This week’s Soup Special of the Day is Chicken Tortilla Soup. Enjoy and Eat Healthy!

Chicken Tortilla Soup

Recipe Ingredients:

1 fresh whole chicken
4 1/2 cups water
10 tablespoons vegetable oil – divided use
1/2 cup chopped onion
1 clove garlic, peeled and chopped
4 cups reduced sodium chicken broth
1 (15-ounce) can tomato sauce
1/4 cup chopped green bell pepper
1 teaspoon crushed red pepper flakes
3/4 teaspoon crushed dried basil
1 teaspoon dried cilantro leaves
1 teaspoon ground roasted cumin
1/2 teaspoon sea salt
1/4 teaspoon ground black pepper
10 corn tortillas, sliced
1 cup shredded reduced fat Monterey Jack cheese
1 avocado, peeled, pitted and sliced

Cooking Directions:

1 – In a 3-quart saucepan simmer chicken in water until tender*, about 25 minutes. Remove chicken from stock, straining and reserving stock; allow chicken to cool enough to handle. Separate meat from skin and bone, and dice. Set aside meat and stock.
2 – In a large stockpot over medium-high heat, heat 2 tablespoons of the oil and cook onions and garlic until onion is tender, about 3 minutes. Stir in chicken meat, stock and broth, tomato sauce, green bell pepper, red pepper flakes, cumin, basil, cilantro, sea salt and pepper. Heat to boiling. Reduce heat and simmer, uncovered, for 30 minutes.
3 – In a skillet, heat remaining 8 tablespoons (1/2 cup) oil. Add tortilla slices, working in batches if necessary, and cook until light brown, 30 to 60 seconds; drain on paper towel.
4 – Divide tortilla strips among the serving bowls; pour soup on top. Top with cheese and avocado.
Makes 12 servings.

Terrific Turkey Tostados
Love tacos and quesadillas? Then you’ll love these Mexican Tostados—featuring pan-fried tortillas topped with seasoned ground turkey, sautéed veggies, melted cheese and a dollop of sour cream.

INGREDIENTS

3 tablespoons vegetable oil, divided
6 flour tortillias
1 (16-ounce) package JENNIE-O® Lean Ground Turkey
½ cup red onion, sliced in strips
½ cup yellow or green bell pepper, sliced into strips
2 teaspoons minced garlic
2 teaspoons ground cumin
¾ teaspoon salt, if desired
¾ cup salsa, divided
1 (15-ounce) can refried black beans or refried beans
1 cup crumbled queso fresco or shredded Monterey jack cheese
¼ cup sour cream, if desired
¼ cup chopped fresh cilantro or sliced green onions

DIRECTIONS

1) In large skillet, heat 2 tablespoons oil until hot. Add tortilla to hot oil; cook 1 to 2 minutes per side or until golden brown and crisp. Transfer to paper towels to drain; repeat with remaining 5 tortillas.
2) Add remaining 1 tablespoon oil to skillet. Cook ground turkey as specified on the package. Always cook to well-done, 165°F as measured by a meat thermometer. Add onion, bell pepper and garlic cook 5 minutes, stirring occasionally. Sprinkle with cumin and salt. Cook 5 minutes, stirring occasionally. Add ½ cup salsa; cook 5 minutes, stirring occasionally.
3) Meanwhile, combine beans and remaining 1/4 cup salsa; heat in microwave oven or small saucepan until hot. Spread bean mixture over tortillas; top with turkey mixture, cheese, sour cream, and cilantro. Serve with additional salsa, if desired. Makes 6 servings.
* Always cook to an internal temperature of 165°F

Jazzed-Up Turkey Fajitas

Looking for the easiest Mexican recipe ever? This quick fajita recipe features extra lean oven roasted turkey breast—found at your local deli—for a delicious weeknight shortcut.

INGREDIENTS

6 (6 to 8-inch) tortillas
2 red, green or yellow bell peppers, cut into thin strips
1 red onion, sliced
1 tablespoon olive oil
12 ounces JENNIE-O® Extra Lean Oven Roasted Turkey Breast, cut into strips
1 (.78 ounce) packet taco seasoning
1½ cups salsa
1 cup shredded Monterey Jack cheese with jalapeño peppers

DIRECTIONS

1) Heat tortillas according to package directions.
2) In large skillet over medium-high heat, sauté peppers and onion in oil 5 minutes or until peppers are slightly softened.
3) Add turkey, heat 2 minutes or until warmed. Stir in taco seasoning. Evenly divide turkey mixture among tortillas. Top with salsa and cheese.

This week’s Diabetic Dish of the Week is a Fajita Turkey Burger. It’s made using the always delicious Jennie-O Extra Lean Ground Turkey Breast. Fajita Turkey Burger

Ingredients

1/2 teaspoon ground cumin
1 teaspoon garlic powder
1 teaspoon chili powder
1 teaspoon crushed red pepper flakes
1 teaspoon paprika
salt and freshly ground pepper, if desired
1 (16-ounce) package Jennie-O Extra Lean Ground Turkey Breast
1/4 cup salsa, drained
3/4 cup cilantro, divided
2 onions, sliced
1 green bell pepper, sliced
1 red bell pepper, sliced
Wholly Guacamole classic or spicy dip, if desired
Wholly Guacamole salsa, if desired
5 reduced-calorie hamburger buns, split
1/3 cup shredded reduced-fat Monterey Jack cheese

Directions

1 – In small bowl, combine cumin, garlic powder, chili powder, red pepper flakes, paprika and salt and pepper, if desired.
2 – Mix ground turkey, half of spice mixture, drained salsa, and 1/2 cup cilantro; form into 5 (1/2-inch thick) patties. Lightly spray patties with cooking spray. Place patties in skillet over medium-high heat. Cook 17 to 19 minutes, turning occasionally. Always cook to well done, 165F as measured by a meat thermometer.
3 – Meanwhile, coat large skillet with cooking spray. Cook onions, bell peppers and remaining spice mixture over medium-high heat 5 to 7 minutes, stirring occasionally. Stir in remaining 1/4 cup cilantro.
4 – To assemble burgers, spread guacamole and salsa, if desired, on buns. Place burgers, cheese and vegetable mixture on buns.
* Always cook to an internal temperature of 165F.

Chile and Cheese Enchilada Stack

This simple recipe layers typical enchilada ingredients for an easy entrée with the same great flavor. The stack is cut into wedges and may be served with sour cream and warm refried beans.

Recipe Ingredients:

2 (10-ounce) cans enchilada sauce – divided use
3 cups shredded Monterey Jack or cheddar cheese – divided use
1 (7-ounce) can diced green chiles
12 (6-inch) corn tortillas, warmed

Cooking Directions:

1 – Preheat oven to 350°F (175°C). Pour 1/4 cup enchilada sauce onto bottom of 9-inch pie plate.
2 – Combine 2 3/4 cups cheese, 1 3/4 cups enchilada sauce and chiles in medium bowl. Place one tortilla in prepared pie plate. Spread about 1/3 cup cheese mixture on tortilla; top with second tortilla. Repeat layers until all tortillas have been stacked, finishing with a tortilla on top. Spread remaining enchilada sauce over stack; sprinkle with remaining cheese.
3 – Bake for 40 to 45 minutes or until cheese is melted. Cut into wedges; serve with sour cream, if desired.
Makes 6 servings.

1 (12-ounce) package whole wheat pizza crust
½ cup barbeque sauce
1½ cups cooked JENNIE-O® OVEN READY™ Boneless Turkey Breast
½ small sweet potato, peeled and thinly sliced
1 cup shredded Monterey Jack cheese
¼ cup fresh jalapeño slices
garnish: fresh cilantro leaves
DIRECTIONS

1) Heat oven to 425°F.
2) Spread pizza crust with barbecue sauce. Layer with turkey, sweet potato slices and cheese. Top with jalapeño slices. Bake 20 to 25 minutes or until bubbly. Garnish with fresh cilantro leaves.

Monterey Jack Pita Pizza

Whole wheat pita bread and low-fat Monterey Jack cheese put a healthy spin on this flatbread pizza.Cooksrecipes 2

Recipe Ingredients:

1 (6-inch) whole wheat pita bread
1/2 cup shredded low-fat Monterey Jack cheese
2 (1/8-inch thick) slices cooked deli chicken (1 ounce each), cut into strips
1/2 cup diced fresh pineapple or canned pineapple tidbits in its own juice, drained
3 teaspoons pizza or pasta sauce
2 teaspoons finely chopped green onion
Chopped flat-leaf parsley for garnish (optional)

Cooking Directions:

Preheat oven to 375°F (190°C).
Split pita into 2 rounds by placing pita flat on work surface and carefully cutting around the edge. Separate the 2 rounds and place, cut side up, on a work surface.
Spread each pita round with 1 1/2 teaspoons of pizza sauce. Top each pita with half of the cheese, chicken, pineapple, onion and parsley, if desired.
Bake for 8 to 10 minutes or until cheese is melted and edges are browned.
Makes 2 servings.
