Another perfect day outside, hope our streak continues! Moving sort of slow earlier today, stayed up late watching the Cincinnati Reds and Cardinals play a 16 inning ball game last night. Managed to go to the store and picked up a few items to make a Cheesecake for dessert tonight. For dinner it’s one of my favorites, Black Bean and Turkey Tacos.

 

 

I used the leftover Jennie – O Extra Lean Ground Turkey Breast from last night when I made a Turkey Burger. I fried it in Canola Oil and seasoned it with Sea Salt, Ground Roasted Cumin, Cilantro Flakes, and 1 package of Old El Paso Low Sodium Taco Seasoning. As I added the Taco Seasoning Mix I also added 1 can of Bush’s Low Sodium Black Beans, I drained and rinsed them before I added them. I love pairing the Black Beans with Ground Turkey. Mixed well until everything was coated and then simmered another 5 minutes until heated through.

 

 

For my other toppings I used 1 can Green Giant Steam Crisp Super Sweet Yellow and White Whole Kernel Corn, 1 small can of Mario Sliced Black Olives, 1 small diced Tomato, Sargento 4 Cheese Mexican Shredded Reduced Fat Cheese, a bag of Dole Shredded Lettuce, and all in a Ortega Whole Grain Corn Taco Shells. I love these Tacos! The crunch of the shells and all the different flavors and spices make a perfect Taco. For dessert later Cheesecake. I’m back up to par today! My voice is back and full of energy. Well we’ve ben lucky avoiding the heat and humidity for the most part this Summer but our luck has run out. High 80’s to low 90’s and very humid most of this week, thank goodness for air – conditioning. For dinner I prepared Turkey and Black Bean Tacos w/ Refried Beans.

 

 

I love Tacos! So versatile, you can put about anything you want in them and so many varieties of Taco Shells. For my Tacos I used Jennie – O Extra Lean Ground Turkey Breast, 120 calories and 0 carbs. My favorite Ground Turkey there is. I fried it in Canola Oil and seasoned it with Sea Salt, Ground Roasted Cumin, Cilantro Flakes, and 1 package of Old El Paso Low Sodium Taco Seasoning. As i added the Taco Seasoning Mix I also added 1 can of Bush’s Low Sodium Black Beans, i drained and rinsed them before I added them. I’ve found Black Beans are a perfect pairing with Ground Turkey.

 

 

For my other toppings I used 1 can Green Giant Steam Crisp Super Sweet Yellow and White Whole Kernel Corn, 1 small can of Mario Sliced Black Olives, 1 small diced Tomato, Sargento 4 Cheese Mexican Shredded Reduced Fat Cheese, a bag of Dole Shredded Lettuce, and all in a Ortega Whole Grain Corn Taco Shells. Add it all up and you have yourself some down right delicious Tacos! I also heated up a can of Old El Paso Fat Free Refried Beans. For dessert later a bowl of Del Monte No Sugar Added Peach Chunks.

Another beautiful cool morning here. Got out early and hit the stores. Started at Walmart for some of the Meat, Bakery, and basic staples for the pantry. Then off to Kroger for the rest of the Meats, Produce, Cheese, and Deli. I’m still amazed at the big difference in prices between Walmart and Kroger. Anymore I only buy what I can’t find at Walmart. You can save hundreds by purchasing center aisle products from Walmart, Pasta, Can Goods, Paper Products, and such. Stay out of Kroger center aisles! For dinner one of my favorites, Black Bean and Turkey Tacos.

 

 

I used Jennie – O Ground Turkey, 99% Fat Free (120/0). I pan fried it in Canola Oil and I seasoned it a bit with Cilantro, Sea Salt, and Smoked Ground Cumin and I used 1 packet of Old El Paso Taco Seasoning. As the Turkey was finishing up I added a can of Bush’s Low Sodium Black Beans, before adding them I rinsed them off with cold water in a strainer. I mixed the Turkey and Black Beans in the pan until well mixed and continued cooking until the Turkey was done and the Beans were heated.

 

 

I used Ortega Whole Grain Corn Taco Shells. Their a good size Taco Shell with 110 calories and 12 Net carbs per serving (2 Shells). Fewer calories and carbs than the Old El Paso Taco Shells. For the Taco fillers I had Green Giant Summer Crisp White and Yellow Kernel Corn, sliced Black Olives, shredded Lettuce, Sargento Reduced Fat Mexican 4 Cheese, and Old El Paso Medium Taco Sauce. To assemble my Taco I first layered the bottom with shredded Lettuce, the Lettuce helps soak up any moisture so the bottom of your Taco doesn’t get soggy. After the Lettuce I layered in my ground Turkey/Black Beans, then Black Olives, Corn, Taco Sauce topped with the Shredded Cheese! Love these Tacos! I also heated up a can of Old El Paso Fat Free Refried Beans for Mom and Dad. For dessert later a Healthy Choice Chocolate Swirl Frozen Yogurt Cup.

Last day of the heat and humidity for at least a few days they say, at last! We even had a couple of real heavy showers throughout the day, which we needed. Me I went to Walmart early this morning but not my usual Walmart I normally go to. I switched Walmarts, the one I normally go to was going down hill fast. The produce department wasn’t stocked a lot of times with near expired fruits and vegetables and the other aisles were hardly ever fully stocked. Worse of all was their electric carts, which I need being an amputee. Of late the carts are broke or won’t charge, always having to switch carts at least twice on every visit. So I go to a different one now and it’s great. Plenty of working carts and everything well stocked! For dinner it’s Tacos! I prepared Black Bean and Ground Turkey Tacos.

I used Honeysuckle White Ground Turkey, 99% Fat Free (130/0). I pan fried it in Canola Oil and I seasoned it a bit with Cilantro, Sea Salt, and Smoked Ground Cumin and I used 1 packet of Old El Paso Taco Seasoning. As the Turkey was finishing up I added a can of Bush’s Low Sodium Black Beans, before adding them I rinsed them off with cold water in a strainer. Making Tacos also gave me the chance to use my new Taco Holders! I had never seen these before I purchased them at Walmart earlier today. Their made of hard plastic and you just sit your Taco Shell in it and it keeps it upright, a lot easier to load up the Taco and keeps it together when your eating it and you want to sit it down. For dessert/snack later some Ritz Whole Grain Crackers topped with some Philly Reduced Fat Cream Cheese.

It’s Monday!Splattered 2 Eggs in the floor this morning, then got some bread out to toast and it had molded, then the capper for the morning I went out to get the paper this morning and they had tossed it in the grass by the edge of the drive-way and I was in my Hoveround. Took the Hoveround it to the edge of the drive and reached for the paper, you guessed it the Hoveround tipped over with me in it! I’m fine, scrapped up knee and a couple of bruises. Come on Tuesday, hurry up and get here! For dinner I prepared Turkey Tacos.

 

 

I used the Ground Turkey and Black Bean Mix I had leftover from last nights dinner. I warmed it up along with toppings of a can of Green Giant Steam Crisp Sweet Corn Kernels, Lindsay Sliced Black Olives, Shredded Lettuce, Old El Paso Taco Sauce, and I used Old El Paso Stand – Up Taco Shells. I love tacos, tacos of all kinds. For dessert later a Healthy Choice Vanilla Bean Frozen Yogurt and an ice pack for the bruises!

Wow, we finally saw the sun today! They say not for long though as more heavy rain predicted. Went to Meijer this morning and picked up quite a few items. Finding Meijer prices lower and lower, that’s a good thing. They also have the best selections of Jennie – O products, which I love using! In fact I’ll be using some of the Jennie – O Extra Lean Ground Turkey for an appetizer for tonight. For dinner I prepared a Pulled Buffalo Chipotle BBQ Sandwich w/ Mini Taco Tostadas Appetizers.

 

 

I used Wild Idea Buffalo Pulled Buffalo Chuck Roast. It comes in a 1 lb. package and it’s already cooked. It’s rubbed with a blend of Mexican seasonings and then slowly braised to fall apart tender. All I did was open and heat! I topped it with JB’S Fat Boy Chipotle BBQ Sauce and served on a Aunt Millie’s Light Whole Grain Sandwich Bun. I love Buffalo and Wild Idea Buffalo has the most delicious Buffalo Meat there is!

 

For a side or appetizer I prepared Mini Taco Dip Tostadas with a Greek Yogurt/Sour Cream Sauce. Really happy how this came out, Pulled Bison Mini Turkey Tostadas 003delicious! A really good and easily prepared appetizer. Got the idea from the Cooking Channel and I used some reduced fat items to make it a bit more healthy and keeping the taste. I first made Greek Yogurt/Sour Cream Sauce using a 1/4 cup Nonfat Greek Yogurt, 1 Tablespoon Daisy Reduced Fat Sour Cream, and the Zest of 1 lime, plus juice of 1/2 lime. Just combine al the 3 ingredients in a small bowl and refrigerate until ready to use, real easy to make. For the Mini Taco Dip Tostadas I needed 1/2 – Packet Old El Paso Taco Seasoning, 2 Tablespoons Extra Virgin Olive Oil, Tortilla chips, preferably round, 8 ounces Jennie – O 99-percent Fat-Free Ground Turkey, 1/2 cup Low Sodium Canned Black Beans, rinsed and drained, Pinch Sea Salt, Fresh Cracked Black Peppercorn, Frank’s Red Hot Sauce to taste, optional, and 1 cup Sargento Shredded Reduced – Fat Cheddar Cheese.

 

 

Heat the oil in a large skillet over medium-high heat. Preheat the oven to 350 degrees F.Place chips in on a broiler-proof baking sheet set aside. Brown the turkey in the skillet, breaking it up with a fork, until the meat is no longer pink, 5 to 7 minutes. Add 1 tablespoon of the taco seasoning, salsa and some salt and black pepper. Continue cooking, stirring occasionally, until most of the liquid has evaporated. Spread turkey mixture across all the chips and top with the cheese. Broil long enough to melt cheese and heat the chips, and then let cool and serve! This is a real keeper recipe! We could have made a meal of just these, everyone enjoyed them! I left the full recipe at the end of the post. For dessert later tonight a slice of Pillsbury Nut Quick Bread topped with a scoop of Breyer’s Carb Smart Vanilla Ice Cream.

 

 

 

 

 

Mini Taco Dip Tostadas with Greek Yogurt/Sour Cream Sauce

 

INGREDIENTS:

Mini Taco Tostadas:

1/2 – Packet Old El Paso Taco Seasoning
2 Tablespoons Extra Virgin Olive Oil
Tortilla chips, preferably round
8 ounces Jennie – O 99-percent Fat-Free Ground Turkey
1/2 cup Low Sodium Canned Black BVeans, rinsed and drained
Pinch Sea Salt
Fresh Cracked Black Peppercorn
Frank’s Red Hot Sauce to taste, optional
1 cup Sargento Shredded Reduced – Fat Cheddar Cheese

Sauce:

1/4 cup Nonfat Greek Yogurt
1 Tablespoon Daisy Reduced Fat Sour Cream
Zest of 1 lime, plus juice of 1/2 lime

DIRECTIONS:

Combine Yogurt, Sour Cream and Lime in a small bowl and refrigerate until needed. Heat the oil in a large skillet over medium-high heat. Beautiful day out, a good breeze kept the humidity down all day. I had purchased a large fillet of Cod yesterday when I was Kroger. I sliced it up into 3 pieces, saving 2 pieces that I froze to make Fish Sandwiches out of later and 1 piece for my dinner tonight. I prepared Fish Tacos along with a side of Refried Beans.

 
I first washed the Cod off in water and patted dry with a paper towel. I then grabbed a Hefty Zip Plastic Bag and added Zatarain’s Lemon Pepper Breading Mix and the Cod, shaking it till it was well covered. I pan fried it in Canola Oil, fried it about 3 minutes per side. The Zatarain’s gives it perfect seasoning. After it was done I broke it into smaller pieces for the Taco.

 
For toppings along with the Cod I used Green Giant Sweet Yellow and White Corn Kernels, Shredded Lettuce, Ortega Diced Jalapenos, Sliced Black Olives, fresh grated Dutch Gouda Cheese, and Taco Bell Bold and Creamy Chipotle Sauce. If you’ve never tried the Taco Bell Bold and Creamy Chipotle Sauce and you like Taco Sauce with a nice little kick to it you’ll love this Sauce! Not over bearing heat but a nice little warm up. The Cod with all the toppings and Sauce make a good Taco. Cod is so versatile, you can cook it about any way and use it for countless dishes. I also warmed a can of Old El Paso Fat Free Refried Beans, perfect side for Tacos and it’s Fat Free! For dessert later some Peanut Butter and Crackers. I used Jif Reduced Fat Peanut Butter and Ritz Whole Grain Crackers.

Today’s Menu: Turkey Tacos

 
Beautiful day out, a little humidity but not bad. My Mom is doing a lot better and getting around fine. For dinner it was Turkey Tacos. Turkey Tacos 005I used Honeysuckle White Ground Turkey (97/3). I seasoned it a bit with Cilantro, Sea Salt, and Smoked Ground Cumin and I used Old El Paso Taco Seasoning.

 
For the Taco fillers I had Green Giant Summer Crisp White and Yellow Kernal Corn, sliced Black Olives, shredded Lettuce, Arugula, Sargento Mexican 4 Cheese, and Old El Paso Medium Taco Sauce. To assemble my Taco I first layered the bottom with shredded Lettuce, the Lettuce helps soak up any moisture so the bottom of your Taco doesn’t get soggy. After the Lettuce I layered in my ground Turkey, then Black Olives, Corn, Arugula, Taco Sauce topped with the Shredded Cheese! I love a Taco when it all comes together! For dessert/snack later this evening a 100 Calorie Mini Bag of Jolly time Pop Corn.

Today’s Menu: Taco Night! Turkey Tacos!

 
Has Spring actually arrived and staying? 80 degrees and sunny out today, a perfect day! We”ll wait and see if drops back down to chilly in a day or so. On to tonight’s dinner; It was Turkey Taco Night along with a side of Fat Free Refried Beans.

 

Tonight’s meal was almost all Old El Paso. I used Old El Paso Stand Up Taco Shells, Old El Paso Fat Free Refried Beans, Old El Paso, Turkey Tacos 005Sliced Green Chilies, and Old El Paso Original Taco Seasoning. OLE! The Ground Turkey I used was Honeysuckle White Extra Lean Ground Turkey (99/1). I browned the Turkey in Canola Oil, seasoning it with Sea Salt, Ground Pepper, Ground Roasted Cumin, Dried Cilantro, and the Old El Paso Taco Seasoning. I almost always substitute Ground Turkey or Ground Buffalo for Ground Beef, all around healthier for you (See the end of the post).

 

My toppings for the Tacos include Sliced Black Olives, Sliced Green Chilies, Shredded Lettuce, Sargento Reduced Fat 4 Cheese Mexican, and Old El Paso Taco Sauce (Medium). As I said Earlier I used Old El Paso Stand Up Taco Shells and I had a small side of Refried Beans topped with Daisy Reduced Fat Sour Cream. Can’t wait to make some Ground Buffalo Tacos here in the next week or so! For dessert later a bowl of Breyer’s Carb Smart Vanilla Ice cream topped with some sliced Mangos.

 
Ground Turkey vs Ground Beef
A 100-g serving of ground turkey contains 148 calories, while the same-sized serving of ground beef contains 192 calories.

 

Ground turkey contains much less fat than ground beef, which is generally considered to be a benefit. Each 100-g serving of ground turkey contains 7.7 g of fat, while 100 g of ground beef contains 12.7 g.

 

Both ground beef and ground turkey can be appropriate for carbohydrate-restricted diets, as both are carbohydrate-free.

 

Ground beef and ground turkey are both good sources of protein. Ground turkey contains slightly more protein, 19.7 g, than ground beef, which contains 19.4 g. This difference is unlikely to affect your overall health.

Today’s Menu: Old El Paso Stand ‘n Stuff Soft Flour Tortillas w/ Ground Turkey and all the Fix’ins

 

 

With this weather the way it is around here It’s no wonder so many people have the flu! Yesterday we had to turn the air conditioner onstand-up-soft-shell-taco-005in the late afternoon because it was in the 80’s and a bit humid. Today a cold wind and 34 degrees, and had to turn the heat on! Amazing! For dinner I prepared my favorite Tortilla, the Old El Paso Stand ‘n Stuff Soft Flour Tortillas. I see them now more often in stores, so there a whole lot easier to find now. Love these things, their only 160 calories and 24 carbs for 2 Soft Shells, more than enough for 1 person by the time you load it up. So for dinner tonight it was Old El Paso Stand ‘n Stuff Soft Flour Tortillas w/ Ground Turkey and all the Fix’ins!

 

I filled mine with Jennie – O Extra Lean Ground Turkey – 99/1. I pan fried it in Canola Oil and seasoned it with Ground Cumin, Sea Salt, Cilantro Flakes, and a 1/2 packet of Old El Paso Taco Seasoning. Then for the fillers I added Green Giant Steam Crisp Super Sweet Yellow and White Corn, Sliced Black Olives, Bush’s Low Sodium Dark Red Kidney Beans, Lettuce, Kraft Mexican Taco Shredded Cheese, and Taco Bell Creamy Chipotle Sauce. If you’ve never tried the Taco Bell Creamy Chipotle Sauce it’s another you have to try. It’s got a nice creamy thick sauce with just the right amount of Chipotle heat! For dessert/snack later a 100 Calorie Mini Bag of Jolly Time Pop Corn.
