken in dish and poured Wing Sauce over chicken and baked (uncovered) 20 minutes. I served it on an Aunt Millie’s Light Whole Grain Bun and topped it with some Litehouse Light Bleu Chesse Dressing. I made 2 Chicken Breasts 1 for dinner and 1 for lunch tomorrow.

To go with the Baked Buffalo Chicken Breasts I had a Baked Potato topped with Newman’s Own pineapple Salsa. I love this Newman’s Own Salsas. They have 3 or 4 varieties and their all fantastic. This Pineapple Salsa goes great over Baked Potatoes, Pork Chops, and Fish. For dessert later a Jello Sugar Free Double Chocolate Pudding topped with Cool Whip Free.
Baked Buffalo Chicken Breasts

Ingredients
2 (4 ounce) Boneless Skinless Chicken Breasts
Sea Salt and Black Pepper, to taste
4 Tablespoons favorite Wing Sauce (I used Kroger Wing Sauce)
1/2 Cup Lighthouse Lite Bleu Cheese Dressing/Dip
Aunt Millie’s Light Whole Grain Buns
Directions
Preheat oven to 400°F.
Spray large non-stick skillet and 8×8″ baking dish with cooking spray.
Season Chicken and add chicken to skillet & cook 4-5 minutes each side until browned. Place chicken in dish and…
Pour Wing Sauce over chicken and bake (uncovered) 25 minutes.
Serve with Bleu Cheese Dressing and Serve on Aunt Millie’s Light Whole Grain Bun.

Wow I tried Newman’s Own Pineapple Salsa for the first time and I’m going to have to make room for another Salsa! My favorite is still Newman's Own Pineapple SalsaNewman’s Own Black Bean and Corn Salsa but the Pineapple is awfully close! It’s a completely different Salsa than the Black Bean and Corn. It’s got a little heat from the Jalapenos and then you have the sweetness from the Pineapple, it ends up a perfect match for a Salsa. This would go good over your Eggs at Breakfast or at dinner for a topping for your Baked Potato. I’ll be adding this to the Pantry Stock for sure.

Today’s Menu: Whole Grain Penne Pasta and Turkey Sausage w/ Mushrooms, Sockarooni Sauce, and Whole Grain BreadPenne whole grain pasta 002
Whole Grain Penne Pasta and Turkey Sausage tonight, healthy and a true comfort food! I used Ronzoni Healthy Harvest Whole Grain Penne Rigate Pasta. For the sauce I used Newman’s own Sockarooni Pasta Sauce and then for the Turkey Sausage I used Johnsonville Turkey Sausage. The sausage is 110 calories and 0 carbs.

I had precooked and sliced the Turkey Sausage earlier. I then boiled the pasta and while it was boiling I heated the pasta sauce and added the Turkey Sausage, that I had sliced up into bite size pieces and sliced Baby Bella Mushrooms. After boiling and draining the pasta I added the pasta back to pot and added the sauce and sausage to it and mixed until the pasta was well coated. I Seasoned the Pasta with McCormick Grinder Italian Seasoning, Parsley and Sea Salt. The Sockarooni is a Pasta Sauce made by Newman’s Own. It’s a fantastic thick sauce with great seasoning with Red and Green Bell Peppers and Mushrooms.I topped it with Kraft 2% Shredded Mozzarella Cheese. Served it with slices of Healthy Life Whole Grain Bread. For dessert later some Apple slices and a Mini Banana.

Today’s Menu: Rotissairie Chicken w/ Potato Gnocchi in Sockarooni Sauce & Mushrooms, and Whole Grain Bread
Chicken on a bed of Italian Dumplings (Gnocchi ) topped with Mushrooms and Sockarooni Sauce! More about the Sockarooni Sauce later. I purchased a Kroger Rotissairie Chicken earlier this afternoon and took off all the skin and pulled the meat from the bones. Added just a bit of Sea Salt and Ground Black Pepper to it to liven it up a bit.

Now the Sockarooni. Sockarooni is a Pasta Sauce made by Newman’s Own. It’s a fantastic sauce with great seasoning with Red and Green Bell Peppers and Mushrooms. First time I’ve used it and I’ll be stocking up on this! I sliced up 4 Baby Bella Mushrooms and added those to the sauce.

I used Borelli Gourmet Foods Gnocchi Patate Italian Potato Dumplings. It’s the first time I used these also and will not be the last! Great tasting Gnocchi and it’s only 144 calories and 34 carbs, not bad for Gnocchi. To assemble all this I made a bed of Gnocchi and topped with my pulled Chicken and then topped that with the Sockarooni Sauce and then topped that with fresh grated some Dutch Gouda. We have a winner! It was delicious and the seasoning and flavor was outstanding. For dessert later a bowl of Blue Bunny Chocolate/Vanilla Swirl Frozen Yogurt.
