BUFFALO ITALIAN SAUSAGE PIADINA

Piadina is an Italian flatbread that is delicious by itself or used in place of bread to make a sandwich or pizza. The dough is wonderful to work with and the aroma when it cooks will bring volunteer taste testers to your door. It’s great for making ahead of time for easy entertaining or casual family meals. Simply prepare your crust in advance, have toppings ready to go and have your guests create their own!

(Serves 8 )
Piadina Dough

Ingredients:

1 pkg. quick yeast
½ cup warm water
½ cup flour
3 ½ cups flour
1 teaspoon salt
1 cup cold water
2 tablespoons olive oil

Buffalo Piadina Toppings:

8 oz. fresh mozzarella, sliced
1 portabella mushroom, sliced
1 lb. Wild Idea Buffalo Italian Sausage, coarse crumbled and sautéed
4 Roma Tomatoes, sliced, sprinkle with salt & pepper
1 cup fresh basil, julienned
4 oz. parmesan, grated + more for passing

Directions

1 – Mix yeast, water and ½ cup flour together.
2 – Cover and let rest for 20 minutes. Mixture will be double in size and bubble.
3 – Add remaining flour, salt, water and olive oil, knead together for 5 minutes.
4 – Place in lightly oiled bowl, cover and allow dough to double in size. About 2 hours.
5 – Divide dough into 8 pieces and roll out on a lightly floured surface into 8 inch circles.
6 – Place grill tiles or bricks on grill grates and turn heat to 400*.
7 – Place rolled dough on tiles and grill for 1 minute each side, or until dough has puffed slightly and become lightly browned. Keep grill lid closed during cooking.
8 – Place crust on pizza stone or make individual pans of foiled parchment and top with favorite toppings. Keep toppings in balance so all flavors are equally represented.
9 – Return prepared pizza to 400* grill. Close lid and continue to cook for 5 minutes or until cheese is melted.
* Remove from grill. Cut each pizza into 4. Serve with green salad for a complete meal.

Today’s Menu: Banquet Homestyle Bakes Pizza Pasta w/ Cheesy Bread

 

For Breakfast this morning I had a cup of Bigelow Decaf Green Tea. 94 degrees, humid, and partly cloudy out today. After my Tea I headed out to Kroger, for Mom, then on to Meijer for a few items. Back home, a couple of ladies here on our street thought they could scare a skunk away. Needless to say that didn’t work out at all for them! The skunk sprayed them and the entire street was smelling it! It was pretty bad out there for a while. The Cicadas are finally dying out! Can not wait until they are gone, what a mess this year. So for Dinner tonight I prepared Banquet Homestyle Bakes Pizza Pasta w/ Cheesy Bread.

 

I Love this Pizza Pasta from Banquet and haven’t had it in a while! This is one of my favorite boxed foods, Banquet Homestyle Bakes Pizza Pasta. Nothing like a quick, easy and delicious comfort food. I can only find it at Walmart or online now.

 

It’s got two of my favorites in it, Pasta and Pizza! The box contains 1 can of Pizza Sauce w/ Pepperoni and Sausage and 1 Pouch of Rotini Pasta. I also added a few slices of Turkey Pepperoni and sliced Portabello Mushrooms to the mix. For the preparation you can bake it or prepare it on the stove top, which is how I prepared it. Add 1 cup of water, stir and mix, and simmer and you have your dinner! This came out fantastic! Really had a good Pizza flavor to it and excellent Sauce! The Sauce with the Mushrooms, Sausage, and Pepperoni provides the great flavoring. Easily prepared and makes a hearty and delicious meal. I know it’s a boxed meal, I can’t help it. It’s always been a favorite of mine since the first time I tried it!

 

Along with the Pizza Pasta I also prepared some Baked Cheesy Bread. I’ll be using Aunt Millie’s Live Carb Smart Whet Bread, Sargento Reduced Fat Shredded Mozzarella Cheese, Kraft Reduced Fat Grated Parmesan Cheese, and I Can’t Believe It’s Not Butter. Just Butter the Bread and add your Cheese on top. Then bake on 400 degrees until the Bread is toasted and Cheese is melted. For Dessert later a Jello Sugar Free Dark Chocolate Pudding.

 

 

 

 

 

 

 

Banquet Homestyle Bakes Pizza Pasta

Roasted Vegetable Sandwiches
Trying a vegetarian approach, or just looking for a meal for Meatless Mondays? These hearty veggie heroes are the perfect centerpiece to a meat-free meal!

Ingredients
Preparation time: 30 minutes
Marinating time: 1 hour
Cooking time: 16–22 minutes.

2 zucchini (about 8 inches long), cut diagonally into 1/4-inch-thick slices
1/2 large purple onion, cut into 1/4-inch-thick slices and separated into rings
4 ounces mushrooms, thickly sliced
1/2 14-ounce can artichoke hearts, drained and quartered
1/2 cup bottled balsamic vinaigrette salad dressing
1 jar (7 ounces) roasted red peppers, drained
Cooking spray
9 (2-ounce) French rolls
9 (3/4-ounce) slices smoked provolone cheese

Directions
Yield: 9 sandwiches
Serving size: 1 sandwich

1 – Place zucchini slices, onion rings, mushroom slices, and quartered artichoke hearts into a bowl. Drizzle with balsamic vinaigrette and toss to coat vegetables well. Let mixture stand at room temperature 1 hour, stirring occasionally. Gently toss in red peppers to coat with dressing. Drain vegetables and discard remaining dressing.

2 – Preheat oven to 450°F. Spread out vegetables in a 9″ x 13″ pan coated with cooking spray. Roast vegetables for 15–20 minutes, or until tender when pierced with a fork; carefully stir halfway through cooking. Warm French rolls. Split rolls and place the bottoms on a baking sheet. Drain liquid off vegetables. Spoon about 1/2 cup vegetables on the bottom of each roll. Top each with a slice of provolone cheese and the other half of the roll. Return to the oven for 1–2 minutes, or until cheese melts.

Today’s Menu: Chopped Bison Sirloin and Sauteed Mushrooms w/ Baked Potato and Texas Toast

 

For Breakfast this morning I toasted a Thomas Light English Muffin, lightly fried slices of Boar’s Head Sweet Slice Ham, fried a Sunny Side Up Egg, and added a 1/2 slice of Boar’s Head Longhorn Colby. One Delicious Breakfast Sandwich! I also had a cup of Bigelow Decaf Green Tea. 79 degrees with rain and thunderstorms on and off throughout the day. At least the rains are keeping the Cicadas in also. Did a load of laundry for Mom. Not much else to do. For Dinner tonight it’s one of our favorites, Chopped Bison Sirloin and Sauteed Mushrooms w/ Baked Potato and Texas Toast.

 

For Dinner tonight it’s one of our favorites, SayersBrook Ranch Bison Chopped Sirloin Steak. SayersBrook no longer produces the Chopped Bison Sirloin. So I thought that was the end of them until I came across 3 packages of 2 of at the bottom of the stand up freezer Saturday! That made our day, me and Mom both love these! I sat the package in the fridge overnight to thaw. So to start I preheated the oven on 400 degrees. To prepare it I’ll need McCormick Grinder Sea Salt and Peppercorn Medley, McCormick Crushed Rosemary, and McCormick Thyme Leaves (all seasoning to taste). I got the Cast Iron Skillet out to prepare it. I first sprayed it with a very light coat of Pam Cooking Spray and then added a tablespoon of Extra Light Olive Oil. Heated it on medium heat. When the pan was heated I added the Chopped Steak. I cooked each side 2 minutes. Then finish it in the oven, at 400 degrees for 7 minutes. It cooked up beautifully, perfect medium rare! Had a nice little char on the outside and moist and juicy inside. These are so tender you could slice them with a spoon and have an excellent taste to them. This might be all the SayersBrook Ranch Bison Chopped Sirloin Steak that we have left. They no longer make the Chopped Steak, very sad!

 

I topped the Chopped Steak with some A-1 Sauce Thick/Hardy. Also cooked up some Sauteed Mushrooms.

 

I also prepared a Baked Potato. Seasoned that with the McCormick Grinder Sea Salt and Peppercorn Medley, and topped with I Can’t Believe It’s Not Butter. I also baked a slice of New York Bakery Texas Toast, One delicious meal tonight. The Chopped Steak, Potato, and Texas Toast just seem to work the best! For Dessert/Snack later a 100 Calorie Mini Bag of Snyder’s of Hanover Pretzels and a Diet Dr. Pepper to drink.

Wild Mushroom Flatbread
A combination of cremini mushrooms, shiitake mushrooms, and Gruyère cheese makes this flatbread simply divine!
Ingredients

1 package (13.8 ounces) refrigerated pizza dough
2 teaspoons olive oil
1 package (4 ounces) sliced cremini mushrooms
1 package (4 ounces) sliced shiitake mushrooms
1 shallot, thinly sliced
2 cloves garlic, minced
1/2 teaspoon salt
3/4 cup (3 ounces) grated Gruyère cheese
2 teaspoons chopped fresh thyme

Directions

1 – Preheat oven to 400°F. Line baking sheet with parchment paper. Spray with nonstick cooking spray.

2 – Roll out pizza dough on lightly floured surface to 15 x 10-inch rectangle. Place on prepared baking sheet. Bake 10 minutes.

3 – Meanwhile, heat oil in large nonstick skillet over medium-high heat. Add mushrooms; cook and stir 5 minutes. Add shallot and garlic; cook and stir 5 minutes or until tender. Season with salt.

4 – Arrange mushroom mixture evenly over prepared pizza crust. Top evenly with cheese and thyme.

5 – Bake 8 minutes or until cheese is melted. To serve, cut into 16 pieces.

Yield: 16 pieces (about 8 servings). Serving size: 2 pieces.

1 tsp chopped fresh thyme
1/4 tsp salt
1/4 tsp pepper
3/4 cup dry bread crumbs
2 Tbsp canola oil
1 can (14oz) low-sodium crushed tomatoes
1 Tbsp balsamic vinegar
1-1/2 lb. Cod fillets (or other white fish fillet, such as halibut, haddock or tilapia), about 4 oz each

Directions

1 – Preheat oven to 400F (200C).
2 – In food processor, mince mushrooms until finely chopped.
3 – In large, dry saucepan, cook mushrooms over medium heat until moisture is gone and mushrooms are lightly browned, about 5 minutes.
4 – Remove from heat and add shallots, green onions, parsley, thyme, salt, pepper, bread crumbs and canola oil. Mix well. Set duxelles mixture aside.
5 – In a lightly oiled 9×13-inch (22×33-cm) baking pan, spread crushed tomatoes. Stir in balsamic vinegar. Place fish fillets on top of tomatoes. Spoon duxelles mixture over fish, covering fillets.
6 – Bake for 15 to 20 minutes until fish flakes easily with fork and mushroom mixture is lightly browned.

NOTES:
This family-friendly recipe features a mild, flaky white fish topped with a classic French combination of chopped mushrooms, shallots and fresh herbs.
