Today’s Menu: Turkey Bacon and Muenster Cheese Buffalo Burger w/ Baked Fries

For Breakfast here in West Chester on my Birthday, I prepared some Simply Potatoes Shredded Hash Browns, heated up 2 Jimmy Dean Turkey Sausages, and my favorite morning beverage a cup of Bigelow Decaf Green Tea. turkey-bacon-and-muenster-cheese-buffalo-burger-w-baked-fries-004Turning 58 today and still Cancer Free! So while some days may be a bit rough from time to time, It’s still a very good day! Lot of rain overnight and it finally ended early this morning. We started out at 41 degrees and it dropped throughout the day. These past few days of above normal temperatures has spoiled everyone. Mom took my Dad to a Doctor’s appointment this morning and then stopped and had Breakfast. While they were out I cleaned the house. After that just kicked back and got caught up on some shows I recorded. For Dinner tonight I prepared a Turkey Bacon and Muenster Cheese Buffalo Burger w/ Baked Fries.

It’s my weekly Buffalo Burger craving night! Tonight I’m having a Wild Idea Buffalo 1/3-Lb Buffalo Burger patty. And tonight’s Burger is going to be a Turkey Bacon and Muenster Cheese Buffalo Burger. Along with the Buffalo Burger I’m using Jennie – O Turkey Bacon, Murray’s Muenster Cheese, and Healthy Life Whole Grain Hamburger Bun.

turkey-bacon-and-muenster-cheese-buffalo-burger-w-baked-fries-002
I started by frying the Jennie – O Turkey Bacon. I need 2 slices so I fried 4 slices, Bacon math you know! It’s a household rule when preparing Bacon always double the amount because you know when you fry Bacon you’re going to eat half of it before its ever ready to use. Thus, Bacon Math comes into play! Next I preheated up a small skillet that I sprayed with Pam Cooking Spray, seasoned my Burger with McCormick Grinder Sea Salt and Black Peppercorn. I then pan fried it, in Extra Light Olive Oil, about 3 1/2 minutes per side, after flipping the Burger I added my slice of Cheese, I’m using Murray’s Aged Muenster Cheese. i served the Burger on a Healthy Life Whole Grain Bun, topped turkey-bacon-and-muenster-cheese-buffalo-burger-w-baked-fries-005the Burger with the Turkey Bacon I had made earlier and done! Love a good Burger and love these Wild Idea Buffalo Burgers, and topped with the Jennie – O Turkey Bacon and Muenster Cheese just adds to the goodness!

Grilled Cheese and Baked Fries 003
To go with my Burger I baked some Alexia Organic Yukon Select Fries leftover so I prepared them to go with my Burger.Seasoned them with McCormick Grinder Sea Salt and Black Peppercorn Medley. Baked them at 425 degrees for 16 minutes. They bake up beautifully and seasoned just right, excellent Shoestring Fry! Plus they are only 120 calories and 15 net carbs. I had a Diet Peach Snapple to drink. For Dessert later a 100 Calorie Breyer’s Chocolate Ice Cream Cup.

Today’s Menu: Ground Pork Burger w/ Baked Fries

Ground Pork Burger Fries 004
A break from the snow today and not real cold today. But it looks as though we are in for a week of cold weather, below zero a few mornings and below freezing all week. Did a few chores indoor and then outside clearing the driveway, again! Got most of slush and snow off and salted it . I wanted to get all I could off before the big freeze tomorrow. After that settled in for a day of NASCAR and College Basketball. For dinner tonight it’s a Ground Pork Burger w/ Baked Fries.

I bought a 1 lb. package of Kroger Ground Pork at Kroger the other day and made 5 Pork BurgeGround Pork Burger Fries 001rs out of it, freezing 4 of them and having one for my dinner tonight. I seasoned it McCormick Grinder Sea salt and Black Peppercorn. Then pan fried it in a small skillet in Extra Virgin Olive Oil, 4 1/2 minutes per side. Served it on a Healthy Life Whole Grain Bun and topped it with a slice of Simple Truth Muenster Cheese. The Ground Pork is always so moist and flavorful, again Kroger has some of the best Pork Products around. I also baked some Ore Ida Steak Fries, served with a side of Hunt’s Ketchup. For dessert later a Del Monte No Sugar Added Peach Chunk Cup.

Today’s Menu: Grilled Jennie – O Cracked Pepper Dark Turkey Pastrami Sandwich w/ Baked Fingerling Potato Wedges

Grilled Pastrami Sandwich 002
Not a bad morning, when I went out to get the morning papers there was no wind and about 32 degrees. But about an hour or so later the wind picked up and the temperatures started dropping. Then by around 2:00 this afternoon we had wind gusts up over 50 mph with snow, at one point you couldn’t see past the house next to you because of the blowing snow.  By tomorrow morning a wind chill below 0. Winter is proving it’s not near over yet. Helped out with some laundry and ran the vacuum, and that was about it for the day. Chair, remote, and College Basketball for the remainder of the afternoon! For dinner tonight I prepared a Grilled Cracked Pepper Dark Turkey Pastrami Sandwich w/ Baked Fingerling Potato Wedges.

I had made the Grilled Jennie – O Cracked Pepper Dark Turkey Pastrami last week and enjoyed it so much I wanted to prepare it again. To make my Sandwich I’ll need; Jennie – O Cracked Pepper Dark Turkey Pastrami, Klosterman Wheat Bread, Simple Life Muenster Cheese, and Litehouse Lite Thousand Island Dressing. I’ll be using my Flat Griddle Pan to prepare it. To prepare it; on one bread slice I layered the Cheese, Turkey Pastrami, and Dressing. Cover with remaining bread slice. Place Sandwich on the Griddle. Cook 4 to 6 minutes or until the bread was toasted and golden brown, turning once. Wow, Jennie – O has another winning product with this Jennie – O Cracked Pepper Dark Turkey Pastrami! One delicious and healthy Deli Meat to have on hand. The Muenster Cheese and Litehouse Lite Thousand Island Dressing worked perfect with the Pastrami.

Grilled Pastrami Sandwich 001

For a side to go with the Sandwich I prepared some fresh-cut Fingerling Wedges. I sliced the Potatoes into wedges and seasoned them with a light coat of Extra Virgin Olive Oil, Garlic Powder, Dried Thyme, and McCormick Grinder Sea Salt and Black Peppercorn. Spread them out on a small Cookie Sheet and baked at 400 degrees until fork tender, about 20 minutes. Put a light sprinkle of fresh shredded Sargento Asiago Cheese over top and served. I wonder why Fingerling Potatoes are so hard to find? Jungle Jim’s International Market is the only one to carry them around here, at least the only one that I have found. For dessert later a Healthy Choice Dark Chocolate Frozen Greek Yogurt.

Today’s Menu: Smoked Turkey Sausage and Muenster Cheese Dogs w/ Baked Ruffles Chips

Smoked Turkey Sausage Dogs 004
Woke up to about 2″ of snow, not much at all but the temperature dropped to the low teens with a wind chill of around 8 degrees. So after it snowed the wind froze everything, which is making some slick roads out there today.Plenty of sunshine but not doing a lot of good. Warmer temperatures on the way for the weekend though! Shoveled what snow and ice I could and cleaned off the cars of the blowing snow and inside for the day. Basically did a whole lot of nothing today. For dinner tonight it’s Smoked Turkey Sausage and Muenster Cheese Dogs w/ Baked Ruffles Chips.

I had some leftover Butterball Hardwood Smoked Turkey Sausage from when I made the Jambalaya so I used that for my dinner tonight. Cut the remaining Sausage into to 2 pieces to give me a couple of Sausage Dogs. I absolutely love the Butterball Hardwood Smoked Turkey Sausage. It’s got such a fantastic flavor and always cooks up just right. To prepare them I used a large skillet, added about a tablespoon of Extra Virgin Olive Oil and preheated it on medium heat. Put the Sausage in the skillet when it was heated up and covered with a lid. I turned the Sausage every few minutes to get an even char on them, cooked about 11 minutes total. As always they came out bursting with flavor and just flat-out delicious! For the Buns I used Aunt Millie’s Reduced Calorie Whole Grain Buns. Before putting them on the Buns I had added a Half a Slice of Simple Truth Muenster Cheese. I then topped the Sausage with French’s Spicy Brown Mustard, love these things!Ruffles Baked Cheddar
To go with the Sausage Dogs I had some Ruffles Oven Baked Cheddar and Sour Cream Chips. It had been a while since I had any of these, a very good Chip! Their 120 calories, 20 net carbs, and 3.5 g fat per serving (13 chips). For dessert later tonight a Healthy Choice Frozen Greek Yogurt.

Today’s Menu: Toasted Ham, Turkey, and Muenster Cheese Sandwich w/ Tomato Soup

Boar's Head Ham and Turkey Muenster Cheese 007

While at Kroger the other day I was at the Deli buying some Kahn’s Bologna. When I seen the Boar’s Head Meats, and it was looking real good. So I purchased some Boar’s Head Black Forest Ham and Honey Roasted Turkey, sliced nice and thin! I love Boar’s Head Meats, always tastes fresh and lower in calories and sodium than most other cold cuts.

To make my Sandwich I’ll be using the Boar’s Head Black Forest Ham and Honey Roasted Turkey, Private Selection Sliced Muenster Cheese, Private Selection Sweet Hot Stone Ground Mustard, Kraft Reduced Fat Mayo w/ Olive Oil, and Klosterman Wheat Bread. I preheated the oven on 400 degrees. I toasted the Bread, spread the Mustard on the bottom slice of the Bread, layered the Ham, then the Turkey, Spread the Mayo on top of the Turkey, a slice of Muenster Cheese, and topped it with the other slice of Bread. Then I put my Sandwich on a small baking pan, and heated it for about 5 minutes, and served. Just describing this makes me want another Sandwich! The Ham and Turkey combo works great together, along with Muenster Cheese, and the Mustard and Mayo are perfect toppings.

Campbell's Creamy Tomato Soup

To go with my Sandwich I heated up some Campbell’s Creamy Tomato Soup. It comes in a microwavable container, just heat for 1 minute and 30 seconds and serve. For dessert later a So Delicious Vanilla Mini Ice Cream sandwich (Made with Coconut Milk).

A beautiful Autumn Day outside today! Sunny and a high of about 61 degrees. A very good Turkey Bacon Muenster Cheese Turkey Burger 002start to the day! Did some laundry and got the cart out and spent most of the afternoon riding around and enjoying the day. For dinner tonight it’s a Turkey Bacon and Muenster Cheese Turkey Burger w/ Baked Fries.

I’m using the Jennie – O Turkey Burger Patties. Their already pre-made Patties and come fresh or frozen so all I did was season it with Sea Salt and Ground Black Pepper and fry! I fried them in Canola Oil about 8 minutes per side. I served the Burgers on Healthy life Whole Grain Bun and topped the Burger with Jennie – O Turkey Bacon and Kroger Private Selection Muenster Cheese. Love these Burgers!

Baked (Leftover) Pot Roast Mini Sub w/ Red Potatoes and Mini Carrots

Today’s Menu: Baked Leftover) Pot Roast Mini Sub w/ Red Potatoes and Mini Carrots

Pot Roast Mini Sub 002

What a beautiful morning, sunny and 60 degrees with no humidity! I mean a perfect morning. Got the cart out early this morning and was on and off of it all day, enjoying this weather. Repaired an eave spout in the back of the house and straightened up the shed a bit. For dinner tonight it was leftovers, some delicious leftovers! I prepared a Baked (Leftover) Pot Roast Mini Sub w/ Red Potatoes and Mini Carrots.

The Pot Roast Beef (Beef Shoulder) was so delicious last night for dinner, I didn’t want to waste any of the leftovers. I took the Pot Roast and shredded it up a bit, discarding what little fat from it. Using a Crock Pot to prepare any meat, in most cases will get rid of most of the fat and turn it to flavor. I took the Shredded Beef and layered it on a Meijer Bakery Perfection Deli Mini Wheat Sub Bun. Topped it with just a bit of Sweet Hot Stone Ground Mustard and a slice of Boar’s Head Muenster Cheese. I used I Can’t Believe It’s Not Butter and buttered the top Bun, so when I bake it will be nice and toasty. Put it on a small cookie sheet and baked for about 8 minutes at 400 degrees. Yesterday’s pot Roast has made one delicious Mini Sub! The Beef moist and delicious, the melted Cheese over top, Sweet Mustard, and the crusty Bun, it all combines for one great Sandwich!

Then for a side I reheated some of the Red Potatoes and Baby Carrots. For dessert later a bowl of Breyer’s Carb Smart Vanilla Bean Ice Cream.

Today’s Menu: Ham and Turkey Breast Baked Mini Sub w/ Creamy Tomato Soup

Ham Turkey Baked Sub Tomato Soup 009

A beautiful and sunny day out but, A cold breeze and a high of 18 degrees. Tomorrow it’s supposed to hit 40 degrees, another one day heat wave! Then again they’re saying more snow Friday morning and then again Saturday night and Sunday morning, be glad when this pattern of snow and cold stops. Then there are signs of Spring is on its way, some of the Major League Pitchers and Catchers have reported to Spring Training! Ran an errand for my Mom and that was about it. For dinner tonight, Ham and Turkey Breast Baked Mini Sub w/ Creamy Tomato Soup.

Ham Turkey Baked Sub Tomato Soup 011
I used Kroger Private Selection Smoked Off the Bone Sliced Ham and Boar’s Head Honey Smoked Turkey Breast for my Baked Mini Sub. I had picked the Turkey up while at Jungle Jim’s Market yesterday with this Sandwich in mind. Then I used a Meijer Wheat Mini Sub Bun. Layered the Meats on the Bun and topped it with some Kraft Reduced Fat Mayo w/ Olive Oil and a thin slice of Murray’s Muenster Cheese. I brushed some Extra Virgin Olive Oil on the top bun, which makes it brown up better. I baked it in a shallow baking pan at 400 degrees until the Cheese started to melt and the Meats were heated. I love using these Meijer Wheat Mini Sub Buns, their just the right size and they toast up fantastic! I heated a can of Amy’s Low Fat Cream of Tomato Soup. Amy’s Organic Soups used to be hard to find, at least in this area, and now Kroger, Meijer, and Walmart all sell it. A Baked Sub with Tomato Soup for a cold Winter’s Day! For dessert later a Healthy Choice Vanilla Swirl Frozen Yogurt.
