Stuffed Chiles in Ranch Sauce

Recipe Ingredients:
Ranch Sauce:
1 tablespoon vegetable oil
1 small onion, chopped
1 small red, green or yellow bell pepper, seeded and chopped
1 clove garlic, minced
1 (24-ounce) jar ORTEGA Salsa – Thick & Chunky
1/2 cup water
1 MAGGI® Chicken Bouillon Cubes
2 bay leaves
1 cinnamon stick, broken into several pieces
1/2 teaspoon crushed dried oregano

Stuffed Chiles:
2 (7-ounce) cans ORTEGA Whole Green Chiles
8 ounces Monterey Jack cheese, cut into 1 x 2-inch strips
3 large eggs, separated
3 tablespoons all-purpose flour

Cooking Directions:
1 – For Ranch Sauce: Heat vegetable oil in large saucepan over medium-high heat. Add onion, bell pepper and garlic; cook, stirring constantly, for 1 to 2 minutes or until onion is tender. Stir in salsa, water, bouillon, bay leaves, cinnamon and oregano. Bring to a boil. Reduce heat to low; cook for 10 to 15 minutes or until flavors are blended. Remove bay leaves and cinnamon stick pieces.
2 – For Stuffed Chiles: Stuff each chile (being careful not to break skins) with cheese. Beat egg whites in small mixer bowl until stiff peaks form. Whisk egg yolks in small bowl until creamy. Fold egg yolks and flour into egg whites until just combined.
3 – Add vegetable oil to 1-inch depth in medium skillet; heat over high heat for 3 to 4 minutes. Dip chiles in batter until well coated. Place in oil; fry, turning frequently with tongs, until golden brown. Remove from skillet; place on paper towels to drain. Serve with Ranch Sauce.
Makes 5 servings.

QUESADILLAS
Ingredients

1 cup shredded Mexican Cheddar, Monterey Jack, Pepper Jack, or brick cheese
1 green onion, minced
1-3 tablespoons canned chopped green chilies (to taste)
4 8-inch flour tortillas
Chunky salsa, for topping or dip

Directions

1 – In a medium bowl, toss together the cheese, green onion, and chilies; set aside.
2 – Spray a medium skillet with nonstick cooking spray and place over medium heat.
3 – When hot, add 1 tortilla and sprinkle it with one-fourth of the cheese mixture.
4 – When the cheese begins to melt, about 1 minute, fold the tortilla in half.
5 – Continue cooking until lightly browned and crisp on both sides, about 1 minute.
6 – Transfer to a cutting board.
7 – Repeat with the remaining tortillas and filling.
8 – Cut into 4 wedges with a knife or pizza cutter and serve immediately with the salsa.

Recipe Yield: Yield: 8 servings (2 wedges)

Enticing Enchiladas
If you haven’t tried turkey enchiladas, you’re missing out on one of life’s great pleasures. With a prep time of just 20 minutes, this kid-friendly Mexican dinner has under 500 calories per serving.

INGREDIENTS
1 tablespoon vegetable oil
1 green or red bell pepper, chopped
½ cup chopped onion
4 cloves garlic, minced
1 (16-ounce) package JENNIE-O® Lean Ground Turkey
1 tablespoon Mexican seasoning or chili powder
2 (10-ounce) cans mild enchilada sauce, divided
1 cup shredded Mexican cheese blend or Monterey jack cheese, divided
12 taco-size flour tortillas
1 cup shredded lettuce
½ cup diced tomato
½ cup diced ripe avocado, if desired

DIRECTIONS
1) Heat oven to 375ºF. Heat oil in large skillet over medium heat. Add bell pepper, onion and garlic; cook 5 minutes, stirring occasionally. Cook turkey as specified on the package. Always cook to well-done, 165°F as measured by a meat thermometer. Stir in seasoning and ½ cup enchilada sauce. Remove from heat; stir in ½ cup cheese.
2) Spread ½ cup enchilada sauce over bottom of 13 x 9-inch baking dish. Spoon about 3 tablespoons turkey mixture down center of each tortilla. Roll up and place seam side down in prepared dish. Spoon remaining enchilada sauce evenly over enchiladas. Cover with foil; bake 20 minutes. Sprinkle with remaining 1 cup cheese. Return to oven and bake uncovered 10 minutes or until cheese is melted and sauce is bubbly. Garnish with lettuce and tomato. Top with avocado, if desired.
* Always cook to an internal temperature of 165°F.

Turkey Chorizo Mac and Cheese
It’s time to turn up the heat on your homemade mac and cheese! Our Turkey Chorizo Mac and Cheese combines everything you love about baked mac and cheese recipes with the savory addition of black beans, bell peppers, and chorizo. Your family will love this easy, spicy take on classic comfort food.

INGREDIENTS
1½ cups whole grain elbow macaroni
1 large egg
¾ cup milk
½ teaspoon granulated garlic
½ teaspoon onion powder
1 (16-ounce) package JENNIE-O® Chorizo Seasoning Turkey Sausage
½ cup diced green bell pepper
½ cup diced red bell pepper
½ cup black beans, drained
½ cup corn
1½ cups shredded Cheddar cheese
1½ cups shredded Monterey Jack cheese
2 tablespoons butter
1½ cups breadcrumbs

DIRECTIONS
1) Heat oven to 350°F.
2) Cook macaroni as specified on the package; set aside.
3) Whisk egg. Add and combine milk, garlic and onion powder; set aside.
4) In 9 x 13-inch baking pan, evenly add chorizo, peppers, beans, corn and cheeses. Stir in macaroni. Pour in milk sauce and stir.
5) In skillet, over medium heat, melt butter. Stir in breadcrumbs. Top turkey mixture evenly with breadcrumbs. Bake 40 to 50 minutes or until golden color. Let set for 15 minutes before cutting.
* Always cook to an internal temperature of 165°F.

Mexican Turkey Burgers
Chock full of fresh veggies, this fun Mexican twist on a classic burger recipe is done in under 30 minutes! Creamy avocado, fresh cilantro and spicy jalapeños will have your taste buds begging for more.

INGREDIENTS
1 (16-ounce) package JENNIE-O® Lean Turkey Burger Patties
4 Kaiser rolls or hamburger buns, split and toasted, if desired
4 red leaf or romaine lettuce leaves
2 slices Monterey Jack cheese with jalapeño peppers, halved
1 ripe avocado, pitted, peeled and sliced
⅓ cup thick-and-chunky salsa
2 tablespoons chopped fresh cilantro or green onions

DIRECTIONS
1) In small bowl, combine avocado, salsa and cilantro; set aside.
2) Cook the patties as specified on the package. Always cook to well-done, 165ºF as measured by a meat thermometer.
3) Place lettuce on bottom of rolls; top with patties, cheese and avocado mixture. Cover with roll tops.
*Always cook to an internal temperature of 165°F.

One-Pot Mexican Macaroni and Cheese

One-Pot Mexican Macaroni and CheeseAn old favorite, macaroni and cheese takes on a new role with the addition of zesty jalapeños teamed with shredded Monterey Jack cheese. The pasta doesn’t need draining in this one-pot recipe, which saves on dishes.

Recipe Ingredients:
3 cups dry rotelle or wagon wheel pasta (8 ounces)
3 cups water
1 cup NESTLÉ® CARNATION® Evaporated Milk
1 small red bell pepper, chopped
4 green onions, chopped
1/4 cup sliced ripe olives
1 tablespoon diced jalapeños
1 cup shredded Monterey Jack cheese

Cooking Directions:
1 – Boil pasta and water in large saucepan, stirring frequently, for 8 to 10 minutes or until pasta is tender and water is almost gone. Add evaporated milk, bell pepper, green onions, olives and jalapeños; bring to a boil.
2 – Reduce heat to medium; cook, stirring frequently, until sauce has thickened slightly. Add cheese; stir until cheese is melted and sauce is thickened. Season with salt.
Makes 4 servings.

Veggie Jack Burrito Casserole
A hearty, Southwestern layered casserole with a variety of vegetables, green salsa, flour tortillas and Monterey Jack cheese.

Recipe Ingredients:
1 tablespoon vegetable oil
2 cups broccoli florets
2 cups mushrooms, sliced
1 red onion, sliced
1 medium carrot, shredded
1 medium zucchini, shredded
1/4 cup sliced green onion
1 clove garlic, minced
1 cup prepared green salsa
3 cups shredded Wisconsin Monterey Jack cheese or Mexican Shredded Cheese blend
8 (10-inch) flour tortillas
Sour cream for accompaniment (optional)
Green or red salsa for accompaniment (optional)

Cooking Directions:
1 – In a 10 inch skillet, heat oil until sizzling; add vegetables and garlic. Cook over medium-high heat 5 to 7 minutes, until vegetables are slightly tender. Stir in 1 cup salsa.
2 – Distribute vegetable mixture and 2 cups cheese evenly on tortillas. Fold burrito- or taco-style; place in 12×8 inch baking dish. Cover with foil.
3 – Bake in a preheated oven at 400°F (205°C) for 15 to 20 minutes or until heated through.
4 – Top with salsa and remaining cheese.
5 – Continue baking 5 to 7 minutes, or until cheese is melted.
6 – Serve topped with a dollop of sour cream and salsa, if desired.
Makes 8 servings.

Enchiladas American-Style
Flour tortilla enchiladas, filled with both cheddar and Monterey Jack cheese and chopped onion, are baked in a simple chili-seasoned tomato sauce.

Recipe Ingredients:
3 (8-ounce) cans tomato sauce
1 1/2 teaspoons chili powder
1/4 teaspoons salt, or to taste
8 (7-inch) flour tortillas
1 cup (4 ounces) Wisconsin cheddar cheese
1 cup (4 ounces) shredded Wisconsin Monterey Jack cheese
1 cup chopped onion

Cooking Directions:
1 – Simmer the tomato sauce, chili powder and salt together, stirring occasionally.
2 – In a separate dish, mix shredded cheeses and onion together.
3 – Dip tortillas, one at a time, in the sauce; place on baking pan. Put 3 or 4 tablespoons of the cheese-onion mixture on each tortilla. Roll and place folded side down; cover with remaining sauce.
4 – Bake in a preheated oven at 350°F (175°C) for 10 minutes.

Makes 4 (2 enchilada) servings.

Quinoa and Chile Casserole
Although quinoa (keen-wah) is new to the American market, it was a staple of the ancient peoples of Peru, who called it ‘the mother grain’. Hailed as the ‘super-grain of the future’, quinoa contains more protein than any other grain, and is considered a complete protein because it contains all eight essential amino acids. Quinoa can be used in much the same way as rice is used.

Recipe Ingredients:
2/3 cup pine nuts
1 tablespoon plus 1 teaspoon vegetable oil – divided use
1 cup quinoa*
2 tablespoons coarsely chopped oven-dried tomatoes (or sun-dried)
1 1/2 cups vegetable broth
1/2 cup chopped green onions
2 tablespoons chopped fresh cilantro
2 to 3 teaspoons balsamic vinegar
Salt and freshly ground pepper to taste
2 (4-ounce) cans whole green chiles
1 cup shredded Monterey Jack cheese

Cooking Directions:
1 – Heat 1 teaspoon oil in a large (4 to 5-quart) saucepan over medium heat; add pine nuts and stir until lightly toasted. Remove from pan and set aside.
2 – Add remaining 1 tablespoon oil into same pan and add the quinoa. Stir constantly over medium-high heat until quinoa gives off a toasted aroma, about 3 minutes.
3 – Add tomatoes and broth and bring to a boil. Cover, reduce heat, and simmer, stirring occasionally, until quinoa is tender, about 10 minutes. Remove from heat and stir in pine nuts, green onions and cilantro. Season with vinegar, salt and pepper. Cover and let stand.
4 – Drain chiles and split in half lengthwise; discard seeds. Arrange half the chiles in a 2-quart casserole (12x8x2-inch). Spread quinoa mixture evenly over chiles. Top with remaining chiles and sprinkle with the cheese.
5 – Bake in a 375°F (190°C) oven for 20 minutes or until hot and cheese has melted.

Makes 6 servings.
