Today’s Menu: Chicken Enchiladas

Busy day today. Had a real light Breakfast and on to the morning workout. Then out the door before 7:00. First stopped at Walmart for a few items and then on to Meijer to finish up shopping. Back home put everything away, broke some of the Meat packages to freeze. Cleaned up around the house and Dad had home therapy today and a nurse stopping over later in the day. Went and got Mom’s car washed for her and back home for the day. Managed to get the cart out for a while also to enjoy a beautiful day. No humidity, sunny, and a high in the 70’s! Humidity coming back in with hotter weather tomorrow though. For dinner tonight I prepared a real family favorite tonight, Chicken Enchiladas.

I had come across this recipe idea in an issue of Food Network Magazine, courtesy of Ree Drummond. We’ve had this twice now and it’s quickly became a family favorite! My recipe varies slightly from her original recipe, I didn’t top mine with diced Tomatoes before serving but I did top Mom and Dad’s. To make the Enchiladas I’ll need the following; 3 Mission Flour Tortillas, 2 tablespoon Roasted Ground Cumin, 2 tablespoon Chili Powder (plus more for sprinkling), 2 tablespoons Cajun Spice, 1 teaspoon Sea Salt, 1 teaspoon freshly Ground Black Pepper, 2 boneless, skinless Chicken Breasts, 1/4 cup Extra Virgin Olive Oil, 1/2 medium Red Onion (diced), Three 15-ounce cans Red Enchilada Sauce (or use Green if preferred!), 3 cups of Kraft Shredded Cheddar-Jack Cheese (plus more if needed), Daisy Reduced Fat Sour cream (for serving), and Chopped fresh Cilantro, for serving. I used Simple Life Chicken Breasts.

Then to prepare them I preheated the oven to 350 degrees F. Then one at a time, held the Tortillas over the stove top burner (heated to medium heat) to brown slightly, about 20 seconds per side. Set the warmed Tortillas aside. In a bowl, mix together the Cumin, Chili Powder, Cajun Spice, salt and pepper. Sprinkled both sides of the Chicken Breasts with the Spice Mix. Heat the oil in a skillet over medium heat and cook the Chicken on both sides until done in the middle and the juices run clear, 4 to 5 minutes per side. Set aside on a plate to cool, then shred finely with a fork. Threw the Onions into the same skillet, stir them around and cook until deep golden brown and caramelized, 4 to 5 minutes; set them aside on a plate. Pour the Enchilada Sauce into the skillet and reduce the heat to low, allowing it to warm through.

 

 
To make the enchiladas: Pour 2 cups of the Sauce into a 9-by-13-inch Casserole Dish and leave the rest in the skillet. Dip a Tortilla into the Sauce in the skillet, then lay it on a baking sheet or plate. Sprinkle some Cheese down the middle, followed by some Chicken and finally, some of the Caramelized Onions. Roll it up tightly, then place it seam-side down in the Casserole Dish. Repeat with the rest of the Tortillas. Pour the rest of the Sauce over the Enchiladas, then sprinkle on the rest of the Cheese. Give it a final sprinkling of Chili Powder. Bake until hot and bubbly, 30 minutes. Let it sit for 15 to 20 minutes before serving.

Serve the enchiladas topped with a dollop of sour cream, a sprinkling of cilantro and a wedge of lime. And time to enjoy these babies! Hot, Cheesy, Flavorful, with nice Heat, not to over use the saying but it’s a “Winner, Winner Chicken Dinner!” Another Keeper Recipe courtesy of Ree Drummond. Chicken Enchiladas

Ingredients
10 to 12 corn tortillas
2 tablespoons cumin
2 tablespoons chili powder, plus more for sprinklingChicken Enchiladas 014
2 tablespoons Cajun spice
1 teaspoon salt
1 teaspoon freshly ground black pepper
2 boneless, skinless chicken breasts
1/4 cup vegetable oil
1 large onion, diced
Three 15-ounce cans green enchilada sauce (or use red if preferred!)
3 cups grated Cheddar-Jack cheese, plus more if needed
Sour cream, for serving
Diced tomatoes, for serving
Chopped fresh cilantro, for serving
Lime wedges, for serving

 
Directions
Preheat the oven to 350 degrees F.

One at a time, hold the tortillas over the stove top burner (heated to medium heat) to brown slightly, about 30 seconds per side. Set the warmed tortillas aside.

In a bowl, mix together the cumin, chili powder, Cajun spice, salt and pepper. Sprinkle both sides of the chicken breasts with the spice mix.

Heat the oil in a skillet over medium heat and cook the chicken on both sides until done in the middle and the juices run clear, 4 to 5 minutes per side. Set aside on a plate to cool, then shred finely with a fork.

Throw the onions into the same skillet, stir them around and cook until deep golden brown and caramelized, 4 to 5 minutes; set them aside on a plate. Pour the enchilada sauce into the skillet and reduce the heat to low, allowing it to warm through.

Cloudy and rain all day, high in the 60’s though. Good day to stay in and get some house cleaning out of the way, and a couple of loads of laundry. Glad I had that to do because there’s not much else going on. For dinner tonight a new recipe and another Enchilada, Halibut Enchiladas.

I found this recipe on a Kraft Daily Recipe email I receive daily. Just another one that sounded too good not to try, Halibut Enchiladas. Why a Fish Enchiladas you ask, just for the Halibut! That was bad, sorry. Anyway to make this dish I’ll be needing; Halibut Fillets, Sargento Reduced Fat 4 Cheese Mexican Shredded Cheese, Daisy Reduced Sour Cream, Kraft Mayo w/ Olive Oil (Reduced Fat), Chopped Red Onions, Sliced Black and Green Olives, Chopped Green Chiles, Old El Paso Reduced Sodium Taco Seasoning Mix, Mission Flour Tortillas (6 inch), Old El Paso Enchilada Sauce (1-2 10 oz. Cans), and Shredded Lettuce. A big blend of goodness!

 

To prepare them; I preheated the oven to 350ºF. Placed the Halibut in single layer in shallow baking dish. Baked for 25 minutes, until the Fish flaked easily with a fork. Flaked the fish and placed it in a medium bowl. Stirred in 1 cup Halibut Enchiladas 005Cheese, Sour Cream, Mayo, Red Onions, Black and Green Olives, green Chilies and Taco Seasoning mix. Then spooned down the centers of Tortillas; roll up. Pour half the Enchilada Sauce onto bottom of 13×9-inch pan. Top with Enchiladas, seam-sides down. Cover with remaining Sauce and Cheese. Baked 25 to 35 min., until heated through. Top with Lettuce, Olives, and Cheese. My first Halibut Enchiladas and definitely not my last! I love Fish but I wasn’t real sure on how it would do as an Enchilada, but the Halibut works out perfect! I’ve left the original Kraft Recipe along with its link at the bottom of the post. Got me another Keeper Recipe! For dessert later a Jello Sugar Free Dark Cheery Jello.

 

 

 
Halibut Enchiladas

what you need

1-1/2 lb. halibut fillets
1-1/2 cups KRAFT Mexican Style Finely Shredded Four Cheese, dividedKraft 2
1/2 cup BREAKSTONE’S or KNUDSEN Sour Cream
1/2 cup MIRACLE WHIP Dressing
1/2 cup chopped onions
1 can (2.25 oz.) sliced black olives, drained, divided
1 can (4 oz.) chopped green chiles, drained
1 pkg. (1-1/4 oz.) TACO BELL® Taco Seasoning Mix
12 flour tortillas (6 inch)
1 can (19 oz.) enchilada sauce, divided
1 cup shredded lettuce
1 tomato, chopped make it

HEAT oven to 350ºF.

PLACE fish in single layer in shallow baking dish. Bake 25 min. or until fish flakes easily with fork. Flake fish; place in medium bowl. Stir in 1 cup cheese, sour cream, dressing, onions, 1/4 cup olives, chilies and seasoning mix. Spoon down centers of tortillas; roll up.

POUR half the enchilada sauce onto bottom of 13×9-inch pan. Top with enchiladas, seam-sides down. Cover with remaining sauce and cheese.

BAKE 25 to 35 min. or until heated through. Top with lettuce, tomatoes and remaining olives.

Today’s Menu: Turkey and Refried Bean Tostadas

Started the day with a light Breakfast and worked out. Then off to the Grocery Stores. First stopped at Walmart, made sure I got some more of the Jennie – O Turkey Pastrami while there! I also purchased some Kahn’s Deluxe Bologna from the Deli, it’s $1.00 a pound cheaper at Walmart than Kroger! From there I did go on to Kroger to grab a few items for Mom mainly. On back to the house and went outside for a bit, partly sunny and the low 40’s. Temperatures will be dropping later in the day though, with highs in the teens. For Dinner tonight Turkey and Refried Bean Tostadas.

 
I had not had a Tostadas in many of year, I used to stop by Taco Bell and grab a couple on my way work. So it’s been quite some time! I came across the ORTEGA Tostada Shells while at Kroger the other day and couldn’t pass them by! To prepare it I’ll need the following; 1 – 1lb. package Jennie – O Extra Lean Ground Turkey, 1 can (16-oz.) Old El Paso Fat free Refried Beans, 1 package (1.25-oz.) Old El Paso Reduced Sodium Taco Seasoning Mix, 1 package ORTEGA Tostada Shells, 1 cups Shredded Lettuce, 1/2 cup Sargento Reduced Calorie Shredded Sharp Cheddar Cheese, Sliced Black Olives, Sliced Green Olives, and Old El Paso Taco Sauce – Medium.

 
Then to prepare them was very easy. I preheated the oven to 350 degrees. And when making Turkey Taco Mix I always use Jennie -O Ground Turkey Breast! Love all the Jennie -O Turkey Products, always fresh and low calorie and low carb. I started by frying the Ground Turkey till it was no longer pink in Extra Virgin Olive Oil and seasoning it with Sea Salt, Ground Roasted Cumin, Cilantro Flakes. As the Turkey was finishing cookiTurkey and Refried Beans Tostadas 001ng I added 1 package of Old El Paso Low Sodium Taco Seasoning and 3/4 cup Water, continued to cook and stir for an additional 6 minutes to thicken the mixture up. As the Turkey was finishing up I lined the Tostadas up on a baking sheet and baked the for 7 minutes. To assemble the Tostadas, I started with a layer of the Refried Beans, followed by the Turkey Taco Mixture, Sliced Black and Green Olives, Taco Sauce, Shredded Cheese, and finally the Shredded Lettuce! It all comes together to make one terrific Tostadas! It won’t be so long in between Tostadas from now on, really enjoyed them! For dessert later a Healthy Choice Vanilla Bean Frozen Greek Yogurt.

It’s been one gorgeous July 4th day out today! Sunny and a high of 75 degrees, beautiful. Going to go later and watch some local fireworks, it’s a tradition. Had the cart out all day just riding around enjoying the day. For dinner tonight I prepared Turkey Tacos.

As usual when I make Turkey Tacos it’s with Jennie -O Ground Turkey Breast! Love all the Jennie -O Turkey Products, always fresh and low calorie and low carb. I started by frying the Ground Turkey in Canola Oil and seasoned it with Sea Salt, Ground Roasted Cumin, Cilantro Flakes. As the Turkey was finishing cooking I added 1 package of Old El Paso Low Sodium Taco Seasoning and 3/4 cup Water, continued to cook and stir for an additional 6 minutes.

 

 
For toppings I’ll be using; Sliced Black Olives, Sliced Green Olives, Wholly Guacamole, Old El Paso Taco Sauce, Sliced Jalapenos, and Shredded Lettuce. For my Taco Shells I used the Old El Paso Stand N’ Stuff Taco Shells (Whole Grain Corn). Add the Jennie – O Turkey and you got you some mouth watering and delicious Tacos! Love These Taco Nights. For dessert later a Healthy Choice Dark Fudge Swirl Greek Yogurt. Happy 4th of July Everyone!

Today’s Menu: Turkey Tacos

Another picture perfect day out again, 75 degrees and sunny! Went fishing at a local County Park Lake for most of the morning and afternoon. Caught a few Crappie and Blue Gill along with a 2 lb. Bass. Didn’t keep any, returned them to the lake. Had the cart out for a while also, just too nice to stay in. For dinner tonight its Turkey Tacos.

 

 

 
As I had said in an earlier post I’ll be using my free samples from Jennie – O. I received a 1 lb. package of Jennie – O Lean Taco Seasoned Ground Turkey, a package of Wholly Guacamole, 1 – 7 oz. can of HERDEZ® Salsas. I tasted the Herdez Salsas and just wasn’t a big fan of it so I won’t be using that. First time I’ve tried any of these, so thanks again to Jennie – O for the free samples!

 

 

 
I’ll be using the Jennie – O Lean Taco Seasoned Ground Turkey. I Love the Jennie -O Turkey Products, always fresh and low calorie and low carb and this one is no exception. I started by frying the Ground Turkey in Canola Oil and seasoned it with just a bit of Morton’s Salt Substitute. I’ve been making Tacos for a long time, so it feels like I’m forgetting a step by not adding Taco Seasoning to the Turkey as it’s cooking. But it comes Seasoned, and judging by the aroma as it was cooking it was going to be delicious. And it was! I’ll have to the Jennie – O Lean Taco Seasoned Ground Turkey around when making Tacos! 5 Stars for the Jennie – O Lean Taco Seasoned Ground Turkey.

 

 

 

 

For my other toppings I’ll be using; Sliced Black Olives, Sliced Green Olives, Wholly Guacamole, Sargento 4 Cheese Mexican Shredded Reduced Fat Cheese, and Shredded Lettuce. All served in a Ortega Whole Grain Corn Taco Shell. Did I say I love Tacos, I do! As for the Wholly Guacamole, they named it right! Wholly Guacamole is exactly that. Creamy, Chunks of Avocados, and full of Creamy Flavor. For dessert later a bowl of Breyer’s Carb Smart Chocolate Ice Cream.

Rain and sun mix on and off all day. We’ve been lucky so far, the bad storms and tornadoes haven’t been in this area. I had read the other day that Pork prices were soaring and after stopping by Kroger I believe it! Huge increase on all the Pork as well as the Beef products. For dinner tonight it’s Taco Night!

Today’s Menu: Turkey and Black Bean Pita Bread Tacos

Went out about 7 am this morning to get the morning paper and it was C-O-L-D, how COLD minus 6 degrees. Thankfully there was no wind blowing so there wasn’t a wind chill factor for a change. I had already had my breakfast, work out, and shower by the time my parents were up and having their breakfast. So while they were eating I thought I would go ahead and clean the pots and pans Mom had used to make their breakfast. When I cook I try to eat healthy by using the right oils, food, and watching the serving portion sizes. But as I started to clean up for Mom it was amazing how much cooking oil she uses. I poured out enough cooking oil to fix my meals for a week, she uses Vegetable Oil where I use Canola Oil and Extra Virgin Olive Oil. But she cooks as she was taught by her Mom, my Grandmother. I’ve been cooking and eating healthier ever since 2001, when I lost my leg to cancer. Just different styles of cooking, I don’t think I could ever go back to not eating healthy. For dinner tonight It’s Taco Night! I prepared Turkey and Black Bean Pita Bread Tacos.

I used my usual and favorite Gound Turkey, Jennie-O Extra Lean Ground Turkey Breast. The Jennie-O Extra Lean Ground Turkey Breast is 120 calories, 1.5g of Fat, and 0 carbs and comes out perfect every time! To prepare the Turkey I fried it in a medium size skillet in Canola Oil and seasoned it with Sea Salt, Ground Roasted Cumin, Cilantro Flakes, and 1 package of Old El Paso Low Sodium Taco Seasoning. As I added the Taco Seasoning Mix I also added 1 can of Bush’s Low Sodium Black Beans, I drained and rinsed them before I added them. Black Beans with Ground Turkey is a perfect pairing for Tacos. Mixed well until everything was coated and then simmered another 5 minutes until heated through.

 

 

 
For my other Taco toppings I used 1 small can of Mario Sliced Black Olives, 1 small diced Tomato, Sargento 4 Cheese Mexican Shredded Reduced Fat Cheese, Dole Shredded Lettuce, Old El Paso Taco Sauce, and all in a Joseph Flax, Oat Bran and Whole Wheat Pita Bread. I love these Pita Breads! 50 Calories, 1g Fat and only 4 Net Carbs! I use them instead of Bread when I can. For dessert later a Healthy Choice Chocolate Swirl Frozen Yogurt.

Beautiful Autumn Day out today! Went to Meijer this morning to pick up some Jennie – O Turkey Products; Ground Breakfast Sausage,Extra Lean Ground Turkey Breast, Italian Sweet Sausages, and Breakfast Links. While there I watched the most extreme Couponer I have ever seen, she was amazing! She had a good size binder, notebook type, and on front of the binder a printout of each store aisle and the major products in that aisle. Then pockets in the binder that contained coupons for items in that aisle. I talked to her for a bit and said the biggest savings she had been just over $200! She said it took a lot of time but had a nice pay off! Quite impressive. On to Dinner. Tonight one of my favorites, Turkey and Black Bean Tacos.

It’s been one rough 24 hour period for me as the Phantom Pains kicked in last night around 8:00 and have continued through out today. I had a bout with these earlier in the week, so it’s unusual for them to start again so close together. Just hoping they ease up before I go to bed, if not it makes for one long and uneasy night! On to dinner, I had Tacos the other night with a lot of the ingredients leftover. So tonight I gathered up all the leftovers and prepared Black Bean and Turkey Flatbread Wraps.

 

 

I used the remainder Jennie – O Extra Lean Ground Turkey Breast, I had this leftover from the other night. I fried it in Canola Oil and seasoned it with Sea Salt, Ground Roasted Cumin, Cilantro Flakes, and 1 package of Old El Paso Low Sodium Taco Seasoning. As I added the Taco Seasoning Mix I also added a 1/2 can of the Bush’s Low Sodium Black Beans that were leftover, I drained and rinsed them before I added them. As usual Black Beans with Ground Turkey make the perfect pairing. Mixed well until everything was coated and then simmered another 5 minutes until heated through.

 

 

For my other toppings I used 1 small can of Mario Sliced Black Olives, Sargento 4 Cheese Mexican Shredded Reduced Fat Cheese, Dole Shredded Lettuce, Old El Paso Taco Sauce, and a teaspoon of Daisy Reduced Fat Sour Cream to top everything off. Served everything on a Joseph’s Flax, Oat Bran, and Whole Wheat Pita Bread. This my favorite Pita Bread, this stuff is great! It stays fresh, you can freeze it, and it’s only 50 calories and 4 net carbs for one kind and only 60 calories and 4 net carbs for a bit bigger size. After adding all my toppings I just folded them half, like a soft taco. Really enjoyed these! For dessert later a Healthy Choice Chocolate Swirl Frozen Yogurt.

Rainy day around here today. We needed some rain though it was getting a little dry around here. Not much going on, just bummed around doing odds and ends till football started up in the afternoon. For dinner I prepared Black Bean and Turkey Tacos.

 

 

I used Jennie – O Extra Lean Ground Turkey Breast, I had this leftover from the other night when I made Stuffed Peppers.
