Another beautiful sunny Spring day! Mid 60’s today and the 70’s next week, finally! For dinner tonight I wanted something easy and light so I went with Newman’s Own Uncured Pepperoni Thin & Crispy Pizza. Everything is there you just pop it in the oven at 425 degrees for about 12 minutes and you have Pizza! It’s a Thin and Crispy Crust and the Pizza itself is well seasoned, a nice amount of toppings and fantastic flavor. Easy to make, a good Pizza, and a breeze to clean up. Plus it’s a Newman’s Own Product. Newman’s Own has donated Millions to Charity from the sale of their products. For dessert/snack later a 100 Calorie Mini Bag of Jolly Time Pop Corn

Today’s Menu: Baked Buffalo Chicken Breast Sandwich w/ Baked Potato
Come on Spring time give us a break! It was sunny all day but a very cold wind. If the forecast is correct we are supposed to set a record low temperature for in the morning. Come on Summer Breeze! For dinner I prepared one of my favorites anymore; Baked Buffalo Chicken Breast Sandwich w/ Baked Potato.

To prepare my Chicken I needed 2 (4 ounce) Boneless Skinless Chicken Breasts, 6 Tablespoons favorite Wing Sauce (I used Kroger WingBaked Buffalo Chicken Sandwich 004 Sauce), and 1/2 Cup Litehouse Lite Bleu Cheese Dressing/Dip, and Aunt Millie’s Light Whole Grain Buns . To start I Preheated the oven to 400°F. Then Sprayed large non-stick skillet and 8×8″ baking dish with Pam cooking spray. Added the chicken to skillet & cooked 4-5 minutes each side until browned. Placed the chicken in dish and poured Wing Sauce over chicken and baked (uncovered) 20 minutes. I served it on an Aunt Millie’s Light Whole Grain Bun and topped it with some Litehouse Light Bleu Chesse Dressing. I made 2 Chicken Breasts 1 for dinner and 1 for lunch tomorrow.

To go with the Baked Buffalo Chicken Breasts I had a Baked Potato topped with Newman’s Own pineapple Salsa. I love this Newman’s Own Salsas. They have 3 or 4 varieties and their all fantastic. This Pineapple Salsa goes great over Baked Potatoes, Pork Chops, and Fish. For dessert later a Jello Sugar Free Double Chocolate Pudding topped with Cool Whip Free.
Baked Buffalo Chicken Breasts

Ingredients
2 (4 ounce) Boneless Skinless Chicken Breasts
Sea Salt and Black Pepper, to taste
4 Tablespoons favorite Wing Sauce (I used Kroger Wing Sauce)
1/2 Cup Lighthouse Lite Bleu Cheese Dressing/Dip
Aunt Millie’s Light Whole Grain Buns
Directions
Preheat oven to 400°F.
Spray large non-stick skillet and 8×8″ baking dish with cooking spray.
Season Chicken and add chicken to skillet & cook 4-5 minutes each side until browned. Place chicken in dish and…
Pour Wing Sauce over chicken and bake (uncovered) 25 minutes.
Serve with Bleu Cheese Dressing and Serve on Aunt Millie’s Light Whole Grain Bun.

Wow I tried Newman’s Own Pineapple Salsa for the first time and I’m going to have to make room for another Salsa! My favorite is still Newman's Own Pineapple SalsaNewman’s Own Black Bean and Corn Salsa but the Pineapple is awfully close! It’s a completely different Salsa than the Black Bean and Corn. It’s got a little heat from the Jalapenos and then you have the sweetness from the Pineapple, it ends up a perfect match for a Salsa. This would go good over your Eggs at Breakfast or at dinner for a topping for your Baked Potato. I’ll be adding this to the Pantry Stock for sure.

For the second time I’m going with Newman’s Own Chicken Florentine & Farfalle Complete Skillet Meal. I came across this at Meijer a while back and I’ve tried a couple of the dinners now. It has 370 calories and 42 carbs, which isn’t bad considering it’s a complete meal. It comes frozen and contains “Freshly made Pasta and White Chicken Meat in a Parmesan and Romano Cheese Sauce.”

 

 

You want an easy and delicious Chicken Florentine meal, you have to try this! The only problem is it’s a 2 serving meal and if your just preparing for yourself it’s tough not to eat both servings! I really enjoyed this. The Pasta, Chicken and Sauce are perfect together. The only things I added was a bit of Sea Salt and a sprinkle of Kraft Shredded Parm Cheese. I baked a side of Walmart Bakery’s Garlic Knot Bread. For dessert later i baked a pan of Betty Crocker Low Fat Fudge Brownies, I added walnuts to them to make them Walnut Fudge Brownies. I took a half serving slice of Brownies and topped it with a scoop of Breyer’s Carb Smart Vanilla Ice Cream for dessert later.

We couldn’t resist the chance to provide yet another way to make a perfect meal. So this time, we’re introducing our new Complete Skillet Meals! Available in 7 delicious flavors, these all-natural frozen meals are a cinch to prepare – just 10 minutes in the skillet and dinner is done! Find them in your grocer’s frozen food aisle.

Directions
For food safety and quality follow these cooking instructions. Stovetop (Recommended): 1) Pour contents of bag into 12-inch nonstick skillet. 2) Cover and cook over high heat 4 minutes. Reduce heat to medium-high and continue cooking covered, stirring occasionally, until sauce is boiling and all ingredients are hot, about 6 minutes. Product should; be cooked to 165 degrees F. Toss and serve. Microwave: 1) Pour contents into 2-quart microwave-safe casserole. 2) Microwave covered at High 10 to 12 minutes. for high power microwave ovens (1000 to 1300 watts) or 13 to 20 minutes for low power microwave ovens (700 to 900 watts) or until sauce is boiling and all ingredients are hot, stir once halfway through. 3) Let stand covered 2 minutes. 4) Stir and serve. Product should be cooked to 165 degrees F. Microwave ovens vary; adjust times as needed. Casserole may be hot after microwaving. Do not microwave in bag. Keep frozen until ready to use. Do not refreeze. Refrigerate or discard leftovers.

I came across this at Meijer while wandering around the Frozen Food Section. they had 2 or different selections but I went the Newman’s Own Chicken Florentine & Farfalle Complete Skillet Meal. It has 370 calories and 42 carbs, which isn’t bad considering it’s a complete meal. It comes frozen and contains “Freshly made Pasta and White Chicken Meat in a Parmesan and Romano Cheese Sauce.”

Today’s Menu: Newman’s Own Thin & Crispy Uncured Pepperoni Pizza


Tried something new for dinner tonight,  Newman’s Own Thin & Crispy Uncured Pepperoni Pizza. It seemed no one was really hungry tonight so we went with the Thin Crust Pizza. Newman’s Own had some good reviews so we gave it a try. Easy to fix, baked at 425 degees for 10 – 12 minutes and we have Pizza! It was something different and something good. It was Thin Crust and 320 calories and 31 carbs, which isn’t bad for Pizza. The Cheese, Sauce, Pepperoni, and Crust were all good and made a tasty Pizza. We’ll have this again sometime soon! I left the product description and web site link at the bottom of the post. For dessert later a Yoplait Delight 100 Calorie Chocolate Eclair Parfait.
