Today’s Menu: Sharp Cheddar and Bacon Turkey Burger w/ Baked Fries

 

For Breakfast I Scrambled a couple of Eggs and toasted 2 slices of Aunt Millie’s 1 Carb Wheat Bread. I also had my morning cup of Bigelow Decaf Green Tea. 62 degrees and mostly cloudy today, with rain moving in by evening. They say by 10:00 or so tonight the temperature will drop to the mid 30’s. Then overnight a possible 1″ of wet snow by the morning! It’s an old but true saying, If you don’t like the weather in Ohio just wait a few hours it will change! With the roads and ground fairly warm little to none of the snow will stick, mainly slush. So anyway I got the cart out and got some yard work in. For Dinner tonight its a Sharp Cheddar and Chicken Bacon Turkey Burger w/ Baked Fries.

 

 

So I started by getting a skillet and spraying it with Pam Non Stick Cooking Spray and heating it on medium heat. For the Bacon I’m using al fresco Uncured Chicken Bacon. It fries up perfect with an excellent taste. I buy it at Meijer, it’s the only store I’ve found to carry it. I need 2 slices but fried 5 slices. Always remember when frying Bacon use the Bacon Math. Just decide how many slices you’ll need and double it or so. Because, at least when I fry Bacon, you end up eating as much as you fix as you’re preparing it!

 

 

I had bought a package of the Jennie – O Lean 93% Lean Turkey Burger Patties at Meijer and had them in the freezer. I grabbed a couple of them last night and let it thaw in the fridge overnight. To prepare the Burger I grabbed a skillet, sprayed it with Pam and added 2 teaspoons of Extra Light Olive Oil, heated it on medium heat. When ready I added the Turkey Burger and cooked it for 12 minutes flipping it 3 times. With a minute of cooking time left I added a slice of Kraft Deli Deluxe Sharp Cheddar Cheese. And done!

 

 

Added the Bacon, Lettuce, some Hellman’s Spicy Chipotle Mayonnaise (my favorite Mayo) and served it on a Healthy Life Wheat Bun. Just love these Burgers, juicy and delicious, and with the Sharp Cheddar and Bacon it makes it that much better! I love this Mayo. The Hellman’s Spicy Chipotle Mayonnaise is nice and creamy with excellent flavor, with a little kick to it!

 

 

I also baked some Ore Ida Crinkle Cut Fries. I baked them for 19 minutes and done. Served them with a side of Hunt’s Ketchup. For Dessert/Snack later a 100 Calorie Mini Bag of Snyder’s Pretzels with a Diet Peach Snapple to drink.

Spray skillet with nonstick cooking spray or add 1 to 2 teaspoons of oil. Preheat skillet over medium heat. Place burger patties in hot skillet. Cook approximately 15 to 17 minutes turning occasionally (2-3 times). Always cook to well-done, 165°F. as measured by a meat thermometer.

Today’s Menu: Panko Crusted Orange Roughy Fish Sandwich w/ Baked Fries

 

For Breakfast this morning I had a cup of Bigelow Decaf Green Tea. 66 degrees, partly cloudy and windy out today. Had my Tea and I headed out to Meijer for a few items and I purchased some more outdoor flowers for Mom. I also picked up a new rake and a new battery for my leaf blower. I also drove by Walmart to check out their selections of flowers. Back home got the cart out and did some yard work. For Dinner tonight its a Panko Crusted Orange Roughy Fish Sandwich w/ Baked Fries.

 

I had picked up a couple of Orange Roughy Fillets at Jungle Jim’s International Market a while back and had them in the freezer. I had already rinsed them and had them cut into bun size pieces. To make it I’ll need; the Orange Roughy Fillet, McCormick Grinder Sea Salt and Peppercorn Medley, Flour, Egg Beater’s (1/2 cup), Hungarian Paprika, and Shake and Bake Panko Bread Crumbs. I’ll serve it on a Healthy Life Wheat Hamburger Bun. I first Seasoned the Fillet with the McCormick Grinders of Sea Salt and Peppercorn Medley. Next I seasoned the Flour with the added Hungarian Paprika. Then rolled the Fillet in the Flour, next to the Egg Beater’s, and finally in the Panko Bread Crumbs.

 

I grabbed a skillet, sprayed it with Pam Non Stick Cooking Spray, added 1/2 tablespoon of Extra Light Olive Oil, and heated the skillet on medium heat. With the skillet heated I added my Fillet. I fried it for 3 minutes per side. It fried up perfect! Golden Brown on the outside and a moist center. I served it on the Healthy Life Bun. Orange Roughy has such a good taste to it, it’s a very mild Fish. Makes the perfect Fish Sandwich!

 

As my Orange Roughy was cooking I turned the oven on to 425 degrees and baked my Fries. I used Ore Ida Crinkle Cut Fries. Like all the Ore Ida Products, they are easy to prepare and delicious. I just baked them for 19 minutes and done! Served them with a side of Hunt’s Ketchup. For Dessert later a Jello Sugar Free Dark Cherry Jello.

Today’s Menu: Grilled Buffalo Cheese and Bacon Burger and Baked Fries

 

To start the day off I toasted Thomas Light English Muffin that I topped with some Smucker’s Sugar Free Blackberry Jam. I also had a cup of Bigelow Decaf Green Tea. 79 degrees and mostly sunny out today. Got the cart, rake, leaf blower and grass seed out of the shed. Raked the yard and then took the leaf blower and cleaned off the deck and driveway areas. Then took the blower and got the flower beds. Then finished sowing some grass seed in few spots around the yard. Love getting out in this weather! For Dinner tonight Grilled Buffalo Cheese and Bacon Burger and Baked Fries.

 

For the Buffalo Burger I used my favorite, the Wild Idea Buffalo 1/3-Lb Buffalo Burgers as usual. Their meaty, juicy and just flat out delicious! I had the Burger in the freezer so I laid in the fridge overnight to thaw. Uncovered the grill and cleaned it up. Used a Paper Towel and rubbed it in some Extra Light Olive Oil. Then rubbed the Grill Grate down with it. Then fired up the Grill! Seasoned my Burger with McCormick Grinder Sea Salt and Peppercorn Medley. With the Grill heated I started grilling. I grilled the Buffalo Burger and Brat and Hot Dog for Mom. I grilled the Burger about 3 minutes and flipped it over. After 2 minutes I added a slice of Boar’s Head Yellow Vermont Cheddar and cooked it another 1 minute. Added the al fresco Chicken Bacon that I had prepared earlier and done! Served the Burger on a Healthy Life Wheat Hamburger Bun. The Burger was juicy and delicious, as all the Wild Idea Products are. Just love a good Burger, Buffalo Burger! Plus that added flavor by grilling it.

 

To go with my Burger I prepared some Ore Ida Golden Crinkle Cut French Fries. Like all the Ore Ida Products, they are easy to prepare and delicious. I just baked them for 19 minutes and done! Served them with a side of Hunt’s Ketchup. For Dessert/Snack later a 100 Calorie Mini Bag of Snyder’s Stick Pretzels with a Sprite Zero to drink.

Got the cart out of the shed and raked the front and side yards. Then got the Grass Seed out and spread the seeds around the yard. Kept the cart out and enjoyed this beautiful Sunny Day! Today’s Menu: Grilled Ham and Swiss on Sour Dough Bread w/ Baked Fries

 

For Breakfast this morning I had my morning cup of Bigelow Decaf Green Tea. 68 degrees and nothing but sunshine! Beautiful Day! I went to Kroger after I had my Tea. I just went yesterday and I went to get a slice of Bread and it was molded. So it was off to Kroger. Took a tumble after I got home. I was using my walker and the leg of the walker got caught on the edge of the floor vent. The walker went one way and I went the other, luckily I wasn’t hurt. After that I got the cart out and enjoyed this beautiful day! For Dinner tonight I prepared a Grilled Ham and Swiss on Sourdough Bread w/ Baked Fries.

 

I picked up a loaf of Goldminer California Sourdough Bread at Kroger earlier today. I love this Bread especially grilled! But don’t have too often because of the calories and carbs. To prepare the Sandwich I’ll need; Boar’s Head Sweet Slice Ham, Sargento Reduced Fat Swiss Cheese, French’s Yellow Mustard, Kraft Reduced Fat Mayo w/ Olive Oil, and Goldminer California Sourdough Bread. I used the flat top Griddle to grill it with. I sprayed the griddle with a very light coat of Pam Cooking Spray and spread about 1/2 tablespoon of Blue Bonnet Light Butter on it. Heated it on medium heat. I also turned the oven on at 425 degrees, for the Fries.

 

While the griddle was heating I got the Sandwich ready to grill. Took a slice of the Sour Dough Bread and topped it with some of the Kraft Mayo, the Boar’s Head Ham, the Sargento Swiss, French’s Mustard, and added the top slice of the Sour Dough Bread. I then Buttered the bottom and top halves of the Bread with Blue Bonnet Butter. With the griddle heated I grilled my Sandwich. Grilled the bottom half just over 3 minutes, then flipped it over and grilled the other side about 3 minutes. Until both sides were golden brown! I love these Grilled Sandwiches!

 

I also baked some Ore Ida Crinkle Cut Fries, served with a side of Hunt’s Ketchup. For Dessert/Snack later a 100 Calorie Mini Bag of Snyder’s of Hanover Pretzels with a Diet Peach Snapple to drink.

Today’s Menu: Asiago Cheese Ground Pork Burger w/ Baked Fries

 

 

To start my morning I Scrambled a couple of Eggs, toasted a Thomas Light English Muffin, and made a cup of Bigelow Decaf Green Tea. Mostly cloudy and 66 degrees out today. After my Tea I started a load of laundry and then went to McDonald’s and picked up Breakfast for Mom and stopped by Dunkin Donuts and bought her a couple of Glazed Donuts. Back home home finished up the laundry. I took the brush out of the sweeper and cleaned it and then dusted and ran the vacuum. For Dinner tonight I prepared a Asiago Cheese Ground Pork Burger w/ Baked Fries.

 

I bought a 1 lb. package of Ground Pork at Meijer the other day. With a 1 lb. package of Ground Pork you can easily get 4-5 Burgers. To make them I got a large bowl and added the Pork. I then added all the Spices; Garlic Powder, Onion Powder, Cumin, Mustard Powder, Dried Cilantro Leaves. I mixed the Spices with the Ground Pork until well mixed. Don’t overwork the Pork, you don’t want to break the Pork down. Next just form the Pork Mixture into Burgers. To cook the Burgers I’m using a Cast Iron Skillet. I first sprayed it with Pam Cooking Spray and added 1 tablespoon of Extra Virgin Olive Oil, heated the Skillet on medium heat. When the Skillet was heated up I added my Burgers.

 

After 3 minutes flip the burgers. Continued cooking for 6-8 minutes more. Flipped one more time and cook for another 2 minutes or until cooked through. If you’re adding on Cheese go ahead and do so with about a minute before removing from them pan. I’m using Boar’s Head Asiago Cheese. When cooking Pork Burgers, you want to make sure that they are cooked all the way through. Which means taking them to 160 degrees internally. I served the Burgers on Healthy Life Whole Grain Hamburger Buns. The Burgers were topped with the Boar’s Head Asiago Cheese, and Hellman’s Organic Mayonnaise – Spicy Chipotle. One delicious Burger!

 

To go with the Burger I I also baked some Ore Ida Crinkle Cut Fries, served with a side of Hunt’s Ketchup for dipping. For Dessert/Snack later a 100 Calorie Mini Bag of Snyder’s Pretzels with a Snapple Diet Raspberry/Tea .

Today’s Menu: Panko Crispy Turkey Tenderloins w/ Baked Fries

 

For Breakfast I Scrambled a couple of Eggs, heated up 2 Johnsonville Turkey Sausage Links, toasted a slice of Aunt Millie’s Light Whole Grain Bread and had a cup of Bigelow Decaf Green Tea. Nice way to start the day! 66 degrees and mostly sunny out, still windy. After Breakfast I went to Kroger for a few things for Mom and stopped by McDonald’s and picked up Breakfast for her. Did a little yard work and then later a friend of mine stopped by for a while to catch up a bit. For Dinner tonight I prepared Panko Crispy Turkey Tenderloins w/ Baked Fries.

 

I purchased another package of the JENNIE-O® Extra Lean Boneless Turkey Breast Tenderloins at Meijer. There’s only 120 calories, 1 gram of fat and 0 carbs per serving! I’m preparing them the same way as last time we had them. I had looked around at different recipes and I combined a couple of ideas from a few of them to prepare the Tenderloins. I’m making Panko Crispy Turkey Tenderloins. To make these I’ll be needing 1/3 of a cup Low Fat Buttermilk, 3/4 teaspoon (or more) of Frank’s Hot Sauce, 1/4 teaspoon of Garlic Powder, 1/4 teaspoon Onion Powder, Sea Salt, 1 package of JENNIE-O® Extra Lean Boneless Turkey Breast Tenderloins (sliced into smaller strips), Extra Light Olive Oil for frying, 1 cup All-Purpose Flour, 2 teaspoons Hungarian Paprika, Grinder Black Peppercorn, 2 cups Progresso Panko Breadcrumbs, 1 1/2 tablespoons Chile Powder, and 2 Large Eggs or Egg Beater’s which is what I used.

 

Then to prepare them; You’ll be needing 3 bowls. Whisk the Buttermilk, Hot Sauce, Garlic Powder, Onion Powder, and Sea salt in a small bowl. Place the sliced Turkey in a resealable plastic bag and pour in the Buttermilk Marinade. I refrigerated them for 3 hours.

 

When ready I got a large cast-iron skillet and added3 tablespoons of the Olive Oil to it and heated it on medium heat. As the skillet was heating I put the Flour in a bowl and seasoned it with the Paprika and Sea Salt and Pepper. I then put the Panko in another bowl and season it with the Chile powder and Salt and Pepper. And finally I poured the Egg Beater’s in the last bowl.

 

I removed the Turkey from the Marinade, allowing the excess to drip off. I dredged the Turkey first in the Flour, then in the Egg Beater’s and finally coat them with the Panko. With the cast iron skillet heated I fried the turkey in batches, always being careful not to overcrowd the skillet, until golden brown and an instant read thermometer inserted into the center read 160 degrees. I fried them 3 minutes per side.

 

These came out so delicious! They came out Golden Brown, Tender and so Flavorful. The Spices worked perfect and the Panko Breadcrumbs gave it a fantastic crunch. I served these with some Blue Cheese Dressing for dipping. We have found a new Keeper Recipe! I also baked some Ore Ida Crinkle Cut Fries. Then for Dessert/Snack a 100 Calorie Mini Bag of Snyder’s Pretzels with a Diet Peach Snapple to drink.

Today’s Menu: Buffalo Cheese Burger w/ Baked Fries

 

Just a cup of Bigelow Decaf Green Tea for Breakfast. 46 degrees and sunny out today. ! Went to Wendy’s and picked up Breakfast for Mom. After Lunch I went to a few of the Used Car lots here in West Chester. I’m looking for a new/used car. Not sure on which one I’m going with. I would like a SUV or a Jeep model, something I can get my wheelchair in and out easier than a car. Just taking my time. For Dinner tonight I prepared a 4oz. Buffalo Cheese Burger and Baked Fries.

 

As always when it’s a Buffalo Burger I’m using the Wild Idea Buffalo Burger Patties. I’m having the new 4 oz. Possible Burger. Same great taste and quality but these are 4 oz. Just love all the Buffalo Burgers; meaty, juicy and just flat out delicious! Preheated up a skillet that I sprayed with Pam Cooking Spray and 1/2 tablespoon of Extra Light Olive Oil, seasoned my Burger with the Wild Idea Omnivore Salt. I then pan fried it about 3 minutes per side, and done. After I flipped the Burger I added a slice of Kraft Deli Style Sharp Cheddar Cheese. I’m serving it on a Healthy Life Wheat Hamburger Bun. This is the 2nd time having these, they are a smaller Burger but seem even juicer!

 

I also baked some Ore Ida Crinkle Cut Fries, served these with a side of Hunt’s Ketchup for dipping. For Dessert/Snack later a 100 Calorie Mini Bag of Snyder’s of Pretzels along with a Sprite Free to drink.

Panko Crusted Orange Roughy Fish Sandwich w/ Baked Fries

For Breakfast this morning I toasted  Thomas Light English Muffin that I topped with Smucker’s Sugar Free Blackberry Jam and had a cup of Bigelow Decaf Green Tea. Cold and windy out this morning. We had a high of 42 degrees but the wind chill was in the low 30’s all day. I gathered some canned goods from the pantry and in the kitchen that we don’t need or use. I took them over to the local Food Bank and dropped them off. On the way back I stopped by my Cousin’s house for a short visit. Back home did a few chores around the house. For Dinner tonight its a Panko Crusted Orange Roughy Fish Sandwich w/ Baked Fries.

 

I had picked up a couple of Orange Roughy Fillets at Jungle Jim’s International Market last week. I rinsed the fillets off in cold water and then sliced the fillets into sandwich size slices, and had them in the freezer. I sat a fillet in the fridge overnight to thaw. To make it I’ll need; the Orange Roughy Fillet, McCormick Grinder Sea Salt and Peppercorn Medley, Flour, Egg Beater’s (1/2 cup), Hungarian Paprika, and Shake and Bake Panko Bread Crumbs. I’ll serve it on a Healthy Life Wheat Hamburger Bun. I first Seasoned the Fillet with the McCormick Grinders of Sea Salt and Peppercorn Medley. Next I seasoned the Flour with the added Hungarian Paprika. Then rolled the Fillet in the Flour, next to the Egg Beater’s, and finally in the Panko Bread Crumbs.

 

I grabbed a skillet, sprayed it with Pam Non Stick Cooking Spray, added 1/2 tablespoon of Extra Light Olive Oil, and heated the skillet on medium heat. With the skillet heated I added my Fillet. I fried it for 3 minutes per side. It fried up perfect! Golden Brown on the outside and a moist center. I served it on the Healthy Life Bun. Orange Roughy has such a good taste to it, it’s a very mild Fish. Makes the perfect Fish Sandwich!

 

As my Orange Roughy was cooking I turned the oven on to 425 degrees and baked my Fries. I used Ore Ida Crinkle Cut Fries. Like all the Ore Ida Products, they are easy to prepare and delicious. I just baked them for 19 minutes and done! Served them with a side of Hunt’s Ketchup. For Dessert later a bowl of Breyer’s Carb Smart Chocolate Ice Cream.

Today’s Menu: Sharp Cheddar and Bacon Turkey Burger w/ Baked Fries

 

To start my day off I had a cup of Bigelow Decaf Green Tea. 20 degrees out this morning, but no new snow overnight! First time in a while. I had to have Mom out to Ross, Ohio for her 2nd Covid Virus Vaccine shot. Her appointment was at 10:00 but we got there at 9:15 so she could get in line early. Good thing we did as the line later stretched through the store! I waited outside and there was just a steady stream of people going in. All were elderly so there was a lot of canes, walkers and wheelchairs. So glad that the elderly are getting theirs finally. So for Dinner tonight its a Sharp Cheddar and Chicken Bacon Turkey Burger w/ Baked Fries.

 

So I started by getting a skillet and spraying it with Pam Non Stick Cooking Spray and heating it on medium heat. For the Bacon I’m using al fresco Uncured Chicken Bacon. It fries up perfect with an excellent taste. I buy it at Meijer, it’s the only store I’ve found to carry it. I need 2 slices but fried 5 slices. Always remember when frying Bacon use the Bacon Math. Just decide how many slices you’ll need and double it or so. Because, at least when I fry Bacon, you end up eating as much as you fix as you’re preparing it!

 

I had bought a package of the Jennie – O Lean 93% Lean Turkey Burger Patties at Meijer and had them in the freezer. I grabbed a couple of them last night and let it thaw in the fridge overnight. To prepare the Burger I grabbed a skillet sprayed it the Pam and added 2 teaspoons of Extra Light Olive Oil, heated it on medium heat. When ready I added the Turkey Burger and cooked it for 14 minutes flipping it several times. With a minute of cooking time left I added a slice of Kraft Deli Deluxe Sharp Cheddar Cheese. And done!

 

Added the Bacon, Lettuce, some Hellman’s Spicy Chipotle Mayonnaise and served it on a Healthy Life Wheat Bun. Just love these Burgers, juicy and delicious, and with the Sharp Cheddar and Bacon it makes it that much better! I love this Mayo, you have to try it! I tried the Hellman’s Spicy Chipotle Mayonnaise on the last Turkey Burger and loved it! It’s nice and Creamy with excellent flavor and a nice little kick to it!

 

 

 

I also baked some Ore Ida Crinkle Cut Fries. I just baked them for 19 minutes and done! Served them with a side of Hunt’s Ketchup. For Dessert later a Jello Sugar Free Dark Chocolate Pudding.
