Today’s Menu: Panko Crusted Orange Roughy Fish Sandwich w/ Baked Fries

 

 

For Breakfast this morning I Scrambled a couple of Eggs and toasted a couple of slices of Aunt Millie’s Light Whole Grain Bread that I topped with I Can’t Believe It’s Not Butter. Also had a cup of Bigelow Decaf Green Tea. Partly cloudy and 67 degrees out, rain moving in for tomorrow. Had to go to Home Depot after Breakfast and then stopped and picked up Breakfast for Mom at McDonald’s. Back home more raking, trying to keep pace with all the leaves that are falling. Full time job raking! For Dinner tonight its a Panko Crusted Orange Roughy Fish Sandwich w/ Baked Fries.

 

 

I had picked up a couple of Orange Roughy Fillet at Jungle Jim’s International Market a while back and had it in the freezer. I sat the bag in the fridge overnight to thaw. To make it I’ll need; the Orange Roughy Fillet, McCormick Grinder Sea Salt and Peppercorn Medley, Flour, Egg Beater’s (1/2 cup), Hungarian Paprika, and Shake and Bake Panko Bread Crumbs. I’ll serve it on a Aunt Millie’s Reduced Calorie Whole Grain Hamburger Bun. I first Seasoned the Fillet with the McCormick Grinders of Sea Salt and Peppercorn Medley. Next I seasoned the Flour with the added Hungarian Paprika. Then rolled the Fillet in the Flour, next to the Egg Beater’s, and finally in the Panko Bread Crumbs.

 

 

I grabbed a skillet, sprayed it with Pam Non Stick Cooking Spray, added 1/2 tablespoon of Extra Light Olive Oil, and heated the skillet on medium heat. With the skillet heated I added my Fillet. I fried it for 3 minutes per side. It fried up perfect! Golden Brown on the outside and a moist center. I served it on the Aunt Millie’s Bun. Orange Roughy has such a good taste to it, it’s a very mild Fish. Makes the perfect Fish Sandwich!

 

 

 

 

As my Orange Roughy was cooking I turned the oven up to 425 degrees and baked my Fries. I used Ore Ida Crinkle Cut Fries. Like all the Ore Ida Products, they are easy to prepare and delicious. I just baked them for 19 minutes and done! Served them with a side of Hunt’s Ketchup. For Dessert/Snack later a bowl of Skinny Pop – Pop Corn and a Diet Peach Snapple to drink.

For Breakfast this morning I had a Jimmy Dean Simple Scramble Cup – Crumbled Turkey Sausage, Egg White, and Shredded Cheddar Cheese. Passing showers and 63 degrees out today. A whole lot of flooding in the area, way too much rain! After Breakfast I went to Kroger for a couple of items and then to McDonald’s to pick up Breakfast for Mom. Finished a couple of things around the house then I had to go to Walgreens to pick up a prescription for Mom. Caught up on some shows I had recorded the rest of the afternoon. For Dinner tonight its a Panko Crusted Orange Roughy Fish Sandwich w/ Baked Fries.

For Breakfast this morning it was Gravy, Toast, and Sausage. I made the gravy using a packet of Pioneer Peppered White Gravy. As that cooking I toasted a couple of slices of Aunt Millie’s Light Whole Grain Bread. I also heated up a couple of Johnsonville Turkey Breakfast Sausage Links. One Comfort Food Breakfast to start morning off. After Breakfast I went to Kroger for a couple of items and then to McDonald’s to pick up Breakfast for Mom. Finished a couple of things around the house then I had to go to Walgreens to pick up a prescription and some stamps. Caught up on some shows I had recorded the rest of the afternoon. I sliced the Fillet in 1/2, rinsed them in cold water, and put them in Hefty Plastic Freezer Bags and froze them. So I put 1 of them in the fridge overnight to thaw. To make it I’ll need; the Orange Roughy Fillet, McCormick Grinder Sea Salt and Peppercorn Medley, Flour, Egg Beater’s (1/2 cup), Hungarian Paprika, and Shake and Bake Panko Bread Crumbs. For Breakfast this morning I prepared a Breakfast Sandwich. I toasted a Thomas Light 100 Calorie Multi Grain English Muffin. Then I lightly fried some slices of Boar’s Head Sweet Slice Ham, Scrambled some Egg Beater’s Egg Whites, and topped it all with a 1/2 slice of Boar’s Head Longhorn Colby Cheese. Also had my morning cup of Bigelow Decaf Green Tea. Sunny, 86 degrees, and not quite as humid out today. So good to see the sunshine again! After I had Breakfast I went to McDonald’s and picked up Breakfast for her. She went on to Church afterward. I stayed home and did a load of laundry. Then got the cart out of the shed and did some yard work this afternoon. Feels great to get out. For Dinner tonight a Fish Sandwich! Today’s Menu: Orange Roughy Fish Hoagie w/ Baked Potato

 

 

It was Gravy and Toast this morning for Breakfast. I prepared a packet of Pioneer Peppered White Gravy and toasted a couple slices of Aunt Millie’s Whole Grain Bread. Also had a cup of my favorite Tea, Bigelow Decaf Green Tea. Warmer and a little more humid out today. A little more like our normal June/July weather. Did a couple of loads of laundry and then off to Walmart for a few items. Stopped and had the car washed on the way back home. Other than that not much else going on. For Dinner tonight an Orange Roughy Fish Hoagie w/ Baked Potato.

 

 

I had picked up the Orange Roughy at Kroger a while back and had a fillet left in the freezer. I normally don’t purchase Orange Roughy due to its sustainability classification. But it was in the case already packaged and I grabbed it. So to make it I’ll need; the Orange Roughy Fillet, McCormick Grinder Sea Salt and Peppercorn Medley, Flour, egg Beater’s (1/2 cup), Paprika, and Shake and Bake Panko Bread Crumbs. I’ll also need McCormick Tarter Sauce and Kroger 100% Whole Wheat Hoagie Roll.

 

 

I had laid the Roughy in the fridge overnight to thaw. To prepare it I first rinsed the fillet off in cold water and patted dry with a paper towel. I then grabbed a skillet and sprayed it with Pam Cooking Spray and added a tablespoon of Extra Light Olive Oil. Then preheated the skillet on medium heat. Back to the fillet, I seasoned both sides of the fillet with McCormick Grinder Sea Salt and Peppercorn Medley. Then in a pie pan I added some Flour and seasoned it with some Paprika. Rolled the Roughy in the Flour till it was completely covered. Next in another pie pan I added a 1/2 cup of Egg Beater’s and dipped the fillets in the Egg Wash, shaking off the excess. Finally the third pie pan, I added a package of Shake and Bake Panko Seasoned Bread Crumbs to it and put the fillet in, making sure the fillet was well covered.

 

With the skillet heated I added my fillets. I then fried it for 3 minutes per side. It fried up perfect! Golden Brown on the outside and a moist center. I served it on a Kroger Whole Grain Hoagie Roll. Topped the Roughy fillet with some McCormick Tarter Sauce. Orange Roughy makes a perfect Fish Sandwich. Fries up great and an excellent taste to it.

 

 

 

For a side I prepared a Russet Baked Potato. Seasoned that with the McCormick Grinder Sea Salt and Peppercorn Medley, and topped with I Can’t Believe It’s Not Butter. For Dessert later a Weight Watcher’s Cookies and Cream Ice Cream Bar.

Today’s Menu: Orange Roughy Fish Hoagie w/ Baked Potato

 

 

I picked up the Orange Roughy while at Kroger yesterday and decided to have it as a Fish Sandwich. I normally don’t purchase Orange Roughy due to its sustainability classification. But it was in the case already packaged and I grabbed it. So to make it I’ll need; the Orange Roughy Fillet, Morton’s Lite salt and Black Ground Pepper, and Progresso Italian Style Bread Crumbs. I’ll also need McCormick Tarter Sauce, Bib Lettuce, and Kroger 100% Whole Wheat Hoagie Roll.

 

 

 

To prepare it I first rinsed the fillet off in cold water and patted dry with a paper towel. I then grabbed a skillet and sprayed it with Pam Cooking Spray and added a tablespoon of Extra Light Olive Oil. Then preheated the skillet on medium heat. Back to the fillet, I seasoned both sides of the fillet with salt and pepper. Next I took a pie pan and added some of the Progresso Italian Style Bread crumbs to it and put the fillet in, making sure all sides were well covered.

 

 

 

With the skillet heated I added my fillet. I then fried it for 3 minutes per side. It fried up perfect! Golden Brown on the outside and a moist center. I then got one of the Hoagie Rolls and laid a couple of the Bib Lettuce Leaves on the bottom bun, then the Orange Roughy Fillet, then got the Tarter sauce and spread it on the bottom of the top bun and it was ready! Orange Roughy makes a perfect Fish Sandwich. Fries up great and an excellent taste to it.

 

 

 

 

 

 

For a side I prepared a Baked Potato. Seasoned that with the McCormick Grinder Sea Salt and Peppercorn Medley, and topped with I Can’t Believe It’s Not Butter. For Dessert later a Weight Watcher’s Cookies and Cream Ice Cream Bar. See everyone tomorrow!

A Creole-seasoned vegetable sauce melds flavors with orange roughy in this Bayou-style country dish.

Recipe Ingredients:

2 tablespoons butter or margarine Cooksrecipes 2
2 tablespoons all-purpose flour
3/4 cup chopped peeled onion
1 tablespoon chopped seeded green bell pepper
2 cloves garlic, crushed
1 cup canned tomato sauce
2 tablespoons chopped fresh flat-leaf parsley
1 whole bay leaf
1/4 teaspoon crushed dried thyme
1 teaspoon salt
1/4 teaspoon ground black pepper
2 cups hot water
3 pounds orange roughy fillets*

Cooking Directions:

* Preheat oven to 350°F (175°C).

* Melt butter over medium-low heat in large, heavy skillet; sauté onion, green pepper and garlic, until soft, about 5 minutes. Add flour and mix well; continue cooking, stirring often, until flour has browned a bit, about 1 minute.

* Add tomato sauce, parsley, bay leaf, thyme, salt and pepper. Gradually stir in hot water. Cover and cook over low heat for 30 minutes.

* Arrange fish in shallow baking pan; cover with sauce.

* Bake for 25 to 30 minutes. Remove bay leaf prior to serving.

Makes 6 servings.

The morning started of above freezing, but still a cold breeze blowing. Not a bad day out though. After Breakfast I headed to Kroger and while there picked up a small Christmas Pine Tree. From Kroger to Meijer and finished up my Christmas Shopping for the season! For Dinner tonight it’s a Panko Crusted Orange Roughy Fish Sandwich w/ Baked Fries.

Kroger had Orange Roughy on sale so I picked up a fillet for Dinner tonight. To prepare the Orange Roughy Fillet; start by rinsing the fillet off in cold water and pat dry with a paper towel. Then season it with Sea Salt and Pepper. Combine flour and Hungarian Sweet Paprika mix well, then press both sides of fillet into flour for a light dusting , shaking off any excess flour. Dip floured fillet into Egg Beater’s, allowing excess to drip off. Then roll the fillets in the Shake and Bake Seasoned Panko. Meanwhile, heat a tablespoon of Extra Virgin Olive Oil in skillet and place the fillets in the oil and fry 4 minutes each side. It comes out a beautiful golden brown on the outside and a moist flavorful fillet on the inside! This breading will work well with almost all Fish. I served it on a Kroger Private Selection Onion Roll Bun, haven’t had this Buns in forever!

 

 

To go with my Fish Sandwich I baked up some Ore Ida Simply Cracked Black Pepper and Sea Salt Country Style Fries. Love Potatoes and love these fries! For dessert later a Healthy Choice Dark Fudge Swirl Frozen Greek Yogurt.

Ingredients:

(4) 4 oz. Orange Roughy Fillets
1c. Panko Italian Style Bread Crumbs
Sea Salt and Ground Black Pepper, to taste
1/2 tsp. Hungarian Sweet Paprika
1/2 c. Egg Beater’s
1/2 c. Flour
1 Package of Shake and Bake Seasoned Panko Bread Crumbs.
1 1/2 Tbs. Extra Virgin Olive Oil
Directions:

* Rinse fillets and pat dry the fillets and season with Sea Salt and Pepper.
* Combine flour and paprika then press both sides of fillet into flour for a light dusting , shaking off any excess flour.
* Dip floured fillets into Egg Beater’s, allowing excess to drip off.
*Roll fillets in the Panko Bread Crumbs making sure all sides are covered.
* Meanwhile, heat Olive Oil in skillet and place the fillets in oil and saute 4 minutes each side, or until fillets are heated through and Panko Crust has browned.

Our first big chill of the season, about 38 degrees this morning. Had to get up during the night and turn the heat on. Made a Breakfast Burrito this morning for Breakfast. Made of 1 Scrambled Egg, two diced Jennie – O Turkey Sausage links, a dab of Daisy Reduced Fat Sour Cream, Sargento Reduced Fat Shredded Sharp Cheddar Cheese, and a Low Carb Whole Grain Tortilla. Then it was an afternoon of NFL Football! For dinner tonight it’s a Panko Crusted Orange Roughy Fish Sandwich w/ Baked Fries.

I had the Orange Roughy in the freezer so I let it thaw in the fridge overnight. To prepare the Orange Roughy Fillet; start by rinsing the fillet off in cold water and pat dry with a paper towel. Then season it with Sea Salt and Pepper. Combine flour and Hungarian Sweet Paprika mix well, then press both sides of fillet into flour for a light dusting , shaking off any excess flour. Dip floured fillet into Egg Beater’s, allowing excess to drip off. Then roll the fillets in the Shake and Bake Seasoned Panko. Meanwhile, heat a tablespoon of Extra Virgin Olive Oil in skillet and place the fillets in the oil and fry 4 minutes each side. It comes out a beautiful golden brown on the outside and a moist flavorful fillet on the inside! This breading will work well with almost all Fish. I served it on a Healthy Life Whole Grain Bun.

 

 

 

 

To go with my Fish Sandwich I baked up some Ore Ida Simply Cracked Black Pepper and Sea Salt Country Style Fries. Love Potatoes and love these fries! For dessert later a Healthy Choice Dark Fudge Swirl Frozen Greek Yogurt.

 

 

 
Orange Roughy with PankoPanko orange Roughy 001

Ingredients:

(4) 4 oz. Orange Roughy Fillets
1c. Panko Italian Style Bread Crumbs
Sea Salt and Ground Black Pepper, to taste
1/2 tsp. Hungarian Sweet Paprika
1/2 c. Egg Beater’s
1/2 c. Flour
1 Package of Shake and Bake Seasoned Panko Bread Crumbs.
1 1/2 Tbs. Extra Virgin Olive Oil
Directions:

* Rinse fillets and pat dry the fillets and season with Sea Salt and Pepper.
* Combine flour and paprika then press both sides of fillet into flour for a light dusting , shaking off any excess flour.
* Dip floured fillets into Egg Beater’s, allowing excess to drip off.
*Roll fillets in the Panko Bread Crumbs making sure all sides are covered.
* Meanwhile, heat Olive Oil in skillet and place the fillets in oil and saute 4 minutes each side, or until fillets are heated through and Panko Crust has browned.

Today’s Menu: Panko Crusted Orange Roughy Fish Sandwich w/ Baked Fries

Started the day off with one of my favorites, Glier’s Turkey Goetta! I had the Turkey Goetta along with a couple of buttered slices of Healthy Life Whole Grain Bread and a cup of fresh brewed Bigelow Decaf Green Tea. It was cloudy and a lot more humid outside today. Had a brief shower in the afternoon, a very light one. Not much going on today, did a load of laundry and cleaned the house. For dinner tonight it’s a Panko Crusted Orange Roughy Fish Sandwich w/ Baked Fries.

 

 

 

To prepare the Orange Roughy Fillets rinse fillets and pat dry fillets and season with Sea Salt and Pepper. Combine flour and Hungarian Sweet Paprika mix well, then press both sides of fillet into flour for a light dusting , shaking off any excess flour. Dip floured fillets into Egg Beater’s, allowing excess to drip off. Then roll the fillets in the Shake and Bake Seasoned Panko. Meanwhile, heat a tablespoon of Extra Virgin Olive Oil in skillet and place the fillets in the oil and fry 4 minutes each side. It comes out a beautiful golden brown on the outside and a moist flavorful fillet on the inside!
