Today’s Menu: BBQ Pulled Buffalo Chuck Roast Sandwich w/ Baked Crinkle Fries

 

For Breakfast it was Skillet Potatoes and Ham for Breakfast. I used 1 package of Simply Potatoes Steakhouse Seasoned Diced Potatoes and a package of Meijer Diced Ham to prepare it. Just cook the Potatoes according to the package instructions and with about 5 minutes of cooking time left add the Diced Ham. I topped it with a sprinkle of Sargento Reduced Fat Cheddar/Jack Cheese. Just love this skillet meal! Cloudy and 84 degrees out there today. I had to have Mom at the Dermatologist at 11:30. Just a follow up to the precancer cells that were on her face. Plus she’s still moving slow from the fall she took on Monday. We stopped by Meijer after the Doctor visit, Meijer just a 1/2 mile down the road. So for Dinner tonight I prepared a BBQ Pulled Buffalo Chuck Roast Sandwich w/ Baked Crinkle Fries.

 

 

 

 

I’m using the Wild Idea Buffalo Pulled Chuck Roast. This is so tender and incredibly flavorful. It comes already cooked and seasoned, so just heat and serve! Seasoned with, Organic Apple Cider, Organic Lime Juice, Onion Powder, Cumin, Sea Salt, Black Pepper, Chili Powder, Paprika, Garlic Powder, Oregano, Cayenne Pepper. And that’s why it’s so flavorful! Delicious Pulled Buffalo that you just heat and serve.

 

 

 

 

 

I used a small sauce pan that I sprayed with Pam Non Stick Cooking Spray. Added the Buffalo and heated it on medium low until heated through. I served it on a Aunt Millie’s Reduced Calorie Whole Grain Hamburger Bun and topped it with some Jack Daniel’s Honey Smokehouse BBQ Sauce. What a sandwich, just incredible flavor! The Wild Idea Buffalo Pulled Buffalo Chuck Roast is so flavorful and tender. It just has such a deep and rich flavor to it.

 

 

 

 

 

For my Fries I’m using Ore Ida Crinkle Cut Fries. Seasoned them with McCormick Grinder Sea Salt and Black Peppercorn Medley. Baked them at 425 degrees for 16 minutes. They bake up beautifully and seasoned just right, excellent Shoestring Fry! Plus they are only 120 calories and 15 net carbs. For Dessert later a Jello Sugar Free Dark Chocolate Pudding topped with Cool Whip Free.

Just a cup of Bigelow Decaf Green Tea for Breakfast, not much of an appetite this morning. More rain and 50 degrees outside today. There is flooding all over this area, the Ohio River is up over its banks. They say no rain tomorrow and I hope they are right we need to dry out around here. Cleaned the house today and did a couple of loads of laundry. Today is Mom’s Birthday, she turns 91! I hope that if I reach her age that I’m as in good as health as her! People see her and how she gets around and they can’t believe she’s 91. Happy Birthday Mom, I love you! For Dinner tonight I heated up the leftover BBQ Pulled Buffalo Chuck Roast . Tonight its BBQ Pulled Buffalo Chuck Roast Sandwich w/ Baked Crinkle Fries.

Today’s Menu: BBQ Pulled Buffalo Chuck Roast Sandwich w/ Baked Crinkle Fries

 

 

For Breakfast on this Sunday Morning I made some Simply Potatoes Shredded Hash Browns, Heated up some Meijer Diced Ham, fried an Egg Sunnyside Up, made a cup of Bigelow Decaf Green Tea. I made a bed of the Hashbrowns in a bow and sprinkled some Sargento Reduced Fat Sharp Cheddar Cheese. Next I put the Diced Ham over top the Hash Browns then put the Sunnyside Up Egg on to top it off! One delicious Breakfast anytime of the week! Its a Wintery Morning out today. We’ve had Rain, Sleet, Snow Flurries, and Freezing Rain. Snowing or raining most of the day. Sort of down and out today, still dealing with my Sinuses. Rested most of the day. So for Dinner tonight I prepared a BBQ Pulled Buffalo Chuck Roast Sandwich w/ Baked Crinkle Fries.

Today’s Menu: “Not So Sloppy” Buffalo Joes w/ Baked Crinkle Fries

 

 

For Breakfast to start this Wednesday off I Poached an Egg and served it on a toasted Thomas Light 100% Multi Grain English Muffin. Had a cup of Bigelow Decaf Green Tea to drink. 48 degrees out today but rain on and off all day. But that’s a good thing, it’s melting the snow! Not a lot going on today so I did a few things around the house and grabbed a push broom and swept the driveway. We used a lot of salt out there due to the ice. For dinner tonight I prepared “Not So Sloppy” Buffalo Joes w/ Baked Crinkle Fries.

 

 

 

 

 

It’s Sloppy Joe Night tonight for dinner! We haven’t had these in a long time, and they really sounded good! A delicious and a super easy meal to make. To make the Sloppy Joes I used a 1 lb. package of Wild Idea Buffalo Ground Round, 1 jar of Hormel Not So Sloppy Joe Sauce, and Aunt Millie’s Reduced Calories Whole GrainHamburger Buns. Using Buffalo, or Bison, instead of Beef will give your Sloppy Joe a deeper and richer flavor.

 

 

 

 

 

Used a large skillet to brown the Buffalo in I seasoned it with Morton’s Salt Substitute, Ground Black Pepper, and Roasted Ground Cumin. After the Buffalo was browned and no longer pink I added the jar of Not So Sloppy Joe Sauce stirring and making sure the Sauce and Buffalo was well mixed. Simmer until it’s warm, and served. I love the Hormel Not So Sloppy Joe Sauce. It’s a good thick sauce well seasoned with Spices, Onions, Green Peppers among other ingredients (70 calories and 15 carbs per serving). I served them on the Kroger Wheat Bun. Another delicious dish using Wild Idea Buffalo. For a side I baked some Ore Ida Crinkle Fries, with a side of Hunt’s Ketchup for the Fries. For dessert later a Jello Sugar Free Dark Chocolate Pudding.

Today’s Menu: Pastrami and Swiss Buffalo Burger w/ Baked Crinkle Fries

 

 

 

To start my morning off I Poached an Egg and served it on a slice of Aunt Millie’s Light Whole Grain Bread. I also heated up a couple of Johnsonville Turkey Breakfast Sausage Links along with a cup of Bigelow Decaf Green Tea. Weather wise its about the same Hot and Humid. They say our hottest days will be Wednesday and Thursday. So after Breakfast I started touching up the shutters outside. Nothing major, just a few places on them needed some paint. I’m having the ramp leading to the Kitchen revarnished Tuesday, my neighbor is doing it for me. Anyway I got everything done outside before it became too hot and humid. For Dinner tonight I tried something new. I prepared a Pastrami and Swiss Buffalo Burger w/ Baked Crinkle Fries.

 

This recipe was inspired from one of the Diners, Drive-Ins, ans Dives, one of my favorite shows! I’ve come across so many recipes watching this show. It’s sort of a strange combo but it looked great on TV and thought I would give it a try. For my Burger I’ll need; the Wild Idea Buffalo 1/3-Lb Buffalo Burger, Boar’s Head Pastrami and Boar’s Head Imported Switzerland Swiss Cheese (That I purchased at Kroger yesterday), French’s Spicy Brown Mustard, and Aunt Millie’s Reduced Calorie Hamburger Buns.

 

 

 

As always I’m using the Wild Idea Buffalo 1/3-Lb Burgers. Just love these Buffalo Burgers; meaty, juicy and just flat out delicious! Preheated up a skillet that I sprayed with Pam Cooking Spray, seasoned my Burger with McCormick Grinder Sea Salt and Black Peppercorn. I then pan fried it about 3 1/2 minutes per side, and done. After I flipped the Burger I added a slice of Swiss Cheese on top.

 

 

 

 

As my Burger was cooking I got a small skillet and sprayed it with Pam Non-Stick Cooking Spray. Then heated the pan on medium heat. With the pan heated I added the Pastrami and heated it up. I flipped several times. I just wanted to warm it up being sure not to over cook it.

 

 

 

 

 

To put the Buffalo Burger together I used a Aunt Millie’s Reduced Calorie Hamburger Bun. I served the Swiss and Buffalo Burger on the Bun. Topped it with Pastrami. I then took the Spicy Brown Mustard and added to the backside of the top Bun., and done! A delicious change of pace for my Wild Idea Burger. As usual the Burger came out a beautiful medium rare. The added Pastrami, Swiss, and Spicy Brown Mustard worked great! Gave it another depth of flavor to an already delicious Burger. I’ll have this again!

 

 

 

I also baked some Ore Ida Crinkle Fries, served these with a side of Hunt’s Ketchup for dipping. For Dessert/Snack later a bowl of Skinny Pop – Pop Corn and a Peach Diet Snapple to drink.

Today’s Menu: Crab Cake Slider w/ Baked Fries

 

 

 

Started my morning off with 2 slices of toasted Aunt Millie’s Light Whole Grain Bread (lightly buttered), 1 medium egg (sunny side up), 2 Jennie – O Turkey Breakfast Sausage Links, and my morning cup of Bigelow Decaf Green Tea. After Breakfast I went to the local Kroger up the road, needed a few items. Stopped by the ATM and got gas before heading back. Rain early then mostly cloudy and 53 degrees out. A friend of mine called and asked if I could pick them up at the Dayton Airport, picked them up at 2:30 this afternoon. Back home not a lot going on. So for dinner tonight it’s Crab Cake Slider w/ Baked Fries.

 

 

I’m using Kroger Private Selection Maryland Style Crab Cakes, my favorite! They come frozen and there’s 2 to a box. To prepare them just preheat the oven on 400 degrees and bake for 30 minutes. Nothing beats a fresh made Crab Cake, but these are too good to be frozen! They’re just the right size, about 3.5 ounces each, and full of flavor. Baked them for about 30 minutes and they were done. Served then on a Pepperidge Farm Wheat Slider Buns. Topped them with Louisiana Remoulade Dressing. This makes one delicious Slider! The taste of the Crab Meat and Remoulade Sauce is perfect together! If you want one flavorful Remoulade Sauce you have to try the LOUISIANA Remoulade Dressing. This sauce is incredible and is good on about anything you put it on!

 

Then I also Baked some Ore Ida Crinkle Fries, with a side of Hunt’s Ketchup for dipping. For dessert later a Weight Watcher’s Cookies and Cream Ice Cream Bar.

Today’s Menu: Blackened Tilapia Sandwich w/ Baked Fries

 

 


For Breakfast this morning Mom wanted some Bacon so this morning I fried up some Bacon. I also fried her an Over Easy Egg, toasted a couple of slices of Bread topped with Apple Butter, and a cup of Coffee. For myself a couple of slices of Bacon, toasted a Healthy Life Whole Grain English Muffin, and my morning cup of Bigelow Decaf Green Tea. A nice day out there today, mostly sunny and 77 degrees. Got the cart out and went around the yard and sprayed for weeds. More weeds this year that I’ve seen in a long time. Did a few other things around the yard and enjoyed the day. For dinner tonight I prepared a Blackened Tilapia Sandwich w/ Baked Fries.

 
I had purchased the Tilapia at Kroger last week and had them in the freezer. Let them thaw overnight in the fridge. To prepare it I rinsed the fillets off in water and patted dry with a paper towel. I seasoned it with a bit of Sea Salt. Then I melted a 1 tablespoon of Blue Bonnet Light Stick Butter down and rubbed the fillets down with it, covering both sides. I then covered both sides, with Zatarain’s Blackening Seasoning. I added Extra Virgin Olive Oil to a Cast Iron Skillet and preheated it until the Oil was almost ready to start smoking and I added the Tilapia. Just a word of warning have your window open and overhead stove fan a working, it will smoke! I cooked the fillet for 3 minutes each side and it was fork tender and ready. I love the smokey and blackened flavor the Zatarain’s Seasoning provides. Served it on a Kroger Whole Wheat Mini Sub Bun.

 


For a side I baked some Ore Ida Crinkle Fries, served with a side of Hunt’s Ketchup. Also had a Diet Dr. Pepper to drink. For dessert later a Jello Sugar Free Dark Chocolate Pudding topped with Cool Whip Free.

 

 

 

 

 

 

 

Zatarain’s Blackened Seasoning

This spicy seasoning blend is rubbed on the outside of fish (or chicken, steak or other meats) for blackening. Also great as a seasoning rub for the grill or broiler.
Ingredients:
SALT, PAPRIKA, CAYENNE PEPPER, BLACK PEPPER, WHITE PEPPER, CHILI POWDER, MONOSODIUM GLUTAMATE, ONION, GARLIC, SPICES.

Today’s Menu: Leftovers – BBQ Pulled Buffalo Chuck Roast Sandwich w/ Baked Crinkle Fries

 

 

For Breakfast this morning I had a bowl of Cherrio’s and later had my morning cup of the always enjoyable Bigelow Decaf Green Tea! After Breakfast I started a couple of loads of laundry for Mom. Outside we had a passing thunderstorm and showers early. Rest of the day mostly cloudy and near 70 degrees. After Lunch I replaced the weather striping on both the front door and back door. Our Spring spraying for Ants and other Crawlers was this morning. We have everything sprayed 4 times a year. Did a few chores around the house until it was time for Dinner. Tonight it’s the always delicious Leftovers! I reheated the BBQ Pulled Buffalo Chuck Roast Sandwich w/ Baked Crinkle Fries.

 

 


No way I was going to let these bad boy of BBQ Sandwiches go to waste! I just put the Leftovers in a small sauce pan on medium heat until heated through. I also baked some more Ore Ida Crinkle Fries, served with Hunt’s Ketchup. For Dessert/Snack later a 100 Calorie Mini Bag of Jolly Time Pop Corn. Below I’ve left part of the original post from last night on prep instructions and details. Enjoy!

 

 

 


Wild Idea Buffalo Chuck Roast. This is so tender and incredibly flavorful. It comes already cooked and seasoned, so just heat and serve! Seasoned with, Organic Apple Cider, Organic Lime Juice, Onion Powder, Cumin, Sea Salt, Black Pepper, Chili Powder, Paprika, Garlic Powder, Oregano, Cayenne Pepper. And that’s why it’s so flavorful! Delicious Pulled Buffalo that you just heat and serve.

 

 

 

 

I served it on a Aunt Millie’s Reduced Calorie Whole Grain Hamburger Bun and topped it with some Jack Daniel’s Honey Smokehouse BBQ Sauce. What a sandwich, just incredible flavor! For a side I baked some Ore Ida Crinkle Fries, served these with a side of Hunt’s Ketchup for dipping. For dessert later a Weight Watcher’s Cookies and cream Ice Cream Bar, so good and only 90 calories!

 

 

 
Wild Idea Buffalo – Pulled Buffalo Chuck Roast

Started my day off with a toasted Healthy Life Whole Grain English Muffin, a Scrambled Egg, 2 Jimmy Dean Turkey Breakfast Sausage Links, and a cup of Bigelow Decaf Green Tea. After Breakfast did some work outside. Got the cart out and went around the house spraying the yard and flower beds for weeds, we have a lot of them this year. Then after Lunch me and Mom had an update meeting with the rehab center. They said there is a possibility that Dad be put in assisted living. It’s a very tough decision, not sure what we are going to do. Back home finished up outside. Nice day out, 80 degrees and mostly sunny. So for Dinner tonight I prepared a BBQ Pulled Buffalo Chuck Roast Sandwich w/ Baked Crinkle Fries.
