I laid 3 Chicken Thighs in the fridge overnight to thaw. I’ve been wanting some Chicken Thighs so tonight I prepared Baked Chicken Thighs w/ Asparagus Medley, Rice, and Baked Harvest Grain Bread.

 

 

To prepare the Chicken Thighs I placed them in a single layer in a shallow baking dish. You can sprinkle the chicken thighs with whatever seasonings you like such as Italian seasoning, lemon pepper, thyme or rosemary and garlic, I used Rosemary, Thyme, Sea Salt, Ground Black Pepper, and Garlic Powder. Covered with foil and baked for 20 minutes at 350 degrees F. Then removed the foil and continued cooking for an additional 10 to 15 minutes or until the internal temperature of the chicken thigh reached 165 degrees F. Good, simple, and quick way to prepare some tasty Chicken Thighs.

 

 

For a side dish to go with my Chicken Thighs I prepared a new dish, Asparagus Medley. Nothing but good things in this one! It’s got Asparagus (Trimmed), 2 Sweet Peppers (Red or Yellow) Julienned, 1/4 cup fresh sliced Mushrooms, 1/2 small can of Sliced Black Olives (Drained), 1/2 Garlic Clove (Minced), 1 Tbsp Extra Virgin Olive Oil, 1/4 tsp. Minced fresh Parsley, and seasoned with Sea Salt, Pepper, Lemon-Pepper, and Dill Weed to taste. You know me the easier to prepare the better and this one is easy! In a bowl add and combine the vegetables, Olives, and Garlic, drizzle with Oil and toss to coat. Then sprinkle with the Parsley, Salt, Pepper, Lemon- Pepper, and Dill Weed; to taste. Then just Saute in a skillet or wok over medium heat until all vegetables are crisp tender; and serve. This turned out to be one fine and healthy side dish! The Asparagus was nice and crisp, the Peppers added great flavor and crunch, and the seasoning was spot on. Good Keeper recipe.

 

 

I also baked a Loaf of Kroger Bakery Harvest Grain Bread. For dessert later a Dole Mini Banana and perhaps some Apple Slices.

 

 

 

 
Asparagus MedleyBaked Thighs and Asparagus Medley 001

Makes 2 Servings

1/4 lb. Asparagus, Trimmed
2 Sweet Peppers (Red or Yellow), Julienned
1/4 cup fresh sliced Mushrooms
1/2 small can of Sliced Black Olives (Drained)
1/2 Garlic Clove, Minced
1 Tbsp Extra Virgin Olive Oil
1/4 tsp. Minced fresh Parsley
Sea Salt, Pepper, Lemon-Pepper, and Dill Weed to taste

 
Instructions:

* In a bowl add and combine the vegetables, Olives, and Garlic, drizzle with Oil and toss to coat.
* Then sprinkle with the Parsley, Salt, Pepper, Lemon- Pepper, and Dill Weed; to coat
* Then Saute in a skillet or wok over medium heat until all vegetables are crisp tende; and serve.

Today’s Menu: It’s Taco Friday, Black Bean and Ground Turkey Tacos!

Last day of the heat and humidity for at least a few days they say, at last! We even had a couple of real heavy showers throughout the day, which we needed. Me I went to Walmart early this morning but not my usual Walmart I normally go to. I switched Walmarts, the one I normally go to was going down hill fast. The produce department wasn’t stocked a lot of times with near expired fruits and vegetables and the other aisles were hardly ever fully stocked. Worse of all was their electric carts, which I need being an amputee. Of late the carts are broke or won’t charge, always having to switch carts at least twice on every visit. So I go to a different one now and it’s great. Plenty of working carts and everything well stocked! For dinner it’s Tacos! I prepared Black Bean and Ground Turkey Tacos.

I used Honeysuckle White Ground Turkey, 99% Fat Free (130/0). I pan fried it in Canola Oil and I seasoned it a bit with Cilantro, Sea Salt, and Smoked Ground Cumin and I used 1 packet of Old El Paso Taco Seasoning. As the Turkey was finishing up I added a can of Bush’s Low Sodium Black Beans, before adding them I rinsed them off with cold water in a strainer. I mixed the Turkey and Black Beans in the pan until well mixed and continued cooking until the Turkey was done and the Beans were heated.

 

 

 

 

 

I usually use Old El Paso Stand Up Taco Shells but while at Walmart I picked up a different one, Ortega Whole Grain Corn Taco Shells. Their a good size Taco Shell with 110 calories and 12 Net carbs per serving (2 Shells). Fewer calories and carbs than the Old El Paso Taco Shells.

 

 

 

For the Taco fillers I had Green Giant Summer Crisp White and Yellow Kernel Corn, sliced Black Olives, shredded Lettuce, Sargento Reduced Fat Mexican 4 Cheese, and Old El Paso Medium Taco Sauce. To assemble my Taco I first layered the bottom with shredded Lettuce, the Lettuce helps soak up any moisture so the bottom of your Taco doesn’t get soggy. After the Lettuce I layered in my ground Turkey/Black Beans, then Black Olives, Corn, Taco Sauce topped with the Shredded Cheese! Love these Tacos! Making Tacos also gave me the chance to use my new Taco Holders! I had never seen these before I purchased them at Walmart earlier today. Their made of hard plastic and you just sit your Taco Shell in it and it keeps it upright, a lot easier to load up the Taco and keeps it together when your eating it and you want to sit it down. For dessert/snack later some Ritz Whole Grain Crackers topped with some Philly Reduced Fat Cream Cheese.

Olive Oil Shortage: Prices Soar As Effects Of Devastating Drought Hit Marketplaces

 

 
A global olive oil shortage looms as the effects of last year’s drought, which affected Spain and areas in Southern Europe, begin to hit the marketplace.

In 2013, Spain may see as much as a 60 percent drop in olive harvest yields from last year, from 1.6 million to 700,000 tons. This will have global consequences — Spain is the world’s top producer and exporter of olive oil and table olives, as recognized by the International Olive Council.

According to Specialty Food Magazine, Jeff Bayley, a United Kingdom representative for the Hojiblanca Group, believes that the shortage will drive up the price of oil in the marketplace. The Hojiblanca Group is a cooperative group of more than 50,000 farmers in the olive oil-producing region of Andalusia.

“With the harvest drawing to a close latest returns are showing that the Spanish olive crop is a fraction of previous years,” he said. “The current prices of olive oil are phenomenally low and would be unsustainable even if supplies were abundant. With a shortage on the way the current situation can’t last.”

The 2012 drought and an unexpected frost during olive flowering season in spring of that year devastated Spanish olive trees, which produced less fruit as a result. The olives that did grow were less juicy and smaller in size, so they produced less oil.

It’s unlikely that other olive oil-producing countries will be able to pick up the slack — Greece, Italy, Turkey and Tunisia were also hit hard by the drought.

In September 2012, The Guardian reported that wholesale prices of extra virgin olive oil had already jumped by 62 percent since the drought began three months prior. This was even before the scheduled October olive harvest. At that time, global olive oil supplier Filippo Berio cautioned that the company would be forced to raise prices for consumers.

“This isn’t a 5 percent blip, we can’t tighten our belts and absorb it,” said Filippo Berio’s managing director, Walter Zanre.

The rising costs and decreased availability of quality olive oil may inflame the already troubling issue of olive oil fraud. Olive oil is a commonly adulterated product, often cut with deodorants and other non-olive oils and passed off as the real deal.

Mushrooms can be kept white and firm during sauteing if you add 1/4 teaspoon lemon juice for every 2 tablespoons butter or olive oil.

No one felt like cooking today and everyone agreed it was a Subway Night Tonight! I had a 6″ Black Forest Ham and Turkey Sub on a 9 subway-turkey-ham-003grain Wheat Bun w/ Black Olives, Lettuce while Mom and Dad had a Subway Club. The total calories for the sub is 280 calories and 44 carbs. I added Hellman’s Light Mayo and French’s Yellow mustard to the Sandwich when I got home. I also had a side of Ruffle’s Light Fat Free Potato Chips, 80 calories and 17 carbs per serving (15 Chips). For dessert later a Jello Sugarless Dark Chocolate Pudding topped with Cool Whip Free.

Italian Pasta Salad

I had a box of Ronzoni Garden Delight Tri Color Rotini Pasta in the pantry so I decided to make an Italian Pasta Salad for lunch. I used Italian Pasta Salad 003about 1/4 of the box of the Pasta, enough for a couple of servings. Light and tasty dish that includes Ronzoni Garden Delight Tri Color Rotini Pasta, Black Olives, Kalamata Olives, Hormel Turkey Pepperoni, Anchovies, Kraft Shredded Parmesan, Kraft Zesty Italian Fat Free Dressing, and McCormick Grinder Italian Seasoning. Boil the Pasta according to the box and add all the ingredients and refrigerate. Too Good!

Today’s Menu: Subway Turkey and Black Forest Ham 6″ Hogie w/ Ruffles Light Potato Chips
Was at the doctor’s office at 8:00 am for some checkup blood work and then it was home to do some early Spring Cleaning! We have a subway-turkey-ham-003spare room, it’s where our Pantry and my computer is located and a little bit of everything else. That took a couple of hours and from their I finished up my rolling of the coins. I’m a loose coin hoarder! Especially back when I used to work, any and all change was saved. So I finally got around to start rolling some of it. Now some of this change had been stored since the early 80’s so there is a lot of it. My last roll that I rolled made it an even $1,000! Those Pennies, Dimes, Nickels, and Quarter add up! I hate rolling change but the hard part was getting the rolls in the car and out of the car to the bank in a wheelchair, fortunately when I got to the bank someone came out to take it inside for me. So with most of the day gone, and I was sort of tuckered out, it was getting time for dinner.

 

With all that being said “the Kitchen Was Closed” and it was Subway to the rescue! I ordered a Subway Turkey and Black Forest Ham 6″ Hogie with Lettuce, Black Olives, Green Peppers, Provolone Cheese, Light Mayo, on a 6″ 9-Grain Hogie Roll. It was a total of 385 calories and 45 carbs. I also had a side of Ruffles light Potato Chips which is 80 calories and 17 carbs and a Diet Dr. Pepper to drink. So thanks go out the Bank for getting all those rolls in for me and to Subway for providing one tasty dinner! For dessert later a healthy Choice Frozen Vanilla/Chocolate Swirl Yogurt.

Everyone wanted Pizza tonight, so Pizza it is! I had used the Pillsbury Artisan Crust a few times so I gave the Classic Crust a try this time. It contains 30 less calories than the Artisan. I really love using the Pillsbury Crusts. Easy to use and bakes up a beautiful golden brown.

 

 

To prepare it just preheat your oven on 400 degrees. Use a medium to large cookie sheet pan and spray it lightly with Pam. Then just open the can and spread the crust. The good thing about this is you make your crust as thin or as thick you want. Prebake it for 8 minutes and then add your toppings and put it back in the oven 8 – 10 more minutes until the crust is golden brown. Just a note; precook any of the toppings that need to be cooked, like any Sausage, before adding it as a topping.

 
My toppings were Hormel Turkey Pepperoni, Jennie O Lean Breakfast Sausage, Black Olives, Mushrooms (Sliced baby Bella), Sargento Shredded Mozzarella and Provolone Cheese, and Ragu Homestyle Pizza Sauce. As I said earlier the crust is fantastic! It bakes up to a golden brown with the outer crust nice and crunchy. I left the Pillsbury product description and web site link at the end of the post. For dessert later a Healthy Choice Frozen Greek Yogurt Chocolate/Vanilla Swirl Cup.

When frying fish, be sure the surface of the fish is dry before putting it in the oil. Moisture can cool the oil down and make the fish cook unevenly.

Hint #2

One favorite way to prepare fish is also super quick and tasty. Wrap your fillets individually in foil, adding a bit of chopped onion, salt, and pepper, a sprig of dill, and a drizzle of olive oil. Bake for 30 minutes in a 350 degree oven, then unwrap for a tender, flavorful dinner.

Pizza tonight for dinner! Last week or so I made a Pizza using Pillsbury Artisan Pizza Crust and it turned out so delicious I had to have it again! The crust is the best home made crust I’ve ever had or made. the crust has 190 calories and 30 carbs with 16 grams of Whole Grain. Just wish those carbs were a bit lower. It bakes up perfect, golden brown.

 

 

To prepare it just preheat your oven on 400 degrees. Use a medium to large cookie sheet pan and spray it lightly with Pam. Then just open the can and spread the crust.
