Today’s Menu: BBQ Pulled Buffalo Chuck Roast Sandwich w/ Baked Crinkle Fries
For Breakfast I prepared I Scrambled a couple of Eggs along with a toasted Thomas Light English Muffin. Also had my morning cup of Bigelow Decaf Green Tea. 60 degrees and cloudy out today. Not too active today, down with my sinuses again! For Dinner tonight I prepared a BBQ Pulled Buffalo Chuck Roast Sandwich w/ Baked Crinkle Fries.
I’m using the Wild Idea Buffalo Pulled Chuck Roast. I had the package in the freezer so I sat it in the fridge to thaw overnight. The Pulled Chuck Roast is so tender and incredibly flavorful. It comes already cooked and seasoned, so just heat and serve! It’s Seasoned with, Organic Apple Cider, Organic Lime Juice, Onion Powder, Cumin, Sea Salt, Black Pepper, Chili Powder, Paprika, Garlic Powder, Oregano, Cayenne Pepper. And that’s why it’s so flavorful! Delicious Pulled Buffalo that you just heat and serve.
I used a small sauce pan that I sprayed with Pam Non Stick Cooking Spray. Added the Buffalo and heated it on medium low until heated through. I served it on a Healthy Life Wheat Hamburger Bun and topped it with some Jack Daniel’s Honey Smokehouse BBQ Sauce. What a sandwich, just incredible flavor! The Wild Idea Buffalo Pulled Buffalo Chuck Roast is so flavorful and tender. It just has such a deep and rich flavor to it. One of my favorites!
For my Fries I’m using Ore Ida Crinkle Cut Fries. Seasoned them with Salt and Pepper. Baked them at 425 degrees for 16 minutes. They are only 90 calories and 10 net carbs. Served them with a side of Hunt’s Ketchup for dipping. For Dessert a Jello Sugar Free Dark Cherry Jello.

It was clean the Kitchen day. Cleaned all the kitchen counters, stove, fridge, and microwave off with Lysol disinfectant wipes. For Breakfast I prepared a Sunny Side Up Egg, Jennie – O Turkey Sausage Patties, Simple Potatoes Shredded Hash Browns, and a cup of Bigelow Decaf Green Tea. The Turkey Sausage Patties I made was from a roll of Jennie – O Lean Breakfast Sausage. 32 degrees and cloudy out today. i spent most of the day giving my computer a tune-up. Reinstalled a few things, got rid of a bunch of old files and ran in-depth scans viruses. Running as smooth as a new one! Then later I took the Ham we bought yesterday over to my cousin, she has a couple of fridges in her basement to store items. Ill pick it back up the day before Christmas. Today’s Menu: Panko Crusted Cod Fish Sandwich w/ Baked Crinkle Fries
Just a cup of Bigelow Decaf Green Tea for Breakfast. Sunny and 84 degrees, rain moving in later tonight. Beautiful day outside today. Still a little slow after yesterday’s Phantom Pains. They were very painful and draining. Anyway I got the cart out and did a little yard work and then took a spin around the neighborhood and enjoyed the day. So for dinner tonight I prepared a Panko Crusted Cod Fish Sandwich w/ Baked Crinkle Fries.
I had purchased the Cod from Kroger yesterday. To prepare the Cod I rinsed the fillet off with cold water and patted dry. I then cut the fillet in half. Then seasoned them with McCormick Grinder Sea Salt and Peppercorn Medley. Combined the flour and both Garlic Powder and Onion powder then press both sides of fillet into flour for a light dusting , shaking off any excess flour. Dipped the floured fillets into the Paprika seasoned Egg Beater’s, allowing excess to drip off. Placed the fillets, one at a time, in Panko Bread Crumbs, and lightly toss fillets until both sides are covered. Meanwhile, heated the Extra Virgin Olive Oil in a skillet and placed the fillets in and cooked 3 minutes each side. Served on a Healthy Life Wheat Burger Bun. I love making Fish Sandwiches with Cod and the Panko Bread Crumbs. Cod cooks up great no matter how you prepare it. Plus it’s a very meaty Fish.
I also baked some Ore Ida Crinkle Fries, served these with a side of Hunt’s Ketchup for dipping. For Dessert/Snack later a 100 Calorie Mini Bag of Snyder’s Pretzels with a Diet Peach Snapple to drink.
Panko Crusted Cod Fish Sandwich
(4) 4oz. Orange Roughy or Cod FilletsPanko Crusted Cod Fish Sandwich w Baked Potato 002
1c. Panko Bread Crumbs
Sea Salt and Ground Black Pepper, to taste
1 tsp. onion powder
1/2 tsp. garlic powder
1/2 tsp. paprika
1/2 c. Egg Beater’s
1/2 c. Flour
1 Tbs. Extra Virgin Olive Oil
Directions:
* Rinse fillets and pat dry the fillets and season with Sea Salt and Pepper.
* Combine flour and both Garlic Powder and Onion powder then press both sides of fillet into flour for a light dusting , shaking off any excess flour.
* Dip floured fillets into Paprika Seasoned Egg Beater’s, allowing excess to drip off.
* Place fillets, one at a time, in Panko Bread Crumbs and lightly toss fillets until both sides are covered.
* Meanwhile, heat canola oil in skillet and place the fillets in oil and saute 4 minutes each side, or until fillets are heated through and Panko Crust has browned.

Today’s Menu: Blackened Tilapia Sandwich w/ Baked Fries
For Breakfast this morning I toasted a Thomas Light English Muffin, heated up a slice of Turkey Spam, and had a half slice of Boar’s Head Yellow Vermont Cheddar Cheese to make a Breakfast Sandwich. I also had a cup of Bigelow Decaf Green Tea. 80 degrees and partly cloudy to start the day, later a passing thunderstorm. Spent most of the day helping Mom clean out our junk closet. Amazing the stuff she had in it! We filled up 4 large Lawn Hefty Bags. Long overdue! For Dinner tonight I prepared a Blackened Tilapia Sandwich w/ Baked Fries.
I had purchased the Tilapia at Kroger and had them in the freezer. Let them thaw overnight in the fridge. To prepare it I rinsed the fillets off in water and patted dry with a paper towel. I seasoned it with a bit of Sea Salt. Then I melted a 1 tablespoon of Blue Bonnet Light Stick Butter down and rubbed the fillets down with it, covering both sides. I then covered both sides, with Zatarain’s Blackening Seasoning. I added Extra Virgin Olive Oil to a Cast Iron Skillet and preheated it until the Oil was almost ready to start smoking and I added the Tilapia. Just a word of warning have your window open and overhead stove fan a working, it will smoke! I cooked the fillet for 3 minutes each side and it was fork tender and ready. I love the smokey and blackened flavor the Zatarain’s Seasoning provides. Served it on a Kroger Whole Wheat Mini Sub Bun.
For a side I baked some Ore Ida Crinkle Fries, served with a side of Hunt’s Ketchup. Also had a Diet Dr. Pepper to drink. For Dessert later a Jello Sugar Free Dark Cherry Jello.

Tilapia is a pretty impressive source of protein. In 3.5 ounces (100 grams), it packs 26 grams of protein and only 128 calories (3). Even more impressive is the amount of vitamins and minerals in this fish. Tilapia is rich in niacin, vitamin B12, phosphorus, selenium and potassium.
Zatarain’s Blackened Seasoning
This spicy seasoning blend is rubbed on the outside of fish (or chicken, steak or other meats) for blackening. Also great as a seasoning rub for the grill or broiler.

SALT, PAPRIKA, CAYENNE PEPPER, BLACK PEPPER, WHITE PEPPER, CHILI POWDER, MONOSODIUM GLUTAMATE, ONION, GARLIC, SPICES.
