Today’s Menu: Panko Crusted Cod Fish Sandwich w/ Baked Crinkle Fries
Just a cup of Bigelow Decaf Green Tea for Breakfast. The hot humid weather has returned! 94 degrees and humid, we do have a slight breeze that helps some. I watered all the plants early this morning before the heat kicked in. In my garden boxes I’ve been able to pick about a quart of Strawberries, many Peppers, and now the Tomatoes are ready! Everything looks good considering the rough weather we had for most of Spring. Later I did a load of laundry and did some cleaning. For dinner tonight I prepared a Panko Crusted Cod Fish Sandwich w/ Baked Crinkle Fries.
I had purchased the Cod from Kroger and had it in the freezer. I laid the Cod in the fridge to thaw overnight. To prepare the Cod I rinsed the fillet off with cold water and patted dry. I then cut the fillet in half. Then seasoned them with McCormick Grinder Sea Salt and Peppercorn Medley. Combined the flour and both Garlic Powder and Onion powder then press both sides of fillet into flour for a light dusting , shaking off any excess flour. Dipped the floured fillets into the Paprika seasoned Egg Beater’s, allowing excess to drip off. Placed the fillets, one at a time, in Panko Bread Crumbs, and lightly toss the fillets until both sides are covered. Meanwhile, heated the Extra Virgin Olive Oil in a skillet and placed the fillets in and cooked 3 minutes each side. Served on a Healthy Life Wheat Burger Bun. I love making Fish Sandwiches with Cod and the Panko Bread Crumbs. Cod cooks up great no matter how you prepare it. Plus it’s a very meaty Fish.
I also baked some Ore Ida Crinkle Fries, served with a side of Hunt’s Ketchup for dipping. For Dessert later a Jello Sugar Free Dark Chocolate Pudding Cup.
Panko Crusted Cod Fish Sandwich
Ingredients:
(4) 4oz. Orange Roughy or Cod Fillets
1c. Panko Bread Crumbs
Sea Salt and Ground Black Pepper, to taste
1 tsp. onion powder
1/2 tsp. garlic powder
1/2 tsp. paprika
1/2 c. Egg Beater’s
1/2 c. Flour
1 Tbs. Extra Virgin Olive Oil
Directions:
* Rinse fillets and pat dry the fillets and season with Sea Salt and Pepper.
* Combine flour and both Garlic Powder and Onion powder then press both sides of fillet into flour for a light dusting , shaking off any excess flour.
* Dip floured fillets into Paprika Seasoned Egg Beater’s, allowing excess to drip off.
* Place fillets, one at a time, in Panko Bread Crumbs and lightly toss fillets until both sides are covered.
* Meanwhile, heat canola oil in skillet and place the fillets in oil and saute 4 minutes each side, or until fillets are heated through and Panko Crust has browned.

Today’s Menu: “Not So Sloppy” Turkey Joes w/ Baked Crinkle Fries
For Breakfast I made my Skillet Potatoes and Diced Ham for Breakfast. I used 1 package of Simply Potatoes Seasoned Diced Potatoes and a package of Kroger Diced Ham to prepare it. Just cook the Potatoes according to the package instructions and with about 5 minutes of cooking time left add the Diced Ham. I topped it with Sargento Off the Block Sharp Cheddar Cheese. Also had my morning cup of Bigelow Decaf Green Tea. 74 degrees, windy and sunny outside. When it rains it pours, as the saying goes! They haven’t been able to find a part to repair Mom’s passenger window that shattered, in the hallway bathroom the toilet was leaking and it turned into an all day job for the repair guy, my Hoveround broke down on me and we’ve been 2 days repairing that, and a couple of little things that went wrong on top of it. Enough is enough! I’m out a lot of money, which takes me a while to save back. None of it wasted money but money spent still the same. I sure hope it turns the other way soon! But we have our health! For dinner tonight it was a Comfort Food Sandwich! I prepared some “Not So Sloppy” Turkey Joes w/ Baked Crinkle Fries.
I used my favorite Sloppy Joe Mix, the Hormel Not-So-Sloppy-Joe Sloppy Joe Sauce. I love this Sauce and it’s ingredients! It’s a nice thick Sauce that’s seasoned just right. Which is why they call it Not So Sloppy, it’s thicker than other Sauces and doesn’t drip as much. The Sauce is seasoned with Spices, Onions, Green Peppers among other ingredients (70 calories and 15 carbs per serving). I’ll also be using Jennie – O Extra Lean Ground Turkey Breast (120 calories per serving) and Healthy Life Wheat Hamburger Buns. I normally use Aunt Millie’s Buns but they were out and I had to use the Healthy Life Buns.
So to prepare it; I started by frying the Ground Turkey. I used a large skillet; sprayed it with Pam Cooking Spray and added a tablespoon of Extra Virgin Olive Oil. Heated it on medium heat. Added the Ground Turkey and seasoned it with Sea Salt, Ground Roasted Cumin, Cilantro Flakes. Stirred and cooked until no longer pink, added the jar of Not So Sloppy Joe sauce. Stirred until heated through. Served on Healthy Life Hamburger Bun. The Sauce combined with the Jennie – O Turkey is a perfect match.
For a side I baked some Ore Ida Crinkle Fries, served with a side of Hunt’s Ketchup. For Dessert later a Jello Sugar Free Dark Cherry Jello. Take Care and Stay Safe Everyone!

Today’s Menu: Pulled Pork Rib Sandwich w/ Baked Fries
For Breakfast I toasted a Thomas Light English Muffin that I topped with Smucker’s Sugar Free Blackberry Jam. I also had a cup of Bigelow Decaf Green Tea. 43 degrees and sunny out today. After Breakfast I took my neighbor to pick his car up at the shop. Back home I got the leaf blower and rake out of the shed. Cleaned off the deck and driveway areas. Then I raked the front yard. There’s so much dead grass right now. For Dinner tonight it’s a Pulled Pork Rib Sandwich w/ Baked Fries.
I used the leftover Pork Back Ribs from last night’s Dinner. I pulled the Meat off the bones and put it in a microwave plate. I reheated it for 80 seconds and it was done! Added some Fat Boys HaugWaush BBQ Sauce to it. I love the Fat Boy Rubs and Sauces! Next I got an Aunt Millie’s Live Carb Smart Hamburger Bun and made my Sandwich. The Rib Meat was delicious! It had marinated all night in the fridge and was mouth-watering!
To go with my Sandwich I baked some Ore Ida Crinkle Fries. Served with some Hunt’s Ketchup for dipping. For Dessert later a Jello Sugar Free Dark Cherry Jello.

Just a cup of Bigelow Decaf Green Tea to start my day off. 52 degrees, windy and sunny outside today. We have 60 degree weather coming for the next 2 days they say! I took Mom for Radiation Treatment, 11 more left! Back home my car had not been run in a while. I tried starting it and it wouldn’t run. A neighbor came over and try charging the battery but still no good. It might be time to retire it. Used cars are so expensive right now, so good timing! For Dinner tonight it’s a Pulled Pork Rib Sandwich w/ Baked Fries.

Today’s Menu: Sweet Italian Turkey Sausage w/ Baked Chili Fries
Started the morning off with a cup of Bigelow Decaf Green Tea. After my Tea I headed off to Meijer. I got there about 8:10 and they were quite busy already. And on top of that they were very short handed of employees, as are most businesses. Found everything I needed and headed out. On the way home I stopped by McDonald’s and picked up Breakfast for Mom. Back home I cleaned off the deck and driveway, a real mess. For Dinner tonight I prepared Sweet Italian Turkey Sausage w/ Baked Chili Fries.
While at Meijer I picked up a package of Jennie – O Turkey Sweet Italian Sausages. These are always so Delicious and so easy to prepare. I pan fried them, using Pam w/ Olive Oil Cooking Spray and no oil needed. Heated the pan on medium and cooked a total of about 14 minutes, turning the Sausages occasionally. They fry up plump and brown, as always Jennie – O Products always have that fresh taste to them. The Sausages have 160 calories and 0 carbs per Sausage. I served them on Aunt Millie’s Live Carb Smart Hot Dog Buns and topped with French’s Spicy Brown Mustard. Love these!
For my Chili Fries I baked some Ore Ida Crinkle Fries. Another easy to prepare and Delicious item. I normally love having Hunt’s Ketchup with them but this time I’m covering them with Chili and Cheese!
For the Chili I’m using some of my 3 Bean Turkey Chili. I had a small container of the Chili in the Freezer. I sat it in the fridge overnight to thaw. I heated it up in a small sauce pan on low until heated through. I then got some of my Fries and topped them with the Chili and Kraft 2% Shredded Sharp Cheddar Cheese. Fries and Chili, love them! For Dessert later a Jello Sugar Free Dark Cherry Jello.

So another inside day here. I cleaned and straightened Mom’s big freezer. Then moved to the Pantry and did the same. Mom is feeling a lot better today, which is good! For Dinner tonight I prepared a BBQ Pulled Buffalo Chuck Roast Sandwich w/ Baked Crinkle Fries.
I’m using the Wild Idea Buffalo Pulled Chuck Roast. I had the package in the freezer so I sat it in the fridge to thaw overnight. The Pulled Chuck Roast is so tender and incredibly flavorful. It comes already cooked and seasoned, so just heat and serve! It’s Seasoned with Organic Apple Cider, Organic Lime Juice, Onion Powder, Cumin, Sea Salt, Black Pepper, Chili Powder, Paprika, Garlic Powder, Oregano, Cayenne Pepper. And that’s why it’s so flavorful! Delicious Pulled Buffalo that you just heat and serve.
I used a small sauce pan that I sprayed with Pam Non Stick Cooking Spray. Added the Buffalo and heated it on medium low until heated through. I served it on a Aunt Millie’s Live Carb Smart Hamburger Bun, the buns are only 50 calories and 2 net carbs per Bun! I topped it with some Jack Daniel’s Honey Smokehouse BBQ Sauce. After Lunch I went and had Mom’s car washed and swept out the inside. Then I stopped by the ATM. Not a lot going on today. Did a little yard work and swept out the shed. For Dinner tonight I prepared a BBQ Pulled Buffalo Chuck Roast Sandwich w/ Baked Crinkle Fries.

Today’s Menu: Panko Crusted Cod Fish Sandwich w/ Baked Crinkle Fries
Just a cup of Bigelow Decaf Green Tea for Breakfast. Partly cloudy, humid and 88 degrees, rain moving in later tonight. Much needed rain. Everything is so dry out, the grass is turning brown. Right after my Tea I went to Menard’s. I picked up a few items I needed. Back home I finished touching up the shutters up with black paint. Later I got the leaf blower out and cleaned off the deck and driveway areas. So for dinner tonight I prepared a Panko Crusted Cod Fish Sandwich w/ Baked Crinkle Fries.
I had purchased the Cod from Kroger and had it in the freezer. I laid the Cod in the fridge to thaw overnight. To prepare the Cod I rinsed the fillet off with cold water and patted dry. I then cut the fillet in half. Then seasoned them with McCormick Grinder Sea Salt and Peppercorn Medley. Combined the flour and both Garlic Powder and Onion powder then press both sides of fillet into flour for a light dusting , shaking off any excess flour. Dipped the floured fillets into the Paprika seasoned Egg Beater’s, allowing excess to drip off. Placed the fillets, one at a time, in Panko Bread Crumbs, and lightly toss the fillets until both sides are covered. Meanwhile, heated the Extra Virgin Olive Oil in a skillet and placed the fillets in and cooked 3 minutes each side. Served on a Healthy Life Wheat Burger Bun. I love making Fish Sandwiches with Cod and the Panko Bread Crumbs. Cod cooks up great no matter how you prepare it. Plus it’s a very meaty Fish.
I also baked some Ore Ida Crinkle Fries, served with a side of Hunt’s Ketchup for dipping. For Dessert later a 90 Calorie Mini Cup of Breyer’s Vanilla Ice Cream Cup.
Panko Crusted Cod Fish Sandwich
(4) 4oz. Orange Roughy or Cod Fillets
1c. Panko Bread Crumbs
Sea Salt and Ground Black Pepper, to taste
1 tsp. onion powder
1/2 tsp. garlic powder
1/2 tsp. paprika
1/2 c. Egg Beater’s
1/2 c. Flour
1 Tbs. Extra Virgin Olive Oil
Directions:
* Rinse fillets and pat dry the fillets and season with Sea Salt and Pepper.
* Combine flour and both Garlic Powder and Onion powder then press both sides of fillet into flour for a light dusting , shaking off any excess flour.
* Dip floured fillets into Paprika Seasoned Egg Beater’s, allowing excess to drip off.
* Place fillets, one at a time, in Panko Bread Crumbs and lightly toss fillets until both sides are covered.
* Meanwhile, heat canola oil in skillet and place the fillets in oil and saute 4 minutes each side, or until fillets are heated through and Panko Crust has browned.

Today’s Menu: BBQ Pulled Buffalo Chuck Roast Sandwich w/ Baked Crinkle Fries
For Breakfast I had my morning cup of Bigelow Decaf Green Tea. 8 degrees, humid and partly cloudy out today. After my Tea I went and had my car washed and swept out the inside. Then stopped by the ATM and on to the local Post Office to drop off some letters (bills) into the mailbox. Next it was on to Walmart, really didn’t need anything it was something to do. That and it’s right down the road from the Post Office. Back home I did a few things outside around the house. For Dinner tonight I prepared a BBQ Pulled Buffalo Chuck Roast Sandwich w/ Baked Crinkle Fries.
I’m using the Wild Idea Buffalo Pulled Chuck Roast. I had the package in the freezer so I sat it in the fridge to thaw overnight. The Pulled Chuck Roast is so tender and incredibly flavorful. It comes already cooked and seasoned, so just heat and serve! It’s Seasoned with, Organic Apple Cider, Organic Lime Juice, Onion Powder, Cumin, Sea Salt, Black Pepper, Chili Powder, Paprika, Garlic Powder, Oregano, Cayenne Pepper. And that’s why it’s so flavorful! Delicious Pulled Buffalo that you just heat and serve.
I used a small sauce pan that I sprayed with Pam Non Stick Cooking Spray. Added the Buffalo and heated it on medium low until heated through. I served it on a Aunt Millie’s Live Carb Smart Hamburger Bun, the buns are only 50 calories and 2 net carbs per Bun! I topped it with some Jack Daniel’s Honey Smokehouse BBQ Sauce. What a sandwich, just incredible flavor! The Wild Idea Buffalo Pulled Buffalo Chuck Roast is so flavorful and tender. It just has such a deep and rich flavor to it. One of my favorites!
For my Fries I’m using Ore Ida Crinkle Cut Fries. Seasoned them with Salt and Pepper. Baked them at 425 degrees for 19 minutes. They are only 90 calories and 10 net carbs. Served them with a side of Hunt’s Ketchup for dipping. For Dessert/Snack later a 100 Calorie Mini Bag of Snyder’s Pretzels with a Diet Dr. Pepper to drink.
