Today’s Menu: Ancient Grain Mini Naan Bread Pizza – Turkey Pepperoni and Turkey Sausage

 

 

 

 

For Breakfast this morning I made a Ham and Cheese Egg White Omelette. I used Meijer Diced Ham, Sagento Off the Block Shredded Mozzarella, Egg Beater’s Egg Whites, Ortega Smoked Chipotle Taco Sauce. I topped the Omelette with the Taco Sauce and a sprinkle of the Cheese. I also had a slice of Aunt Millie’s Light Whole Grain Bread and a cup of Bigelow Decaf Green Tea. 48 degrees and cloudy all day. After I had Breakfast I went to McDonald’s and picked up Breakfast for Mom, she loves those Golden Arches Breakfast Sandwiches. Back home did a few things around the house. Cleaned and straightened the pantry and replaced the brushes on the vacuum. For Dinner tonight; Ancient Grain Mini Naan Bread Pizza – Turkey Pepperoni and  Turkey Sausage.

 

 

 

 

I had not had the Pizza that I made using Naan Bread in a while so I picked up a package of Stonefire Mini Naan Ancient Grain Bread and Jennie – O Turkey Lean Turkey Sausage at Meijer my last visit there. For my toppings for the Pizza I’m using Hormel Turkey Pepperoni, Jennie – O Lean Turkey Sausage, Black Olives, Green Olives, Oscar Mayer Hickory Smoked Bacon Bits, Sargento Shredded Mozzarella Cheese, and Ragu Traditional Pizza Sauce.

 

 

 

 

 

 

I first Preheated the oven on 400 degrees. Next I grabbed a small skillet, sprayed it with Pam No Stick Cooking Spray, and heated it on medium heat. As the skillet was heating I opened up a roll of the Jennie – O Lean Turkey Sausage. I cut off a slice of it and crumbled up. Added it to the heated skillet and fried Sausage Crumbles. When they were browned and heated through removed them from the skillet into a small bowl until ready to use.

 

 

 

 

 

When the Bread cooled I added the toppings on top. I started with the Ragu Pizza Sauce. Next slices of Hormel Turkey Pepperoni. Then the Jennie – O Turkey Sausage Crumbles, next the Black and Green Sliced Olives, Oscar Mayer Bacon Bits, and finally the Sargento Shredded Mozzarella Cheese. Slid the baking sheet back into the oven to bake.

 

 

 

 

 

 

I baked the Naan Bread Pizzas for about 8 minutes, until the ingredients had heated through and Cheese melted. Pulled the baking sheet from the oven and let the Pizzas cool for 3 minutes. With the first bite I knew the Naan Bread was a perfect Pizza Crust! The Crust had excellent taste and baked up perfect. Then with all my toppings had some great Pizzas. Plus a lot fewer calories and carbs than normal Pizza Pies. I’ll have to get a couple of packs of the Stonefire Mini Naan Ancient Grain Bread and keep them in the freezer. For Dessert/Snack later a bowl of Skinny Pop – Pop Corn and a Diet Dr. Pepper to drink.

Today’s Menu: Turkey Tacos and Refried Beans

 


For Breakfast this morning I Scrambled a Couple of Eggs, toasted a couple of slices of Aunt Millie’s Light Whole Grain Bread, and had my morning cup of Bigelow Decaf Green Tea. Cloudy and 54 degrees, rain moved in toward evening. I was out a couple of items for tonight’s Dinner so I went to Meijer and picked them up. Stopped by the Post Office, ATM, and McDonald’s to pick up Breakfast for Mom before heading home. Got the leaf blower out and cleaned off the deck and driveway areas. Then it was taking down and storing the Christmas Decorations. For Dinner tonight it’s Turkey Tacos and Refried Beans.

 

 

 


No more Holiday Food or Menus for a while! Me and Mom both are tired of the Holiday Food and ready to get back to everyday Food! So why not start with Turkey Tacos. We love our Turkey Tacos, great Comfort food for us! When making Turkey Tacos I always use Jennie -O Extra Lean Ground Turkey Breast! Love all the Jennie -O Turkey Products, always fresh and low calorie and low carb. But Jennie -O Products are difficult to find in this area. Meijer is the only place that now carries it, and they have an okay selection of it. So I started by frying the Ground Turkey till it was no longer pink in Extra Light Olive Oil and seasoning it with Sea Salt, Ground Roasted Cumin, Cilantro Flakes. As the Turkey was finishing cooking I added, 1 can OF Bush’s Chili Beans – Black Beans, 1 package of Old El Paso Low Sodium Taco Seasoning and 2/3 cup Water, continued to cook and stir for an additional 6 minutes. Jennie -O, Bush’s Beans, and Old El Paso together make one fine Taco!

 

 


For the rest of my toppings I used; Sargento Reduced Fat 4 Cheese Mexican, Sliced Black Olives, Sliced Green Olives, Ortega Smoky Chipotle Taco Sauce, Sliced Jalapenos, and Shredded Lettuce. For my Taco Shells I used the Old El Paso Stand N’ Stuff Taco Shells (Whole Grain Corn). Add the Jennie – O Turkey and you got you some mouth watering and delicious Tacos! Love these Taco Nights. I also heated up a can of Old El Paso Fat Free Refried Beans for a side for Mom. For Dessert/Snack later a bowl of Skinny Pop – Pop Corn and a Coke Zero to drink.

Today’s Menu: Ancient Grain Mini Naan Bread Turkey Pepperoni and Turkey Sausage Pizza

 

 

Tried a new recipe for Breakfast this morning, Baked Diced Potato Breakfast Skillet. I prepare Diced Potatoes and Ham Skillet but never this way. I preheat the oven on 400 degrees. I used the Cast Iron Skillet and prepared a package of Simply Potatoes Steak House Seasoned Diced Potatoes. Cooked them for 16 minutes, flipping them over several times. Removed the Skillet from the heat. Then with the back of a spoon, made 2 indention in the potatoes and cracked an egg into each well. Baked at 400 degrees for 11 minutes until egg whites were completely set and yolks begin to thicken but are not hard. Took it out of the oven and sprinkled with Sargento Reduced Fat Shredded Sharp Cheddar Cheese. Put it back in the oven and baked it 1 minute longer until the cheese was melted. It came out delicious! Mom even had it instead of her usual McDonald’s.

 

 

 

 

It’s 51 degrees and partly cloudy out today. Great weather to be late December! I seen the long range forecast and most days are in the 40’s and 50’s. Hopefully they are right. Cleaned the house this afternoon, dusted and ran the vacuumed. For Dinner tonight; Ancient Grain Mini Naan Bread Pizza – Turkey Pepperoni and Lean Turkey Sausage.

The oven was heated up and I got the Naan Bread ready. I used a small baking sheet, lined it with foil, and sprayed it Pam Cooking Spray. I lined the 4 Naan Breads up on the baking sheet. I then brushed a light coat of Extra Virgin Olive oil on the top of them. I then baked then for about 2 minutes. Pulled the sheet out of the oven and let the Naan Bread cool for 5 minutes.

 

 

 

 

 


When the Bread cooled I added the toppings on top. I started with the Ragu Pizza Sauce. Next slices of Hormel Turkey Pepperoni. Then the Jennie – O Turkey Sausage Crumbles, next the Black and Green Sliced Olives, Oscar Mayer Bacon Bits, and finally the Sargento Shredded Mozzarella Cheese. The Naan Bread is 150 calories and 21 net carbs per serving which is 1 Naan Bread. Mom really enjoyed them, so its Parent Approved! Mortadella Bologna

Mortadella (Italian pronunciation: [mortaˈdɛlla]) is a large Italian sausage or luncheon meat (salume [saˈluːme]) made of finely hashed or ground, heat-cured pork, which incorporates at least 15% small cubes of pork fat (principally the hard fat from the neck of the pig). Mortadella is a product of Bologna, Italy. It is flavored with spices, including whole or ground black pepper, myrtle berries, and pistachios.

Traditionally, the pork filling was ground to a paste using a large mortar (mortaio [morˈtaːjo]) and pestle. Two Roman funerary steles in the archaeological museum of Bologna show such mortars. Alternatively, according to Cortelazzo and Zolli Dizionario Etimologico della Lingua Italiana 1979-88, mortadella derives its name from a Roman sausage flavored with myrtle in place of pepper.

The Romans called the sausage farcimen mirtatum (myrtle sausage), because the sausage was flavored with myrtle berries, a popular spice before pepper became available to European markets. Anna Del Conte (The Gastronomy of Italy 2001) found a sausage mentioned in a document of the official body of meat preservers in Bologna dated 1376 that may be mortadella.

Mortadella originated in Bologna, the capital of Emilia-Romagna; elsewhere in Italy it may be made either in the Bolognese manner or in a distinctively local style. The mortadella of Prato is a

Tuscan speciality flavored with pounded garlic and colored with alchermes. The mortadella of Amatrice, high in the Apennines of northern Lazio, is unusual in being lightly smoked. Because it originated in Bologna, this contributed to the naming of the American sausage meat “bologna”.

Mortadella is very popular in Spain and Portugal, where a variety with pepper and olives is widely consumed, especially in sandwiches. In eastern Spain, the standard mortadella is often referred to as mortadela italiana (Italian mortadella), to differentiate it from a local variant named catalana.

Mortadella is also very popular in Argentina, Bolivia, Peru, Brazil, Ecuador, Chile, Colombia, Uruguay and Venezuela, thanks to the Italian immigrants who settled in these countries in the early 20th century. In these countries it is spelled mortadela, and its recipe is quite similar to the traditional Italian, with additional pepper grains.

In Brazil, São Paulo has a very popular mortadela sandwich sold in the Mercado Municipal.

In Puerto Rico, “smoked mortadella” is sometimes confused with commercial salami, or with salami cotto, because cafeterias, panaderias, colmados, and restaurants buy the bulk of whole smoked mortadella. While salami may contain pork, beef, veal and small pieces of fat uniformly distributed within the sausage, mortadella has the traditional larger chunks not so uniformly distributed. Its diameter is much larger than that of hard salami and more closely resembles salami cotto (cooked) in size, hence the confusion of some people. It is smaller in diameter than the traditional mortadella de Bologna because the smoking process causes some shrinkage. It is best served at room temperature to bring out its rich flavor.

A similar commercial sausage product that omits the cubes of pork fat, called bologna, is popular in the United States. A variety that includes olives and pimento is called olive loaf.

Mortadella was banned from import into the United States from 1967 to 2000 due to an outbreak of African swine fever in Italy. This ban was a pivotal part of the plot of the 1971 film La mortadella starring Sophia Loren. The title for the United States release was Lady Liberty.

The ban in the United States was lifted due to the Veterinary Equivalency Agreement that allowed countries to export products that had been shown to be disease-free as part of an overall agreement that would allow products deemed safe in the United States to be exported to the European Union.

 

Kitchen Closed, Domino Pizza!

Hello all! My Mom is still not feeling well. I’m taking her to her Family Doctor tomorrow, and believe me it’s not been easy! She does not like going to the Doctor and I finally talked her into going. She actually feels worse today than yesterday.

 

I had to go pick up a prescription that her Doctor called in for her. I was going to prepare Dinner tonight but she insisted she wanted a Pizza. So as usual I gave in and ordered a Pizza from Domino. Hopefully I’ll be able to transfer pictures I take on to the computer and then to my posts again! I had a friend of mine that works for a Computer Repair store come over and help me get it up running again. Still not sure on this Windows 10 thing, but not much choice now. Anyway I ordered a Domino Hand Tossed Medium Pizza with Pepperoni, Sausage, Mushroom, Black Olives, and Green Olives. Kitchen will reopen tomorrow!

Today’s Menu: Kitchen Closed, Pizza Hut tonight!

 

 

To start my morning off I just had a cup of Bigelow Decaf Green Tea. Restless night, still sore from the fall I had. Still raining out. We’ve had about 3″ inches or more with the heavy rains moving in this morning. Lot of local flooding here in the area. Good chance of more rain coming in tomorrow. So not a lot going on, had everything done. So I kicked back and watched Football all day!

 

 

 

 

I was ready to prepare Dinner tonight but Mom wanted Pizza. And we all know, “What Mom wants Mom gets”. We normally order from Domino’s but she wanted Pizza Hut tonight. I ordered a medium Pizza. First one I’ve had in a very, very long time! I must admit, it was great! Plenty of toppings with Mushrooms, Pepperoni, Black Olives, Italian Sausage, Green Olives. The Pizza arrived on time and steaming hot! As I said plenty of toppings, sauce was great and cheese, well I love all cheese! Back to healthier eating tomorrow as the Kitchen reopens! For Dessert/Snack later a bowl of Skinny Pop – Pop Corn along with a Peach Diet Snapple to drink. Take care all!

Sicilian Turkey Pizza
An easy-to-make, easy-to-love pizza recipe piled high with veggies, lean ground turkey and old-country Italian flavors. Perfectly kid-friendly, ready in under 60 minutes and under 500 calories per serving. Mangia!

INGREDIENTS
1 loaf frozen pizza dough, thawed
1 (16-ounce) package JENNIE-O® Lean Italian Seasoned Ground Turkey
1 (15-ounce) can prepared pizza sauce
1 onion, chopped
1 cup chopped red bell pepper
¼ cup sliced ripe olives
2 cups shredded mozzarella cheese
¼ cup grated Parmesan cheese

DIRECTIONS
1) Heat oven to 425°F. Roll or stretch pizza dough to fit greased 15-inch pizza pan or 10 x 15-inch jelly roll pan. Cook turkey as specified on the package. Always cook to well-done, 165°F as measured by a meat thermometer.
2) Spread pizza sauce evenly over dough. Top with ground turkey, onion, bell pepper, olives and cheeses. Bake 15 to 20 minutes or until crust is golden brown.

Just a cup of Bigelow Decaf Green Tea for Breakfast this morning. I headed out this morning to Jungle Jim’s International Market. They finally got some 1/2 Runner Green Beans in. We bought enough to can 14 jars! The Beans were some of the fullest and biggest Green Beans we had found in quite some time. So back home I gave Mom a hand in getting the first 7 quarts ready and made. We’ll do the rest tomorrow. Mom loves Beets, I can’t stand them, so she’s going back to Jungle Jim’s tomorrow to get Beets to can. My leg seems to be doing better it’s not as red and the spot is somewhat smaller. Hopefully it’s just an infection. For Dinner tonight it’s Turkey Tacos.

For your next party try freezing red and green maraschino cherries in ice cubes. You can also do this with cocktail onions, mint leaves or green olives for martinis. Enjoy the party!

Turkey Tacos and Refried Beans

Today’s Menu: Turkey Tacos and Refried Beans

 

 

For Breakfast this morning I made a Breakfast Sandwich using; a toasted Healthy Life Whole Grain English Muffin, lightly fried an al fresco Country Style Chicken Sausage Breakfast Patty, and had a cup of Bigelow Decaf Green Tea. 88 degrees, humid, and scattered showers out today. After Breakfast I had to go to the local Kroger and pick up a couple of items. Then went to the Post Office, got gas, and stopped and picked up Breakfast at McDonald’s for Mom. Later on I went to Menard’s and picked up a new shower head for Mom’s Shower. So for Dinner tonight, It’s a Taco Night! I prepared Turkey Tacos and a side of Refried Beans.

 

 

Our household love’s Turkey Tacos, great Comfort food for us! When making Turkey Tacos I always use Jennie -O Extra Lean Ground Turkey Breast! Love all the Jennie -O Turkey Products, always fresh and low calorie and low carb. But Jennie -O Products are difficult to find in this area. Meijer is the only place that now carries it, and they have an okay selection of it. So I started by frying the Ground Turkey till it was no longer pink in Extra Light Olive Oil and seasoning it with Sea Salt, Ground Roasted Cumin, Cilantro Flakes. As the Turkey was finishing cooking I added, 1 can OF Bush’s Chili Beans – Black Beans, 1 package of Old El Paso Low Sodium Taco Seasoning and 2/3 cup Water, continued to cook and stir for an additional 6 minutes. Jennie -O, Bush’s Beans, and Old El Paso together make one fine Taco!

 

For toppings I used; Sargento Reduced Fat 4 Cheese Mexican, Sliced Black Olives, Sliced Green Olives, Ortega Smoky Chipotle Taco Sauce, Sliced Jalapenos, and Shredded Lettuce. For my Taco Shells I used the Old El Paso Stand N’ Stuff Taco Shells (Whole Grain Corn). Add the Jennie – O Turkey and you got you some mouth watering and delicious Tacos! Love these Taco Nights. I also heated up a can of Old El Paso Fat Free Refried Beans for a side for Mom and Dad. We made a big plate of it for Dad and took it it to the Center for him. For Dessert/Snack later a bowl of Skinny Pop – Pop Corn and a Coke Zero to drink.

Cooking Instructions:
STOVE TOP METHOD:
* Spray skillet with nonstick cooking spray.
* Preheat skillet over medium-high heat.
* Add ground turkey to hot skillet.
* Stir to crumble, approximately 14 to 16 minutes.
* Always cook to well-done, 165°F. as measured by a meat thermometer.
