Today’s Menu: Turkey Tacos

Another picture perfect day out again, 75 degrees and sunny! Went fishing at a local County Park Lake for most of the morning and afternoon. Caught a few Crappie and Blue Gill along with a 2 lb. Bass. Didn’t keep any, returned them to the lake. Had the cart out for a while also, just too nice to stay in. For dinner tonight its Turkey Tacos.

 

 

 
As I had said in an earlier post I’ll be using my free samples from Jennie – O. I received a 1 lb. package of Jennie – O Lean Taco Seasoned Ground Turkey, a package of Wholly Guacamole, 1 – 7 oz. can of HERDEZ® Salsas. I tasted the Herdez Salsas and just wasn’t a big fan of it so I won’t be using that. First time I’ve tried any of these, so thanks again to Jennie – O for the free samples!

 

 

 
I’ll be using the Jennie – O Lean Taco Seasoned Ground Turkey. I Love the Jennie -O Turkey Products, always fresh and low calorie and low carb and this one is no exception. I started by frying the Ground Turkey in Canola Oil and seasoned it with just a bit of Morton’s Salt Substitute. I’ve been making Tacos for a long time, so it feels like I’m forgetting a step by not adding Taco Seasoning to the Turkey as it’s cooking. But it comes Seasoned, and judging by the aroma as it was cooking it was going to be delicious. And it was! I’ll have to the Jennie – O Lean Taco Seasoned Ground Turkey around when making Tacos! 5 Stars for the Jennie – O Lean Taco Seasoned Ground Turkey.

 

 

 

 

For my other toppings I’ll be using; Sliced Black Olives, Sliced Green Olives, Wholly Guacamole, Sargento 4 Cheese Mexican Shredded Reduced Fat Cheese, and Shredded Lettuce. All served in a Ortega Whole Grain Corn Taco Shell. Did I say I love Tacos, I do! As for the Wholly Guacamole, they named it right! Wholly Guacamole is exactly that. Creamy, Chunks of Avocados, and full of Creamy Flavor. For dessert later a bowl of Breyer’s Carb Smart Chocolate Ice Cream.

Today’s Menu: Black Bean and Turkey Tacos w/ Refried Beans

 

 
Not to bad out this morning, in the low 20’s! A beautiful Winter’s Day out today, high around 31 and sunny all day. We just missed a good snow overnight though. We usually are the area that gets hit but this one went just south and east. They got 6″ or more in some areas. We’ll wait and see what happens with the next storm coming through Tuesday Night into Wednesday. I’ll have to stock up on some products this week, some nice sales going on at Meijer and Kroger this week. For dinner tonight I prepared Black Bean and Turkey Tacos, also adding some of my new favorite ingredients the Delallo Tri-Color Pepperazzi Spicy Sweet Peppers.

 

 

Black Bean and Turkey Tacos  Feb 14 004

I used Jennie – O Extra Lean Ground Turkey Breast. Love the Jennie -O Turkey Products, always fresh and low calorie and low carb. I fried it in Canola Oil and seasoned it with Sea Salt, Ground Roasted Cumin, Cilantro Flakes, and 1 package of Old El Paso Low Sodium Taco Seasoning. As I added the Taco Seasoning Mix I also added 1 can of Bush’s Low Sodium Black Beans, I had drained and rinsed them before I added them. Black Beans with Ground Turkey is a perfect pairing for Tacos, added flavor and protein. Mixed well until everything was coated and then simmered another 5 minutes until heated through.

 

 

 

For my other toppings I used 1 small can of Mario Sliced Black Olives, Sliced Pepperazi Spicy Sweet Peppers, Sargento 4 Cheese Mexican Shredded Reduced Fat Cheese, Dole Shredded Lettuce, Old El Paso Taco Sauce, and all in a Ortega Whole Grain Corn Taco Shells. Got to have the Ortega Whole Grain Corn Taco Shells, lower in carbs and calories than most other brands and seem to stay fresher than others also. I love Taco Nights! You can have so many different types of Tacos with so many different toppings, just endless options for dinner. For dessert tonight a Del Monte No Sugar Added Peach Chunks Cup.

Another cold start to the day , 11 degrees. Then another sunny afternoon and it actually got up to about 34 degrees! Still forecasting doom and gloom snow and Artic Air coming though. Took Mom’s car in for a tune-up and new tires for her and then to Kroger had to pick up a bag of Shredded Lettuce for part of tonight’s dinner and Mom wanted some Pork Chops for dinner tomorrow. For dinner tonight I prepared Black Bean and Turkey Tacos w/ Refried Beans.

Got to have the Ortega Whole Grain Corn Taco Shells, lower in carbs and calories than most other brands and seem to stay fresher than others also. I love Taco Nights! For dessert tonight a bowl of Breyer Carb Smart Vanilla Ice Cream topped with some Smucker’s Sugar Free Hot Fudge Topping!

Today’s Menu: Turkey Tacos

 

 

 

This morning it was about 54 degrees, but I guess that was our high for the day as it’s been dropping ever since. rain on and off and windy, blowing in our winter storm I guess. We’re supposed to get 2″-4″, we’ll see though. Got my tests results back and my sugar looked real good they said as did everything else except for my thyroid, which it was a little off. I just have to adjust my medicine. As most former Cancer patients, you usually have a Thyroid trouble depending on your type of Cancer and treatment. For dinner tonight; it’s Turkey Tacos Night!

For the Turkey I used Jimmy Dean Fully Cooked Turkey Sausage Crumbles. Kroger had the bags on sale so I thought I would give it a try! It comes pre-cooked so all you have to do is heat it up for about 8 minutes. As it was heating I added Sea Salt, Cilantro Flakes, and a 1/2 packet of Old El Paso Low Sodium Taco Seasoning. I really liked this! Great taste and real easy to heat up and use. I’ll buy another bag and keep it in the freezer.

 

 

 

 

I used Ortega Whole Grain Corn Taco Shells. Their a good size Taco Shell with 110 calories and 12 Net carbs per serving (2 Shells). Then for my other Taco ingredients I used 2 tablespoons of Del Monte Summer Crisp Sweet Corn Kernels, sliced Black Olives, Shredded Lettuce, and Sargento Reduced Fat Mexican 4 Cheese. I topped them with Daisy Reduced Fat Sour Cream and Old El Paso Original Taco Sauce. When building my Tacos I always use the Shredded Lettuce as the first layer. The Lettuce helps soak up any moisture so the bottom of your Taco doesn’t get soggy. I love Tacos, easy to make and always delicious! For dessert later a Healthy Choice Chocolate Swirl Frozen Yogurt.

Jimmy Dean Fully Cooked Turkey Sausage CrumblesJimmy Dean Fully Cooked Turkey Sausage Crumbles

Stove Top Instructions:

Remove sausage crumbles from package and place in a large skillet.
Heat and stir over MEDIUM heat for 6 to 8 minutes or until hot.
Serve as desired.
Microwave Instructions:

Place ½-cup sausage crumbles into a microwave-safe bowl; cover with plastic wrap.
Microwave on HIGH for 30-40 seconds or until hot. Stir before serving.
Serve as desired.
Once opened, use or freeze within 7 days.
