When making Stir Fry…….

 

Add the sauces and pre-cooked noodles last. They only need to be stir-fried until just heated through. Wok on!

Tonight’s Menu: Chicken Stir -Fry w/ Baby Carrots, Cut Green Beans, Water Chestnuts, Bean Sprouts, and Mushrooms

 

 

 

For Breakfast this morning I toasted a couple of Eggo Waffles (Low Fat Nutrigrain) and had my morning cup of Bigelow Decaf Green Tea. I had ordered a Rotisserie Chicken from Kroger yesterday and after Lunch I went to pick up. Using as part of my Dinner tonight. Had a thunderstorm come through early this morning and then partly cloudy and 92 degrees out, and VERY humid. Don’t like this humidity at all. I seen the Wild Turkey again this morning in the back yard, second time I’ve seen them recently. We have the Turrkey, a couple of Deer, and assorted other critters running around. We also have somehow been adopted by a large yellow cat that now stays around the house outside. He sleeps a lot and that’s about it. For Dinner tonight its Chicken Stir -Fry w/ Baby Carrots, Cut Green Beans, Water Chestnuts, Bean Sprouts, and Mushrooms.

 

 

To make the Stir – Fry I’ll need; 1 Whole Rotisserie Chicken (Kroger Deli), 1 package Hakubaku Organic Japanese Wheat Noodles, 1 can Whole Baby Carrots (drained), 1 small can Del Monte Cut Green Beans (drained), Sliced Water Chestnuts (drained), 1 can of Bean Sprouts (drained), 1 can Stir-Fry Mushrooms (drained), Chow Mein Noodles, Kikkoman Less Sodium Soy Sauce, and Extra Light Olive Oil.

 

 

 

 

I went to Kroger earlier today and picked up a Whole Rotisserie Chicken. Pulled all the meat and this was my Chicken for the Stir-Fry. Next I grabbed a large nonstick skillet and sprayed it Pam Cooking Spray and added a tablespoon of Extra Light Olive Oil and heated the pan on medium heat. When heated I added my Pulled Chicken, Carrots, Green Beans, Water Chestnuts, Bean Sprouts, and Mushrooms. Stirred until mixed then added the Kikkoman Soy Sauce, you add this according to your taste. Stirred and heated everything until heated through. Removed it from the heat and covered it.

 

 

Next I boiled my Udon Noodles. I used a large pot and filled it 1/2 way with water. Heated the water to boiling and added my Noodles. Stirring, and cooked for 4 minutes. Drained them and added them to the Stir – Fry Skillet. Stirred until mixed and served! This hit the spot for Dinner! Topped a bowl of the Sir – Fry with some Chow Mein Noodles. Had a Diet Dr. Pepper to drink. For Dessert/Snack tonight a bowl of Skinny Pop – Pop Corn along with a Diet Trop A Rocka Snapple.

Kikkoman Less Sodium Soy Sauce is brewed exactly the same way as all-purpose Kikkoman Soy Sauce. However, after the fermentation process is completed, approximately 40% of the salt is removed. Although there is less sodium in Less Sodium Soy Sauce, all the flavor and quality characteristics remain because it is aged before extracting the salt. However, to maintain this full flavor, we recommend using it during the latter stage of cooking in braising sauces, soups and stews, vegetables or stir-frys.

Bison Pasta Salad
yield 6-8
Ingredients

1 lb. cooked cork screw noodles
1 (8-oz.) can black olives, chopped
10 cherry tomatoes
12 oz. Bison summer sausage, chopped
7 T. Parmesan cheese, grated into small pieces
1 (16-oz.) Seven Seas Viva Herbs
1 bunch broccoli flowerets Spices dressing
2 sm. zucchini, thinly sliced
8 green onions, chopped
Instructions

1 – Combine cooked noodles, broccoli, onions, zucchini, cheese and dressing in dish. Refrigerate overnight.
2 – Add Bison summer sausage and tomatoes just before serving.

Vegetable-Chicken Noodle Soup

Ingredients

6 cups 1/3-less-salt chicken broth, divided
1 cup chopped celery
1/2 cup thinly sliced leek (white part only)
1/2 cup chopped carrot
1/2 cup peeled and chopped turnip
1 tablespoon minced fresh parsley
1-1/2 teaspoons fresh thyme or 1/2 teaspoon dried thyme leaves
1 teaspoons fresh rosemary or 1/4 teaspoon dried rosemary
1 teaspoon balsamic vinegar
1/4 teaspoon fresh ground black pepper
2 ounces uncooked “no-yolk” broad noodles
1 cup diced cooked chicken
Directions

1 – Place 1/3 cup chicken broth, celery, leek, carrot and turnip in large saucepan. Cover and cook over medium heat until vegetables are tender, stirring occasionally.
2 – Stir in remaining 5 -2/3 cups chicken broth, parsley, thyme, rosemary, vinegar and black pepper. Bring to a boil; add noodles. Cook until noodles are tender; stir in chicken. Reduce heat to medium. Simmer until heated through.

This week’s Jennie – O Recipe of the Week is – Easy Turkey Samosas. I wasn’t sure exactly what a Samosa was so I found it on wiki which said; A samosa is a fried or baked dish with a savory filling, such as spiced potatoes, onions, peas, lentils, macaroni, noodles or minced meat. Pine nuts can also be added. There you have it! This one is made using JENNIE-O® Lean Ground Turkey, several Spices and Eggroll Wrappers. Easy Turkey Samosas

Samosas, made popular in Southeast Asia, are hitting restaurants across the U.S. and we’re not surprised. This recipe features a savory filling wrapped and fried crispy. Try them as an appetizer or entrée tonight!

INGREDIENTSeasy-turkey-samosas

1 tablespoon olive oil
1 (1-pound) package JENNIE-O® Lean Ground Turkey
½ cup finely chopped onion
1 teaspoon ground cumin
1 teaspoon ground coriander
1 teaspoon ground chili powder
½ teaspoon kosher salt
½ cup chopped fresh cilantro leaves
12 eggroll wrappers
vegetable oil for frying
DIRECTIONS

1) In large skillet add oil. Cook ground turkey as specified on the package. Always cook to well-done, 165°F as measured by a meat thermometer.
2) Add onions, cumin, coriander, chili powder, and salt. Stir in cilantro leaves and cool completely.
3) Brush edges of wrapper with water. Place 3 tablespoons of turkey mixture in center of eggroll wrapper. Fold top corners over filling creating a triangle at the top. Fold point of triangle down and fold bottom corners over top of triangle to seal.
4) Heat oil to 325°F in large deep sided skillet or Dutch oven. Place samosas in hot oil, in small batches and cook 2 to 3 minutes or until lightly browned.
* Always cook to an internal temperature of 165°F.

Turkey Zucchini Thai Noodle Salad

Zucchini noodles replace classic noodles in this Asian salad. This dish features fresh vegetables and roasted turkey tossed in peanut sauce.

INGREDIENTSturkey-zucchini-thai-noodle-salad

6 ounces JENNIE-O® Savory Roast Turkey Breast Tenderloin
3 large zucchini, spiraled into noodles
1 red bell pepper, thinly sliced
1 cup shredded carrots
1 cup purple cabbage, thinly sliced
1 cup cucumber, julienned
½ cup chopped green onions
2 tablespoons HOUSE OF TSANG® Bangkok Peanut Sauce
2 tablespoons rice wine vinegar
2 tablespoons olive oil
garnish: chopped dry-roasted peanuts

 
DIRECTIONS

1 – Cook turkey tenderloin as specified on the package. Always cook to well-done, 165°F as measured by a meat thermometer.
2 – Slice or chop.
3 – Divide zucchini into 2 serving bowls. Divide turkey turkey, zucchini, bell pepper, carrots, cabbage, cucumber and green onions into each bowl.
4 – In small bowl whisk together peanut sauce, vinegar and oil. Drizzle desire amount over each salad. Garnish with peanuts, if desired.
* Always cook to an internal temperature of 165°F.
