I’d like to start off by saying congratulation to my Mom and Dad, today is their 67th Wedding Anniversary! Wow, 67 years! Love you both and hope you have many more. We have another humid day out again. They say we’ll have this humidity around for several more days before it ends. Lot of heavy rain again with more on the way. I went to Kroger early this morning for a few items and then stopped by McDonald’s and picked up Mom and Dad’s favorite Breakfast Sandwiches. For dinner tonight I prepared Baked Ham, Pepperoni, and Swiss Mini Sub w/ Baked Fries for everyone.

Bummed around the kitchen and pantry and nothing sounded good. Finally settled on a Baked Ham, Pepperoni, and Swiss Mini Subs. I used Smithfield Anytime Hickory Smoked Boneless Sliced Ham. The Ham is precooked so it’s a breeze to prepare. Heat it up for 30 seconds and it’s ready! Then I also used Kroger Brand Private Selection Old World Deli Sliced Pepperoni, Sargento Ultra Thin Swiss Cheese, LaRosa Sauce, and a Perfection Deli Mini Wheat Sub Bun.

To assemble the Sub I started by preheating the oven to 400 degrees. I grabbed a small cookie sheet and lined it with foil. I wrapped the Sub Bun in foil and heated it up in the oven for 5 minutes, just to get it a bit crispy. To start I spread LaRosa Sauce on the bottom bun. Then I layered 3 slices of the Pepperoni, followed by the Sliced Ham, and the Swiss Cheese and top Bun. Put the Sub on the pan and baked it for about 8 minutes. One good Sub Sandwich! Both Meats were perfect, then the LaRosa Sauce added the fantastic flavor, and topped with that melted Swiss Cheese! Sometimes it’s a good thing to have no dinner plans and then throw something together!

I also baked some Ore Ida Simply Cracked Black Pepper and Sea Salt Country Style Fries, served these with a side of Hunt’s Ketchup for dipping. For dessert later a Healthy Choice Dark Fudge Swirl Frozen Greek Yogurt.

Today’s Menu: Buffalo Burger Pattie Melt w/ Baked Fries

 
Heavy rains and thunderstorms throughout the night, made a perfect night of sleeping! This morning the rains had Buffalo Burger Pattie Melt w Baked Fries 010stopped and the sun was out, and a bit cooler today. Had a light Breakfast and my morning workout then had to go pick my car up, had new front brakes installed. Stopped by Kroger on the way home for Milk, Bread, and some Boar’s Head Ham. Back home had a lot of leaves and branches to pick up around the house from the storm last night, no damage anywhere though. For dinner tonight a Melted Delight, I prepared a Buffalo Burger Pattie Melt w/ Baked Fries.

 

 

 

I used my favorite Buffalo, the Wild Idea Buffalo 1/3-Lb Buffalo Burgers. Just love these Buffalo Burgers; meaty, juicy and just flat out delicious! Preheated up a small skillet that I sprayed with Pam Cooking Spray, seasoned my Burger with McCormick Grinder Sea Salt and Black Peppercorn. I then pan fried it about 3 minutes per side, and done. As my Burger was getting done I toasted 2 slices of Klosterman Wheat Bread and put just a dab of I Can’t Believe It’s Not Butter on both slices. I served my Buffalo Burger on the Toasted Wheat Bread and topped it with a slice of Simple Life Gouda Cheese and topped with French’s Spicy Brown Mustard. One delicious Sandwich! Anytime when I can use Buffalo I use it, and it always turns out delicious!

Today’s Menu: Ground Pork Burger w/ Baked Fries

It’s been a cold and rainy day here all day. Possible snow flurries the next couple of days, come on Mother Nature enough is enough! Had to go the bank and then pick up a few groceries for Mom and back home, miserable outside. For dinner tonight I prepared a Ground Pork Burger w/ Baked Fries.

 
I had bought a 1 lb. package of Kroger Ground Pork at Kroger a couple of weeks ago and made 5 Ground Pork Burger Fries 001Pork Burgers out of it, freezing them. I grabbed one out of the freezer and let it thaw in the fridge overnight. To prepare it I seasoned it McCormick Grinder Sea salt and Black Peppercorn. Then pan fried it in a small skillet in Extra Virgin Olive Oil, 4 1/2 minutes per side. Served it on a Kroger Lite Wheat Bun and topped it with a slice of Simple Truth Muenster Cheese. The Ground Pork is always so moist and flavorful, again Kroger has some of the best Pork Products around. I also baked some Ore Ida Simply Cracked Black Pepper and Sea Salt Country Style Fries, with a side of Hunt’s Ketchup for dipping. I also had some Teriyaki Marinated Mushrooms on the side. For dessert later a Jello Sugar Free Dark Chocolate Pudding.

Not too bad out this morning, compared to what we’ve been having. Plenty of sunshine and in the 20’s today. Had to go to the family Doctor for my 4 month checkup, on sugar, cholesterol, and such. Then ran an errand for Mom and stopped by Walmart, needed a package of the Aunt Mille’s Reduced Calories Hamburger Buns. Walmart is the only store that carries them now for some reason. Back home and not a whole lot going on, some light housework was it. Prepared a Cubed Pork Steak Sandwich w/ Baked Fries for dinner tonight.

 
I had bought a couple of packages of Cubed Pork Steak at Kroger last week, I froze one and had the other package last week. Got the other package out and let it thaw overnight in the fridge. To prepare it I seasoned it with McCormick Grinder Sea Salt and Black Peppercorn, a shake of Garlic Powder, Hungarian Paprika, and a couple of shakes of Dried Thyme. Then rolled it in flour, shaking off the excess. Next I heated up a medium size skillet, that I drizzled with Extra Virgin Olive Oil, on medium high heat. Added my Cubed Pork and fried both sides about 4 minutes per side, till each side was golden brown. As the previous package of Cubed Pork it came out delicious! Moist and very tender with a fantastic flavor from the Paprika and all the other ingredients. Served thiOre Ida Steak Friess one as a Sandwich using a Aunt Millie’s Reduced Calorie Whole Grain Bun.

 
For a side I baked some Ore Ida Steak Fries, served these with a side of Hunt’s Ketchup for dipping. For dessert/snack later I had some thin slices of Boar’s Head Beef Salami along with some Ritz Whole Wheat Crackers.

Ohhh Baby it’s cold out! The temperature is in the low 20’s but we have a real strong cold wind blowing which takes the wind chill around 10 degrees. Good Super Bowl last night, came down to the final seconds before New England won it. Did a couple of loads of laundry for Mom and ran the vacuum in the afternoon. I had planned a dish that has Shrimp in it but once again, I forgot to lay an item out to thaw! So instead for dinner tonight I prepared a Buffalo Burger Pattie Melt w/ Baked Fries

Winter like weather has returned to our area. We’ve had a run of some easy Winter Days, that’s ended. Windy, cold and an inch of snow on the ground. Could be a lot worse though, like along the Eastern Sea Board. Cleaned around the house and did a small load of laundry for Mom and that was it for my day. For dinner tonight it’s a Seasoned Tilapia Sandwich w/ Baked Cracked Black Pepper and Sea Salt Country Style Fries.

 

 
I had purchased the Tilapia on my last visit to Costco and had them in the freezer. Tilapia is good to have in the freezer, their easily thawed, easy to prepare , and delicious! I rinsed the fillets off in cold water and patted dry with a paper towel. I then seasoned them a bit of Sea Salt and then rolled them in Zatarain’s Seasoned Coating Mix. Pan fried them in Extra Virgin Olive Oil about 3 minutes per side. Served it on a Meijer Bakery Perfection Deli Mini Wheat Sub Bun.

 

 
For a side I baked up some Ore Ida Simply Cracked Black Pepper and Sea Salt Country Style Fries, served these with a side of Hunt’s Ketchup for dipping. For dessert later a Healthy Choice Dark Fudge Swirl Frozen Greek Yogurt.

Today’s Menu: Seasoned Haddock and Baked Fries

We finally got a break from the cold weather, sunny and about 55 degrees! Really a beautiful day out. Took my Mom’s car to the local car wash and had it washed and cleaned on the inside for her and then came back and took my car up to be washed. Back home and got caught up on a few things around the house. For Dinner tonight I prepared Seasoned Haddock and Baked Fries.

 

 

 

I had the Haddock in the freezer so I let it thaw overnight in the fridge. To prepare it I rinsed thSeasoned Haddock Baked Fries 001e fillet in cold water and patted dry with a paper towel. Then sliced the fillet into smaller pieces. I then seasoned it with just a bit of Sea Salt and put the pieces in a Hefty Zip Plastic Bag where I then added Zatarain’s Seasoned Coating Mix. Shook until all the pieces were well coated and Shook off the excess and set aside. I then pan fried them in Extra Virgin Olive Oil, frying them about 3 minutes per side until golden brown. Haddock and Zatarain’s Coating Mix, the perfect combo. Haddock is such a meaty mild tasting fish. Love that Seafood, I think I could eat it everyday!

Still waiting for that slight warm up, another cold and windy day. Sort of busy today. My Birthday was in late December and forgot that my Driver’s License expired. So this morning at 8:00 I was in line at our local BMV to get it renewed. I was the third person in so it didn’t take long. Has anyone ever had a good picture taken for their Driver’s License? Mine always turn out like a mug shot! Anyway from there I ran an errand for Mom, went to the Bank, filled the car with gas, and off to Kroger. It kept me busy today. For dinner my favorite Burger, Extra Sharp Cheddar and Mushroom Buffalo Burger w/ Baked Fries.

Fish Sandwich w/ Baked Fries

Today’s Menu: Fish Sandwich w/ Baked Fries

Another frigid morning here, -1 degrees! The wind chill dropped it to -11. They are saying by the weekend it should at least be at 32 degrees, heat wave baby! Well with the weather outside I stayed inside, Did a load of laundry and then caught up on some shows I had recorded and some reading. For Breakfast It was Turkey Goetta, 1 Egg, and Wheat Toast. Lunch was a Turkey Meatloaf Sandwich on a Whole Grain Bun and for a last minute dinner substitute, a Fish sandwich w/ Baked Fries.

 

 

I had a dinner planned out but about the time I was getting ready to prepare dinner I noticed that my car was leaking antifreeze, not a good time to be leaking either with our weather! I had taken a bag of garbage out and noticed it leaking. So I took to the mechanic we always used and dropped it off. So to avoid an over crowded kitchen, Mom was wanting to prepare her dinner for her and Dad, I wanted something quickly to prepare. I used a Gorton’s Fish Sandwich Fillet that I baked along with some Ore Ida Simply Cracked Black Pepper and Sea Salt Country Style Fries. Baked both at the same time.
I served the Gorton’s Fish on a Healthy Life Whole Grain Bun and topped the Fish with a slice of Sargento Ultra Thin Sharp Cheddar Cheese. With the Fries I had some Hunt’s Ketchup for dipping. Frozen foods sure come in handy for last minute meals! For dessert later a Healthy Choice Dark Fudge Swirl Frozen Yogurt. Later!

Today’s Menu: Buffalo Hot Dogs w/ Baked Fries

Another mild Winter’s Day here today. Rainy but around 50 degrees for a high. But colder weather on the way starting next week they say. Had a light Breakfast of a Healthy Life Whole Grain English Muffin topped with some Smuckers Sugarless Blackberry Jam. Not a lot going on today. Ran an errand for Mom and drove over to friends house but they were gone, back home for the day. Buffalo Hot Dogs w/ Baked Fries.

 

 

 

I had ordered the Wild Idea Buffalo – Cheyenne River Gift Bundle, that was delivered to me a few days before Christmas. It contained; 2 – 8 oz. Top Sirloin Steaks, 2 – 16 oz. Bone-In Ribeye Steaks, 2 – 1 lb. Ground Buffalo, 1 – 1 lb. Buffalo Hot Dogs, and an autographed Copy of Buffalo for the Broken Heart by Dan O’Brien. I tried the Hot Dogs once already, and loved them. So I’m having them again tonight for dinner.

I used my Panini Bread Grill Press to grill the Hot Dogs on. Nice grill marks and got the Dogs done just right. The Dogs are well seasoned, nice smoky flavor, and very meaty! Served it on a Healthy Life Whole Grain Hot Dog Bun and topped with French’s Yellow Mustard, fantastic tasting Hot Dog! Served it with a side of Ore Ida Simply Cracked Black Pepper and Sea Salt Country Style Fries, served these with a side of Hunt’s Ketchup for dipping. For a dessert later a slice of Apple Pie, made with Splenda, that Mom had made for Christmas! Soooo Good!
