Today’s Menu: Grilled Buffalo Cheese Burger w/ Baked Fries
A brief shower overnight and early morning, then a beautiful Spring Day! Hit around 70 degrees again. Nice to have all the windows open, letting in all that fresh air. Some rain moving in the rest of the week, but that beats in the Teens and Snow! Put together the new grill. It’s not as big as the old one but big enough for the family. My Dad comes home finally after about 2 1/2 weeks of being in the hospital and rehab unit. For dinner it was grilling time! Grilled a Grilled Buffalo Cheese Burger with some Baked Fries.
As usual I used a Wild Idea Buffalo 1/4 Pound Buffalo Burger. I’ve got a couple of packs in the freezer so I let one thaw overnight in the fridge. Sprayed the grill grate with pam Grill Spray and heated it up for the first grill on the new grill. I seasoned the Buffalo Burger with McCormick Grinder Sea salt and Black Peppercorn. It only takes about 3 1/2 minutes per side for Medium Rare as Buffalo Meat gets done in an only a short amount of time, because it’s so lean. Some people like their Cheese melted, I prefer adding my Cheese after the Burger is done. I used Sargento Ultra Thin Sliced Sharp Cheddar. Served it on an Aunt Millie’s Reduced Calorie Hamburger Bun. I also baked up some Ore Ida Simply Cracked Black Pepper and Sea Salt Country Style Fries. For dessert later a Healthy Choice Dark Fudge Swirl Frozen Yogurt.

Today’s Menu: Cubed Steak Sandwich w/ Baked Fries
Not a bad day out today. Still windy but sunny and in the 50’s though. Maybe more snow coming tomorrow. I actually got my first full night of sleep for the first time in quite a while. Feeling a lot better today, glad the sinus infection ran its course! Went to the store for Mom and picked up a few things for her. For dinner tonight its a Cubed Steak Sandwich w/ Baked Fries.
I used the Meijer Cubed Steak. The best Cubed Steak I have ever found or had. I purchased some earlier last year and been buying them ever since! It’s about the only Beef I ever have, normally it’s Buffalo, Fish, Chicken, or Pork. They’re good size patties so I was able to cut them in half and get 2 meals out 1 pattie. To prepare them I seasoned them with Sea Salt and Ground Black Pepper and I then rolled them in flour that I had mixed with a bit of Hungarian Paprika. Shook off the excess flour and pan fried them in Canola Oil, about 4 minutes per side. They came out delicious! Excellent flavor and very tender, especially for Cubed Steak which sometimes can be somewhat tough and stringy. Served it on a Aunt Millie’s Reduced Calorie Hamburger Bun and topped it with some Sauteed Mushrooms.
I also baked a serving of the Ore Ida Simply Cracked Black Pepper and Sea Salt Country Style Fries. Then for dessert later, while curled up in my favorite chair watching the classic movie “The Natural”, a Healthy Choice Dark Fudge Swirl Frozen Yogurt.
Cube Steak
Cube steak is a cut of beef, usually top round or top sirloin, tenderized by fierce pounding with a meat tenderizer, or use of an electric tenderizer. The name refers to the shape of the indentations left by that process (called “cubing”). Oh I hope winter is over, because today has really spoiled everyone around here today. Sunny and in the low 50’s! And they say the 60’s are on the way. We deserve this it’s been one long, cold, and snowy winter. Was able to get outside a couple of times today to enjoy this weather. For dinner tonight I prepared a Sharp Cheddar Turkey Burger w/ 3 Bean Salad and Baked Fries.
I used the Jennie – O Turkey Burger Patties (Lean). Only 180 calories and 9 g fat and already made into fresh patties. Pan fried them in a 1/2 Tbs of Canola Oil and seasoned it with Sea Salt and Ground Black Pepper. I served it on an Aunt Millie’s Reduced Calorie Whole Grain Bun and topped with sautéed sliced Baby Bella Mushrooms and a slice of Sargento Ultra Thin Sharp Cheddar. I also baked some Ore Ida Simply Cracked Black Pepper and Sea Salt Country Style Fries and had a serving of Read’s 3 Bean Salad. It comes in a can and you can prepare it various ways. I just opened the can and put it in a plastic bowl, put the lid on, and set in the refrigerator to chill for a couple of hours or so. I served these cold. For dessert later a Jello Sugar Free Double Chocolate Pudding.

Still a windy and cold day around here but the sun was out all day, which helped clear our roads and driveways of snow. Plus, the forecast is looking good! Up coming days with highs in the 40’s and 50’s, which beats what we’ve been having. Sad day I went to the funeral home this afternoon for visitation of a childhood friends father. It’s sad that none of see each other anymore as the year’s have passed, not unless it’s a funeral. I moved away from the neighborhood as I was going in to my freshman year in high school, now we’re all in our 50’s. A few of the old neighborhood still lives in the area like myself and some in Tennessee and Texas. It was nice seeing everyone, just not under these conditions though. Well for dinner it was a Sharp Cheddar Cheese and Mushroom 1/4 lb. Buffalo Burger w/ Baked Fries.
As usual I used my favorite Buffalo Burger, Wild Idea Buffalo 1/4 Buffalo Burger. I seasoned it with McCormick Grinder Sea Salt and Black Peppercorn. I then pan fried it in Canola Oil about 3 1/2 minutes per side. Buffalo gets done rather quickly due to it’s so lean. I topped it with a slice of Sargento Ultra Thin Sharp Cheddar Cheese and Sauteed Mushrooms, served it on an Aunt Millie’s Reduced Calorie Whole Grain Bun.
Then for a side dish I baked up some Ore Ida Simply Cracked Black Pepper and Sea Salt Country Style Fries, served these with a side of Hunt’s Ketchup for dipping. For dessert later a Healthy Choice Dark Fudge Swirl Frozen Yogurt.

Tuna Melt with Horseradish Mayonnaise w/ Baked Fries

Today’s Menu: Tuna Melt with Horseradish Mayonnaise w/ Baked Fries
Another day, another day of additional snow!! Only 1″ overnight but it just keeps adding up. I heard this morning on the morning news that we’ve set a new record for the most snow. This area just isn’t used to this snow for this long of a period of time. It’s been quite a Winter. For dinner tonight something new, a Tuna Melt with Horseradish Mayonnaise w/ Baked Fries.
Came across a form of this recipe from a Food Network Magazine a while back and also I’ve seen several others online. I love Tuna, Melts, and Cheese so I thought I would give it a try. I used 2 – 5 ounce cans of Chicken of the Sea Chunk Light Tuna in Water (Drained), 3 tablespoons Kraft Light Mayonnaise, 1/4 cup finely chopped celery, 2 tablespoons finely chopped fresh parsley, 1 teaspoon Paprika, 2 teaspoons apple cider vinegar, and Sea Salt and Ground Black Pepper (to taste) for the Tuna. Then for the Horseradish Mayonnaise I needed 1 tablespoon prepared horseradish, 4 tablespoons Kraft Light Mayonnaise, and 1 tablespoon French’s Spicy Brown Mustard. I also need Meijer Bakery Whole Wheat Mini Sub Buns and slices of Muenster Cheese.
To prepare it I preheated the oven to 475 degrees F. Combined 4 tablespoons mayonnaise, the tuna, celery, parsley, paprika, and vinegar in a large bowl and mixed well. Seasoned with salt and pepper. Combined 4 tablespoons of mayonnaise along with the mustard and prepared horseradish in a small bowl; spread on the bread slices and arrange on a baking sheet. Mound the tuna mixture on top and pat it into an even layer. Topping each with 1 cheese slice. Baked until the cheese melts, 5 to 7 minutes. It turned out incredible! The Tuna mix had great flavor along with the melted Muenster Cheese and Crusty Bun. A keeper recipe for sure! You can serve it open face, which I did or top it with the other half of the bun.
I also had baked some Ore Ida Simply Cracked Black Pepper and Sea Salt Country Style Fries, served with Hunt’s Ketchup. For dessert my Mom had baked an Apple Pie that she made with Splenda. The pie just melts in your mouth!

Well today is my Mom’s Birthday, 86 today! Happy Birthday Mom, I love you! As I said my Mom is 86 today and my Dad will be 93 in September. Dad has a lot of health problems but Mom gets around and just as strong as ever! Mom enjoys eating Breakfast out so I purchased a couple of Gift Cards, along with some Flowers, to go have Breakfast on and then when the weather is better I’m going to take her and Dad out for dinner. For dinner tonight its a Colby Longhorn Cheese and Mushroom Buffalo Burger w/ Baked Fries.
I prepared a Wild Idea Buffalo 1/3 lb. Burger, my favorite! I seasoned it with McCormick Grinder Sea Salt and Black Peppercorn. I then pan fried it in Canola Oil about 3 1/2 minutes per side. Buffalo gets done rather quickly due to it’s so lean. As the Burger was finishing I added Sliced Baby Bella Mushrooms to the skillet and Sauteed them for about 4 minutes. I served it on a Aunt Millie’s Reduced Calorie Whole Grain Bun and topped with the Sauteed Mushrooms and a slice of Sargento Ultra Thin Colby Longhorn Cheese. I found the Sargento Colby at Meijer last week, first time I’ve seen the Colby Longhorn in Ultra Thin (only 40 calories per slice). I had a side of baked Ore Ida Simply Cracked Black Pepper and Sea Salt Country Style Fries. Simply the best fries Ore Ida has! For dessert later a bowl of Del Monte No Sugar Added Pech Chunks.

No new snow but only a high of 21 today. It sure seems like a long winter this year! Sears came today to clean the fridge today, they clean and replace the coils at the bottom run, a cleaner through the water lines and ice maker, change the water filter, and any repairs if needed. All done free under the extended warranty we have on it. Comes in handy if anything breaks down on it, as it is getting to be an old fridge. For dinner tonight; Meatball Hogie w/ Baked Fries.
I used Honeysuckle White Fresh Italian Style Turkey Meatballs. I’ve tried many different Turkey Meatballs and these are the best tasting I’ve found. Their 190 calories and 5 net carbs per serving (3 Meatballs ). And three is plenty as these are good size Meatballs, three fit perfectly on Hot Dog Buns also. i put them in a small size sauce pan added a 1/2 jar of Ragu Old World Style Traditional Pizza Sauce. Turned the burner on medium low and let the Meatballs and Sauce slow simmer.
When completely heated through I served the Meatballs on an Aunt Millie’s Reduced Calorie Hot Dog Bun and topped with a thin slice of Muenster Cheese. Makes one fine Turkey Meatball Hogie! I served it with a side of Ore Ida Simply Cracked Black Pepper and Sea Salt Country Style Fries, my favorite fries! Later tonight for dessert a Jello Sugar Free Double Chocolate Pudding with a dab of Cool Whip Free.
