Today’s Menu: Blackened Grouper w/ Mushroom and Parmesan Risotto, Boiled Mini Carrots, and Wheat Bread

Blackened Grouper Risotto Carrots 001

It’s been a chilly but a sunny and beautiful day out today! Started the day off by making an Egg, Canadian Bacon, and English Muffin Breakfast Sandwich with the Hamilton Beach Breakfast Sandwich Maker I had purchased about a month ago. Love this thing, it makes a perfect sandwich every time! Since it was above freezing I took my car and Mom’s over to a local car wash and had them both cleaned, and both needed it! Went to the grocery and home for the day. For dinner tonight I prepared a Blackened Grouper Fillet w/ Mushroom and Parmesan Risotto, Boiled Mini Carrots, and Wheat Bread.

Last night before I went to bed I laid one of the Gulf Coast Grouper Fillets in the fridge overnight to thaw. A friend of mine who goes down to the gulf Side of Florida quite often always brings me back some of his fresh caught Grouper. These are always some of the finest tasting Grouper I’ve ever had! i started by rinsing the fillet off in cold water and patting dry and cut it into smaller pieces. I melted a tablespoon of butter, Blue Bonnet Light Stick Butter. I then brushed both sides of the fillets with the Butter and then rubbed the fillets with Zatarain’s Blackened Seasoning. Then I got out my favorite skillet, The Cast Iron Skillet. Is there any better pan? You can’t stain it, you fry in it, bake in it, and all temperatures. Just make sure you clean it and keep it seasoned, it will last a life time and then some! Anyway added Canola Oil to the skillet and heated it on medium high. When the pan was fully heated I added my Grouper. Cooked it about 3 1/2 minutes per side, and it was ready for the table! This fish is just soooo good, hard to describe! Moist and bursting with flavor. I hope my friend catches a lot of grouper while he’s down there after the first of the year, and keeps me in mind!

For one side dish I made some Mushroom and Parmesan Risotto. I used Lundberg Creamy Parmesan Risotto. Quick, easy, and delicious Risotto dish. Ready in about 25 – 30 minutes. I added some fresh sliced Baby Bella Mushrooms to it as it was cooking. Then when it was ready I sprinkled some fresh grated Parmesan Cheese on it. Then I also boiled some Mini Carrots and had a slice of Klosterman Wheat Bread. For dessert later a Del Monte No Sugar Added Peach Chunks Cup.

Lundberg Creamy Parmesan RisottoLundberg Risotto2
Enjoy the delectable flavor of rich, aged Parmesan cheese in this elegant Italian-style risotto. We created this delicious gourmet side dish by blending quality ingredients like Parmesan cheese, onion, garlic, and spices with our creamy Arborio rice. You’ll love how the individual kernels plump, creating a rich, creamy sauce while the rice grains remain separate and al dente. Preparing this tasty risotto takes about 20 minutes and requires minimal stirring. It’s an easy, convenient way to add gourmet flair to any meal.

Cooking Instructions

In a heavy 2 qt. saucepan, sauté rice in ½ Tbsp. olive oil over medium heat for 2 minutes. Add 2½ cups water and contents of seasoning pouch. Stir well and bring to a boil. Reduce heat to simmer, cook uncovered for 20 minutes stirring occasionally until rice is tender. Garnish with grated Parmesan cheese is desired. Serve piping hot.

Eco-Farmed Arborio Rice, Parmesan and Cheddar Cheese Blend (Parmesan Cheese, Cheddar Cheese {Milk, Cheese Culture, Salt, Enzymes}), Salt, Whey, Buttermilk Powder, Dried Cane Syrup, Natural Flavors (Cheese, Dairy), Garlic Powder, Onion Powder, Sodium Phosphate, Maltodextrin, Dried Parsley, Yeast Extract, Butter (Cream, Salt), Rice Flour, Autolyzed Yeast Extract, Expeller-Pressed Safflower or Sunflower Oil, Pepper, Lactic Acid, Nonfat Milk, Enzyme-Modified Cheddar Cheese, Turmeric. Contains Milk.

Ever wonder why mushrooms are usually sold in styrofoam or cardboard containers? Plastic containers tend to keep the mushrooms too wet, and they go bad quickly. Fresh mushrooms have a shelf life of only 2-3 days and must be stored in the refrigerator in an open container. The original container or another paper product will work best. Never was mushrooms before storing them – they’ll retain the water and become soggy. If you must keep them for a few days, place a single layer of cheesecloth on top of the container. (if they do become shriveled, they can still be sliced or chopped and used in cooking.) To freeze mushrooms, wipe them off with a damp paper towel, slice them, saute them in a small amount of butter until they are almost done, allow them to cool, and place in an airtight plastic bag and freeze. They should keep for 10-12 months.

The 30 Healthiest Foods

From the Delish web site some great tips and recipes about “The 30 Healthiest Foods”. I’ve left the link to the web site at the end of the post.

The 30 Healthiest FoodsDelish
There are so many delicious and nutritious foods out there, and with fresh news constantly surfacing about the latest and greatest superfoods, it can be hard to know what to pick up when you head to the supermarket. But with this list of the healthiest foods out there, you’ll now know exactly where to go in those massive market aisles to grab the foods with the biggest nutritional payoff.

Mushrooms are full of nutritional benefits, and can make a great stand-in for meat in vegetarian dishes because of their complex, savory flavor and firm texture. Additionally, mushrooms are the only plant source of vitamin D, a nutrient many of us are deficient in, and are also one of the only types of widely available produce that contain significant amounts of selenium, which, according to WebMD, helps prevent cell damage. Many varieties are also thought to have immune-boosting and anti-cancer properties.

Barley is a grain full of fiber. It’s delicious in soups, as a hot breakfast cereal, as a part of a salad studded with vegetables, or even as a stand-in for rice in your favorite risotto recipe. And because it is fiber-rich and more slowly digested by the body than more refined grains, it’s thought to help lower blood pressure and keep blood sugar levels stable. If you’re looking to get the most nutritional bang for your buck, choose hulled barley — it takes longer to cook, but its extra layer of bran means it has even more fiber than other varieties…..

Today’s Menu: Wild Idea 1/4 Turkey Bacon, Mushroom, Smoked Cheddar Buffalo Buger w/ Baked Ore Ida Crinkle Fries

Wild Idea Buffalo Burger 001

I’ve been wanting one of these Wild Idea Buffalo Burgers since I received my order from them! So for dinner tonight I prepared a Turkey Bacon, Mushroom, Smoked Cheddar Bison Burger w/ Baked Ore Ida Crinkle Fries. I normally just add Sea Salt and Black Peppercorn to the Burger, maybe Cheese, but I dressed this up.

I used a Wild Idea 1/4 lb. Buffalo Burger that I seasoned with McCormick Grinder Sea Salt and Black Peppercorn. I pan fried it using Canola Oil, frying it about 3 1/2 to 4 minutes per side to a perfect medium rare. These are the best tasting juicy Bison Burgers I’ve ever had! The taste is just incredible, it’s an almost sweet wild game taste. Did I tell you how juicy they are! I served it on a Aunt Millie’s Light Whole Grain Bun and topped it with a slice of Oscar Mayer Low Sodium Turkey Bacon, Sauteed Mushrooms, and a slice of Borden’s Smoked Cheddar Cheese. These are great with just the Sea Salt and Black Peppercorn but I wanted to load it up a bit because I have to start fasting after 10:00 pm to have my bi – yearly blood work done, checking Cholesterol, Sugar and Blood Cell counts.

For a side to go with my Buffalo Burger I had Baked Ore Ida Fries, only 120 calories and 19 carbs. For dessert a Jello Sugarless Dark Chocolate Pudding.

Wild Idea Buffalo 4 – 1/4-Lb Buffalo BurgersWild Idea
Prepare for a whole new level of burger. Conveniently pre-made into one-quarter pound patties that are ever so grillable. Dinner ready. Each pack is 1 pound with 4 – 1/4 Lb patties.

Today’s Menu: Mushroom & Smoked Cheddar Bison Burger w/ Crinkle FriesBison burger great range 003

Really enjoyed the day, out spreading Christmas Cheer! I was out delivering Christmas cards and Gifts this afternoon. I love giving friends and family gifts, It’s my favorite part of Christmas! I dropped off Candy and Gift Cards to my Family Doctor and his staff and cards and candy to my long time Oncologist along with his staff. Also while at my Oncologist, as I always do every month, I dropped off a huge box of Snacks – Doritos, Lay’s Potato Chips, Cheese Crackers, and such the treatment center in his office. It’s so sad, they enlarged their in office treatment center for cancer patients and it’s still not large enough to treat all the patients fighting cancer. I received treatment there myself once and I hold a very soft spot in my heart for all those fighting the various forms of cancer. So I make sure I drop off snacks for the patients to snack on while receiving their treatments. I finished up my gift deliveries by dropping a few cards off to my neighbors. I’ve got some great neighbors, they are always there to help and assist me with what ever help I need. Being in a wheelchair having good neighbors like I do is a blessing!

Well for dinner I prepared Mushroom & Smoked Cheddar Bison Burgers w/ Crinkle Fries. yes I’ve got my Mom eating a Bison Burger, she’s coming around! I used Great Range Ground Bison Sirloin. I seasoned it with McCormick Grinder Steakhouse Seasoning and pan fried them about 3 – 4 minutes per side, 3 minutes for mine I like medium rare. I served them on a Healthy Life Whole Grain Bun and topped them with Sauteed Baby Bella Mushrooms and a slice of Borden Smoked Cheddar Cheese.

For a side I baked some Alexia Crinkle Fries with a dipping side of Hunt’s Ketchup. For a dessert/snack later I prepared some BBQ Bison burger great range 001Pineapple Turkey Meatballs. 3 ingredients; 1 package Honeysuckle White Turkey Meatballs, 1 bottle BBQ Sauce (I used Montgomery Inn Sauce), and 1 small can Dole Pineapple Tid Bits. Just add all ingredients to a medium size sauce pan set it on low and let it simmer till warmed through out. Makes a great little quick snack or appetizer.
